QUICK CHICKEN, CRANBERRY AND BRIE CANAPES 6 Ingredients 1 1/2 sheets frozen puff pastry, just thawed 1 small smoked chicken breast, finely chopped 100g brie, cut into 24 even pieces 100g (1/4 cup) Coles cranberry sauce 2 tsp fresh thyme leaves 4 Method Steps 1 1 tbsp finely chopped fresh chives Step Preheat the oven to 220C/200C fan forced. Step 2 Prepare the pastry : Cut the whole pastry sheet into 16 even squares. Cut the half sheet into 8 even squares. Line 1 1/2 tbs (30ml) capacity mini muffin pans with pastry squares (the pastry edges will be higher than the muffin holes). Place in the freezer for 15 minutes to firm. Step 3 Bake the pastry for 10 minutes or until light golden and crisp. Use a spoon to gently press down on the pastry to f latten slightly. Fill each hole with a little of the chicken. Top with a piece of brie and cranberry sauce. Scatter with thyme. Step 4 Bake for 5-7 minutes or until golden and the cheese has melted slightly. Sprinkle with chives.

ULTIMATE SWEET POTATO BAKE Method
Ingredients 2 tbs olive or macadamia oil 3 lean rashers bacon, roughly chopped 600g sweet potato, very thinly sliced 1 cup (240g) ricotta 1 cup (250ml) coconut milk 1 tsp ground nutmeg
1. Preheat oven to 200°C andd lightly grease an 8-cup capacity ovenproof dish. Heat the oil in a large frypan over medium heat. Add the bacon and cook, stirring occasionally, until browned. Remove from pan and set aside. 2. In batches, add the sweet potato slices to the frypan and cook for 2 minutes each side or until lightly golden. Transfer the bacon and the sweet potato to the ovenproof dish. 3. Place the ricotta, coconut milk and nutmeg in a bowl and whisk until smooth. Season with salt. Pour over the sweet potato and bacon mixture. 4. Transfer to the oven and bake for 20-25 minutes, until lightly golden on top. Serve immediately.

Ingredients
RULES: Each week in the Christmas Gift Guide there will be a Contest (total of 5 weeks). Fill out the contest entry form each week and then drop it off at the Thrifty Nickel office or mail to: Christmas Trivia, C/O Thrifty Nickel, 629 East 21st St. Owensboro, KY 42303. You can turn them in each week or at the end of the 5th week. Must enter all 5 weeks to be eligible. The winners will be chosen by the most correct answers of each week. Deadline for all entries will be Monday, January 3rd at 5 p.m. Winners will be announced in the January 6th issue of the Thrifty Nickel. Must be 18 years of age or older to be eligible. Employees and relatives of employees of Thrifty Nickel are not eligible. Only one entry per household per week will be accepted.
STUFFING BALLS
1 tbs olive oil 1 small red onion, finely chopped 2 garlic cloves, crushed 21/2 cups stale white breadcrumbs ? cups dried cranberries, chopped ? cup dried apricots, chopped 1 egg, lightly beaten 1 tbs chopped parsley 50g butter, melted
Method 1. Preheat oven to 200°C. Heat oil in a n on-stick frypan over medium-high heat. Add onion and garlic. Cook, stirring, for 3 minutes or until soft. Transfer to a bowl. Add breadcrumbs, cranberry, apricot, egg, parsley and butter. Season with salt and pepper. Mix well to combine. 2. Shape mixture into 16 balls. Place on a tray lined with baking paper. Bake for 15-20 minutes or until browned. Serve.
