DELICIOUS AND DELIGHTFUL

F

or me, the holidays are all about the pie. From pumpkin and apple at Thanksgiving to chocolate cream and boysenberry at Christmas to lemon meringue on New Year’s Eve, a flaky crust with a delicious filling is my favorite part of the season. I happily (even eagerly) upend tradition when it comes to dinner entrees and sides, but on the dessert table, I expect there to be pie and plenty of it — ideally in a wide variety of flavors. So, for this year’s traditional roundup of winter recipes, we decided to focus on pie. Leslie Arnette of The Bread Box (pictured on our cover) graciously shared some of her favorite concoctions with us, including a wonderful savory option that would be great for brunch. Most of her offerings feature a delectable, buttery shortbread crust rather than the usual rolled-out pie dough. So I guess that makes them more “tart” than “pie.” But they’re so attractive and scrumptious (and easy to bake to boot) that I’ll allow it. There’s room for lots of different creations under the pie-brella.

The city of Camarillo is excited to celebrate the season with its annual Christmas Parade, Santa’s Village, the Polar Bear Plunge, etc. — all canceled in 2020, all eagerly anticipated in 2021. We take a look at what the Pleasant Valley Recreation and Park District has in store in About Town. Another place getting into the spirit of things is Moorpark College, in particular America’s Teaching Zoo. Lights, music and more are being offered throughout the month, making this a great time to see one of Ventura County’s most unique resources. We talk about the founding of the zoo, the animals in its care, the valuable training students receive and more in Profile. Adorable animals, Santa Claus and celebration, parades and pie: It’s going to be a merry month indeed! I hope all of you are able to enjoy the festivities, fun and flavor — now and in the year to come!

Any day with pie is a day of celebration. But there’s more than just pie (and tarts) to celebrate this month. It seems to be an extra joyous December, as many communities are resuming some of the entertainment and events that used to make this time of year so special. CHILD DEVELOPMENT CENTER OPEN HOUSE, VENTURA EASTERSEALS SOUTHERN CALIFORNIA Photos by Reggie Ige

n Wednesday, Nov. 3, Easterseals Southern California held an Open House in celebration of the official opening of its newly renovated and expanded Child Development Center in Ventura.

The newly renovated space includes classrooms, a computer lab for parents who may not have access to technology or the Internet, a reading gazebo, a stage for music and plays, and several interactive playgrounds. One major highlight is the Garden of Eatin’, a garden, greenhouse and outdoor kitchen where kids can grow plants and produce, learn healthy eating habits and explore hands-on food preparation. The project was done with federal funding from the Head Start program, monies from the California Department of Education and community support from individuals and corporations. “Children receive rich learning experiences that are meaningful and culturally relevant,” said Regional Director Anna Izaguirre. “Our outdoor learning environment exposes children to Science, Technology, Reading/ Relationships, Engineering, Arts and Math (STREAM). We work with our local community and are able to provide enrichment classes including music, dance, cooking, gardening, pottery and healthy eating. The learning that happens indoors is also enhanced outdoors in a fun and engaging manner.”

The center serves 168 kids ages 0 to 5 with Early Head Start and other preschool services that are free to income-eligible families. fter a 2020 Christmas season that was spoiled by COVID, the holiday celebrations for 2021 in Camarillo are back. The music, the lights, the decorations, even a brisk “polar plunge.” Like treats on a family table, they are all scheduled and waiting to be enjoyed.

LIGHTING OF THE CHRISTMAS TREE

Let’s start with the lighting of the Christmas Tree in Old Town. Long a community tradition, last year pandemic restrictions on public gatherings led to the event being canceled, and for a while, there was some question as to whether it would return. But thanks

to the support of the Camarillo City Council, the tree, featuring brand new commercial-grade bulbs, will be lit starting Wednesday, Dec. 1 through Friday, Jan. 28 at Dizdar Park in Old Town. And keep your ear to the ground as the Old Town Association plans additional events downtown. The tree lighting will kick off a series of events in the city.

