WHEN I WAS LITTLE, I WOULD WATCH MY MOM apply her makeup every single day. It was mesmerizing; she was beautiful. Correction: She is beautiful. But if you asked for a description of the way she looks from the woman herself, it would be something like this: “I need to lose 10 pounds. I need my skin to be tighter and tanner. I need to get rid of these dark spots. It’s time for a hair cut. I have too many grey hairs coming in.” Despite that rundown, she’s not the wretched monster she portrays. In fact, she’s a petite blonde bombshell that looks great in her mid-50s. She’ll deny it up and down, but hey, my boyfriend told me he could see us in the long term when he first met my mom. (That might be her favorite compliment.) She’s too hard on herself, as are many of us. I can’t say that I’m above it. After struggling with acne for nearly 15 years, I won’t stop trying to improve my skin until it’s Photoshop-quality— which is, of course, impossible. And expensive. Just as I killed the acne, the wrinkles begin to take over. Crow’s feet are planting their claws firmly under my eyes. We can’t win. We often forget that the meat sacks we live our lives in are not just meant for aesthetics. They’re perfect as long as they operate the way they’re designed. So many people struggle with chronic health problems, who are we to complain if our functional legs have a touch of cellulite? One of my favorite singer-songwriters, Regina Spektor, put it well. “I’ve got a perfect body, but sometimes I forget.

I’ve got a perfect body, ‘cause my eyelashes catch my sweat.” That doesn’t mean we can rely on nature to take care of us—we have to put in the work. That’s why Breanne DeMore and Nissa Hallquist wrote our “Women’s Wellness Through the Decades” feature, which outlines the physical and mental care you’ll need as you grow older. The best way to stave off aging and health issues is to just relax. And we did plenty of that this month with our “Spa Oasis” feature, which features five of the most luxurious and outlandish Valley spa treatments. This isn’t a mirage, ya’ll. If you can’t make it to the spa, you can unwind with man’s best friend. They’re always good for some exercise and a laugh. Pups make an appearance throughout our magazine this month. A profile on Gilbert’s Shannon Gillette tells the story of how she lost her two golden retrievers in the Green Acre Boarding Facility tragedy and quickly turned the tale from sad to proactive, rescuing 73 dogs from euthanasia at local shelters. Then, as our Last Word, Lindsey Rodrian writes a love note to her dog, Indo, who she rescued from a neglectful owner. The result was unconditional love flowing from her to Indo, and Indo to her. As we make our way into the holidays, this issue has made us feel a little more comfortable in our own skin—which will never be perfect, so live it up! Give your pups a pat for us,

FOLLOWING THE DEATH OF HER TWO DOGS IN THE GREEN ACRE BOARDING TRAGEDY, SHANNON GILLETTE FINDS HOMES FOR 73 OTHER AT-RISK PUPS When Shannon Gillette dropped off her two golden retrievers, Sherman and Parker, at a Gilbert boarding facility in June, she never thought it would be the last time she saw them alive.

The owners of Green Acre branded their in-home dog boarding facility as a doggy Disneyland, where man’s best friend could roam free, play with members of their family and have a game of fetch in the backyard, Gillette says. “Every time we’ve gone out of town or anything like that we’ve always had family and friends come over and watch our dogs, but we did a ton of research and found Green Acre, and from the outside it looked perfect,” she says. Instead, Sherman, Parker and 21 other dogs being boarded at the facility died in a small backroom where the pups were actually kept during their Green Acre stay. The family was in California getting ready for a beach day when they received a call from the Green Acre owner saying her dogs were lost. Instead, as she would come to find out, 18

Sherman and Parker were already dead. She watched her pups grow up. Parker was the best man at her wedding. She had her dogs before she had her kids, and her kids grew up with them, too. No one would blame them if they wanted revenge, but instead, Gillette turned tragedy into triumph. Upon meeting with the owners of the other 21 dogs that passed, they all agreed that they could turn the sorrow on its head. Together, along with the help of a local animal shelter, they raised awareness for the need for foster homes and raised $13,000 for their biggest triumph yet—saving shelter dogs that were scheduled to be euthanized. They decided the day they would do it would be August 23—to honor the 23 dogs that died in the tragedy. At first the goal was to save 23 dogs, too. When they surpassed that goal, they thought

