he Achieving a Better Life Experience (ABLE) Act provides tax-advantaged savings programs for eligible individuals with disabilities. Funds from these 529A ABLE accounts can be withdrawn tax-free to help designated beneficiaries pay for qualified disability expenses. This means contributions can be made on behalf of, or by, a disabled person into a plan that grows tax-deferred, and distributions for disability expenses are tax-free; essentially a Roth IRA or 529 Education plan for people with disabilities! Qualified expenses include education, housing, transportation, employment training and support, assistive technology and personal support services, health, prevention and wellness, financial management and administrative services, legal fees, expenses for oversight and monitoring, funeral and burial expenses, and others! Perhaps one of the best benefits of an ABLE plan is that it gives the beneficiary their ability to save money without eliminating the ability to receive Supplemental Security Income (SSI) and Medicaid. Benefits are suspended if the account reaches $100,000, but once the account falls back below $100,000 the

payments will resume. Changes to ABLE Plans as a result of the Tax Cuts and Jobs Act include: » Increasing the amount of contributions allowed » Allowing the beneficiary to claim the Savers Credit for contributions made to the account » Allowing for rollovers in limited amounts from a 529 plan

The beneficiary may also be able to take a tax credit for eligible contributions to an ABLE plan. The maximum credit is 50% of the contribution (the percentage is based on your AGI). One last piece that makes ABLE plans so great is that it alleviates one fear investors have of 529 plans: the fear that your child (or grandchild, etc.) will not need those funds for education. Now if there is a disabled individual in your family the 529 plan can be rolled into the ABLE plan and be used for qualified disability expenses. This eliminates the risk that you will have to pay a penalty on the earnings from a 529 plan if there is not a qualified education need for the funds. Contributions to an ABLE account were capped at $15,000 per year (the gift tax limit), but now if the beneficiary is employed, they can contribute their compensation up to the poverty line for a one-person household. This means they can contribute an additional $12,760 if they are working, a total of $27,760 annually!

Perhaps some of you are already off on adventures — satisfying wanderlust, rescheduling plans and reconnecting with loved ones too long missed. No matter what excursions you do (or don’t) have on your itinerary, know that you can travel far and wide via the wonderful restaurants found within our county borders. And thus, Ventana Monthly is pleased to present this month’s theme, the World on a Plate. Time and space and budget mean we can’t journey as far as we might have liked . . . kind of like regular travel. But I still think we’re giving you a decent tour through the area’s options for international cuisine. And what better way to start than with coffee? Bonito Coffee Roaster (Cover Story) is a wonderful Ojai outfit, run by an owner born and raised in Nicaraguan, who understands coffee culture and flavor deep in his bones: its growing, harvesting, roasting and the way the final product acts as a glue to create communities. He brings that extensive knowledge and experience to every bean he imports (from farmers he knows personally) and roasts so that Bonito Coffee can produce one of the finest farm-to-cup brews in the area. Also in Ojai you will find fine Italian restaurant Nocciola. If you’re picturing pizzas and meatballs, think again: Chef Pietro Biondi takes as his inspiration the sophisticated flavors of his native Piedmont, in north-

west Italy, and spins them through a kaleidoscope of locally sourced ingredients, California-inspired fusion and his own creative passions. The result is extraordinary cuisine where every dish is a masterpiece of texture, color and taste. Leave the Ojai Valley for the coast of Oxnard to find yourself at Moqueca in Channel Islands Harbor. The traditions, flavors and energy of Brazil are deliciously alive here, singing both on the platters of savory seafood, meat and pasta dishes (prepared by its Brazilian-born chefs) and in the very air of the restaurant itself, where smooth Brazilian jazz and cool ocean breezes dance a succulent samba.

THE WAYPOINT WAY Vintage style, low-key luxury and wonderful wine make for a surprisingly indulgent home away from home.

As the sun sets over the Pacific Ocean near the Channel Islands, light glints off of the silver vintage trailers at Waypoint, Ventura. Highlighted in soft pinks and brash oranges, the trailers seem otherworldly — more like a hangar for spaceships out of a steampunk vision of 2021 than the post-pandemic one. But post-pandemic it is, and everyone wants to get out of town, or at least their home, and they’re not yet ready to go too far. What’s needed is a true waypoint, defined as a place on a route of travel, a stopping point, or a place where a course is changed. The pandemic changed the course of many, and this original lodging concept just may be the best place to course correct.

