The lessons quarterback Bruce Gradkowski learned on the football field at the University of Toledo have translated into his current NFL career and his next venture — opening a restaurant in Toledo. Gradkowski’s, slated to open in early December, will be part of UT’s Gateway Project, a grouping of shops and apartments near the intersection of Secor Road and Dorr Street. “A lot of the same things I learned through football are the same things you have to apply in business,” Gradkowski told Toledo Free Press Star during a recent visit to Toledo. It was a bye week for the Cincinnati Bengals, for whom Gradkowski is backup quarterback. “You have to be disciplined, you have to work hard, you have to work as a team. You’ve got to be detailed.” “I’ve learned just how much goes into it. Nothing comes easy, but to be successful we have to put a lot of time and hard work in and we understand that. That’s the way UT raised me in college, making me realize that.” Gradkowski’s partners in the venture are Singh Grewal, owner of Arnie’s on Levis, and Mike Graber, most recently managing partner at Biaggi’s in Levis Commons. Graber will be in charge of daily operations as well as future site development, but Gradkowski said he is closely involved in decisions. “My partners and I, the three of us, we collaborate on everything,” Gradkowski said. “The thing I like is we don’t have egos. We put the egos aside and whatever idea works best, we’re going to talk about it, see what we think and go at it.” Gradkowski met Graber while planning his 2011 wedding rehearsal dinner at Biaggi’s. He met Grewal, who played football at UT in the ’90s, at The Ale House, a bar Grewal owned near campus that was popular with students. “We’re really excited to have him,” Grewal said of Graber. “His expertise with high-end food and the way he runs his restaurants — having him join our team is a very, very exciting thing for us.” Gradkowski’s will focus on fresh, madefrom-scratch dishes featuring an array of “tempting appetizers, hand-cut steaks, pastas, specialty pizzas, salads, burgers and decadent desserts,” Graber said. “We’re going over and above in every category of food,” he said. 3661 Devers_Collision_TFP95_Layout 1 8/30/12 The wine list will feature wines from small

vineyards worldwide. “We have been tasting the wines for the menu for six months now and every one is deserving of a reserve list, but we will pour all of them by the glass,” Graber said. The atmosphere will be warm, featuring natural woods and neutral colors, with signed photos of University of Toledo legends and local sports figures adorning a dedicated wall in the eatery, Graber said. There will be televisions to watch games and two private rooms for functions. “Everthing we are doing is based on creating a memorable experience,” Graber said. “From your food to your service and environment to the garnish on your cocktail, we have put a lot of 1:28 PM Page 1 care into every decision made.”

Great food, great atmosphere

Gradkowski said his main focus is offering great food and a great atmosphere, which will draw people from campus and surrounding areas. “I want college kids to come in and feel like they’re important, they’re grown-up, they’re mature, like, wow, they are eating at a nice place. I want people to feel special, because they belong, because this is their place just as much as it is my place,” Gradkowski said. “We think of the people on campus, and we think of Ottawa Hills, Sylvania. It’s a chance to bring them on campus to show people who haven’t been here for a while how beautiful it is.” Gradkowski and his wife, Miranda, met at UT and recently bought a house in Maumee,

where they live during the offseason. “UT’s been so great to me throughout my career here and I’ve loved the campus and that’s why my wife and I can call this place home,” Gradkowski said. “I’m super excited to have a restaurant going up because now it ties me to the university even more.” Matt Schroeder, vice president of real estate and business development at The UT Foundation, said he’s thrilled to work with Gradkowski and his partners. “It’s going to be fantastic to have Bruce open just in time for the bowl season and also the NFL playoffs and NBA basketball,” Schroeder said. “His timing couldn’t be better.” n GRADKOWSKI CONTINUES ON 4