maybe they could save 40 instead. In the end, Gillette and crew saved many more dogs than that—73 of them, in fact. (Well, 81 if you count the pregnant mama and the eight pups she gave birth to later.) Gillette and the other owners convinced both of Maricopa County Animal Care and Control’s facilities to not euthanize any dogs on August 23 and watched as the 73 dogs they saved were escorted out of the facility in what they called the “freedom parade.” “They got to walk in the freedom parade and go to their second chance in life that they deserve, and they got to go to these homes where they don’t have to worry about being euthanized anymore,” Gillette says. Among the 73 rescued was Charlie, a small Maricopa County Animal Care mutt. Charlie was taken in by Gio Peraza, a special needs boy from Chandler, who lost his service dog, Koda, at Green Acre. Before the rescue mission, Gillette took in a golden retriever mix named Cooper. “We got home [after the deaths] and our house was just so empty,” Gillette says. “You know, when you have dogs, you’re used to hearing footsteps come down the hall, and if you drop a cracker, you’re used to that dog eating it instead of sweeping it up.” Within a week, the Gillette family heard of a golden retriever mix and one other dog that were going to be euthanized, so they brought them into their home. They adopted Cooper and placed the other dog with another family when they found the right fit. “Ever since our dogs died, I started learning a lot more about the need for foster homes and people to adopt dogs at the local shelter,” she says. “I wasn’t aware that 60 dogs will be euthanized every day just because there’s no room for them, and they’re great dogs.” Gillette suggests families looking to adopt try fostering first, since you get to have all of the fun with the dog without the financial responsibility up front. Often, the bonds you form with a foster dog can go beyond the temporary, she says. That’s what happened with Cooper, after all. VLM

Now everyone can live in Lannister luxury. Stacy Eden, a Phoenix native and goldsmith jewelry designer, knows how to make the everyday woman feel like a royal. Her line of earthy, nature-inspired crowns have become a hit with local fashionistas and industry professionals at New York’s Mercedes Benz Fashion Week, where she showed her line of crowns alongside clothing designer Michael Costello’s line of high fashion gowns. Her stunning crowns have creepy beginnings. Eden collaborated with California designer Michelle Hébert for her collection—inspiration for which ranged from aristocratic to anatomic. “[Michelle] had a gown that had an (attachment) to it that was a spinal column, basically,” Eden says. “That’s what really got us excited and what really sparked that creativity, and we started sending (each other) pictures of tendons and veins, ligaments and the very, very organic, intertwined basis of the human body.” But it’s not all blood and guts. Her gold, silver and bronze designs add an ethereal, renaissance-inspired look to any outfit. Wearing a crown might be acceptable at your favorite music festival, but wearing them with any practicality in everyday life might feel a little strange. But there are ways to wear them, Eden says, even if it’s not on your head. “They’re great for festivals, they’re great for proms,” she says. “With some pieces, you can wear the same piece as a crown, as a necklace, and as a belt. It might not work as a crown for daytime, but as a belt with a great little sundress, it can be that perfect accessory.” VLM

Living in Arizona, you’ve probably seen ornately-painted sugar skulls, paper flowers and decorative skeleton figurines without realizing where they come from. Well known throughout Mexico and the Southwest, Dia de los Muertos is a vibrant holiday commemorating lost loved ones and the beauty of life’s natural cycle. On this special day, deceased loved ones are part of the community and are honored through food, drink, celebration and remembrance. Mesa Arts Center will be hosting a free Dia de los Muertos Festival on Saturday, October 25 from 10 a.m. to 5 p.m. and Sunday, October 26 from noon to 5 p.m. This is a family-friendly event open to everyone. Bringing together traditions, culture and community, festival goers can immerse themselves in another world for the weekend. Walk through the “mercado,” or marketplace, to peruse jewelry, contemporary and traditional art, as well as Mexican arts and crafts made by local artists. There are hands-on children’s activities including

crafts where your little one can create ceramic skull pins, sugar skulls and paper flowers. There is a full schedule of live entertainment. Watch ballet folklorico ensembles, listen to mariachi music and be entertained by jugglers and stilt walkers. For attendees over 21, there will be a Negro Modelo beer tasting event as well as food vendors and tents available to everyone. Following tradition, there will be a procession of people carrying flowers, candles and mementos of their loved ones leading up to a large community altar on Sunday. The Dia de los Muertos Festival is a great way to spend your weekend and learn about another culture or celebrate your heritage. VLM