V I N TAG E C H A R M Waypoint, located just off the 101 within walking distance of the Ventura Pier and downtown, offers lovingly refurbished and repurposed vintage 1950s Airstream travel trailers as rooms for rent. And just to be clear, these aren’t anything like the Roger Miller song:

Trailer for sale or rent Rooms to let, 50 cents No phone, no pool, no pets While there’s no pool at Waypoint, the Pacifc Ocean is a quick walk away, everyone has their own cell phone anyway, small dogs are allowed in some vintage trailers, and certainly allowed in your own trailer if you bring one. In these high-end trailers, you’ll absolutely feel like “The King of the Road.” Or in my case, “Queen of the Vineyard,” since I stayed in the 1973 “Vintner” trailer and we tasted a lot of excellent local wine! Frequently asked question: Can you bring your own trailer or van to the Waypoint Vintage Trailer Hotel? Yes! In addition to offering trailers for rent for the night, you can rent a space for your own trailer or RV as long as it’s groovy and 31 feet long or less. It doesn’t have to be self-contained either — hot showers, flush toilets and a lounge area are available to everyone at Waypoint. But it does have to fit the retro vibe of Waypoint, making the trailer park seem more like a stroll through a vintage VW van or trailer car show. Sites with full hookups are $75 a night during the week, $95 on weekends. I talked to a couple staying in their cute Casita trailer. They lived in Ventura County for 30 years and retired to New Mexico. They plan their trips back to visit the grandkids around availability of

CASUAL CHIC Beautifully restored and maintained Airstream trailers give Waypoint its groovy good looks. a campsite for an extended stay at Waypoint. They love the convenient location, and their 13-foot trailer fits right in. Trailers in the “hotel” come in two models, luxury and vintage. The website has plenty of photos to help you choose, as well as a brief history of the trailer. The Airstream I stayed in was found outside of Phoenix, Arizona, and Waypoint’s owners completely remodeled the interior. In keeping with the Vintner theme, it’s been lined with cork with red accents and fitted out with a beverage fridge. The bathroom is surprisingly large and full of light, and the queen-sized bed has a very comfortable and organic Spencer’s mattress with lovely linens. On the bedside tables I found muslin bags with earplugs and a silky eye mask. Prices per night per trailer range from $200-$350 depending on the size of the trailer, the day, and the date.

eries where you can purchase wine for your evening meals: Ventura County has vineyards, wineries and tasting rooms aplenty, and it’s not far to tasting rooms in the city of Santa Barbara. Grapes from the Santa Barbara County vineyards, including the famed Sta. Rita Hills AVA, supply fruit to local wineries such as The Ojai Vineyard and Topa Mountain Winery. For our meal, we selected wines from smaller, family-owned and sustainably grown vineyards. If you have a larger group, it can be fun to compare the wine from the same grape made by different wineries. We chose syrah from three producers in the Sta. Rita Hills which we knew would pair well with the burgers. For the oysters and the tuna, we went with chardonnay from Santa Paula’s Clos des Amis and one from Sta. Rita Hills made by Adam Tolmach at The Ojai Vineyard.

2016 Clos des Amis Chardonnay, Olivelands Vineyard, Ventura County Aromas of rich butterscotch with apple and pear. Tart acidity with pineapple upside down cake, and a smooth, lovely finish. Excellent with oysters and marinated grilled tuna.

We brought our 1990 VW van with a tie-dye popup to experience the campground aspect in addition to a trailer. We discovered a drawback to Waypoint almost immediately after setting up our BBQ table to prepare locally ground burgers and local fresh tuna: no grilling allowed by the vintage trailer hotel rooms! Fortunately, Waypoint has set up a grilling area and there are two fire circles where the flame is lit daily from 6:30 p.m. to 10 p.m.; they even provide fixings for s’mores! And in the morning there’s free fresh-brewed coffee roasted by Ventura local Gayle Moore. For our feast, we picked up Wagyu beef burgers from Ventura Meat Company with fresh tomatoes and greens from Farmer and the Cook in Ojai, plus oysters and local yellowtail tuna from Ventura Fresh Fish (which we marinated in a teriyaki sauce). The oyster brought out a sweetness in the wine and the tuna was a perfect companion. 2019 Melville Pinot Noir Estate Sta. Rita Hills Sta. Rita Hills is famous for pinot noir and chardonnay, and this shows why. Color and aromas of raspberry with cherry cola; on the palate as well. Wonderful paired with pate and tuna, and over fried sweet potatoes. 8

2018 Melville Syrah Estate Sta. Rita Hills Maroon in color, this wine is all about big, bold flavors of black pepper and blue fruit ideal for standing up to the seared grilled burger with cheese and an organic tomato.