Neither Gradkowski nor Schroeder remember who approached who, but both feel the venture is a perfect match. “Once we had an opportunity to sit down with Bruce and hear his passion for the university and see his willingness and desire to not only give back to the university, but also this part of Toledo, we were hooked early on,” Schroeder said. “He’s not only looking at it through the eyes of a business investor or entrepreneur, but also through the eyes of a UT graduate. That passion along with his willingness to take some risks really impressed us and made us want to work with him.” The Gateway Project also includes a Barnes & Noble, Starbucks, Jimmy John’s, Yogurt U, Great Clips, Rice Blvd., Wireless Zone and Lofts at Gateway. “We at the university are very pleased with the feedback we’ve heard about Gateway, not only verbal feedback, but feedback at the register and the amount of foot traffic that’s out there on a daily basis. That’s been very rewarding,” Schroeder said. “It will transform not only that part of campus, but that part of Toledo.” Once Gradkowski’s opens, Gateway will be at 82 percent occupancy, Schroeder said. There are three spaces still available for lease, with one tenant to be announced as soon as this month. It was originally announced Gradkowski’s would open in August, but Gradkowski said he would rather do things right than rush to open. “My goal and my plan is to be here for 30 years,” Gradkowski said. “This isn’t just some couple-year thing where we’re trying to come in quick. We want to help the university out and make this campus grow, so we want to make sure

we’re building it right and having everything done right now, so it can last for as long as we want to be here.” Grewal agreed. “It’s going to be a University of Toledo landmark,” Grewal said. “I can tell when a legend is born. I knew the same thing about Bruce. I know him as a person and as a friend and he’s just one of the greatest guys UT has ever had. Having gone to all the places he’s gone and then to come back to Toledo and give it back to UT, that’s a huge thing for the University of Toledo and for the city of Toledo. I 100 percent believe it’s gonna kick some butt there and it’s going to be big for this university.” Gradkowski, who grew up in Pittsburgh, said UT was the only school to offer him a Division I football scholarship and he knew it was a good fit as soon as he visited campus. He graduated with a major in business marketing and management and was drafted by the NFL in 2006. “The moment I stepped foot on campus, I thought, ‘This was exactly what I wanted’,” Gradkowski said. “Now that I’m older I realize football can end any day now and I’m glad I have my degree.” Gradkowski said hard work will be what sets him apart and gives Gradkowski’s staying power. “I’ve always felt if you do it right, you’ll succeed. There’s no shortcuts to success,” Gradkowski said. “It’s great how God works that he put this opportunity of a restaurant in front of us. He’s really blessed us. “It will be like ‘Cheers,’ where everybody knows your name,” Gradkowski said, breaking into song and then laughing. “I hope people love the food and the atmosphere and just come away with a great experience.” Email mail@gradkowskis.com for information about employment opportunities. Former Hooters girl Julie Wilson wants to change the way you live.

Julie Wilson is the first to admit she cuts an unusual figure in the world of business. From her outgoing and infectious personality to her provocative photo shoots, the former Hooters waitress may not seem like the average CEO. But Wilson’s drive and passion are some of the factors putting her company on the map. Wilson is the founder and president of RawNation, a company that promotes healthy dietary habits through organic herbs and superfoods — including Hot Rawks, an “all-natural libido enhancer.” In an interview with Toledo Free Press Star, Wilson said a drive to run a business runs in her family. “I come from a family of entrepreneurs. My uncle was a very successful entrepreneur, my dad is, my cousins are. It’s just kind of in our family to motivate each other to work for ourselves. And so, maybe being raised around that had something to do with that,” she said. Of course, it’s a different game when you’re a woman in a male-dominated business environment. “That’s actually a big problem. It’s funny, because in the beginning, I didn’t really think it would be. And a lot of people would tell me that — and they were like, ‘You’re gonna have issues, because it’s a male-dominated industry, and you’re a woman.’ And I was like, ‘Whatever, that’s just an excuse people use.’ “But, I’ll be honest with you, I’ve been doing this for three years now, and I have realized that it is a challenge,” Wilson said. “No. 1, sometimes it opens doors easier, but a lot of times it’s harder for people to take you seriously. So I’ve had the issue of having to prove myself a lot harder in situations, because I don’t fit the bill of a normal CEO, especially in this industry.” Still, Wilson said, “I have a really good product and a really good story, so once I meet people and get to talk to them, it’s a much easier sale than it is if they don’t take the time to talk to me or get to know me at all.” That story is a big part of what drives Wilson’s passion for her industry. About 10 years ago, Wilson