OFFER Hope TO WOMEN DIAGNOSED WITH CANCER BY ALISON STANTON

As anyone who has been diagnosed with cancer knows quite well, it can be a frightening and difficult time filled with uncertainty about the future. For women who have just learned they have cancer, they may wonder if they will ever be able to have children—especially if they are battling uterine or ovarian cancer. Thanks to state-of-the-art fertility procedures, women who have been diagnosed with cancer may still be able to fulfill their dream of becoming a mom. Dr. Millie Behera, a fertility specialist at Fertility Treatment Center, which has locations in Scottsdale and Tempe, says that since chemotherapy is often toxic to

eggs, it has historically prevented women from getting pregnant once their cancer is in remission. “Chemotherapy would definitely affect their fertility future, and we used to have no way of preserving their options,” she says. Now, women who have just been diagnosed with cancer and still want to have a baby someday can come in for a consultation with Behera about having some of their eggs harvested. “We can see them in quick fashion, before the toxic cancer medicines get into their bodies, and we can arrange for a rapid fertility treatment process, which will give us healthy eggs within 10 to 14 days. This way, they don’t have to delay their cancer treatments, but they can have these eggs to fall back on in case the chemotherapy affects their fertility,” Behera says. One reason women fighting cancer can look forward to their future as a mom is vitrification, a technology that allows eggs to be flash frozen. As Behera explains, the technology for freezing and thawing eggs has advanced significantly. The process used to be more difficult, in part because of the eggs’ large cell size and high water content. “Before we started using the newer cryopreservation or freezing technology, when the eggs would thaw they wouldn’t always look or function the same, but now that we can see the success of using the vitrification method, where cells are rapidly dehydrated and frozen, they last for years and

years. Even up to five to 10 years later, a frozen egg can still lead to a healthy baby.” Depending on what type of cancer the woman was diagnosed with, Behera says she can either go on to carry her own baby in the future, or if pregnancy is considered too risky or her uterus must be removed, she can use a gestational carrier. In addition to women who are battling cancer, Behera says the egg harvesting and freezing procedures can also be performed on women who are noticing the biological clock tick a bit faster than they would like. “Sometimes, as a woman nears her 35th birthday, she may realize she is not quite ready to have a family yet, for many reasons, including career demands or if she still hasn’t met Mr. Right. She might also want to consider these fertility preservation options,” she says. “Most of the age-related risks of pregnancy are related to the age of the eggs. The uterus doesn’t really age the same way.” For Behera, getting to meet the babies of the women who have successfully battled cancer is immensely gratifying. “There are so many happy stories, and I really think I have the best job ever,” she says. “I first meet these women when they are at their lowest of lows, and I will tell them ‘We can do this for you now, so once your fight with cancer is over and you are healthy and ready to move on, you will be so glad that you did this to keep your options open.’ Then to see them come in pushing a stroller is just incredible.” VLM

Danielle Jass speaks slowly and succinctly. An active soccer and volleyball player and huge sports nut, the 15-yearold Perry High School freshman is taking honors English, biology and geometry to prepare herself for a future in medicine. With the exception of a square “pod” attached to her arm, it’s hard to believe she’s diabetic. Two years ago, Danielle was diagnosed with type 1 diabetes, an autoimmune disease that causes a person’s pancreas to stop producing insulin. It will be two years this month that she began using the OmniPod System—a discreet, tubeless insulin pump. “It was hard to really grasp,” she says about her diagnosis. “It’s such a big change, but you can’t let it get to you. You just have to embrace it. There’s nothing you can do about it. It’s not something you can cure.” Danielle says she feels comfortable with her diagnosis thanks to Juvenile Diabetes Research Foundation, the leading global organization funding type 1 diabetes research. To raise money to help find a cure for type 1 diabetes patients like Danielle, JDRF is hosting its annual gala, this year dubbed “One Night—License to Cure,” on Saturday, Nov. 8, at Montelucia Resort and Spa in Paradise Valley. Tickets are $500 for the James Bond-themed event. The evening will feature live and silent