2018 Camins to Dreams Syrah Zotovitch Vineyard Magenta with a fuschia rim, this syrah is effusive with aromas of a eucalyptus forest. On the palate, black pepper, cherry cola, eucalyptus, with a finish that lingers of minerals and blueberry. Light and bright, this pairs better with the tuna. Try it with roast chicken!

2017 Clos des Amis Malbec South Mountain Vineyard Ventura County Blueberry danish, baking spices, violets and vanilla in the bouquet with fresh blueberries and boysenberries on the palate. The grippy tannins mellow with the burger.

2017 The Ojai Vineyard Duvarita Vineyard Santa Barbara County Duvarita is a biodynamic vineyard located closer to the Pacific than Melville. The color is a deep, dense plum with aromas of blue fruit, baking spice and incense. The vivacious palate is clean, fresh plums with a finish of blueberries. Pair with lamb, duck or burger. 2015 Topa Mountain Winery Syrah John Sebastiano Vineyard - Santa Barbara County After tasting these youthful syrahs, it’s fun to compare with an older one to see where they might go in a few years. Earthy,

T H E B E ST S’M O R E S The secret ingredient? Blueberries! Slide fresh blueberries onto the skewers between the marshmallows! And remember to slowly roll the skewer between your fingers, like a rotisserie, to achieve an even, golden caramelization of the sugars on the outside of the marshmallow, and get that soft, gooey inside that will melt the chocolate. If there’s a rock or grate to place your cracker with the chocolate on it while you roast your marshmallow, even better — heat from the fire will get a head start on the melting process.

ity of Ventura Mayor Sofia Rubalcava participated in the Ventura Really Really Free Market (RRFM) on the Fourth of July at Kellogg Park in West Ventura. Organized by the Ventura County chapter of the Democratic Socialists of America (DSAVC), the event brought the community together to share their talents and lightly used items with one another. Rubalcava shared her talents for Spanish translation and children’s storytelling. Other community members offered free workshops: yoga instruction with Sarah Aspell, a Privilege Walk with Nicollete Walker of Showing up for Racial Justice (SURJ), and a Medicare For All talk with registered nurse and activist Gina Currie. John Caravello hosted a collaborative art station, while Allen Chinn provided professional chair massages. Attendees also had the opportunity to participate in a tea ceremony with Taylor Buck and Julie Marie, seed plantings with Shannon and Tomás López, and more.

SAMBA OF MOQUECA A family business brings Brazilian cuisine to Oxnard and Thousand Oaks.

t is 6,400 miles from Vitoria, Brazil, to Oxnard, California. It is a much shorter distance from the kitchen at Moqueca Restaurant in Channel Islands Harbor to the hearts and appetites of its many loyal customers who in recent months have happily returned to one of their favorite dining locales. For Moqueca is a place whose Brazilian cuisine reflects the passion and uniqueness of its culture — and its proprietors. “We’ve made it through the bad times,” smiles co-owner Roberta Reis, who should know. Reis and her mother, Maria-Gloria Sarcinelli, opened Moqueca in 2008, at the start of a severe economic downturn, and not only survived but thrived. Now, Moqueca — which in 2016 added a second location in Thousand Oaks — has weathered the pandemic storm of 2020-21 and its business is again bustling. “We are so grateful,” says Reis, “for all the local support.” And why not? Not only does Moqueca offer authentic Brazilian cuisine, prepared by Brazilian chefs in a marina-side location with views of Channel Islands Harbor, but its atmosphere is both friendly and sophisticated: white linen tablecloths, soft romantic lighting and smooth Brazilian jazz. Credit Moqueca’s leadership, a transplanted family from the coastal city of Vitoria in southeast Brazil. The Oxnard location is run by Reis and her husband, Head Chef Andre Guerzet, while Moqueca Thousand Oaks is managed by Roberta’s brother Rodrigo and his wife, Chef Tatiana Favoreto, who previously did similar duties in Oxnard. Other family members are involved in all aspects of the operation, greeting and serving guests, and dashing in and out of the kitchen at lightning speed to bring their hungry customers traditional Brazilian fare with contemporary flair that delights the taste buds without overwhelming them. “Real Brazilian food is very simple, homemade and fresh, so that the flavors really shine,” explains Roberta. “And where we are from, there is such a wonderful mix of dishes Continued on page 24

