New Beginnings
I
t’s been almost a year since COVID-19 was declared a global pandemic, and although life hasn’t completely returned to normal just yet, things are looking up. At the time of this writing, approximately 11.9% of the U.S. population has had at least one dose of the Moderna or Pfizer vaccine while 4.5% of the population has had both doses. The U.S. is administering over 1.8 million shots a day and President Biden has pledged a new goal of getting 150 million shots in arms during his first 100 days in office. After being under regional stay-at-home orders for what seems like an eternity, local businesses and schools have started to reopen as coronavirus cases drop. For our special “Education” issue, we highlight local schools that have persevered during the pandemic including Westside Neighborhood School, which has updated its campus and reorganized its classroom structure to continue to support students’ academic needs and well-being during these challenging times. Local business owner Peter Georges quickly adapted all three of his restaurants – Hash, Rodini Park and Conference Room – during the numerous shutdowns to continue serving customers and keeping his staff employed and safe. Bull & Butterfly owners Alan and Heidi Jackson got creative with extra inventory, which led them to reimagine their restaurant menu and expand their business by adding to-go services. For those eager to spend more time outdoors as the weather warms up, a revised edition of the hit book “Trails of the Angeles” just came out and features more than 100 spectacular hiking trails to check out in Southern California. Spring is just weeks away, bringing with it a renewed sense of hope. For many, these past few months have been some of the most difficult, but they have also provided an opportunity for growth, renewal and transformation. Poet Anne Bradstreet once said, “If we had no winter, the spring would not be so pleasant; if we did not sometimes taste adversity, prosperity would not be so welcome.” We don’t remain in any one season or life cycle indefinitely, and the blossoming flowers, bright colors and new life around us are all reminders that spring always brings new beginnings. Whether hosting a live wine festival or a virtual one, Michelle Silberstein focuses on the fun.
L
ike many young people who make the sojourn to Los Angeles, Michelle Silberstein left Florida to try her hand in Hollywood. She enjoyed her endeavors in the entertainment industry, but soon transitioned to fitness and created her own clothing line. But, always the dreamer, she didn’t quite have the excitement and passion she wanted in her life and work. However, when she met her husband Dan a few years ago, everything changed. Not only did he bring romance into her life, he served as the inspiration for a new career. As the creator of Drink:Eat:Play, a company that organizes beer festivals around the country, her husband provoked Silberstein to wonder if anyone was doing something similar with her favorite libation: wine. “There was nothing in mass-market, mass-appeal events that’s strictly for wine and touring,” Silberstein said. “I’ve always loved wine, it’s been a passion of mine.” Soon, her business, Uncorked Wine Festivals, was holding 12 to 15 large events a year across the country. “The whole idea is that I wanted to create an event that I would want to go to,” she says. “I could bring any of my friends with me and it wouldn’t feel stuffy or schmancy, or if a friend didn’t have any knowledge of wine, they wouldn’t feel intimidated to be there. and discuss what terroir a grape was grown in.” More than just experiencing new wines, she wanted the festivals to be fun. So even if you’re not a wine fanatic, there would be other fun and interesting things to do. “Typically, we have a lot of local food trucks. We have live music and/or a DJ. Depending on the venue and what’s appropriate — if it’s a day event, outdoors on the water like we have in San Diego — we’ll have lawn games, cornhole and other fun things for people to do, oversized games like human-sized chess. We might have trivia. “So, it’s really more of an experience. You have between 40 and 70 wineries, depending on the size of the event, from across the globe. varietals that they may not be exposed to as well as the big names and wellknown wines and wineries that they have probably heard of before.” In LA, she likes to hold her festival Downtown at Union Station. “People like the simplicity of hopping on a train and skipping the Uber. It’s a really beautiful venue and a lot of people go, ‘Huh! I’ve actually never been there,’” she says. Now that the country is experiencing the COVID-19 pandemic, Silberstein decided to move her in-person festivals to the virtual space. Now when you purchase a ticket, a wine kit with three different, full-sized bottles of wine gets shipped straight to your home so you can taste the wine IRL while watching the event on a virtual platform. The winemakers also