said, she suffered a series of health issues. “I was living with horrible pain and I was dealing with the repercussions on my health from it,” she said. “It was a really bleak diagnosis, there was apparently no cure from what my doctors told me. I was 25 at the time, and that was a really hard pill to swallow at that age, and feeling like you’re old because you’re sick all the time and you can’t

digest food — it interfered with my daily life. “So I went on a quest to find a natural cure, because I had nothing to lose at that point. And when I totally reversed my condition in six months, just off of diet and herbs, that’s what really sparked a passion, because I realized if I had listened to them, I would have had surgery and been on drugs for a long time.”

Wilson made it plain that she hopes her story, and the way her company does business, helps inspire people to make changes to their lifestyle. “I really don’t wanna cheapen my product or my brand, I really wanna be in it for the long haul. And I have a real big passion that drives me, and a lot of that comes from struggling and wanting to do something that makes a difference,” she said. O

Restaurant Week Toledo has grown every year and this year will be the biggest yet, organizers say. Set for Feb. 21 to March 2, Restaurant Week Toledo will feature new venues as well as returning favorites and will be three days longer than last year, said Becca Gorman, co-chair of Restaurant Week Toledo. Eighteen locally owned restaurants participated in last year’s Restaurant Week Toledo and there are already 28 confirmed for this year’s event, Gorman said. “Last year’s event was an overwhelming success. We received rave reviews from restaurant owners, some of whom ran out of food due to the response from the public. We were also pleased with the feedback from patrons,” Gorman said. “We extended the event by three days due to a large volume of requests from both restaurant owners and patrons asking for more.” Participating restaurants include Bar 145°, The Blarney Irish Pub, Bobby V’s

American Grill, Burger Bar 419, Caper’s Restaurant and Bar, Fifi’s Reprise, The Hungry I, ICE Restaurant and Bar, La Scola Italian Grill, Loma Linda, Mancy’s Restaurant Group (Bluewater Grille, Mancy’s Italian Grill, Mancy’s Steaks, Shorty’s True American Roadhouse), Manhattan’s, Maumee Wines and Bistro, The Oliver House (The Café, Mutz, Maumee Bay Brew Pub and Rockwell’s), Plate 21, Poco Piatti, Registry Bistro, Rosie’s Italian Grille, Tea Tree Asian Bistro, TREO, Ventura’s and Zinful. Each venue will feature a special Restaurant Week menu priced at $10, $20 or $30. (Drinks, taxes and gratuities are not included unless specified.) A portion of the proceeds will benefit local nonprofit Leadership Toledo’s youth programs. “People can feel good about going out during Restaurant Week Toledo because they are supporting local businesses while at the same time encouraging future leaders of Toledo,” said Cory Dippold, associate executive director of Leadership Toledo. Restaurant Week Toledo has gotten better every year, said Neal Kovacik, general man-

ager of The Oliver House. Rockwell’s has participated for the past two years and this year all four Oliver House restaurants will participate, he said. “It created a lot of traffic and a lot of interest last year,” Kovacik said. “It’s a great way to highlight local restaurants and a great way to get people in that may have not tried the place before, and of course it’s for a good cause.” Zinful in Waterville, which offers guests an extensive wine list and walk-in humidor, will be one of this year’s first-time participants. Owner Joyce Franzblau said she is passionate about supporting the community. “I’m very community-minded and we try to participate in as many community events as possible,” Franzblau said. “I think it’s a really cool thing. The Blue Pacific Grill at Levis Commons in Perrysburg is celebrating its eight-year anniversary this month. While the restaurant is known for its unique create-your-own stir-fry dishes, the service and atmosphere are what sets the eatery apart in the minds of local patrons, said waitress Leandra Flores. “We have a lot of people that come here every day. We know their names, their drinks and just how they like their food,” Flores said. “I have been here for all eight years and have really enjoyed working in this kind of atmosphere. My boyfriend and my sister work here and some days it doesn’t even seem like work.” The family restaurant is owned by Kirk Falknor and his son Brandon Falknor. Kirk’s daughter, Jessica Necessary, manages the restaurant’s operations. “I have been at Blue Pacific Grill for the last five years and have really enjoyed working with everyone at the restaurant,” Necessary said. “We currently have around 30 employees, and we are all just one big family.” The restaurant is preparing for the holiday season and recently launched a gift card promotion to give back to customers. For every $25 patrons spend, they will receive a $5 gift card back to the restaurant.