auctions, casino gaming, a martini bar and performances by Scott Keo, a Michael Buble tribute performer, and Frank Caliendo, comedian and impressionist. Guests will enter the venue on a “live” red carpet. “You walk on a red carpet, and once you’re inside the big doors, at the end of the red carpet there’s a live model [in a dress],” says Tammy Crawford, gala co-chairwoman and member of the Southwest Board of Directors for JDRF. “It’s like you’re walking in on a live model’s dress. It’s just a cool effect.” Crawford, too, is an advocate for the cause. Her 25-year-old son, Spencer, was diagnosed with type 1 diabetes when he was 9. “I’ve been involved with JDRF on a million levels—nationally on the research side; locally on the board,” Crawford says. “This is the second time I’ve chaired the gala.” Danielle, who moved to Gilbert in June from Tucson with her dad, Ron, and brother,

James, is hoping to work with JDRF and a partnering organization, Scottsdale-based Camp Soaring Eagle. Her experience with the camp made her diagnosis a bit easier to handle. “I go to the camps all the time,” she says. “When I was there, I was greeted by people who have been diabetic their whole life, but they’re my age. They came up to me and they were pretty much going through the same thing I was going through. Everyone there was so warm and inviting. They all wanted to be friends and talk to you. I want other kids to feel the same way.” VLM

There is no need to wake up tomorrow morning and be a completely different person, but think of one thing you can do to start your day different. Maybe you give your spouse a kiss before rushing out of bed at the sound of the alarm and hustling through your busy day. Maybe you sit down and enjoy breakfast with your kids before they head off to school. Maybe you wake up 30 minutes earlier and go for a jog around your neighborhood. Maybe it’s something as simple as brushing your teeth with your left hand or driving a different direction to work. Whatever it might be, find something that works for you. As you begin to implement these small changes to your daily lifestyle, your eyes will be opened to new opportunities and adventures. Maybe the 10 minute power walk you start implementing during lunch at work runs you into a co-worker that tells you about his training program and the immaculate results he’s experienced. Maybe on your alternate route to the grocery store you see your dream home and the “For Sale” sign that just got posted. Maybe the smile

During her lifetime, a woman goes through numerous peaks and valleys of emotional and mental states. Hormones, social pressures and personal responsibilities can all contribute to those ups and downs. Sometimes the ups are really up, and the downs can be very down, indeed.

While there are certainly no hard and fast rules on timing, a general emotional and hormonal timeline can be charted during the specific decades of a woman’s life. To help us pinpoint the typical length and severity of such episodes, we sought input from East Valley medical professionals who are dedicated to women’s health.

20s Now that roller coaster ride of puberty has past, most women are fairly attuned to their monthly cycles and body changes by the time they get to their 20s—but that doesn’t mean it’s always smooth sailing. For some, menstrual cycles are no big deal, but for others it can be more than uncomfortable. PMS, or premenstrual syndrome, is a common hormonal disorder. Women experience different symptoms and severities when it comes to PMS, says Lisa McDaniel, physician’s assistant at Morning Star OB/GYN in Gilbert, but there are 10 core symptoms, which include irritability, breast tenderness, fatigue, depression, headaches/migraines, bloating, insomnia,

weight gain, crying easily and carbohydrate craving. All women experience estrogen and progesterone fluctuations during ovulation. However, the way that each woman metabolizes those hormones determines the symptoms and severity a woman will experience during PMS, according to Dr. Millie Behera of the Women’s Fertility Treatment Center in Tempe. While it is important to discuss your symptoms and their severity with your doctor, there are a few lifestyle changes and non-medical interventions that could help relieve the symptoms. Some of those changes are decreasing stress levels, exercising, supplemental vitamins, as well as curbing the craving for complex carbohydrates. Another important thing to remember during this time is to pay attention to your body and the changes that are going on, Dr. Behera says.

Picking up on those changes and discussing them with you doctor is important for your current health and for down the line, when and if you decide to become pregnant.”

