FAMOUS RED LOBSTER SHRIMP SCAMPI

Ingredients: Servings: 4 - 1 lb medium shrimp, peeled and deveined - 1 tablespoon pure olive oil - 2 tablespoons garlic, finely chopped - 1 1/2 cups white wine, I use chardonnay - 1/2 fresh lemon, Juice only - 1 teaspoon italian seasoning - 1/2 cup softened butter - 1 tablespoon parsley - 1/2 cup grated parmesan cheese Directions: 1. Heat cast iron skillet and add olive oil. 2. Add shrimp and cook until tender and no longer translucent, reduce heat. Remove Shrimp and set aside. 3. Add garlic and cook 2-3 minutes. Do not allow garlic to brown - it will make it bitter. 4. Add white wine, and lemon juice. 5. Cook until wine is reduced by half. After it is reduced, add Italian seasoning. 6. Reduce heat to low, and add butter. If pan is too hot, the butter will separate. 7. Add shrimp back into sauce, add parsley, and season to taste with salt and pepper. 8. Sprinkle with grated Parmesan Cheese.

MARGHERITA CHICKEN LASAGNA ROLLS Serves 8 Prep Time 20 min Cook Time 25 min INGREDIENTS 1 8 lasagna noodles 2 3 cups cooked, shredded chicken 3 1 (15 oz.) container Ricotta cheese 4 2 cups shredded Mozzarella cheese, divided use 5 1 teaspoon garlic powder 6 1 (26 oz.) jar Ragù® Old World Style Sauce 7 2 Tablespoons fresh basil, chopped INSTRUCTIONS

Fresh Pear Pie INGREDIENTS

1 recipe pastry for a 9 inch double crust pie 1/2 cup white sugar 3 tablespoons all-purpose flour 1/4 teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon lemon zest 5 cups peeled and sliced pears 1 tablespoon butter 1 tablespoon lemon juice DIRECTIONS 1 Combine sugar, flour, salt, cinnamon, and lemon rind in mixing bowl. 2 Arrange pears in layers in a 9 inch pastry lined pan, sprinkling sugar mixture over each layer. Dot with butter. Sprinkle with lemon juice. Roll out remaining dough; cut slits for escape of steam. Moisten rim of bottom crust. Place top crust over filling. Fold edge under bottom crust, pressing to seal. Flute edge. 3 Bake at 450 degrees F (230 degrees C) for 10 minutes. Reduce temperature to 350 degrees F (175 degrees C), and bake for an additional 35 to 40 minutes.

Marshmallow Snowflakes INGREDIENTS 2 envelopes (each 1 scant tablespoon) unflavored gelatin 1 1/2 cups sugar 2/3 cup light corn syrup 1/8 teaspoon salt 1 teaspoon pure vanilla extract Vegetable-oil cooking spray DIRECTIONS 1. Coat a 12-by-17-inch rimmed baking sheet with cooking spray; line with parchment paper. Spray parchment; set aside. Pour 1/3 cup cold water into the bowl of an electric mixer. Sprinkle with gelatin; let mixture soften, about 5 minutes. 2. Place sugar, corn syrup, salt, and 1/3 cup water in a medium saucepan. Cover; bring to a boil. Remove lid; cook, swirling pan occasionally, until syrup reaches 238 degrees (soft-ball stage) on a candy thermometer, about 5 minutes. 3. With mixer on low speed, whisk gelatin mixture, and slowly pour the syrup in a steady stream down the side of the bowl (to avoid splattering). Gradually raise speed to high; beat until mixture is thick, white, and has almost tripled in volume, about 12 minutes. Add vanilla, and beat 30 seconds to combine. 4. Pour mixture onto prepared baking sheet; smooth with an offset spatula. Let stand at room temperature, uncovered, until firm, at least 3 hours or overnight. 5. Coat a 1- or 2-inch snowflake-shaped cookie cutter with cooking spray to prevent it from sticking. Cut out as many individual marshmallows as possible; coat cutter with more spray as needed. Use marshmallows immediately or store in an airtight container at room temperature up to 1 week.

