s there anything more delightful than a cupcake? Fun, indulgent, easy to customize into any number of flavors and colors, adorably tempting (or temptingly adorable?) and just the right size for one person — it’s no wonder these little treats have become all the rage in recent years. Missy Drayton (Cover Story) caught that frosted wave in its early stages, whipping up a homebased business before opening her first cupcake shop in 2012. Missy’s Cupcake Creations is now in a new location and more popular than ever, especially since she’s brought donuts into the fold — which, if you think about it, have a lot in common with their mini-cake cousins.

he not-for-profit Ventura County Credit Union (VCCU) donated a total of $50,000 to local nonprofits this summer through its #VCCUCares program. Slowing down, lighting up the grill and focusing on the task at hand in the warm summer air affords time to refocus on taking care of self, family and home. Seasonal herbs and fresh fruit star in
this surf-and-turf menu balanced with citrus acidity and olive oil and butter richness. Try these uncomplicated recipes for a relaxing and refined summer’s meal.
FOOD & BEVERAGE
A Midsummer Night’s Meal Herb Butter Ribeye Serves: 4 Total Time: 1 hour, 30 minutes - C oat steak with salt and pepper and place back in the refrigerator, uncovered, Active Time: 30 minutes on a rack inside a pan to allow for airflow. Chill for at least 30 minutes. • 1 boneless ribeye steak, 2 inches thick and excess fat trimmed off • 1 tablespoon each salt and pepper • 1/4 cup butter, sliced • 1/4 teaspoon salt • 1/4 teaspoon black pepper • 4 garlic cloves • 1/2 teaspoon dried rosemary
- I n a food processor, blend together the butter, ¼ teaspoon each of the salt and pepper, garlic and rosemary until smooth. Chill for at least 30 minutes. -P reheat the grill to 450 degrees, leaving the other side off for indirect cooking. - Place ribeye over direct heat and sear each side for about 2 minutes, then move to the unlit side of the grill. - Apply half of the butter mixture to the top of the ribeye and cook on indirect heat until the internal temperature reaches 130 degrees. -R emove from heat and flip to apply remaining butter mixture on the top. - Let ribeye rest for 10 minutes before slicing.
Spicy Grilled Shrimp Serves: 4 Total Time: 30 minutes Active Time: 15 minutes • 1/2 pound large shrimp, peeled and deveined • 1/4 cup olive oil • 1 medium lemon, juiced • 3/4 teaspoon salt • 1/4 teaspoon pepper • 1/2 teaspoon cayenne pepper • 2 cloves of garlic, pressed • 1 tablespoon fresh dill for garnish
- Marinate shrimp in the olive oil, lemon juice, salt, pepper, cayenne pepper and garlic for at least 15 minutes and up to 1 hour in the refrigerator. - Thread the shrimp onto water-soaked skewers and place on the grill. - Cook for 2-3 minutes on each side or until shrimp are pink and opaque then top with dill to serve.