30s While your 20s are still biologically primetime for pregnancy, more and more women are waiting to have children until they are a bit more prepared and successful, both relationship and money-wise. For this, planned pregnancies in a woman’s 30s have become increasingly common. But no matter how much you may plan ahead, there’s no preparing for how having a baby can affect an existing lifestyle—and yes, a woman’s hormones. After the significant hormonal “ups” during pregnancy, the “downs” after birth can be just as dramatic. Because of this, a lack of sleep and understanding the massive task they’ve undertaken, many women experience what has been termed “postpartum blues.” “Postpartum blues are mild symptoms that are more quick to resolve, whereas Postpartum Depression, or PPD, involves more severe symptoms of depression and can be missed by medical providers because it

often begins between day three and eight of postpartum time,” McDaniels says. Rather than thinking your post-delivery time will be spent cooing over your new bundle of joy, it’s best to prepare for the worst, even if you don’t think it will happen. Behera estimates that between 18 to 20 percent of women will suffer from PPD. “The birth and labor can be traumatic. Recovering from the big drop of hormones and the major change in life can be a lot to handle. A lot of women hide it or don’t ask for help because they just aren’t sure how much is normal and at what point they need help,” Behera says. You might think you’re about to become mom of the year, but if you don’t, it’s OK to ask for help. “All women have these ‘super-mom’ expectations, but it’s okay to seek help. This is one of the most stressful points in a woman’s life and it’s okay to feel a little overwhelmed and to depend on your family and friends. Make sure to bring it up in your OB appointments so that you’re prepared, expecting the range of symptoms and are aware of the range of what’s normal,” she says. And for some advice we’re OK with taking, Behera recommends carving out time for yourself. Leave baby with dad or family members and find time to work out, get a pedicure or get lunch with friends.


40s Usually beginning in their mid-40s, women may start to experience some irregularities previously foreign to them, including mood swings, hot flashes and increasingly irregular periods caused by erratic hormones. “This is very natural,” Behera explains. “We are born with a certain number of eggs and those start to slow down during this time. With the lessening of the eggs comes a lowered level of estrogen.” A decrease in these ovarian hormones can lead to symptoms such as hot flashes, night sweats, vaginal dryness, decreased libido, fatigue, weight gain, insomnia and PMS, as well as problems like heavy or painful periods and cycle irregularities. Both women advise maintaining a healthy lifestyle, such as diet, exercise, avoiding excessive alcohol and caffeine and watching your salt intake, to combat these symptoms. “While there are natural supplements that can help mild symptoms, we encourage women to discuss their symptoms with their medical provider as more severe symptoms may require Hormonal Replacement Therapy (or HRT) to gain relief,” McDaniels says. In addition to these internal changes, this particular time in a woman’s life comes with an overwhelming amount of external changes. Whether you’re preparing your children to head to college or caring for aging parents, it is important to keep in mind that you should still be put first. “As women, we often have this nurturing character. But we forget that we’re giving all the time. It’s okay to put yourself first. If you don’t take the time to work out, spend time alone or with your friends, it’ll hurt your other relationships. Self-care is key. Bottom-line: take care of yourself,” Behera says.

50s and 60s By the time a woman enters her early to mid50s, perimenopause has usually transitioned into full menopause. Apart from the immediate discomforts, some women have trouble embracing the long-tem effects of what has been termed their “change of life.” It’s as if, once the ability to produce children has gone away, so does their status as a “real woman.” But that is certainly not true. Consider the freedoms! No more PMS or periods. Not to mention the fact that knowing children can’t result from intercourse makes for much more romantic freedom (wink, wink). With that, a woman reaches her 60s. While there still may exist some physical issues (vaginal dryness, low metabolism/ weight gain, etc.), a woman’s hormone levels will have pretty much leveled out. However, it is important to check with your doctor if you notice anything different. “Hormone supplements may be needed in this time if the hormones aren’t balanced. No balance leaves room for cancers and heart disease to come in,” Behera says. This is the time when it is most important to be aware and prepared for any changes that may occur. Professional and family responsibilities typically begin to lessen. The kids have long since moved out. You may be preparing to retire from work, or already have. Overnight visitors to Sedona have a predicament when they visit the city in Arizona’s high desert. They can stay inside and indulge in the area’s resorts, salons and spas, gaze at work by local artists in the town’s famed galleries or play amongst the majestic red rocks that boast heightened spiritual and metaphysical energy. I’ve done it all, but with autumn here, Sedona and Oak Creek Canyon takes on a whole different look. Trees along the creek turn hues of red and yellow. The brightness and timing depend on the amount of rainfall during the summer’s monsoon. The June fires at Oak Creek Canyon left Slide Rock State Park’s swimming area closed until Sept. 20, when a Supplemental Swim Area Operating Plan went into effect. Arizona State Parks Executive Director Bryan Martyn says the park lost 200,000 visitors this summer, which had an economic impact on Sedona. By reopening the facility, visitors can “experience the thrill of launching into the