1. Preheat oven to 375° F. 2. Cook lasagna noodles in a large pot of water until al dente, according to package directions. Drain water. Lay lasagna noodles out flat onto parchment or wax paper to prevent sticking. 3. In a medium bowl, combine shredded chicken, ricotta cheese, 1 cup mozzarella cheese and garlic powder. Stir to combine. 4. Spread 1/2 cup chicken mixture down the center of each lasagna noodle. Roll up. 5. Spread 1 cup Ragù® Old World Style Sauce in the bottom of a 9x13 inch baking pan. Place lasagna rolls seam-side down into the pan. Pour the remaining sauce evenly over all the noodles. Top evenly with 1 cup mozzarella cheese. 6. Bake rolls uncovered, for 25 minutes, or until cheese is melted and bubbly. 7. Remove from oven. Let stand 5 minutes before serving. Serve each roll with a teaspoon of chopped fresh basil. Enjoy!

Autumn Tian INGREDIENTS 1 pound beets (about 3 medium), preferably a mix of red, golden, and Chioggia, trimmed and scrubbed 1 medium onion, thinly sliced 6 tablespoons extra-virgin olive oil 1 tablespoon fresh thyme leaves Coarse salt and freshly ground pepper 1 pound Yukon Gold potatoes (about 2 medium), peeled and cut into 1/4-inch slices 1 pound plum tomatoes (about 3), cut crosswise into 1/4-inch slices DIRECTIONS 1. Preheat oven to 400 degrees. Wrap beets tightly in parchmentlined foil. Roast on a baking sheet until tender, about 1 hour, 20 minutes. Let cool completely. Peel and cut crosswise into 1/4-inch slices. 2. Increase oven temperature to 425 degrees. Toss onion with 1 tablespoon oil and half of thyme. Season with salt and pepper and arrange in the bottom of a 3-quart round or oval gratin dish. On a cutting board, stack 1 slice each potato, beet, and tomato. Season with salt and pepper. Repeat with remaining vegetables, keeping each stack separate. Transfer stacks to dish and shingle to overlap slightly. Sprinkle with remaining thyme and drizzle with 2 tablespoons oil. Cover tightly with parchmentlined foil. 3. Bake 30 minutes. Uncover; drizzle with remaining 3 tablespoons oil. Bake, uncovered, until vegetables are tender and tomatoes are caramelized, about 35 minutes more. Let cool slightly before serving.

SWEET CHERRY SORBET Serves 6

(NAPSI)-For a festive finish to a holiday menu, consider a lightly sweetened and deliciously tangy cherry sorbet. As brilliantly colored as a poinsettia or a winter berry, this dish is scrumptious served with assorted chocolates and cookies. Or, you can garnish each serving with slivered

almonds and chocolate chips. When entertaining visitors or holiday guests, it's a good idea to keep a bag or two of frozen cherries on hand. It's a quick way to add the fresh taste of summer to smoothies, quick breads or simple desserts such as cherry crisp or pie. Or, just serve thawed cherries

Wool Stocking

TOOLS AND MATERIALS Colored tailor’s chalk pencil Wool fabric 2 mm wool felt Pinking shears Cutting mat Screw punch Sewing machine and sewing supplies Fabric glue, such as Magna-Tac Felt animal (see Ornaments; skip step 5) 1. Print stocking and cuff templates, and cut out. 2. Using tailor’s chalk, trace smaller stocking template onto 2 pieces of wool; trace larger template onto felt. Use scissors to cut wool and pinking shears to cut felt. 3. Trace cuff template onto 2 pieces of wool. Cut out, using pinking shears for bottom edge. 4. Create an eyelet pattern on bottom edge of cuffs: Starting at the bottom, punch 3 rows of holes, using the screw punch’s 3 settings (smallest to largest).

5. Assemble stocking layers with felt in the middle and cuffs on each end. Align cuff and 1 layer of wool at

top, and stitch 1/4 inch from top edge. Stitch remaining 3 layers in same manner. 6. Pin stocking to-

gether. Sew around stocking, 1/4 inch in from edge of wool piece, leaving top open.

7. Cut a 1-by-8inch strip of felt. Gather ends together to form a loop for hanging, and sew inside the

stocking, at the back, toward the top. 8. Glue felt animal ornament to stocking.

Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes. 2 Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.