participate virtually and there is often a live band or possibly a chef doing a cooking demo, trivia, even a chat with a sommelier. “We try to bring that same element of fun yet with some knowledge and information about the wine into people’s living rooms, dining rooms, garages, wherever they’re watching,” Silverstein says. Silberstein admits she was worried about pivoting from a live event to a virtual one, but says, “I was really, super nervous and after the first one, I thought, ‘I have to do more of these. T
he legendary singer-songwriter Michael Jackson is many things to many people. For some, he is the definitive King of Pop. To others, it’s a lot more complicated, given the controversies that surrounded his fame. But for one Playa Vista resident, Michael Jackson was a beloved friend. Shana Mangatal’s book “Michael and Me: The Untold Story of Michael Jackson’s Secret Romance,” details her friendship with the music icon. In 1989, Mangatal drove from Washington, D.C., to Los Angeles where she landed her dream job as a receptionist for one of the hottest music management companies in the ’90s, Gallin Morey Associates. It represented class acts like Dolly Parton, The Pointer Sisters, and Neil Diamond, not to mention Mangatal’s childhood idol, Michael Jackson. “My first day Elizabeth Taylor called, Michael called. It was just crazy!” Mangatal says. “We also represented actors. I remember when Renée Zellweger landed her role in ‘Jerry Maguire,’ she came to the office and we toasted champagne. She became a superstar.” Mangatal spent seven years working for the management firm. It was during those years her friendship with Jackson developed. He would personally call into the office nearly every day. She remembers Jackson mostly as a down-to-earth, lighthearted person with a big laugh. She went to his birthday parties at Neverland Ranch and the two often played practical jokes on each other. “(He influenced me) in every way really. He had such a powerful personality that, anyone who hung around

him, his personality kind of rubbed off on them. I was no exception,” Mangatal says. “I always remembered that... I had to make the most of every opportunity that I had, because that was what Michael would want me to do.” Jackson cast Mangatal in two short films, the first was called “Is This Scary.” Though the song from “Is This Scary” was meant to be the theme song for the 1993 film, “Addams Family Values,” it was dropped from the soundtrack when Jackson was accused of child molestation. “We had to stop filming because Michael was just too distraught to go on,” Mangatal says. During the 1993 allegations, Man-
gatal and Jackson’s bond grew as she comforted him over the phone and gave him her support. She even told Jackson she loved him, and he said it back to her, which was an emotional experience for her because she had never exchanged those words with a man before. “I said it out of support because I knew he needed it — he was going through so much. We didn’t know if he would make it through the night some nights. … We remained friends up until his death and that’s what the book is about,” she says. After Jackson died, his fans contacted Mangatal over social media and suggested she write a book about her friendship with him. Although she was interviewed about Jackson on TV’s “Entertainment Tonight” in 2003, she never imagined writing a memoir. A few years after his death, she reread her diaries and decided to share her memories of him. “There were so many crazy stories in the press about him. Most of it wasn’t true. And I wanted to just scream out and say, ‘No, that’s not true! That’s not who Michael was. That’s not the real Michael,’” she says. “I thought if I could somehow put what I had written in my diaries together as a book, maybe it could shed some light on who Michael really was.” After pitching her memoir to several publishers, the Chicago Review Press gave her a book deal and she surprised herself by finishing the book in two months. “(The process of writing a memoir) brings you clarity and it makes you see where you went wrong, and even where (Continued on page 14) PLAYA PLAYA VISTA VISTA DIRECT DIRECT || FEBRUARY FEBRUARY--MARCH MARCH2021 2021 1313

shares her experiences from her time with Jackson. After working for Gallin Morey, Mangatal took different jobs in the entertainment industry including working for another legend — only this one was from the sports world. “Magic Johnson came into the office. He sees me and says, ‘You’re coming to work for me!’ So, I did,” she says. Mangatal also continued to work as an actress. She can be seen in “Family Matters,” “The Fresh Prince of Bel-Air” and “Two Guys, a Girl and a Pizza Place.” In 2009, she visited Playa Vista and quickly decided to move into the area. “I’ve been here ever since,” Mangatal adds. “It will be really hard to move away from here because I’ve really grown accustomed to just how perfect and beautiful it is.”

David Harris is revising “101 Hikes in Southern California,” originally penned by the late Jerry Schad.