that we have brought to give people a good, authentic flavor of what Brazil is all about.” That starts with the signature dish, moqueca, combining seafood (a choice of shrimp, lobster, sea bass, calamari and mahi mahi), onions, tomatoes, garlic, cilantro, olive oil and “urucum,” a Brazilian prickly red fruit. “The dark red seeds of urucum are used to make the ‘coloral,’ a traditional powder used as coloring and seasoning,” says Roberta. “Urucum is rich in nutrients, and is also responsible for the exotic color and rich taste of the moquecas.” A half-dozen varieties (including a vegetarian option) of Moqueca are offered, cooked and served piping hot in clay pots produced in Vitoria and ladled over rice. It comes in 8- or 16-ounce bowls perfect for sharing. Another key ingredient in all Brazilian cuisine is the yucca, an edible root used to thicken soups and sauces and served on its own as a starch. The local availability of fresh vegetables and seafood further enhances Moqueca’s array of colorful, appealing and spicy options. That includes an assortment of Brazilian appetizers, from Capa Santa (scallops on the half shell) to Paztelzinhos (Brazilian empanadas). Traditional entrees range from Picanha Grelhada (Brazilian steak with rice, beans and yucca fries) to Frangel Grelhado (chicken breast with a sundried tomato sauce, white rice, vegetables and fried plantains). Diners will even find Brazilian Stroganoff and several Italian offerings (ravioli, spaghetti bolognese and seafood fettuccine) that might surprise some. Those dishes, however, are nods to the Italian ancestry of the restaurant owners — and the fact that in their home state of Espírito Santo, two-thirds of the population has Italian roots. “My mom’s family is from the Veneto (the coast of northeast Italy),” says Reis, “and we had lots of Italian food growing up in Brazil. So we serve pastas with a Moqueca twist.” There is also an extensive wine list at Moqueca, but many diners opt

for the Caprinha (ky-PREEN-ya), Brazil’s national cocktail: lime, sugar and Cachaça, a distilled spirit made from fermented sugarcane juice. The ingredients are blended well and served over ice. (Writer’s note: It may look like a margarita, but one sip will convince you that a Caprinha is very much its own distinct and delightful creation.) Everything Mocequa serves, adds Reis, is “made from scratch — hors d’oeuvres, main dishes, side dishes and, of course, moqueca. Because when you’re doing any kind of national cuisine, the details are important.” That was evident when Mocequa was in its embryonic stages. But our friends who had tried some of our Brazilian dishes thought we should offer something more unique. ‘You have to offer authentic Brazilian cuisine,’ they told us. Let’s present what we know best to the world. He transforms them into dishes like vegetable lasagna featuring seven different types of greens, and his famous slow-roasted wild boar ragu served over homemade pappardelle. Whatever the dish, Perez says, “Nothing is overdone. Nothing compromises the flavor of the ingredients.” Peruse the menu and you will find fresh, thoughtfully made dishes that stand apart from the usual Italian fare, including quail ragu, rabbit ragu, lamb sausage and grilled Portuguese octopus, all homemade by Biondi. “We have a lot of dishes you don’t see,” Perez says. Nocciola’s menu changes seasonally to showcase the freshest ingredients available like black truffes, heirloom tomatoes and eggplant in the summer. mong Santa Paula’s many excellent features (a downtown with vintage style, beautiful homes, great museums and theatre) is its dining scene. People come from far and wide to sample the legendary cuisine and wines of Hozy’s Grill, dig into perfectly prepared burgers and shakes at The Summit Drive-In or find down-home comfort food (breakfasts in particular) at Flight 126 Cafe. Rabalais’ Bistro stands proud among these longtime favorites. It has an advantage over these other excellent eateries, however.