Do you still believe in Santa? Would your kids like to personally write to Santa? The Pleasant Valley Recreation and Park District offers several ways to write to Kris Kringle. Through Dec. 13, the district will put out its giant red mailbox to receive Letters to Santa. SANTA’S VILLAGE at the Pleasant Valley Community Center gives kids of all ages the opportunity to meet with ol’ St. Nick himself.

Bring the letter to the Community Center and drop it in the giant red mailbox (you can’t miss it!) near the park district’s administrative office. Include your name and address on the letter or envelope so Santa can reply. No postage is necessary, but Santa will not mind if you promise to leave him cookies on Christmas Eve. In addition, take a photo of you or your children placing the letter in the mailbox and share it with members of the park district. Christmas Parade, Dec. 11, 10 a.m. This year the parade is titled #Christmas Parade Community All-Stars#. The parade itself is scheduled for Saturday, Dec. 11, starting at 10 a.m. It will begin at Temple Avenue and travel down Las Posas until it turns left on Carmen Drive and ends at the Pleasant Valley Community Center. The parade will feature bands, floats, automobiles, horses and an appearance by Santa Claus. Rather than choose a grand marshal, the parade will honor important people in the community known as community all-stars. If you plan to be in the parade, you can enter a community all-star name on your parade application form. Think of someone who has contributed to the local community. It can be someone from your family, your city, or even someone you know in the area who has made an important countywide or national contribution: a coach, a teacher, a family member, someone from the military, a music instructor, a business person, etc. The choice is up to you. After attending the parade, bring your family and friends for a leisurely stroll through Santa’s Village, located at the Pleasant Valley Community Center. The village is open from 9 a.m. to 2 p.m. You can shop, snack on some tasty treats, or pick up some valuable information from local vendors. Bring your children and let them 8

Annual Christmas Concert On Sunday, Dec. 12, at 4 p.m., come join the Camarillo Community Band for some free holiday music. The band, which has been providing free concerts since 1986, features approximately 120 members from all walks of life. The band’s purpose is to provide an opportunity for local musicians to continue their love of performing music in an enjoyable environment and to provide an entertaining community concert experience for local residents of Ventura County. In addition to Christmas music, the band regularly performs during the summer and at the Annual Memorial Day Service at Conejo Mountain Memorial Park.

After an abundance of holiday celebrations, what could be more fitting than a little New Year’s Day chill? On Saturday, Jan. 1, 9-11 a.m., the Pleasant Valley Aquatic Center invites the hardy and brave to participate in their annual Polar Bear Plunge and Hot Cocoa Mixer. The event starts with a walk/run through the park (choose from 1k, 3k and 5k courses) followed by an icy plunge into the pool. After all this, you can join the “bears” on the pool deck and warm up with some hot chocolate. The cost is $5 per person. Chocolate Hazelnut Tart Makes one 9-inch round tart. Shortbread Crust • 1 cup all-purpose flour • 1/4 cup confectioners sugar • 1/2 tsp salt • 1/3 cup butter, slightly cooler than room temperature • 1 egg yolk • 1 ½ tablespoons milk • 1/2 cup hazelnuts • 1 teaspoon vanilla Filling • 1/2 cup semisweet chocolate chips • 1/2 cup milk chocolate chips • 3/4 cup heavy cream, room temperature • 8 ounces cream cheese • 1/2 cup whole milk • 3 yolks • 1/4 cup Nutella Garnish • 1/2 cup whole toasted hazelnuts • 3 chocolate Pirouette cookies, chopped (optional)