T
he way David Harris sees it, San Gabriel Mountains trails are like his children. He can’t choose a favorite. “There are so many, and each one has its charms in a special way,” he says. Harris is so close to the subject matter that he revised John W. Robinson’s book “Trails of the Angeles,” which hit stores February 9 through Wilderness Press. “I got the (original) book when I moved to Southern California 20 years ago,” Harris says. “I’ve been following in John Robinson’s footsteps for many years. It was a real privilege to revise his book. “John Robinson is one of the giants of Southern California mountains and history.” The book has been described as the region’s trusted hiking guide for more than 45 years. It recalls 100 spectacular trails — ranging from one-hour strolls to challenging fiveday backcountry trips — in the mountain range that looms large over the Los Angeles Basin. Historical photos and descriptions include the first American Indian footpaths, early pioneer homesteads, and landmarks still visible from the Great Hiking Era. Plus, as an added bonus, the book comes with a folded full-color map, detailing all the hikes described in the book. Harris has been an author since the 1990s, when he began penning engineering textbooks, as he is an engineering professor at Harvey Mudd College. Since then, he has authored or co-authored seven hiking guidebooks and five engineering textbooks. He’s been exploring the mountains and deserts of Southern California since 1999. “Around 2004, I wrote a little pamphlet about hikes in Southern California,” he says. “I sent it to Wilderness Press to see if they were interested. “She declined the book and I selfpublished it. She said they could only sell about 100 books. She was right. It
sold about 100 copies. John was retiring from book writing. They asked if I could revise that one. That got me into hiking guidebooks around 2005. Once you do the first one, there’s always a demand for more. I’ve written quite a few now.” Researching the book is physically demanding, Harris says. But a guide like this is important during a COVID19-plagued world. It’s a natural way to social distance and, because of that, people are getting back into the hobby. “Hiking is one of the best forms of exercise available to us,” he says. “The number of people on the trails skyrocketed since COVID. There are tons of hikers out. “It’s much safer than going to a gym. It’s tremendously healthy exercise. This time of year, the waterfall hikes in lower elevations can be really enjoyable. Eaton Canyon Falls is a very enjoyable one. “In terms of people who are looking to get off the beaten path and find a hike that’s going to have fewer people on it, Mount Lukens is great. The loop on the north side is fantastic. I just went up there recently and saw two trail runners and nobody else.” Harris is revising the fourth edition of “101 Hikes in Southern California,” he says. “That’s a great book. It takes me all over Southern California. It’s the best hikes in every region.” He inherited the brand from the late Jerry Schad, whose books are called the “grandmasters of Southern California hiking guidebooks.” “The wonderful thing about the San Gabriels, though, is there is so much elevation range,” he says. “This time of year, the foothills are clear of snow and the water is starting to run. In the summertime, the high country is spectacular. It’s a good way of getting away from the valley.”

chools are the cornerstones of communities and COVID-19 has impacted educational institutions around the world, resulting in the shutdown of schools and posing major challenges to teachers, students and families. As a result, children’s academic performance has been affected, along with their progress in cognitive, emotional and social developmental. Since the onset of the pandemic last March, Westside Neighborhood School (WNS) in Playa Vista quickly pivoted and worked diligently with public health officials to address ongoing changes to health and safety regulations while supporting students’ academic needs and well-being. “Like everyone else, we had to transition to online learning,” says Brad Zacuto, Head of School at WNS. “We hired an online learning specialist, did training all summer, and we upgraded our technology 18 PLAYA VISTA DIRECT || FEBRUARY - MARCH 2021 18 PLAYA VISTA DIRECT FEBRUARY - MARCH 2021
equipment infrastructure. The students have coaches they check in with virtually one-on-one at the end of the day. We also majorly invested in our school’s physical plan to prepare for the possibility of having kids back on campus and doing it safely.” In addition to following all of the protocols that the Department of Health required, WNS invested in a new HVAC circulatory and filtration system, installed plexiglass shields on all the desks and added more sinks on campus to make hand washing more accessible. They also invested in PPE gear that teachers and staff needed in order to be safe. “One of the things I’m proud of at WNS is that we prioritize keeping people safe,” Zacuto says. “We’re also one of the first schools to have a very robust COVID testing and surveillance program. We’ve been testing teachers weekly for months