cold water for an exhilarating ride down Oak Creek.” Visitors to Sedona and Oak Creek Canyon should take at least two days to explore landmarks like Garland’s Indian Stop or the Indian Deli. It’s one of the few spots in Arizona to get that full-fledged fall feeling from late September through October. Travelers can visit the Forest Department’s website, fs.usda.gov, or the Sedona Chamber of Commerce’s site, visitsedona.com, to get information on the changing colors. Because it was too early to see the colorful leaves on our particular trip, my husband and I explored the city and to stake out locations for a future jaunt. Nestled deep below Uptown Sedona along the banks of Oak Creek, Amara Resort and Spa is an experience in its own right. Chic romantic rooms overlook the trees being fed by Oak Creek. It, no doubt, will provide quite a sight for fall color. The resort, a two minute walk from Uptown Sedona, unveiled a $1 million redesign Aug. 5 that included a

Our weekend trip was built around the Pink Jeep Tour’s Broken Arrow Tour, during which our tour guide Larry “Sedona” Robertson, and five passengers traveled to Submarine Rock and Chicken Point. When visiting Osaka Japanese Steakhouse, you will probably hear the thumping of a Japanese drum, people cheering and clapping, and shrieks of delight as diners at the teppanyaki tables cheer on their respective chefs. On the other side of the restaurant is the sushi and bar area. Wherever you might choose to sit, you will be in for a flavor-filled adventure in Japanese dining. General Manager Tony Yang was with Osaka in Minneapolis for two years before coming out to manage Osaka’s sole Arizona restaurant. “The first thing is that I want to bring good food to the neighborhood,” Yang says. “Most

people come here for birthdays and they can feel the energy in the restaurant, especially on the teppanyaki side.” Birthdays are big at Osaka. The restaurant offers a complimentary $25 gift card and complimentary appetizer for signing up online for the VIP Club at least two weeks prior to an individual’s

birthday. Those celebrating birthdays get to pick a Japanese mask of their choice and the staff drums away a happy birthday song as the whole restaurant chimes in with singing and clapping. Teppanyaki dining is undeniably exciting. Highly-trained chefs wield knives, toss eggs, create train smokestacks out of

onions and even give complimentary shots of sake at the table. Be prepared to be a good sake catcher as the chef is equipped with a longrange squirt bottle if you choose to partake in the amusing way sake is dispensed. The teppan filet mignon is the most frequently ordered entrée on the teppanyaki side of the restaurant. The prime quality filet is meltin-your-mouth soft and is prepared with just a dash of soy sauce after being grilled to a guest’s specification. Teppan dinners include mushroom soup, house salad, two jumbo shrimp, a generous serving of fresh vegetables and fried rice. Sushi and rolls are also available on the teppanyaki side of the restaurant. A new appetizer is the mango pepper salmon. The dish is large enough for two to share and consists of a lightly-peppered seared salmon wrapped around a piece of fresh mango. “Mango is soft and fruity and salmon is soft,” notes Yang. “We combine those two together and it’s a very buttery texture, you can’t taste the fish at all. It’s a very smooth sensation in your mouth. This dish is phenomenal.” Dinner or “bento” boxes are available for lunch or dinner and are a fun way to discover many flavors of Japanese cuisine. The sushi box is one of the most popular at Osaka and comes with five pieces of nigiri sushi, miso soup, house salad, California rolls, fried gyoza, shrimp tempura, vegetable tempura and steamed rice. “It’s like a Japanese food sampler and almost every guest who comes for lunch orders the bento box,” Yang says.