Chocolate lovers are almost guaranteed to skip that extra helping of mashed potatoes to make room for this unforgettable dessert, which Arnette explains was inspired by her daughters (ages 9 and 5). “Brioche toast with Nutella is a favorite of my kids,” she says. Rich chocolate, crunchy hazelnuts, a shortbread crust and a touch of cream and Nutella . . . this elegant tart is the very definition of decadence. Make the crust: - Preheat oven to 350 degrees - Pulse flour, confectioners sugar, salt, and butter in a food processor. - Add egg yolks, milk and vanilla and pulse until combined. Transfer to bowl. - Grind hazelnuts in a food processor. - Mix the ground nuts lightly in with other ingredients, using your fingers, until a dough is formed. Shape into a disk and refrigerate for 1 hour. - Roll out disk and press into a 9-inch tart pan. Freeze for 20 min. - Bake tart shell at 350 degrees for 15 minutes. Poke any big bubbles with a fork. - Set aside. Prepare the filling and bake: - Start the filling by heating heavy cream in a saucepan until it almost boils. - Pour hot cream over chocolate chips and whisk to form a ganache. - Blend cream cheese in a food processor until soft. Add ganache, Nutella and milk. With the mixer on, add egg yolks one at a time. - Transfer filling to the baked tart shell, and spread toasted hazelnuts evenly over the top. - Bake at 350 degrees for about 20 minutes or until set. - Cool, garnish with cookies (if desired) and serve.

Maple Pecan Cheesecake Makes one 10-inch cheesecake. Pecan Shortbread Crust • 2 cups shortbread cookies • 1 ½ cups pecans • 6 tablespoons (3 ounces) butter Filling • 1 pound plus 12 ounces cream cheese (room temperature) • 5 ounces pure maple syrup, bourbon-aged if available • 1/2 cup brown sugar • 1 teaspoon maple extract • 1 teaspoon vanilla • 12 ounces sour cream (room temperature) • 4 eggs (room temperature) • Juice of ½ lemon Caramel Pecan Topping • 1/2 cup brown sugar • 1 tablespoon water • 1/4 cup unsalted butter • 1/2 cup heavy cream • 1/2 teaspoon smoked sea salt • 1/2 cup toasted pecans

“Pecan pie is my favorite pie,” says Arnette, who found a different way to celebrate those flavors. Maple syrup, earthy pecans and smoked sea salt make this not-so-ordinary cheesecake as warm, sweet and inviting as the holidays themselves. Arnette likes to use a bourbon-aged maple syrup for that extra element, but any quality, pure maple syrup will do. Two things to note: 1) The cooked cheesecake should sit overnight in the refrigerator before the topping is added, and 2) The cream cheese, eggs and sour cream should all be at room temperature when you’re ready to prepare the filling. Make the crust: - Preheat oven to 350 degrees. - Line the outside of a 10-inch spring-form pan with two layers of foil so that water doesn’t get in when you bake in a water bath. Place a circle of parchment in the pan and spray with oil. - Grind shortbread cookies in a food processor. Pulse pecans separately until coarsely ground. - Mix cookies and nuts together with melted butter and press evenly into the pan. Prepare the filling: - Using a hand or stand mixer, beat cream cheese until soft. Add brown sugar and maple syrup. Mix in sour cream and scrape down the bowl to make sure it is incorporated. - Add eggs one at a time, scraping bowl periodically. Add vanilla, maple extract and lemon juice and mix until incorporated. - Poor filling into pressed crust. Bake the cheesecake: - Place the filled springform pan into a water bath: Place it in a larger pan that has been filled with hot water. The water should come about halfway up the outside of the springform pan. - Bake the cheesecake, in its water bath, at 350 for about 1 hour and15 minutes or until the cheesecake moves as one mass when jiggled. - Let cool to room temperature and refrigerate overnight. Prepare and add the topping: - Melt brown sugar and water in a saucepan until it starts to look darker, but before it burns. Watch closely. - Turn off heat and add butter, heavy cream and sea salt. Stir quickly with a metal whisk. - Add toasted pecans and bring mix back up to a boil for one minute, stirring constantly. - Let the cooked topping sit at room temperature until it’s ready to be used. Gently warm it back up and pour over cooled cheesecake. - Cut and serve.