now and we’re testing students weekly as well. We have not had any cases on campus yet and our success has been due in large part to the way our parents and students have partnered with us on adhering to protocols and guidelines, and the way our community has worked together in communicating with us and the surveillance testing that we’re doing.” The private independent school, which has over 500 students from preschool through 8th grade, had to completely reorganize its classroom structure as well. A typical elementary school class has around 24 children with two fully credentialed teachers, but WNS has divided groups in half and hired additional staff to work with smaller groups of students. In October, WNS welcomed back its kindergarteners and first-graders under an approved waiver. With the recent announcement from LADPH, third through fifth-graders are in the process of returning to full-day on-campus learning. Fridays are reserved as a professional development day for teachers and for middle school students to participate in outdoor conditioning and social emotional learning (SEL) activities, which range from art to robotics. All activities take place outdoors where students wear masks while social distancing, providing a great opportunity for them to connect with their teachers and classmates. “When the kids came back, you could see the joy on their faces even though they were all wearing masks and keeping their distance,” Zacuto shares. “We sometimes underestimate how resilient and flexible children are. They would rather wear a mask and be at school with their friends. Of course there are compromises, but it looks and feels a lot more like school has felt in the past. An Individualized Approach to Education process. In some cases, this leads to large shifts in course offerings and structure, making student success an institutional priority with curriculum, staffing and allocation of resources. Last week, L.A. County’s virus numbers finally declined enough to reach the state threshold for reopening elementary schools. As your representative on the L.A. Unified School Board, I’m hearing from many parents who are understandably wondering why, then, are our elementary schools still closed? The answer is that the District and teachers’ union have not yet reached an agreement about what a safe return to campus would look like. I share the frustration I’m hearing each day from the community. It’s been nearly a year of distance learning, and there is plenty of evidence showing that kids are suffering academically and emotionally from being out of school for so long. Meanwhile, the goalposts for when students can be back on campus keep moving. It’s time to stop moving the goalposts. The CDC, State, and L.A. County Public Health departments agree: LA Unified can— and should—begin reopening schools for elementary students. The District has worked hard to prepare our campuses to reopen. Public health experts agree that we have all the necessary measures in place to significantly mitigate the risk of the virus being spread at schools, including social distancing and masking guidelines, and testing programs to provide a safe in-person learning option for our kids and families. I understand the union’s concerns and advocacy on behalf of its membership. The guidance from the federal and state governments this year has been inconsistent and frustrating for us all. But part of the evolution of the guidance we are receiving reflects an emerging understanding of this virus. And there is now consensus among federal, state, and county public health officials that limited opening of schools with safety precautions can be done safely and can help us mitigate the extensive harm done by keeping schools closed. Understanding, however, that the union’s current position is that they will not return until they are vaccinated—even if it is not a requirement per the CDC guidelines nor state and county regulations—I have been advocating for months that school staff be prioritized in order to open campuses. At last week’s Board meeting, I asked L.A. County Public Health Director Dr. Barbara Ferrer why we weren’t yet vaccinating teachers and her reply was lack of supply. She indicated that, although the County hopes to start vaccinating school employees in March, it could be months before it is complete. Currently, the County has no plan to prioritize elementary school employees or expedite the process for the 25,000 employees LA Unified has who work on elementary campuses. LA Unified is eager to be part of the solution on the vaccination front and today, we started vaccinating employees over 65 at our schools. But without the supply, we also must wait. But kids shouldn’t have to wait any longer. In addition to elementary schools being permitted to roopen, LA Unified can also welcome up to 25% of our high-need students back on campus at any school site per county and state regulations. We can resume our childcare and supervision programs. We can explore outdoor classroom options and work with after school partners to see if there are enrichment activities that can be resumed safely. Although our current agreement with the teacher’s union—which enables teachers to opt-in to providing in person opportunities—only resulted