Lemon Dill Potato Salad Serves: 4 Total Time: 40 minutes Active Time: 20 minutes • 1 pound small red potatoes • 3/4 teaspoon salt • 1/4 cup fresh dill, chopped • 1 /4 cup finely cut onions, green and red • 1/4 cup extra virgin olive oil • 1 medium lemon, juiced • 1 garlic clove, pressed • 1/4 teaspoon black pepper
- Cut the potatoes in half or in quarters depending on size and place in a pot. - Cover potatoes with water and ½ teaspoon of salt and bring to a boil. Cover and simmer for 15-20 minutes or until fork tender. Drain the water and place the potatoes in a large bowl. -W hile the potatoes are cooking, add the remaining ¼ teaspoon of salt, plus the dill, onions, olive oil, lemon juice, garlic and black pepper in a bowl and whisk together. - Pour dressing over the drained potatoes and let sit for at least 10 minutes so that the warm potatoes can absorb the flavors. - Serve chilled.
Grilled Elote Serves: 4 Total Time: 20 minutes Active Time: 20 minutes • 4 ears of corn • 1/4 cup butter • 1/2 cup mayonnaise • 1 cup freshly grated Parmesan • 1 ½ teaspoons garlic salt • 1 teaspoon cayenne pepper or chili powder • 2 limes, halved • 1/4 cup fresh cilantro leaves, cut
- Remove corn husks but leave the core attached. - Grill corn on the direct heat of the grill turning throughout until slightly charred outside and evenly cooked, about 10 minutes. Then remove from the grill. - Begin spreading the toppings on the hot corn in this order: butter, mayonnaise, Parmesan, salt and cayenne pepper or chili powder. - Garnish with cilantro and squeezes of lime to serve.
Spiked Sparkling Watermelon Lemonade Serves: 4 Total Time: 45 minutes Active Time: 25 minutes • 3 cups fresh watermelon, chopped • 2 cups freshly squeezed lemon juice, strained • 5 cups sparkling water • 1 ½ cups vodka • 1/2 cup water • 1 cup sugar • Ice to serve
- In a small saucepan, combine sugar with ½ cup of water, bring to boil and stir to dissolve. Allow to cool to room temperature, then cover and refrigerate until chilled. - In a food processor, purée the watermelon until smooth and then strain. - Add watermelon juice, lemon juice, the simple syrup made in Step 1, sparkling water and vodka into a pitcher. - Stir and serve over ice.

BEYOND
THE BUZZ Ojai’s Flying Embers finds a healthy beer alternative with hard kombucha. BY EMILY DODI
“M
y wife and kids were evacuated,” Bill Moses says. “I remember the smoke was coming in. The fire captain came in and got our names and the numbers of our next of kin in case there was an over burn.” Moses, founder of Flying Embers Hard Kombucha, recalls the perilous days and nights during the Thomas Fire when he stayed behind to help protect his home and fermentation lab in the hills of Ventura. “When the Thomas Fire came we were at Casa Barranca, where our mother culture was,” Moses says. (A mother culture is a “symbiotic culture” of bacteria and yeast used in the process of fermentation.) It can take a long time to develop a mother culture. “A year’s worth of work was at the winery.” In 2016, Moses and a team of “passionate entrepreneurs” founded Fermented Sciences in Ojai with the goal of creating “great-tasting botanical brews with functional benefits.” It was the latest venture in Moses’s career of disrupting the beverage industry, which also includes Casa Barranca organic wines and Kevita kombucha. During that fateful winter of 2017, he and his team were on the cusp of creating an exciting “better for you” alcoholic beverage: a hard kombucha. As the Thomas Fire barreled towards them, they were faced with the very real possibility that their new business could end before it ever really began. If the fire destroyed the mother culture, it would be back to square one. “The mother is everything,” Moses explains. “A mother culture feeds all other ferments,” Moses explains. He was in danger of losing it all. But he was not alone. “A lot of friends and community members made a stand there at the top of Foothill Road,” he recalls. The story of their survival is told on the company’s website: “For three relentless days our community banded together to fight the inferno. On the third night, we stood on the precipice of disaster as a wall of fire tore through the canyon towards us.” “It was a really amazing moment,” Moses adds. “Fire was sweeping through Nordhoff Ridge.” He describes watching as 36 prison inmates and other firefighters lined up two by two, just like “soldiers of fire,” and walked from the property all the way up the hill to fight back the fire.