Pear Almond Rose Tart Makes one 9-inch round tart. Shortbread Crust • 1 cup all-purpose flour • 1/4 cup confectioners sugar • 1/2 teaspoon salt • 1/3 cup butter, slightly cooler than room temperature • 1 egg yolk • 1 ½ tablespoons milk • 1 teaspoon vanilla Frangipane • 1/2 cup butter, room temperature • 1/2 cup sugar • 2 eggs • 2 tablespoons all-purpose flour • 1 ½ cups almond meal • 1/2 teaspoon salt • 1 teaspoon almond extract • 1/8 teaspoon rose extract, optional 2-3 ripe pears (preferably red-skinned), sliced thin

The prettiest flower at the feast, and you can eat it, too! Arnette developed this recipe for her husband, who loves the flavor of almond. Frangipane (almond custard) is decorated with ripe pears (red ones are the best) sliced and arranged in a flower pattern to turn the entire tart into a lovely blossom. “I added the rose flavor to accentuate the idea of the rose,” says the chef, who notes that it is completely optional. If you do choose to use it, only a wee bit of rose extract — just ⅛ of a teaspoon — is necessary to achieve a delicate perfume and hint of floral flavor. Make the crust: - Preheat oven to 350 degrees. - Pulse flour, confectioners sugar, salt, and butter in a food processor. - Add egg yolks, milk and vanilla and pulse until just combined. - Transfer the mixture to a bowl and mix lightly with fingers until dough is formed. Shape into a disk and refrigerate for one hour. - Roll out the disk and press into the tart pan. Freeze for 20 minutes. - Bake the tart shell at 350 degrees for 15 minutes. Poke any big bubbles with a fork. Set aside. Prepare the frangipane filling: - While the crust cools, cream the butter and sugar on high speed in a standing mixer (or with a hand mixer) until fluffy. - Add eggs one at a time, scraping down the bowl, and beat on medium-high speed until the mix looks cohesive. - Add almond meal, flour, salt, almond extract and, if desired, the optional rose extract, and beat on high until light and fluffy. Assemble and bake the tart: - Spread the frangipane evenly in the cooled tart shell. - Slice thin two or three ripe red pears and arrange slices in a rose pattern on top of the tart. - Bake at 350 degrees until frangipane is set, about 30 to 40 minutes. For added color, you can broil on low for less than a minute, keeping an eye on it, until the frangipane is lightly browned. - Keep refrigerated until two hours before serving. Best served at room temperature.

Italian Christmas Frittata Makes one 12-inch round frittata. Base • 8-10 medium red potatoes • 1/2 large or 1 small red bell pepper • 1 pasilla chile • 1/2 medium sweet white onion • 12 ounces hot Italian sausage without casing • Salt and pepper to taste Filling • 6 eggs • 3 ounces heavy cream • 1 tablespoon stone-ground prepared mustard or dijon • 1 teaspoon fresh oregano, chopped • 1/2 teaspoon dry sweet basil • 1 teaspoon sugar • Salt and pepper to taste “Crust” • 1 ½ cups grated fresh Parmesan