in less than 1% of students back on campus, it is better than the current 0% and we need to resume our childcare program and these in-person services for students with disabilities, homeless and foster youth, and students who do not have a reliable internet connection. L.A. Unified has stepped up in so many ways during this pandemic. We are running the nation’s largest school-based food relief effort, have provided hundreds of thousands of computers and hot spots to our students and families, and our teachers are going to extraordinary lengths to meet the needs of students during distance learning. The District is many things right now, but we are not a public health agency. Since lockdown began in March of last year, we have said that we are relying on science and public health experts and our controlling public health entities to guide our decisions. laya Vista’s Bull & Butterfly was adversely affected by the pandemic closures, but restaurateurs Alan and Heidi Jackson used the time off to their advantage. “When we were abruptly forced to close, we had all this inventory and we didn’t know what to do with it,” Alan says. “We started fermenting, drying and smoking them. We started to make our own uncultured butter, for example. Employees were also rehired and retrained. “This forced respite gave us an opportunity to really dig deep and come up with new ingredients and, without this time, we wouldn’t have had the time to think about it.” Heidi adds, “We took the ingredients and repurposed them in such different ways. We didn’t have the time in the past to do research and development. This allowed Alan to refocus on the menu and make so many improvements.” Foodies can taste those new ingredients — which also include fermented cabbage and dried orange dust — now that Bull & Butterfly is offering prix-fixe to-go meals. Available on Fridays and Saturdays, its prix-fixe menu will continue after the dining room reopens. The menu rotates and will include apps, mains, sides and dessert. Bottles of wine as well as selected batched B&B cocktails are available for add on. Orders — $52 per person, with a minimum of two people — must be placed by 4 p.m. Thursdays. “When we had the first shutdown, we had to reevaluate,” Alan says. “We were never engineered as a restaurant with food to go. That was never part of our thought process. “Prior to Newsom’s lift of the ban, we wanted to dive into to-go.” A recent prix-fixe menu included kumquat and kampachi crudo with break-
fast radish, Persian cucumbers and serrano chili; blistered shishito peppers with nam pla sauce and curry spice; little gem Caesar with piquillo pepper breadcrumbs and Bellwether Farms pepato peppercorn cheese; 4-ounce ribeye cap with ovenroasted tomatoes, grilled Bermuda onions, watercress and B&B steak sauce; charred sugar snap peas with glazed spring onion, roasted radish and mint butter; and chocolate cream pie with chocolate banana gauche, chocolate short crust and marshmallow meringue. The Jacksons call Bull & Butterfly a fresh, light and modern take on the traditional steakhouse experience, with an emphasis on humanely and pasture-raised meats, prepared with ranch-inspired techniques. “We cook over hard wood,” he says. “We cook in a coal-fired oven from Spain ( Josper) that infuses wonderful smoky flavor and sears the steak beautifully. The other thing we’re trying to do is not rely on the requisite side dishes and starters. It’s a nod to it. You’re not going to get creamed spinach.” Instead, sides include fire-baked rice cake ($10); Josper-roasted marble potatoes ($9); charred sugar snap peas ($9); coal-roasted spring carrots ($9), French fries and fry sauce ($8); jalapeno mac and cheese ($9) and charred Wiser Family cone cabbage ($10). “The vegetables are cooked on the Josper,” he says. “It’s that backyard flavor that comes through the steak, versus a steak that’s cooked in butter, which I love. It feels much more akin to what we would have in a backyard.” Main dishes are creative. A grilled swordfish chop ($32) has tomato comfit, baba ghanoush, Jimmy Nardello pepper sofrito and saffron aioli ($32). Spatchcock chicken is brined for 24 hours and finished with “smaltz” potatoes and chimichurri ($27). The wood-grilled
pastrami steak is a new turn on a classic: marble rye, Caraway sauerkraut and pickled mustard seeds ($30). For comfort food, try the house ground dry-aged cheeseburger served on a salt-and-pepper brioche bun, Hooks dry-aged cheddar, grilled Bermuda onions and smoked ketchup ($19). The Jacksons are long-time restaurateurs, calling Bull & Butterfly their 36th eatery. The couple founded the Lemonade group of restaurants, which was sold to a private equity firm. They also started a robust catering business that worked with the Screen Actors Guild, BET and Golden Globe awards. Alan attributes his success to Heidi, whom, he says, makes sure he’s focused. “I’m about really being passionate about food and not seeing the restaurant business as a marketing gimmick,” Alan adds. “We never succumb to using terms like ‘farm to table’ or ‘better for you.’ It was always our hope that people saw the pedigree in the food, and the work that we put into it. That’s a big contributor to our success, along with luck and timing.” Heidi adds, “This is our nod to our version of a new, inspired steakhouse. We’re not just steak. We have amazing and beautiful dishes that are fish or vegetarian on the grill. Running a restaurant is no easy feat, let alone multiple restaurants during a pandemic. Peter Georges has managed to create three successful and innovative food concepts that he felt were missing. Georges is the managing partner of Hash, Conference Room and Rodini Park, located in a row at The Bluffs at Playa Vista. Growing up in a Greek family, food played an important role in Georges’ life and culture. However, he didn’t originally set out to work in the food industry. Prior to managing multiple restaurants, Georges had successful careers in tech and real estate. He decided to try his hand with the food and beverage industry, and teamed with his Silicon Valley friends, Joseph Ghitto and Joe Veni. “I was an executive at a couple of Silicon Valley start-ups and after making some money, we decided to 40 PLAYA VISTA DIRECT | FEBRUARY - MARCH 2021
invest in some businesses, including restaurants,” Georges says. “It’s a labor of love. The restaurant industry is a tough business, and it takes a lot of hard work to run a good restaurant. What gets me up every day are the relationships that we’ve built and knowing that we’re helping people put food on their tables and pay their bills, and we’re serving a lot of customers that praise us for great food and service.” Opened in 2017, Hash was inspired by breakfast, encompassing Old World comfort with a modern twist. Chef Gena Lora’s creative dishes include cinnamon roll pancakes and carrot cake waffles topped with cream cheese drizzle. County Fair French toast is bread pudding dipped in funnel cake batter and deep fried, then covered in tres leches sauce. The Hash on Hash is one of its signature items and includes smashed tater tots, two eggs
over easy, choice of protein, cheese roasted tomatoes, caramelized onions, red peppers and garlic aioli. “Our specialty isn’t scrambled eggs and sausage. It’s the unique menu items that you won’t find anywhere else,” Georges says. “Customers like the uniqueness of our meals, along with the generous portion sizes and fair prices.” Hash is open for breakfast only, but in the spring, it plans to start serving sandwiches for lunch as well. Located next door is Rodini Park, a Greek quick-serve concept that opened in 2019 and is named for Rodini Park in Greece. There is also a second Rodini Park location in North Hollywood. The menu at Rodini Park includes daily specials like lamb shawarma and braised lamb shank, and customers also have the option to build their own pita sandwich, platter or salad with a protein of

their choice. For dessert, they make homemade favorites such as traditional, chocolate, vegan and salted caramel butterscotch baklava, as well as the baklava sticky bun and baklava cheesecake. The cheesecake was among the 10 best cheesecakes in Los Angeles by LA Weekly and is made with graham cracker crust and phyllo dough, while the cream cheese filling is topped with baklava made from phyllo, ground walnuts and almonds, cinnamon and sugar. “We worked with three chefs for the different concepts to create recipes and put the menu together,” Georges says. “They train the cooks and staff, then they come in periodically every few months to maintain quality control.” The third food concept is Conference Room, which opened in early 2020 and offers an elevated dining experience in a relaxed lounge setting accompanied by live entertainment. The restaurant serves lunch and dinner, and menu highlights include cheese and charcuterie platters, an assortment of sides, salads and sandwiches, as well as burgers, pasta, seafood and steak. Beverages include local drafts on tap, specialty cocktails and a selection of international coffee blends. One of the things that custom-

ers especially love about Conference Room is the caliber of musical talent that performs there — many are from the regular lineup at Vibrato Grill Jazz, the premier jazz and dining space in LA conceived by Grammy award-winning icon Herb Alpert. During COVID-19 and the numerous shutdowns, all three restaurants remained open for pickup and delivery. Performances were temporarily paused at Conference Room and outdoor seating was added to allow for proper social distancing between customers and staff. Georges and his team quickly adapted to keep all the businesses running smoothly. “We had to do a lot of adjusting and we all worked together to devise a plan for each location so that we could keep things going,” Georges explains. “While it would have been easier to just close during the shutdown, we have a lot of people working for us who need to take care of their families, pay their rent and their bills. Our goals were to keep serving fresh food quickly to our customers and to keep our staff working.” Community is also important to Georges and his team. When the first shutdown occurred, they didn’t