“You’re brand new to every place you are.” Living in military housing on base, she was surrounded by people like herself: transplants from other places, who were destined to move somewhere else after a few years. Thus, as Lippert explains, a welcoming spirit is common among military families. “We were greeted through hospitality,” she says. “Homemade soup, a pie, a casserole . . . I remember that growing up. Being an Army kid, I had a different connotation of home. Mom made wherever we lived a home.” Being able to create a home anywhere, and feeling compelled to make strangers feel welcome, is a big part of the Rabalais’ spirit. “The restaurant was birthed out of a desire to create a space for hospitality,” says Lippert. “And offer Southern comfort food.”

HOME AND HOSPITALITY TRACY AND DAVID Lippert, owners of Rabalais’ Bistro.

It’s also one of the few (and arguably the best) restaurants in the city to serve Cajun and Creole cuisine. “I was born in New Orleans,” says Tracy Lippert, Rabalais’ Bistro co-founder (with husband, David) and owner.

Lippert spent junior high and high school in the tiny town of Durham, near Chico, in Butte County, Northern California, and went to college in San Diego, where she met her husband, David. When they decided to marry and start a family, they began looking for a place where they could establish roots. “We both wanted a more rural environment,” Lippert recalls. They fell in love with Santa Paula, and moved there in 1999.

S O U T H E R N RO OT S , N AT I O N A L I N F L U E N C E And in many ways, the restaurant is a testament to her family — in particular, her Southern grandparents, who lived in the small Louisiana town of Liddeyville. Growing up, Lippert spent many holidays and vacations there, and she can remember exploring her grandparents’ 40-acre cotton farm, playing under the pecan tree and indulging in her grandmother’s cooking. “She was the sweetest, most humble woman,” Lippert says of her grandmother, Anesia Lois Rabalais (for whom the Santa Paula bistro is named). “She was French Cajun, and was always in the kitchen.” Many of Anesia’s recipes are still in use at the bistro, including the gumbo, buttermilk biscuits and red velvet cake. But there’s another side to Lippert’s life experience that has influenced the creation of Rabalais’. “My dad joined the Army when I was very young,” she explains. So even though her father is from the South, and she herself was born in New Orleans, she actually grew up living all across the United States. “It’s its own culture,” she says of the career Army lifestyle.

FRIED CHICKEN is served every Tuesday, and it’s a local favorite. Tracy Lippert loves hers with collard greens with black-eyed peas and homemade macaroni and cheese. “When you move, you try to find friends, meet people,” she notes. But they struggled to do that, as there were “not many spaces with hospitality, where you could go to hang out and meet people.” Lippert was a stay-at-home mom to three kids for 15 years

while David worked as a Certified Public Accountant. She became very involved with her church, and did some catering with a friend. But the idea of creating a center of hospitality never left her: someplace friends and strangers could meet, with a front porch that reminded her of the spaces in Louisiana where neighbors would sit and chat. In August 2011 — 10 years ago this summer — the Lipperts turned that idea into a reality, taking over a sizable corner lot in the heart of Downtown Santa Paula.

E X P E RT G U I DA N C E Having a decent amount of space to work with gave the Lipperts a chance to get their feet wet, with a gradual introduction of services. “We opened up in phases,” Lippert explains, who firmly believes that the concept “would not have succeeded so well if we opened up all at once.” “We started off with coffee and the bakery,” she recalls. “The lunch menu came next.” Within months, dinner was on the menu as well, and the full expression of Rabalais’ Bistro was born. Lippert is not a professional chef, although she cooked for her family at home — admittedly much “different from a commercial kitchen.” So eventually, she went to culinary school at the Westlake Culinary Institute (now closed). “I wanted more educated input,” she says. Having the language of a chef and an idea of how a restaurant operates is a vital skill for a restaurateur. Nevertheless, she relied on expert help along the way, particularly in the beginning. Her first pastry chef, Sarah McCarthy, came from a bakery in Santa Monica and worked at Rabalais’ for its first six months. During that time, McCarthy established certain practices and what Lippert describes as “the design of an efficient bakery.” She credits McCarthy with laying the foun-

dation for the bakery’s (and, later, restaurant’s) future success. “She set us up to get us off the ground,” Lippert says. “She really set up some important protocols.” McCarthy “took off to follower her dream” — she attended Chatham University in Pittsburgh, earned an environmental studies degree with an emphasis in sustainable food studies, and eventually founded the Crooked Fence Farm in Maryland. But the two women remain fast friends, and Lippert looks back with gratitude, noting that, “Our dreams collided at a crucial moment in time.”