Savory and not technically a pie or tart, but a favorite in Arnette’s household nonetheless. “I consider this pie: a starch, a filling, fruits or vegetables. Whatever you want to call it, it is a beautiful Christmas morning centerpiece reminiscent of holidays at my grandparents’ house, where we would have Italian sausage and potatoes cooked with onions and bell peppers. Christmas morning, the leftovers would all get cooked with eggs.” Whether you’re serving this frittata for a holiday brunch, as a side dish for a traditional feast or as a meal on its own (pair it with a leafy green salad), it’s sure to please. The secret to success here is having a good nonstick pan to cook the ingredients in, and making sure you spray it well with oil. To remove the frittata from the pan, Arnette uses a “shake and shimmy” method, but says that a rubber spatula can be helpful as well. Note: This recipe calls for hot Italian sausage, but you can substitute sweet Italian sausage (or use a mix of both) if you prefer something less spicy. Make the base: - Preheat the oven to 400 degrees. - Cut the potatoes in half. Use a mandolin or sharp knife to very thinly slice red pepper, pasilla chiles, potatoes and onion. - Spray olive oil on the bottom of a 12-inch round nonstick oven-safe saute pan and sprinkle a liberal amount of salt and pepper. - Starting from the outside, place a ring of potato slices, skin side up, in an overlapping pattern, covering the sides and the bottom of the pan with the slices (similar to a Potatoes Anna). Alternate strips of pepper and onion in between the rings of potatoes. - Roll the Italian sausage into strips and arrange in rings as well. Salt and pepper the top of the potatoes. - Bake at 400 for 40 minutes or until potatoes are tender. Prepare, add and bake the filling: - While the base bakes, mix up the custard by whisking eggs, cream, mustard, fresh oregano, dried basil, sugar, salt and pepper to taste. - When the 40 minutes are up and the potatoes are tender, pour custard over the pan with the sliced vegetables. If the custard comes over the potatoes, pull up some of the slices with your fingers so that you can see the beautiful rose pattern when it is done baking. - Return to the oven and bake at 400 degrees until the custard is set, about 20 more minutes. - Cool and remove to a separate plate. Make the Parmesan “crust”: - Spread Parmesan cheese in an even layer on a parchment-lined sheet pan in a circle slightly larger than the size of the saute pan and bake at 400 degrees until it begins to brown. Watch carefully. - Carefully remove Parmesan round from parchment while still hot and place in the nonstick pan used for the frittata. Return to the oven to crisp. This will be the crust. - When ready to serve, place the frittata back into the nonstick pan on top of the Parmesan crust and return to the oven to crisp on the bottom, about 10 minutes, and serve. v

CREATURES AS O America’s Teaching Zoo at Moorpark College prepares students for careers in exotic animal care. BY MARINA DUNBAR

ne of the many amazing aspects of living in Ventura County is our rich diversity. Of course, a Ventura native can always point to the diversity of our cultures and people, but one may not be aware of the diverse range of wildlife that have taken up residence here. America’s Teaching Zoo, an extension of Moorpark College, is home to some of the most exotic animals found anywhere in California. Tucked away in the hills of the campus is the nation’s premier educational program for the management of exotic wildlife. When first entering the zoo, visitors are immediately greeted by a local favorite. Clarence the 98-year-old Galapagos tortoise is a host of sorts for the zoo, welcoming guests with his rugged yet genial presence. As the oldest and wisest of the animals, Clarence is a perfect symbol for the novelty and resilience of students and staff of the Exotic Animal Training and Management (EATM) program.

ZOO ORIGINS Mara Rodriguez is perhaps the person most responsible for instilling these values of resilience into the EATM program. She has been a part of the zoo’s family for several years and has worked her way up to become the development coordinator. “I started my journey with America’s teaching zoo as a student in the EATM program,” explains Rodriguez. “I began teaching here the very first year America’s Teaching Zoo opened to the public on the weekend. That was my first job, I was 21 years old and I have been

here ever since. I think because I grew up here and my love for the college and the animals and the students, it’s very fitting that I am now the zoo development coordinator. I love to fundraise and help this community grow, and I want to put it on the map where it should be.” Rodriguez has always had a love for animals and looking after others, so a career that combines wildlife training with educating students seems to be a perfect match. “I found that I really enjoyed the caretaking aspect of it. There was a part of me that really wanted to be a nurturer even at a really young age. I just gravitated towards that aspect of animal care.” And a gravitation towards animal care is something that many students may not even realize they have until they get to work in a hands-on program such as EATM. But once they discover that passion, it can only grow from there. The origins of the teaching zoo are proof that a love for animal care is a lifelong calling. The first step towards EATM began in 1971 with William “Briz” Brisby, a biology instructor. He started a single class at Moorpark College called Wild and Exotic Animal Studies, which emphasized the training process of animals as well as behavioral education. As interest for the class increased, the college recognized the need for a program specifically designated for this approach to wildlife studies. “By 1974, that one class became the major for exotic animal training and management,” says Rodriguez. “Since then, it has continued to grow and continued to be a place where animal care professionals get their training…What’s so unique about this program is that the zoo itself is the classroom. The creatures are the teachers. It’s a zoo run by students and all of us staff are here to be champions for their future.”

