T
he first-ever November issue of Today’s Charlotte Woman has arrived. We have taken a daring and delicious turn on our cover — with the help of the students in Johnson & Wales’ Baking and Pastries program! In the past, we have combined the October and November issues and then printed our December Holiday Issue the week before Thanksgiving. This year, we decided to help you get a jump on the holidays by pulling out our best china and silver and inviting you to entertain with us. From centerpieces to mouthwatering recipes (can you imagine anything more decadent than white chocolate bread pudding?), we have a veritable cornucopia of inspiration. If your life is anything like mine — and I suspect it is — you sail through the first half of fall with an occasional football game or school event on your calendar. Then November arrives and, before you know it, you’re booked solid into the New Year. It’s likely that those full calendar squares include your family holiday traditions, as well as a series of seasonal celebrations. Because so many get-togethers involve gathering for a meal — whether crowding knee-to-knee around the coffee table to munch out as we cheer on our alma maters, or sitting elbowto-elbow around the dining table heavy with its formidable feast — we have a spotlight on food like never before. On page 26, “We Gather Together” for a

Hanukkah celebration that includes four generations of love and tradition and, yes, lots of good food. As we all plan for our own holiday meals, making menus and shopping lists, it’s a wonderful reminder of the value of family in the midst of the hustle and bustle. And for tips on sprucing up the hearth and heart of your home, read all about “Today’s Kitchen Trends,” on page 34. In this issue, we also kick off our salute to (and love of!) the grape, with a wine-pairing feature sure to have you strolling the aisles of your favorite wine shop, seeking out just the right vintage to complement your holiday meal. Look for more on wine in the coming months in TCW ! As we move full force into November, just remember, there is no silver bullet for making this season magical. Take our offerings and inspiration and customize them for your family, your budget, your desires. Oh, Baby “Birth” Comes To Queens To honor the maternal experience, and as part of a global arts-based movement inspiring communities to consider and create childbirth choices, BOLD Charlotte is teaming with Queens University’s Drama Program to present Birth, Nov. 12 through Nov. 15 in Hadley Theater (on the Queens campus), at 1900 Selwyn Ave. Proceeds benefit Carolina Community Maternity Center. The play is based on over 100 interviews conducted by Brody, and pays tribute to the experiences of mothers everywhere.

These students are JWU’s Baking & Pastry degree candidates, and their coursework gives new meaning to the term, “hands-on learning.” Indeed, the Baking & Pastry Arts program represents one of the tastiest learning environments around — a fact of which Wanda Cropper, director of the JWU International Bakery & Pastry Institute Academics, is well aware. Cropper, who earned her Bachelor of Science first and then her own associate degree in International Baking and Pastry Arts from Baltimore International Culinary College before going on to earn a Master of Arts degree, explains that these students have a singular focus and, in many cases, a singular motiva-

Graduates will take their JWUacquired knowledge and skills and go on to work in high-end hotels, restaurants, and resorts; as personal chefs; and as owners of bakery cafés and cake-decorating establishments. It’s a road that Cropper herself traveled prior to becoming director of Academics at the Institute. In fact, Cropper wandered several paths before finding a way to merge her love of baking with her passion for teaching — and transform it all into a viable profession. “This is actually my second career,” she says. “I previously taught vocational home economics in high school and

tion. “A recent survey told us that the Baking & Pastry students are passionate about baking and pastry because it’s an art,” she says. “They do it for the love of the art as much as they do it for a job.” Cropper understands such passion. In addition to her director duties, which extend to all four JWU campuses (Providence, R.I.; Denver, Colo.; N. Miami, Fla.; and Charlotte) and include maintaining a consistent systemwide curriculum and serving as liaison for the instructors, she is associate dean of the International Baking & Pastry Institute at the Charlotte campus. There, she oversees the day-today operations of the program, taking a keen interest in the trials and triumphs of both students and staff.
Cooking Up A Career
This year, the Baking & Pastry Arts program saw unusually large enrollment numbers
junior high. But I have always liked baking.” Some of Cropper’s early career experiences laid the foundation for her work today. When she lived near Washington D.C., she became involved with a national nutrition initiative called WIC (Women, Infants and Children), for middle- and lower-income women, serving as an instructor and coordinator of the project at Columbia Hospital for Women. Today, students in the JWU Baking & Pastry Arts program must take a course on Baking for Health and Wellness, which, as Cropper affirms, is not as oxymoronic as it sounds: In 2008, the University eliminated the use of artificial transfats in its curriculum. After earning her Baking and Pastry degree, which included a term studying in Paris, Cropper realized she still had a passion for teaching. “But I knew that if I was going to teach it, I had to know what it was all about,” she says. > NO V EM b e r