want to throw away the extra food they couldn’t use. So, they donated all of it to a local organization. They always try to help those that are in need and have previously been recognized for their service to the community. “I love being in Playa Vista, it’s very unique in comparison to other LA neighborhoods,” George says. “It’s a wonderful community where everyone waves and greets each other. We do absolutely everything we can to help others, whether it’s extra food or providing a space when people need it. HONEY BLUEBERRY GALETTE
Active time: 25 minutes Total time: 1 hour, 10 minutes Yields: 6 servings INGREDIENTS

1 tablespoon water 1 tablespoon sugar Garnish: honey and fresh mint INSTRUCTIONS
Using a food processor, pulse together flour and salt until combined. Add butter and 4 ounces of goat cheese pulsing until mixture is crumbly. Add vinegar and pulse to incorporate. Add ice water, 1 tablespoon at a time, just until dough comes together. Turn out and shape dough into a disk. Wrap in plastic wrap. Refrigerate dough for at least 30 minutes. Preheat the oven to 425 degrees F and line a baking sheet with parchment paper. In a bowl, whisk together the remaining 6 ounces of goat cheese and honey until smooth. Add brown sugar
and nutmeg and whisk to incorporate throughout. Store in the refrigerator. On a lightly floured surface, roll dough into a 12-inch circle, about 1/4-inch thick. Transfer the baking sheet to assemble. Spread honey goat cheese filling mixture onto the dough leaving a 2-inch gap from the border all the way around. Place blueberries on top filling. Fold edges of dough over. In a small bowl, whisk together egg and 1 tablespoon of water. Brush egg wash onto dough, and sprinkle with granulated sugar. Bake until the crust is golden, and bottom is browned, 30 to 35 minutes. Let cool on the pan for 10 minutes. Serve warm or at room temperature and garnish with honey and fresh mint.

ndrew Kim and Mark Boonnark sought healthy food options for their furry family members. Realizing there was limited information out there, they started their own store — Healthy Spot, which has a location in Playa Vista. “They saw a limited assortment of food with ingredients that were difficult to pronounce,” says Reva Choi, Healthy Spot’s director of brand marketing. The pair started with a Santa Monica store in 2008 but have since expanded to 20 brick-and-mortar locations and an online store. Healthy Spot offers healthy and organic pet food as well as pet supplies, and services like dog grooming, nutritional consultations, dental care, obedience training and small dog day care. Healthy Spot stores sell a plethora of healthy brands, including SmallBatch Pets, Open Farm and Mind Body Bowl. “We offer healthy and wholesome pet treats, and we offer our own signature spa grooming supplies,” Choi says. “The treats stand out among the rest. They’re incredibly made and all natural. They’re manufactured to the highest standard. “Generally, as far as food, we bring in brands like Stella and Chewy’s as well as Open Farm. Those are the ones we highlight quite frequently. They have the same philosophy, in terms of transparency. The ingredients are words you can pronounce. They’re not loaded with preservatives. their time. They founded the company during the recession, when the health food crazy for humans hadn’t even taken off, Choi says. “Pets are family, and they want to treat their furry family members like they treat themselves,” Choi adds. “The public embraced the education and information about pet nutrition. Now, as a result of the pandemic, pet adoptions are up exponentially. We’re happy knowing we’re helping pet parents out in the healthiest way possible.” Each store sells the same products because Healthy Spot’s owners want to keep everything consistent. “We do love our Runway at Playa Vista store,” she adds. “We find that our community members are extremely passionate about coming in. Their dogs can’t walk by the store without pulling their owners in. I’ve seen it on social media. There’s a dog sitting out in front of the store, sad, because we’re closed,
and they can’t come in. That’s what we love to see. “The Runway and the community have so much foot traffic.” Before the pandemic, Healthy Spot hosted adoption events on Sundays with a host of local rescue organizations. Choi says the company is hoping to reintroduce adoption events in the second quarter of this year. However, Choi adds, her company continues to support the rescues that are suffering due to the COVID-19 pandemic. “A lot of them are strapped on resources because we aren’t able to host them,” Choi says. “We’ve been in contact with them. We have roundup donations that are donated to our rescue spot partner of the month.” Recently, a loyalty program was added so shoppers can receive rewards like treats, spa days and day care. Online booking was recently set up as well. Partnering with the community is important to Healthy Spot’s founders and staff as well. Healthy Spot curates dog-friendly events of all kinds for the community. In its Woof from Home virtual event series, the public can find everything from workouts to car and dog nutrition classes. “We hope to reintroduce our in-person community events like Yappy Hours and private dog parties in a safe way as soon as we can,” she says. “To stay updated on our events, sign up for our email newsletter or check out our Eventbrite page. “Leveraging educational, fun pieces make us special.”