“ I T TA K E S A V I L L AG E ” Today, Rabalais’ Bistro includes four cooks and four bakers, plus a number of servers. And it has indeed become a local hangout, with the coffee and bakery seeing a constant stream of people and weekends packed with Santa Paula regulars, as well as others from Ventura County and beyond hankering for fried green tomatoes, po’ boy sandwiches, beignets and shrimp and grits. “It’s been really exciting to see how this has come about,” Lippert says. “Santa Paula has really loved and engaged with Southern cooking.” Another draw, undoubtedly, is the warm hospitality Lippert cherishes and has fostered among both customers and staff. “I feel like we have a family here,” she says. “People come to see my staff. It takes a village.” The Rabalais’ “village” includes General Manager Leo Vazquez, who has been with Lippert from the beginning . . . and his sister now works at the restaurant, too. All three of Lippert’s children have worked at Rabalais’ in one capacity or another. Her son acted as both busboy and barista, and daughter Lea, currently a server, has been there for seven years, finding love along the way — she met her now-husband at the bistro. Overseeing the restaurant kitchen is Lead Chef Randy Balades, now with Rabalais’ Bistro for three years. Under his leadership, the restaurant serves up deliciously prepared Southern standards that have made it famous — gumbo, jambalaya, red beans and rice, fried chicken and more — as well as other offerings influenced by season and availability. Many of the recipes are adapted from family versions brought in by both Lippert and her staff. The owner credits her lead chef with bringing Southern-comfort home cooking to a professional presentation. “We needed someone who could take us to the next level,” Lippert says of Balades. “He’s added extra finesse to our menu. He has definitely taken our kitchen to the next level.” Balades’ right-hand man is Sous Chef James Molina. Together “they do a fantastic job of leading the kitchen.” Their friendship and mutual respect bring a lot of laughter and joy to the back of the house as well; Lippert likens it to a “comedy show.” Notably, Lippert estimates that 95% of her staff is local — most from Santa Paula, a few from Fillmore and Ventura. “I love to employ locally!” she explains. “You take pride in doing something great for your own city.” Continued on page 39

C O C K TA I L S A N D C A K E S The latest chapter in Rabalais’ Bistro history opened this summer, when the restaurant got its full liquor license. “Part of our coffee bar has been transformed into a New Orleans-style cocktail bar,” Lippert states with pride. “I think it adds to the whole experience.” Bar Manager Hayden McClain curated the drink menu, which includes specialties like the Sazerac, French 75 , Pimm’s Cup, a rum-laced hurricane, bourbony mint julep and, of course, a delicious Bloody Mary. Purists will appreciate the classics, from martinis to Manhattans to Cosmopolitans. And there’s a seasonal selection as well, which will change based on the fresh fruits, vegetables and herbs available at local farms and markets. “All of our mixes are done in house,” Lippert adds. “We’re still getting our feet beneath us . . . but for the most part, everyone is excited to have a cocktail with their meal.” Happy hour is offered Wednesdays through Fridays, 3-5:30 p.m., and includes savory small plates like pulled pork nachos, truffle fries and deviled eggs. No trip to Rabalais’ Bistro is complete, however, without at least a glance at the bakery case. Many of those items are available as desserts in the restaurant or coffee bar, but purchasing something sweet and decadent to go is one way to take that the warm, friendly Southern hospitality home. Slices of Key lime pie and individual (but generously sized) rounds of banana cream pie are usually available year round, and have become customer favorites for a reason. But the large cookies are phenomenal, the cakes are many and varied, and the seasonal desserts are out of this world. Yes, there are scones and muffins. Savory quiches run the gamut from spicy to mild, meat-laden to vegetarian. Don’t miss the pecan praline cheesecake, the Creole fudge bars or the pumpkin pie (when it’s in season). Seasonal is, of course, a major consideration — Lippert uses locally sourced produce, meats (often from Laird’s Butcher Shop in Santa Paula) and coffee (Prospect Coffee in Ventura makes a special roast just for Rabalais’) whenever possible. The Peach Bourbon Cake, for example, is a summer specialty. “I didn’t want to have the type of bakery where they had gourmet desserts,” Lipperts says. “I wanted to have pies and cakes and cookies that looked like something grandma would make . . . Good, solid recipes . . . If you have a good base recipe . . . you can add to those.” Pastry Chef Raeleen Portillo heads up the team responsible for Rabalais’ heavenly desserts. An Oxnard Culinary School graduate, she started as a hostess seven years ago and worked her way up. “She’s the best pastry chef I’ve ever had!” Lippert exclaims with sincere admiration. “I trust her. She can alter recipes, she’s built a good camaraderie — she’s a good leader of our team.” Rabalais’ Bistro can also craft special-occasion cakes, so remember it when your next birthday party, anniversary or wedding rolls around!