She spent the next six years in various positions in the industry — working as a pastry chef, in the catering realm, and then as a business owner, supplying all of the breakfast pastries for the snack bars at Dulles International Airport, and preparing signature desserts for restaurants in the D.C. area. On the side, she taught classes at Baltimore International Culinary College. In 1993, Cropper met the director of culinary arts for JWU, and within a few months, she had moved to Charleston, S.C., where she began her JWU career as a pastry instructor. After her boss was promoted, she filled his slot as the University’s director of culinary arts in Charleston before moving to Charlotte in 2004, when the Charleston and Norfolk, Va., campuses were consolidated into the current campus at 801 W. Trade St.

White Chocolate Bread Pudding One 24-inch baguette, cut into 1-inch slices 4 1/2 cups heavy cream 1 1/2 cups milk 3/4 cup sugar 15 ounces white chocolate, broken into small pieces 3 eggs 12 egg yolks White chocolate sauce: 1/2 cup heavy cream 8 ounces white chocolate, broken into small pieces Bittersweet or semisweet chocolate shavings Preheat oven to 275 degrees. Place bread slices on a baking sheet and bake for 15 minutes or until dry, but not browned. Transfer bread to 13- by 9-inch pan in an even layer. Increase the oven temperature to 350 degrees. In a large saucepan, heat the cream, milk, and sugar until hot but not steaming. Remove from heat, add the white chocolate, and stir until melted. In a bowl, beat the eggs with egg yolks. In a slow, thin stream, whisk the hot cream into the eggs until smooth. Pour the custard over the bread and let stand about 20 minutes or until the custard is absorbed. Cover the pudding with foil and bake for 1 hour. Remove foil; bake for 20 minutes longer, or until golden and puffed. Let cool for at least 20 minutes. To make the white chocolate sauce: Bring the cream to a boil in a small saucepan. Remove from heat, add the white chocolate, and stir until completely smooth. Cut the bread pudding into squares and decorate with chocolate shavings. Serve warm, with the white chocolate sauce.

A Family Affair
As in most families, traditional holiday recipes here are passed down from both sides of the family tree, but Tonya admits that most of what they serve today is what she remembers being on the table when she was a young girl. “I make a lot of dishes that my grandmother used to make,” explains Tonya (daughter of TCW’s sales exec Barbara Herd), who grew up in New York, and has fond memories of visiting her grandmother during Hanukkah. “We couldn’t wait to go over
there and play — and, of course, eat. We would get to her house and my grandmother would be making all of our favorites.” Tonya, with the help of her husband Brian, now serves the traditional fare to their children: 11-year-old Maggie, 9-year-old Zeke, and 7-year-old Jack. “There is no magic recipe; each family does things differently,” says Tonya, referring to a Hanukkah meal. And, while her family’s recipes may dominate the day, Brian is also an accomplished cook. “My dad makes the best potato latkes,” Maggie >

Preheat oven to 350 degrees. Cover bottom of a lightly greased 9-inch quiche or pie pan with half of the slices of Muenster. In a large bowl, combine spinach, eggs, and ricotta cheese. Season liberally with salt, pepper, and garlic powder. Spoon mixture on top of cheese in pan. Cover top of spinach mixture with remaining Muenster cheese. Bake for 35 to 45 minutes, until heated through. Broil for 3 minutes longer, until top is golden brown and bubbly. Serve hot.