Osaka is known for its sushi. “The reason our sushi is so good is we use the freshest and the best ingredients we can possibly get,” Yang says. Fish is ordered multiple times during the week and is always fresh, not frozen. Rolls are also popular and the signature Osaka roll is the restaurant’s most in-demand roll. It includes tender lobster tail, English cucumber, cream cheese, barbeque eel, avocado and spicy crab tucked into soy paper. The roll presentation is a mini work of art and head sushi chef Sam Zhu is proud to craft sushi and unique and colorful rolls and sometimes will incorporate whimsical designs such as dragonflies onto the roll plate. “I like this location. I have many friends here and I love making sushi,” Zhu says. He particularly enjoys creating with his hands and singles out salmon as his favorite sushi to create. The pumpkin is the ultimate Octobericon; a well-known symbol of the harvest. The name for this fun fall fruit derives from the Greek word “pepon,” meaning “large melon.” Though these bundles of autumn orange are often reserved for Halloween, there are several uses for the pumpkin other than Jack O’ Lanterns or festive fall decorations. In fact, the pumpkin is a versatile fruit full of nutrition and history. Pumpkins are the fruit of winter squash, usually of the cucurbita pepon variety, which also include cucumbers and cantaloupe. Large, round, and brightly-colored, these fruits are believed to be native to North America. The first evidence of pumpkins popped up in 7000-5500 B.C. Mexico. Fast forward a few thousand years to colonial times where Native Americans used pumpkins not only for food, but medicine 60

and material. During this period, the pumpkin was sliced thinly, roasted over a fire and flattened to make mats. The seeds were used for their medicinal properties. Colonists would cut the top of the fruit, remove the seeds and fill it with milk, spices and honey. This was the inspiration for the traditional American treat, pumpkin pie. Today, pumpkins are grown on nearly every continent and remain a popular crop in America, producing more than 1.5 billion pounds of the fruit each year. Although varieties differ in color from white to yellow and green, pumpkins get their orange color from the abundant amount of orange pigment that they contain. They contain nutrients and antioxidants such as lutein and alpha and beta carotene, which produce Vitamins A, C and E. These vitamins are essential for good eyesight. Research suggests that these same vitamins can help fight lung and tooth cavity cancers.

Because these fruits are also rich in dietary fiber, act as a natural weight-loss aid, and are low in calories and saturated fats, they are recommended by dieticians for controlling weight and cholesterol— not only in humans but animals as well. Pumpkins and others within the squash family are good sources of minerals like copper, phosphorus, calcium and potassium. In addition, the seeds of the fruit are full of protein, amino acids, fiber and mono-unsaturated fats necessary for a healthy heart and brain. ‘Tis the season for everything pumpkin inspired. With so many different tasty uses for this fruit, the options are endlessly mouthwatering. Make sure to enjoy your pumpkins to the absolute fullest. Spice up your typical meals by putting pumpkins in a variety of hearty recipes, from soups to pastries, pie, and even beverages. Each bite will fill you with the taste of autumn. VLM


Pumpkin No-Bake Energy Bites INGREDIENTS:

8 oz. (about 1 packed cup) chopped dates • 1/4 cup honey • 1/4 cup pumpkin puree • 1 tbsp. chia seeds or flax seed • 1 tsp. ground cinnamon • 1/2 tsp. ground ginger • 1/4 tsp. ground nutmeg • Pinch of salt • 1 cup old-fashioned oats (dry, not cooked) • 1 cup toasted coconut flakes • 1 cup toasted pepitas (pumpkin seeds) DIRECTIONS:

1. Combine the dates, honey, pumpkin puree, chia (or flax) seeds, cinnamon, ginger, nutmeg and salt in a food processor, and pulse until smooth and combined. (For extra sweetness, add white chocolate chips!) 2. Transfer the mixture to a large bowl, and stir in the oats, coconut flakes and pepitas until evenly combined. Cover and refrigerate for at least 30 minutes. 3. Once the mixture is cool (and easier to work with), use a spoon or cookie scoop to shape it into your desired size of energy balls. (Ours were about 1-inch in diameter.) Alternately, you can line a small baking pan with parchment paper and press the mixture evenly into the pan, let it cool, and then cut into bars. Pumpkin Cheesecake Shooters INGREDIENTS:

