We know what Carmel High School senior David Liang did on his summer vacation. He was in Moscow for a week and half taking part in an international chemistry competition where he picked up a gold medal. We’ll tell you more about this amazingly talented student. Our summer vacation? Funny you should ask. We found ourselves in the middle of two annual FESTive celebrations: the 20th Anniversary CarmelFest, and a week later, the San Fermin Festival in Pamplona, Spain. You know it better as the “Running of the Bulls.” What do these two events have in common? More than you’d imagine, as you’ll see in our side-by-side comparison. With a new dog park in the works and free treats for the passing pooches, it would seem Carmel is getting more pet-friendly all the time. We got a dog’s eye view when we took our dog, Reggie, for a stroll through the Arts & Design District and along the Monon. We’ll have the scoop (make that, poop scoop) inside. In another installment of ‘Carmel Goes to War’, Ray Compton tells the compelling story of Carmel’s Will True, a veteran of the Korean War. Prairie View is (Still) in Good Hands | John Cinnamon Prairie View Golf Club was the vision of developer Jim Ackerman in 1994. It was his pride and joy. Together with his son-in-law Brian Nicholoff, and famed golf course designer Robert Trent Jones, Jr., Ackerman transformed more than 200 acres of Hamilton County farmland along the White River into a golf destination that won praise from Golf.com, Golf Digest, and GolfWeek Magazine, the latter giving Prairie View the #1 spot on its “Best Golf Courses You Can Play in Indiana” list in 2009. But despite having one of the finest golf facilities in the state, the Ackerman family felt it was time to move on. Nicholoff left the operation in 2009. And with Jim Ackerman getting on in years, the decision was made to put the course up for sale in January of this year. It was a sad coincidence that the 88-year-old Ackerman passed away two months later on March 2nd. Enter Doc O’Neal and Gary Aletto. Besides being friends for some 15 years dating back to their days in the Carmel Dad’s Club, O’Neal and Aletto were also long-time friends of the Ackerman family. O’Neal’s golf background is impressive to say the least: Carmel High School state champion in 1971 and ’72, Crooked Stick Golf Club champion in 1982 and ’88, past president of Crooked Stick, developer of The Bridgewater Club, and for the last

five years, a partner in Cohoat & O’Neal Management – a company that owns and operates Wood Wind Golf Club in Westfield and manages The Golf Preserve in Frankfort. Gary Aletto, a Carmel resident and entrepreneur, is also an avid golfer and member at Crooked Stick. All of this made for a smooth and natural transition as (Matt) Cohoat & O’Neal and Aletto (as an investor) offered to buy Prairie View. O’Neal says the Ackerman family did everything within their power to facilitate the purchase, hoping to keep ownership local and with a company they knew would maintain the quality. “The course and the facility are second to none,” said O’Neal. Yet he still saw room for improvement. “Our first focus has been the golf course. Not that it was bad, because it wasn’t. But it wasn’t up to a standard that we wanted.” Since acquiring the course in late May, they have concentrated on improving the condition of the greens, improving the speed of the greens, cleaning up the bunkers, and sprucing up the way the course is detailed. Other aspects of the club that O’Neal wants to make sure are still a part of the Prairie View package are things that happen even before the golfer gets to the first tee. “The welcoming, the friendliness, and the smiles of the staff,” said O’Neal. All add to the golf experience at Prairie View. Future plans also include integrating Prairie View’s golf academy more into the club, with instruction, club fitting and repair, and clinics. Prairie View is Gary Aletto’s first foray into golf course ownership. Although still a member at Crooked Stick, Aletto says he has played a “fair amount” at Prairie View and looks forward to his involvement in the new venture. He calls Prairie View “an outstanding public golf course.”

The country was not mentally ready for another visit to the battlefield. But when the call came from faraway Korea, the United States answered. Will True was barely 15. As the slugfest continued and the battle engaged millions of soldiers from North Korea, South Korea and the United States, it became clear that the war was not a short-term run. It was 1952 and America’s troops were locked into a political quagmire in Korea. A youngster left his home in Iowa and headed to Des Moines. He enlisted in the Marines. Will True was barely 17.

Will True was barely 18. For True, now 79, the trials and tribulations of Korea are still lodged in his memory. Officially, the war ended July 27, 1953. For True and those who outlasted the battles to come home, the horrible memories of war have never been totally erased with time and ensuing chapters of life. “I was lucky,” said True, a longtime Carmel resident and a member of American Legion Post 155 on Main St. “I don’t like to talk about it too much. There were things that I’ve seen and were involved with that I try not to think about today. You saw people blown up. We saw as much as the people did in World War II and a lot of it was not good.”

THE SPACE BETWEEN A ROCK AND “I ROCK.”

The young Marine completed boot camp training in California, learning to become a flamethrower operator. He would board a ship on Christmas Eve and was dispatched to Korea. Once there, the Marine was dispatched to the battlefields where he was face-to-face with war and death. That was particularly the case on the day the North Koreans punctured through the Allies line and overran an outpost harboring four Marines. One died. The others escaped. Barely. Enemy bullets sprayed the dirt, inches from the frightened Marine.