says proudly. “He shreds the potatoes and makes them into shapes, and fries them in oil.” Whether it’s in the “shapes” or in the shredding, Maggie swears no one can beat her dad’s latkes. The main course for the Meltsners’ Hanukkah meal is usually brisket. “I season it with Allegro [Gold Bucket Brisket] sauce,”
Tonya explains. “I pour it over the brisket and cook it slowly, to help it come out really tender.” While the brisket is cooking, she adds carrots and potatoes. To complement the meat and vegetables, Tonya makes a family favorite: purple coleslaw. The recipe includes only three ingredients: purple cabbage, shredded carrots, and >

To me, it’s fun and exciting to have the kitchen full of all those wonderful aromas.” The Meltsners usually choose the first of the eight nights of Hanukkah to have their holiday dinner. The best china is brought out, and the whole family, sometimes with special guests, sits down to a meal that includes foods that have been made and served to generations. “It’s a night we all look forward to,” Tonya says. “We pick an evening when no one has anything else planned, so we can relax, enjoy the meal,

The story of Hanukkah begins 2,200 years ago, when the land of Judea (modern-day Israel) was ruled by Antiochus Epiphanes, a GrecoSyrian king who persecuted the Jews by forcing them to worship Greek gods and forbidding them to practice their own religion. A revolt was organized by Judah Maccabee and his four brothers. Although the odds were stacked against them, the rebels drove the Greco-Syrians out of Judea. Upon victory, the Maccabees reclaimed the Holy Temple and removed the Greek idols and symbols that had been placed there. However, they found that the oil for the Temple’s menorah — meant to burn without interruption — had been defiled. There was, they discovered, only enough oil to last one day. Miraculously, the oil burned for eight days and eight nights, at which time more purified oil was found. A move toward a farmhouse or Craftsman style. Homeowners, says Barber, are backing away from the strong colors that are traditionally part of the Italian “look” we’ve seen through the early 2000s. Colors in new and updated kitchens are indicative of a less fussy design. Cooler shades are replacing the warm hues so prevalent with a European interpretation, which means that shades of blue and green now rule. Pewter is also making a splash as a color option.

Incorporating warmer woods to offset cooler walls and accessories. Homeowners can add a little heat to cool kitchen blues and greens by including cabinets in rich wood tones. Choosing midto-dark shades of honey maple, cherry, and espresso strengthens the traditional look.
White is making (another) comeback. Cruise the paint aisle at any home improvement store and you’ll discover that white is anything but vanilla. A quick check of Valspar Paints turns up 144 shades of “warm white,” ranging from “Lilac Intuition” to “Bubble Tea,” and 144 “cool whites,” with names like “Cool Grey” and “Angel Touch.” Sherwin-Williams boasts 203 shades of white, while Behr offers 138. According to Barber, white is part of the farmhouse appeal some of today’s consumers want. Cabinets, and even appliances, are increasingly available in a variety of white tones. And, a preponderance of white provides the perfect opportunity to showcase a particular kitchen feature in a different color. For instance, an island base might be painted pewter to accentuate its place in a traditional kitchen. Which brings us to another enduring trend …
The allure of island living. The kitchen island — the bigger, the better, Barber says — is still hot. “An island is a great, cost-effective way to change the appearance of a kitchen while increasing efficiency,” she explains. “We still see homeowners wanting to incorporate the feel of furniture into their kitchens, so an island in a contrasting color is a popular choice.” >