JILL OF ALL TRADES For herself, Lippert is involved with all aspects of the restaurant — to a point. Former-CPA husband David handles the business side of things. She herself will go wherever she is needed, and is always on hand on the busiest days. “I still work five days a week,” she says. “Where I find myself is at the front register of the bakery.” In addition to taking bakery orders and payments for meal checks, she answers questions and helps with scheduling, planning out weekly specials and other front-of-house duties. But this hands-on jill of all trades will do whatever is necessary to keep the bistro running smoothly. “I do whatever I need to do,” she clarifies, “whether that’s plunging toilets or decorating cookies.” She’s happy to take on the grunt work if it means her staff can stay focused on the jobs for which they have trained. “My younger staff, they’re better equipped to do their jobs. And I want to create careers for them.” Afterall, when you’re family, the goal is to allow everyone to soar. That’s not just a Southern thing, or a California thing, or even a Santa Paula thing. That’s just the way Tracy Lippert, and Rabalais’ Bistro, play it. v

here is a place in Ojai where the Topa Topa Mountains meet the lush green hills of Nicaragua. It’s an unassuming spot, tucked away in an office park, but the moment you walk through the door you know you’ve entered another world. This is Bonito, the small batch coffee roaster owned and operated by Carlos Ramirez. Bags of green coffee beans, fresh from Ramirez’s home region in Nicaragua, are lying in wait beside a large coffee roasting machine. On the wall is the mural that Ramirez painted entitled “From Nicaragua to Ojai”; it’s a bright, colorful tribute to the two places that hold Ramirez’s heart. Ramirez immigrated to the United States from Nicaragua more than 10 years ago. “I came because I wanted to buy a coffee farm and I wanted to save up money,” he explains. He started out working for his brother’s company until the economic downturn forced him to change directions. After working jobs in construction and the service industry, Ramirez decided to go back to school. “I thought, if I can’t have a farm, at least I’ll be working in agriculture … I went to Cal Poly and did their food marketing and ag business program.” After graduating, Ramirez was recruited by a large food company. It wasn’t long, however, before Ramirez and his wife realized that the high-pressure job didn’t mesh with their growing family. “We started shifting our gears when we came to Ojai. By then I decided to quit my job and be a stay-at-home dad, but I still had that dream of having a coffee farm … Coffee is in my blood.” That summer, Ramirez went back to his hometown in Nicaragua, a region renowned for its coffee and where coffee is deeply rooted in daily life. An afternoon spent with his grandmother set his dream in motion. “My grandma gave me a cup of coffee and I was like, whoa, I’ve been having really bad coffee. We need to do something about that,” Ramirez recalls. He rang up one of his high school friends

who owns a few coffee farms. His friend suggested that Ramirez attend the annual conference of the Specialty Coffee Association, known as the Specialty Coffee Expo, that year in Seattle. “I’m going to go and be a fly on the wall,” Ramirez told himself. At the conference, Ramirez found kindred spirits in the coffee roasters that he met. “I came back to Ojai and bought a little roaster,” he says. “I put in the shed behind the house and decided to make a business. I did the design and came up with a name.” He chose Bonito because it captures the essence of what he creates: “beautiful moments.” He made a promise to himself that he would do it purely out of love. “At first I gave coffee away and enough people liked it that I knew I knew how to roast. So, I said, ‘let’s take it further.’” Ramirez dove right in, noting that he “took a leap on renting a place with barely one account — a café in Ojai — and then I financed a larger roaster.” He admits that it was tough in the beginning. But now, four years later, Bonito Coffee is in two supermarkets, five hotels, two coffee shops — and the business has continued to grow. “Every week we think we’re roasting more than enough, but we sell it all.” Regarding his overall plans for Bonito, Ramirez says, “What I really want to do is bring community together, because that’s what we do in Nicaragua. Coffee’s almost like a gratitude plant … and the best place to do that is here in Ojai. It’s like a mirror to my country. Everyone knows everyone.” Pretty soon everyone will know Bonito Coffee. v