As everyone who was in Ventura County during the Thomas Fire knows all too well, fate came down to which way the wind blew. It is written on the company website that, “As the flames towered above and swirling embers filled the sky, we faced the complete destruction of our dream and potentially our lives.” Luckily for Moses and everyone else at Casa Barranca that night, the wind changed direction. His home, the lab and the mother culture were saved. Moses describes the experience as “magnificently inspiring and challenging.” It left him and his team with a “deep appreciation for the power of nature and a profound sense of gratitude for each other and life itself.” It also inspired the name Flying Embers. “The name came out of the powerful transformation of those embers,” Moses says. Looking back, he says, “What the fire gave us was that we went from a cool and nifty idea to something with more purpose. We saw the connective tissue of our community. We are part of a bigger experience and we want to be more of service. There is more here than a product.” In addition to their vow to create “better for you” alcohol beverages, Flying Embers is a supporter of 1% For First Responders, the Los Angeles County Fire Museum and Next Rung, which provides resources to help combat mental health issues faced by first responders including firefighters, EMS, police and dispatchers. Surviving the Thomas Fire gave Moses and his team the conviction and determination to “go on no matter what.” That fortitude, he explains, enabled the company to get through the tough times as a start up. Flying Embers went on to launch their first product, Ancient Berry Hard Kombucha, in 2018. Today, the range of hard kombucha
flavors include ginger, black cherry, pineapple chili, grapefruit thyme, lemon and others. But what inspired Moses to make hard kombucha in the first place? Hard seltzers were already establishing a place for themselves as alternatives to beer, wine and other alcoholic beverages. Hard seltzers have “an absence of bad,” Moses says, but there’s not much good in them, either. So Moses asked himself, “What is the next generation of that?” “I saw the health benefits of regular kombucha and saw that millennials wanted a ‘better for you’ alcohol beverage.” Still, he had some doubts. “When we got into the business we weren’t really sure how hard kombucha would be received, but the way the community and customers respond to it is beyond our expectations. Flying Embers is growing faster than Kevita did.” (The Kevita brand was so successful, it was recently sold to Pepsi-Cola.) Flying Embers hard kombucha, Moses says, stands out for what it does have, including botanical elements and probiotic culture. Probiotics have been noted for a variety of health benefits, including helping to balance the healthy bacteria in the digestive system. It’s a “buzz plus,” he notes — an alcoholic beverage with bonafide health benefits. Looking ahead, Moses has ideas for other libations, including wine products and beers that will have all sorts of functional “better for you” ingredients, like a chocolate reishi mushroom stout. Today, Flying Embers is sold throughout Ventura County at retailers like Whole Foods and is served at restaurants such as Fluid State in Ventura, Ojai Pizza and the Yard House in Oxnard. It is also sold in 41 states, from Maine to Hawaii. Moses is planning to expand into Canada and perhaps even Europe. As Moses watches the business grow faster than even he ever expected, it’s pretty clear that he and his team never lose sight of the fateful moments during the Thomas Fire, when it could have all gone up in smoke. issy Drayton is living la dolce vita. The owner of Missy’s Cupcake Creations in Ventura has found her sweet spot, baking up cupcakes, donuts and other delectable treats at her bakeshop on Johnson Drive in Ventura. Ventana Monthly spoke with the two-time Casa Pacifica Yummie Culinary Competition winner, who dished about the cupcake craze, getting distracted by donuts, secrets to her success and more. Are you originally from Ventura County? I was born and raised in Oxnard. I’ve lived in Ventura County all except for three years. Have you always been interested in baking? I come from a family of great bakers and cooks. Both of my grandmothers — my maternal and paternal grandmothers — they were actually friends and worked together in catering. My mother is an excellent baker. She started teaching me when I was young. I got very interested in 5th or 6th grade, when I started taking classes in the summer. I took a cake decorating class… and I really got the bug. My first job at 16 was at BaskinRobbins. We made cake clowns and things like that. How did you develop your professional baking skills? As an adult, I took some classes at Confectionately Yours. But I don’t have any formal training. I never went to a culinary academy. It all came from home and it just never left me. When did you start baking professionally? Before starting my cupcake business, I worked in the moving and storage industry — I was one of the few women in a male-dominated business. And I’d bake for them. And then, they wanted me to bake for them all the time. They’d even give me money for ingredients. When the cupcake craze was taking off, it caught my eye. I thought, “Oh, I’d love to do this!” But I didn’t know how long it would last. Cupcakes are so old school. They were the first thing I learned to make. You bring them into school or to work on your birthday. For them to be so popular, it was so mind-blowing! 8

was vegan and it was delicious — that’s all I needed to know. We do vegan cupcakes and cakes, too. Behind me is Sea Ranger and Norte-Sur Mexican Grill . . . they both offer a lot of vegetarian and vegan items. So it’s been a great fit. People go have dinner or lunch and then come here for dessert.