“To gear up for the holiday season we also have added delicious appetizers and unique seasonal drinks to our menu,” Necessary said. “The newest appetizers to hit the Blue Pacific Grill menu are fajitas, quesadillas, chips and salsa and buffalo chicken wraps. Our seasonal drinks include eggnog martinis and our famous Christmas martinis.” The customizable stir-fry dishes the restaurant is known for come with a choice of 12 signature sauces and the opportunity to watch the grill master cook your meal right in front of you. “Everything is fresh and purchased from local vendors,” Necessary said. “We pride ourselves on providing better quality and variety than our competition.” The Blue Pacific Grill is also in the process of teaming up with the American Heart Association to become a heart-healthy destination. The restaurant offers gluten-free options and vegetarian meals. Tuesday is family night where kids 8 and younger eat free with the purchase of one adult meal per child. Thursday is a date night special, featuring two dinners, two nonalcoholic drinks and one dessert for $30. Chef Joseph Jacobsen wanted to go “back to our roots” with the opening of Dégagé Express. “Back to when we used to get everything off the farm and everybody used to make everything from scratch,” he said. “Before TV dinners.” Located in The Historic Commercial Building, 301 River Road, in Maumee, Dégagé Express is an expansion of Dégagé Jazz Café, which has been open for four years. Dégagé Express was designed as a quick stop for lunch but with the same flair the café serves for dinner. “I wanted to move us to offer lunch,” Jacobsen said. “More people want quick lunches as opposed to sitting down.” The restaurant is in the middle of a soft open with a grand opening planned, but not yet scheduled. There are still finishing touches to add to the menu and venue, Jacobsen said. Jacobsen took over Dégagé Jazz Café three years ago. He’s been planning the expansion for months and said it’s been a little tough balancing everything. But the hard work is not over. Jacobsen is aiming to have the menu 100 percent locally produced. “It is a massive amount more work than other places are willing to do, but I want people to experience it,” Jacobsen said. “I’m

trying to expand people’s horizons and introduce them to what fresh tastes like.” Jacobsen said he is aiming for a “farm-to-table concept.” He goes to the farmers market every week, checking all produce before purchasing. “It’s going to be a little tough because winter is coming,” Jacobsen said. “But spring, summer and fall will be pretty much 100 percent of all our produce is going to be locally produced.” Menu items for Dégagé Express include sandwiches, soups and salads. “The Dip” sandwich is made of beef, house-made gravy and locally made bread. A sign on the wall suggests you can get your bread dipped once, double-dipped or “wet.” Nick Davis, operations manager of The Historic Commercial Building, assured fans of Red Wells, which closed at the building to make room for Dégagé Express, that it is still open at its home base on Sylvania Avenue. “Since Dégagé has been very successful, it made sense to expand it to a lunch venue, which also improves efficiencies and improved utilization of employees,” Davis said in an email. Dégagé Express is open 11 a.m. to 7 p.m. Monday through Saturday. Harpists to play at Trinity on Nov. 9 Three renowned harpists will play in the area Nov. 9 at Trinity Episcopal Church. Patrick Ball, Lisa Lynne and Aryeh Frankfurter are performing as part of “Legends of the Celtic Harp,” a free concert/storytelling tour. The Toledo event begins at 7 p.m. Ball, a California native, has recorded nine instrumental and three spoken-word albums, which have sold more than half a million copies, according to a news release. He has also received grants from California Arts Council and the Circle of Excellence Award from the National Storytelling Association. Lynne, who splits her time between San Francisco and Los Angeles, has composed music for the Windham Hill Records. Her tunes have placed in the top 10 and top 20 on the Billboard New Age Music Charts. Her work can be heard on the PBS special, “Alone in the Wilderness.” She is also founder of Harps for Hearts, a music program that provides live music in several California hospitals. Frankfurter also resides in San Francisco. He began playing violin at age 3 and now plays several instruments, including the rare Swedish nyckelharpa. He has produced several CDs and a DVD in addition to exploring many genres. The Northwest Ohio Chapter of the American Harp Society is sponsoring the event and donations will be accepted for the music programs at Trinity Episcopal Church, 316 Adams St., Toledo.