A desire for a cleaner, simpler look. Cabinets and doorways with less trim and cleaner lines are more prevalent than ever. While heavier crown molding and pretty cabinet detailing are still available, Barber says consumers are turning back to a form of classic simplicity. “You can see more of a full overlay on doors now, which conveys less busyness,” she explains. Glass-front cabinet doors are sought-after updates, as well.
A reminder that there really is work to do in there! Kitchens are beautiful, yes. But we need them to be functional, too. Barber says homeowners are looking for features that make their jobs easier. Those include cabinet pop-ups, such as mixer stands, along with trash bin pullouts, lazy Susans, and pullout trays, including movable spice racks. “There are a lot of choices when it comes to updating your kitchen,” Barber says. “Part of my job is to help the customers focus, so they don’t get overwhelmed.” We like our kitchens to be both efficient and pretty, after all, and options can seem endless. A Jewel Box Of A Home Downsizing Has Never Looked This Good By Melinda Johnston • photos by scott stiles
N
ewly widowed, Juanita (“Nita”) Moss made the difficult decision to move from her sizeable south Charlotte condominium, where she had lived for 31 years, to a smaller space in a nearby retirement community. After six years on the waiting list, she received
news that a house had become available, and she faced the daunting task of compressing a lifetime’s collection of antique furnishings into a new home less than half the size of her condo.
Moss knew the house needed some modifications before she moved, so she assembled a team of experts to help transform the “vanilla box” dwelling into her ideal home. The strategy paid off. Although she ended up having to leave a few items (like her custom carpets) behind due to their size, overall, she was able to tailor the interior of her new home to allow for use and display of favorite items she had collected during her travels around the globe. John Morgan, owner of Urban Building Group, worked with Moss
to design remodeling plans. She commissioned interior designer Gail Brinn Wilkins, ASID, of Gail Brinn Wilkins Inc., to help make the 2,200-square-foot space luxurious to the last detail. While the outside footprint of the house remains as it was, interior renovations were extensive. Some areas of the slab-built home were stripped to the dirt to accommodate the changes. Walls were knocked down and floors were ripped up. Pipes were relocated, cabinets were torn out, and plumbing and > NO V EM b e r

light fixtures were removed. Several special niches were created, water closets were partitioned off, and a new tub and shower were brought in. Wide-plank hardwood floors supplanted carpet. Floors in the office, laundry room, and kitchen were replaced with white marble tiles accented with black granite tile inlays. Crown molding was added throughout.
What’s Old Is Beautifully New Again
The home is decorated with a mix of formal European furniture and accessories, and comfortable, modern upholstered pieces.

Though most of the items that went into the new house came from high-end suppliers, Wilkins was glad to help Moss incorporate favorite elements and fixtures from her former home. There, she had lovingly hung the finest crystal chandeliers, and she saw no reason to leave them behind. Morgan and his staff care-
fully removed the magnificent chandeliers and installed them in various rooms of the new home. Moss also adored her former living room, a spacious, elegant area decorated with a mix of formal European antiques and comfortable, modern upholstered pieces. The room was highlighted by an arched, columned wall in front of large windows. She decided to create a replica of that room — right down to the wall color and molding style — at half the size. Morgan built arches in front of windows and French doors, and he mounted Dado molding on the adjacent wall. The room was then painted a light yellow and topped with a gold glaze. The renovations and colors matched the previous room so well that >

Wilkins was able to seamlessly fit Moss’ beloved gold draperies, circa 1978, into the mix. The arched wall provides just the right backdrop for Moss’ favorite piece, a C. Bechstein grand piano, discovered and purchased in England and shipped across the Atlantic. The case is covered with a rare gold vernis Martin finish over Louis XVIstyle painted scenery. Moss is only the third owner of the antique instrument, and she still plays it occasionally. She considers it a privilege to be the piano’s caretaker and, as such, has it professionally tuned three times a year. She also faithfully monitors a dedicated humidifier that ensures the health of the strings and pads. A French marble-fronted mantel is also a copy of the one original to Moss’ former 60

home. Above the fireplace hangs an imposing trumeau she purchased from the Duke Mansion. Although the piece was smokedamaged when she first saw it, Moss says it attracted her attention. To her delight, after the mirror was cleaned, a picture of two cherubs became visible in the frame above it. Those cherubs, she says, were the inspiration for the original room’s design.
Bringing The World Home
Throughout Moss’ new home, her love of history, culture, and travel is evident at every turn. A pair of large Chinese rose quartz elephants stands guard at the entrance to the foyer, surveying all who pass, with striking jasper eyes. The dining room features a mahogany >