I posted on Facebook on my personal page that I wanted to open a cupcake shop. And so many people commented and encouraged me! So I did it from home for 18 months or so. After doing that, I thought, “I have my clients, it’s getting busier and busier…” I needed a storefront where people could come in; something more convenient for customers. And I needed to get out of my house. It was taking over my kitchen!

popular. We did one that looked like a coronavirus on one half and a computer virus on the other half for a computer programmer. We’ve done Zoom birthday parties where the kids decorated cupcakes together through Zoom. We have kits for self-decorating cupcakes and donuts. For parents looking for something to do with their kids — the do-it-yourself decorating kits have been a big hit. Watching what some of the kids came up with, I sometimes think, “Wow! When you’re grown up, come work for me!” I get excited when I see other kids get into it.

MINT CHIP cupcakes. What do you have planned for Missy’s Cupcake Creations moving forward? We’re going to offer a little more variety for breakfast, maybe. Everyone wants muffins or a breakfast sandwich. We’d like to be more of a full-service bakery with cookies, brownies, that sort of thing. Having this time off has given me time to think ahead. As painful as it’s been, I feel like I reclaimed my business and my dream. I focused on why I started this business and why I loved it. A lot of soul searching went on. What do you think has made you so successful? I love it. You have to love it. It is hard work. People think it’s fun, but it’s very hard work. I’ve had Girl Scouts come in to earn a badge, and I tell them — it’s still a business. You have to put in the time. It is a ton of sacrifice. Because I put my heart and soul into it…it makes other people happy. Are there other local organizations with which you’re involved? I love to give back to school sports programs and the arts, and do so when I can. I donate weekly to a local church that offers a drive-through food service. To get a donut on top of some canned goods…it makes their day.
How has your business fared the last few months? We were able to stay open. Everything has always been takeout, so we were lucky with that. What we were not lucky with — we had to refund a lot of money for cancellations. That was painful. Of course, we’re wearing masks and social distancing in the store. We did curbside pickup. I’ve been so lucky that everyone has been so cooperative. It just worked out so smoothly.
Where do you get your inspiration? I think from my customers. When they have an idea and we bring it to life for them — it’s inspiring! Because baked items are a treat for someone or a special occasion — birthdays, weddings, bridal and baby showers — it’s a great feeling to know I brought some happiness. reating a new restaurant in a landmark building built during 1877 would pose myriad challenges under the best of circumstances, even without facing off against the severe economic impacts of the coronavirus pandemic within months of opening. A Ventura couple who renovated downtown’s historic Peirano’s Market building found ways to not only survive, but actually thrive. During 2016, Jim Rice and Linda Jordan passed by the red-brick building adorned with vintage murals directly across Main Street from Mission San Buenaventura. The previous restaurant that had occupied the building was shuttered, and adjacent Mission Park had developed an unsavory reputation following incidents such as a fire that gutted the park’s restroom. They developed a shared vision to revitalize the building, and reenergize the park to make it appealing to locals and visitors once again. When they first took a look inside, Jordan says she felt its rich history on a deep level, including its past life as a neighborhood grocery store from its 19th century founding through the 1980s. “It was a crazy vision,” said Jordan. “I saw what it was. I turned to Jim, and I think we had the same idea at the same time, that it has to be that very same feel of Peirano’s Market. A downtown center. A place where people come and feel comfortable.” It took around four years to renovate the building and construct a large patio overlooking the park and mission. Rice says that while they did face challenges along the way, they’re proud to bring new life to the building also known as Ventura’s Historic Landmark No. 32. “It’s structurally and architecturally one of the most beautiful buildings in town. It’s the oldest commercial brick building in Ventura County,” said Rice. “It has a feeling that you get instantly when you walk in that you’re someplace special.” Jordan and Rice opened Peirano’s Market & Delicatessen last October to rave reviews for its delicious sandwiches and salads, as well as a selection of high-quality imported groceries that would be difficult to find elsewhere.