ecently, the “GreenTown: The Future of Community” conference came to Toledo to “drive to create a healthier, more prosperous and sustainable Toledo-Lucas County.” “GreenTown is a zero waste, carbon neutral event designed to ‘connect the dots’ between the public and private sector to create a stronger platform for common ground and building community,” acSTACY cording to its website. I was curious to hear from a few acclaimed activists and leaders in sustainability who would be visiting Toledo for the conference, yet I was also skeptical because GreenTown is more or less a franchise conference that travels the Midwest. It is coproduced by a5, a Chicago-based marketing and communications firm, and Seven Generations Ahead, a nonprofit organization whose mission is to “build healthy, sustainable communities.” I raised an eyebrow at the $125 registration fee, which would mean a person working a minimum wage job would have to work 15 hours to register. I was and am doubtful of Mayor Mike Bell’s idea of sustainability and how he intends to “green Toledo.” I wondered if GreenTown was the latest corporate greenwashing trend or carried any legitimate prospects for the future of our city and our planet. The main conference opened with a “Call to Action” by Mayor Bell, Lucas County Commissioner Tina Skeldon Wozniak, and two of the conference co-producers. This was a thank you to the sponsors, an expression of excitement about the guest speakers and prospective outcomes, an acknowledgement of the number in attendance (Toledo’s GreenTown registration was larger than any other, more than 450) and an emphasis on different parts of the community working together. During a short break between Mark Fenton, host of “America’s Walking” on PBS and Alexandra Cousteau, filmmaker and National Geographic Emerging Explorer, I had a chance to chat briefly with Mayor Bell. He had mentioned several times in his speech about “moving this forward,” so I asked him what that meant and what sustainability initiatives he intends to implement. Fortunately, his public information officer showed up quickly because as his eyes darted around and he repeated the simple ideas put forward by the most recent speaker, like benches and sidewalks and bike racks, I could tell he was at a loss. I heard from the following officials, directly or publicly: Jen Sorgenfrei, public information officer; Tim Murphy, commissioner of environmental services; Patrick McLean, director of finance; Kevin Moyer, executive director of

energy efficiency and alternative energy programs for Toledo-Lucas County Port Authority. I gleaned from them that there is currently a strong focus and decent amount of funding for energy efficiency in buildings (both city-owned and privately owned), sequential implementation of green infrastructure (solar), considerations for “complete streets” to be included during regular construction and road improvements and a commitment to include environmental sustainability in the upcoming city budget. According to Jen Sorgenfrei, the GreenTown Conference is a catalyst to develop a sustainability plan for the City of Toledo, based on feedback from conference participants and input from the people as to a vision for a sustainable Toledo. GreenTown afternoon sessions included:

A hallmark of the franchised conference is a closing reception with beer from the local brewery. Toledo’s was no different with microbrews provided by Maumee Bay Brewing Co. I was pleased to see a zero waste effort at the conference at SeaGate Centre, which included composting, no throwaway cups or mugs, recycling and cloth napkins for lunch. I also enjoyed the food and drinks provided by our hometown, including Flying Rhino Coffee, We-BRibs (shout out to the peach cobbler), Toledo GROWs and more. This conference is on the right track. The track to sustainability needs to include even more participants, especially at the grassroots level. Most importantly, the track needs to give the well-being of our environment a prominent voice and heavy consideration in economic development discussions. “Ecology” and “economy” share the same root of “ecos,” meaning home.