A N E XOT I C P RO G R A M The students who have the opportunity to work and learn in the EATM program are truly fortunate. One will not find a program quite like this one anywhere else in the country. While there are several other college programs focused on animal studies, few of them are as directly hands-on when it comes to the animals, and even fewer focus on the training aspect of such a diverse range of exotic creatures. “There is a similar accredited program that focuses 8

on zookeeping in Gainesville, Florida,” notes Rodriguez. “There are similar majors, such as in animal behavior and animal science, but this is truly the only zoo program where we focus on animal training and husbandry with this variety of animals. We have over a hundred different species here at the zoo, so our students are learning from the widest variety of animals we can possibly put in front of them. “The EATM program is really all-encompassing for our students. It’s made for people who are looking to work in the animal care profession. The day starts at 6:30 with a roll call. If a student is late, they get demerits. We want to instill accountability, punctuality, the value of hard work so we have them start by cleaning. That’s how every day starts, by picking up after the animals, then they feed them, then they go to class. Some of the classes are in a classroom, but some of them are out here in the zoo. We might be giving a tour to an elementary school class and that will be part of our students’ education.” This emphasis on a strong work ethic is what truly makes the program stand out beyond its range of unique animals. Just like with the other majors of Moorpark College, America’s Teaching Zoo functions to prepare its students to achieve their ambitions and forge lifelong careers

doing what they feel most passionate about. If there is a job that requires working with animals, the EATM students are ready for it. “Our students are really equipped to work in a broad range of careers within the animal profession. Some of them start out as zookeepers and will work their way up to senior keepers and zoo directors. We have some students that go on to work for service organizations such as Guide Dogs of America. Some of our students go on to train all of the animals you see in commercials, movies and television. And others go into wildlife education where they may start a small company that takes animals to churches and assemblies, schools and summer camps. They educate the next generation of animal lovers.”

project. Fundraising for the project began in 2017, and thanks in large part to Rodriguez, the zoo has met its goal to begin construction of the new, innovative habitat for two Bengal tigers, Neil and Karma. “We’re really happy to add Rajah’s Retreat. It’s a really upgraded, modernized exhibit here at the entrance of our zoo,” says Rodriguez. “We’re going to have both Neil and Karma in this exhibit so that the community can watch them play together. We have some other recent additions…We just got a new skunk and ferrets. We had a few new primates join us within the last year as well as a bobcat. We want to make sure we have animals that we can care for their entire lives and that can offer our students a variety of species that they can gain experience from.” Rajah’s Retreat is expected to be completed in June of 2022, just in time for Neil and Karma to enjoy their summer vacation. The effort and resilience towards caring for and about animals is at the heart of America’s Teaching Zoo. It is not easy to raise the funds and put in the hours necessary to look after so many exotic creatures, but it is clear that the work could not be more rewarding for the participants. “The ultimate goal of this program is to teach our students the most modern concepts and ideologies in animal care,” Rodriguez explains. “Also, to teach them animal training as a tool for building a relationship with an animal and connecting that animal to other people. We want to help our students achieve their dreams, go find a job and be happy for the rest of their lives doing something they love.” It cannot be overstated how significant a feature America’s Teaching

Zoo is to the Ventura County community. There is no other program like this anywhere. The presence of these exotic animals and those who train them add substantially to our collective educational and cultural identity. Residents of Ventura County and beyond can support the EATM program by donating through the zoo’s website where a donor even has the option to sponsor a specific animal of their choice.