When coronavirus lockdowns were imposed during March, all restaurant owners faced difficult choices. Some shut down and let go of staff, while others labored to stay afloat by serving only takeout meals. Rice says closing the restaurant’s doors after only a few months was 8

something they could not stomach. “It was such a hard journey that giving up because of something like that was an option, but never a consideration,” Rice explains. “To us, it was just another hurdle. We had faced so many along the way, including my brother’s death, and the Thomas Fire and [Jordan’s] son getting cancer. You’ve got two choices. You can curl up in a ball or you can show up. So we showed up the next day and said, ‘How are we going to survive this,’ because quitting was never an option.” They took their own route and also started offering grocery packages with staples like milk, eggs and produce for curbside pickup. That was especially appealing for people with health issues concerned about shopping inside crowded supermarkets. Jordan says they decided to quickly develop and launch an online ordering process they had already been contemplating. “Let’s bring something to the forefront that’s been on the back
burner. We just reallocated our efforts into the places that already existed in our business plan. We embellished those and made it happen,” says Jordan. Another factor that helped them maintain momentum was working with the charity World Central Kitchen, which teams up with restaurants across the globe to provide healthy meals to disaster victims and frontline workers during times of crisis. The charity’s founder, celebrity chef José Andrés, previously served Thomas Fire victims. Rice helped out with those efforts since he had prior experience opening and running restaurants. “I was humbled to just be part of that team,” says Rice. Jordan says their work with the charity has been rewarding on many levels. “We were truly blessed to get a contract with World Central Kitchen. That was a lifeline,” says Jordan. “When you’re given the role of putting together 300 meals a day for front line workers so they can have something fresh and delicious (because their cafeteria is closed, for example), it just feels good to know you’re contributing in a way that people appreciate.” The inside of the market and the patio reopened for shopping and Continued on page 29

Peirano’s was also one of the first Downtown Ventura establishments to bring back live music, offered on the large and inviting patio. Due to new restrictions imposed by Gov. Gavin Newsom to halt the spread of the coronavirus, live music and dine-in service are no longer available starting July 1 (the order will last for at least three weeks, and possibly longer). Nevertheless, Jordan says the community response has been heartwarming. “Nothing but appreciation for the fact that we were staying open, that we were providing the community with what they needed in way that they can get it safely. It was unbelievable,” said Jordan.
She believes the challenges posed by opening a restaurant under such trying circumstances actually helped them create a more solid foundation. “At some point early on we all had the feeling that we’re going to be better because of this. This is not going to do us in. This is not going to shut our doors. And we are better because of this. And I don’t want to sound like we benefited in any way, but we are better. We’re stronger, we’re more adaptable, and we have more layers to our business now. We trusted that we are not only going to ride it out, but that we’d be enhanced on the other side,” said Jordan. Channel Islands Maritime Museum hosts historian and model builder Steve Lund, who discusses Japanese submarine attacks on the West Coast during World War II at this virtual speaker series. At the height of the war, following the attack on Pearl Harbor, Japanese submarines patrolled the U.S. West Coast and were responsible for the only attack on the U.S. mainland by an Axis power. In an event known as the Bombardment of Ellwood, a Japanese submarine launched shells toward a fuel storage area from 10 miles north of Santa Barbara. Though the attack did little damage, the panic that was induced directly led to what would happen the following night: The Battle of Los Angeles.