3 (1.5 oz. total) whole chocolate graham crackers • 4 oz. 1/3 fat cream cheese, softened • 1/2 cup pure canned pumpkin • 1 tsp. pure vanilla extract • 3 tbsp. dark brown sugar, unpacked • 1 tsp. pumpkin pie spice • 1/4 tsp. nutmeg • 1/4 tsp. cinnamon • 8 oz. light whipped topping DIRECTIONS:

1. Crush graham crackers in a food processor. Set aside. 2. In a large bowl, beat the cream cheese until smooth with an electric mixer. Add the pumpkin, vanilla, sugar, pumpkin pie spice, nutmeg and cinnamon. Beat until well combined and creamy. Use a spatula to fold in 5 oz. (1-1/2 cups) of the whipped topping; combine until no streaks remain. Place in a piping bag or Ziplock bag with a corner snipped off. 3. To assemble: Sprinkle 1/2 tsp. of graham cracker crumbs on the bottom of each shot glass. Pipe a layer of pumpkin cheesecake onto the graham cracker crust (about 1 tbsp.) followed by a layer of whipped topping. Repeat a second layer and finish with another sprinkle of crumbs. MY BEST FRIEND IS A DOG BY LINDSEY RODRIAN

I think Henry Wheeler Shaw said it best... “A dog is the only thing on earth that loves you more than he loves himself.” Growing up, we had a family Sheltie and I became a “dog person” the moment my father brought him home in a perforated box. Some children outgrow interest as their pet outgrows the undeniably precious puppy phase, but my love for Max was steadfast as he accompanied me through high school and college until passing away at an old age. I’ve heard my father cry maybe a handful of times, and when he called to tell me the news, this was one. With my childhood dog romping through endless rows of fire hydrants in doggy heaven, my heart had room for another companion. Through friends, I heard of an adult mixed-breed receiving minimal attention from his current owners. When I met with them, the dog’s somewhat malnourished frame and loving 66

eyes immediately melted me and I took him home. And Indo is his name-o. I’ve got to say, as the best friend to a 25-year-old single female (me), Indo wears more hats than your average BFF (and sometimes holidaythemed bandanas and costumes, too). I’ve never truly understood an unconditional love, as I have no children, but adopting an abused, adult dog taught me many things, with love being the greatest. I don’t doubt the novelty in picking out a purebred puppy, meeting the mother and knowing your new dog’s birthday. But, there’s just something about saving a life and watching that life flourish as you reestablish trust, confidence and quality of life. There is just something about the way Indo so humbly accepts his spoiled rotten lifestyle that lets me know he appreciates it, too. Don’t get me wrong, our life together isn’t just dog bones and long walks—we’ve

faced some hurdles in our time. Indo’s neglected past influenced some pretty severe and random traits that took years of dedicated training to truly overcome. He was a loving, calm and obedient dog indoors. But, take him outdoors or somewhere new and you’ve got an extremely un-socialized, scared and seemingly aggressive dog lunging at bikers and shaking excessively throughout any car ride. So today, as he walks calmly by my side and literally jumps for joy when I ask if he’d like to go in the car, I find pride in reminiscing about the almost uncontrollable sixty-pound dog that once dragged me down the street and made me cry. His human-like demeanor and dynamite personality brighten all of my days and encourage me to be active and spend time outdoors, all while coexisting with me in the sweetest ways. Whether I’m laughing at farts, being greeted by the world’s fastest, wagging tail, or being sat on the moment I sit on the couch, the respect and love he shows is so appreciative. Plus, anytime I ask him if an outfit makes me look fat, he always says no! I never felt such a connection to Shaw’s old English quote until I unknowingly took on the task of rehabilitating and learning with this dog. If I wake up with a giant pimple on my face or am leaving for a night out in the most fantastic dress, he treats me just the same. He loves every meal I cook, never acts as a backseat driver and thinks I am the coolest person in the room. But (seriously and simply) he is my best friend; keeping me active and adding to the fun of weekend getaways, hikes and brunches. From one dog lover to another, I encourage anyone looking for a sweet, rewarding companion to adopt a dog from a rescue or shelter. Some cases require more attention than others, but I can assure you there is a plethora of adoptable, trained pups looking for love and a second chance at life (alongside more heartbreaking cases with the sweetest demeanors.) As they say in the rescue world, “Who saved whom?!” VLM