china cabinet enjoying its third identity, having been painted blue, then maroon; then finally refinished to its natural state to suit Moss’ current décor. The cabinet holds beautiful Royal Crown Derby bone china, which shares space with a curious small folding fork and knife, housed in a velvetlined leather box, and said to have belonged to Napoleon Bonaparte. Down the hall, the guest bedroom is decorated in a lovely lavender and cream motif, using furniture and linens Moss already owned. Two twin mattresses, made up separately with crisp, white covers, have been pushed together to create the illusion of one larger bed. In the master bedroom, the focal point is a canopy bed with European floral print linens. Wilkins recycled the bed, linens, accompanying furniture, lamps, and draperies from

Moss’ previous home. Lampshades were the only new additions. In the master bedroom dressing room, a Roman warrior statue stands sentry from his wooden pedestal. Luxury abounds in the bathrooms, as well. The guest bath boasts marble countertops, Sherle Wagner fixtures with rock crystal knobs, and a gold-accented glass shower. Flanking the mirror are gold sconces and swan towel hooks from Moss’ condo. Moss is comfortably settled in her new home, and the renovated residence appears perfect in every way. However, she acknowledges that she’s not quite finished. After all, there are always new places to visit, interesting antiques to discover, and furniture to rearrange. Moss says with a laugh, “I guess my home will always be a work in progress.” TCW

Golden, Delicious Days A Bo u n t i f u l Har v e s t O f Me mo r i e s by michelle young hubacher
W
e perched on the curb, necks craned to the left. The air was full of the sweet aroma of the Golden Delicious in all her glory. Inside houses up and down the street, kitchen tables waited patiently for the tasty apple incarnations to be piled onto their tops. Apples tucked inside flaky crusts; covered in hard red candy; dripping with caramel; and best of all, transformed into a rich brown apple butter, bubbling in copper kettles dotting the front yards. I was filled with the anticipation that seemed to overflow from my little girls. And on this lovely autumn day, we waited. Waited until the first corps of old roadsters crept around a corner and commenced the Thanksgiving Day Mountain State Apple Harvest Parade. Fire trucks from in town and those towns nearby; tractors pulling flatbeds decked out with paper apple trees and 4-H devotees; young beauty queens perched atop the back seats of borrowed convertibles; floats covered with bunches of tissue paper, looking like cotton candy. We ooh-ed and ahh-ed over all of it. This was a homecoming for me. I hadn’t been to Martinsburg, W.Va., the place of my birth and childhood, since we had buried my much-loved father there two years before. This visit was different. I wanted to come back on my own terms; to claim a piece of this small town where all of my earliest memories live, and to share that with my daughters. The Apple Harvest seemed right. I had joked about making the trip, about the absurdity of traveling so far for a parade — but it was something I was allowing a tiny piece of

myself to treasure. And, it turned out to be a treasure, indeed. Sitting on the curb, my daughters’ hands firmly in mine, I am transported in memory to the top of my father’s Chevy station wagon, watching for signs of a parade that belonged to me. Holding fast to a yellow apple with one hand and to the luggage rack with the other, as my three older brothers try to push me over the edge, I can see the short, flat cut of my father’s hair and the roundness of my mother’s arm resting on the window down below in the front seat of the car. I notice the blue canvas of my brother’s sneaker. If I could only tell which body was attached to that sneaker, I would know definitely which one of them was pushing me. I can see the TV antennas on top of the houses across the street. The tip
of one of my pigtails bobs in and out of my sight — a vision that peeks in and out of the corners of almost all of my childhood memories. As my daughters stretched on tiptoe for a better view, the memories continued to come. By the time Santa rode joyously through the line of spectators, waving that wide sweep of a wave he has, my mind had worked through snapshots of home. And, I was crying. Not the big tears of open weeping, but the small ones, which come with deep breaths and quick swipes of the fingers. “Did you love that?” I asked my girls, as the marching band disappeared from sight. “Yes,” said my youngest, looking up at me, “but the smell of that stinky apple butter is making my eyes water all over the place, too!” TCW