In the end, 33,686 U.S. troops were killed in Korea. Another 2,830 died in non-military situations and 8,176 were reported missing in action. It is estimated that 1.2 million persons died in the Korean War. But often the war in Korea is misplaced in history when compared to World War II and the Viet Nam War. “Yes, it is the forgotten war,” True admitted. But True has vivid memories of a 1953 incident when his outpost was overrun by the North Koreans. An incoming shell killed one mate and left the other three dazed and wounded. True manned a machine gun, but the trio was down to only one hand grenade and greatly out-numbered by charging foes. An attempt to surrender by waving a white tee-shirt was ignored. “We tried to give up but the bullets

were landing at our feet,” remembered True. A frantic retreat ensued. “We had to get the hell out of there,” said True. “I remember someone yelling for us to ‘get back, get back – they’re going to shoot you.’“ With one mate blinded and the other impaired, True led the trio to a nearby embankment. “I said jump,” True recalled, “and we did.”

True and his mates were grabbed by other Marines. Today, True still tears up in recalling the episode. A military hiccup in paperwork separated him from a Medal of Honor. However, True earned two Purple Hearts for other injuries he suffered in Korea. True’s valor has not been forgotten by Rock Effron, Commander of Post 155. “It is because of people like Will that I do what I do,” said Effron, a Viet Nam veteran. “Those soldiers in the World Wars and Korea have gotten us to this point in all of our lives. We would not be where we are as a country if it were not for those people.” Sadly, the ages are now taking these heroes. The Carmel post has only one surviving veteran of World War II. True, who has suffered a stroke, is one of about 20 Korean veterans who are members at Post 155. “I love it here,” said True from a table in the public restaurant area. “It means everything to me.” And True means a lot to Effron and others. “Will loves the camaraderie,” Effron said. “He has a lot of things in his head. He is full of stories.”

Meanwhile, Post 155 members have shouldered a strong fundraising campaign. Post 155 has raised almost $600,000 in its annual charity golf tournaments. A portion of the proceeds have delivered scholarships to Hamilton County youths whose a n k i n g fathers are in the military overseas. But a huge chunk of the funds have been sent to agencies in Indiana that assist homeless veterans. There are reportedly more than 30,000 homeless veterans in Indiana. “It is hard to believe in this day and age there are so many homeless veterans,” Effron said. “We help in any way we can.”

Effron noted that during a Christmas visit to a shelter for homeless veterans he encountered a former soldier who was crying after receiving a package of bed sheets. “He said it was the first time in six months that he had real sheets to use,” the commander said. “He had been using newspapers for bed sheets.” For True and many Americans involved in the Korean War, they remained in Korea for several months after the armistice was signed in 1953. True would eventually return stateside, landing in San Francisco. He was dispatched to a base near Washington, D.C. for his remaining days as a Marine. A Dog’s Eye View of Carmel | Ann Craig-Cinnamon

W

e all know that Carmel is a great place to live. In fact, it’s #1 in the whole country according to Money Magazine in its 2012 “100 Best Places to Live in America” list which highlights small cities with populations of 50,000300,000. The magazine’s criteria includes things like job opportunities, the variety of leisure and cultural activities, great schools, low crime and quality health care. One of the other yardsticks that people often use to measure the quality of life in a community is how pet friendly that community is. What would our canine residents say about life in Carmel? We decided to sniff out the answers in our own survey of the quality of life here for man’s best friend. We engaged our in-house expert to help us with it. Our oneyear-old Havanese, Reggie, checked out downtown Carmel and has his own thoughts that follow in a pictorial. His needs are a little more basic than the folks that visited from Money Magazine, and they’re a little lower to the ground too. But, important, nonetheless. What we found were a lot of businesses in the area of downtown Carmel that are very obviously pet-friendly. You can’t miss the water bowl and jar of help-yourself dog bones outside the Edward Jones office on Main St. Donatellos offers “dine with your dog” dinners outside during the summer. Bub’s allows you to eat with your dog at their picnic tables along the Monon, if you order carryout.

Another person who chose to locate his animal business in downtown Carmel is Dr. Greg Borlik who opened Cottage Animal Clinic in 2012. He prides himself on providing a more unique and personalized veterinary experience, and the fact that his clinic is in an old home gives it a warm and inviting, home-like atmosphere that makes a trip to the vet feel like you are visiting your friend’s home. Dr. Greg said he has worked all over town and chose Carmel to open his clinic for a specific reason. “I knew I wanted to create a friendly and intimate atmosphere, and The Carmel Arts and Design District is wonderful at this with all of its businesses, homes, and apartments,” he said. The doctor gives the city high marks on being canine-centric. “Carmel is a very dog-friendly city. Just walk on the Monon or around any neighborhood and you will see for yourself how many spoil their four-legged friends,” he added.

Just a few blocks from the Arts and Design district and north of Carmel Drive, is Camp Bow Wow – Reggie’s home away from home. They offer large indoor and outdoor play areas where dogs can play with other dogs much of the day rather than being crated up. Camp Bow Wow’s, Lauren Alexander said Carmel is a great place for a business such as theirs. “We feel that Carmel is becoming increasingly more pet-friendly as the years go by. There are several restaurants in the area that allow pets on the patios, along with the convenience of walking and socializing them on the Monon Trail. Carmel is definitely on its way to extreme pet-friendliness with the new dog park rumored to be in the works, along with more and more dog-friendly- and petcare-related businesses opening regularly,” she said. Then there are businesses such as Canine Cloud Nine that cater to pets by offering cage-free grooming plus a line of Indiana-made holistic dog foods and jerkys. Owner Sean Litke said he chose his location because it was close to so many homes and apartments, adding that Carmel is a great place to be involved in the animal business. 18

“We get quite the variety of clients. We get people who are down here waiting for Bub’s who pop in for a treat. We get people who are new dog owners that need a little training themselves. We get people who truly care about their dogs physical and mental wellness. We get people who support us simply because they like supporting local business, especially a 26 year old entrepreneur. Our heart is in the right place, and people perceive it and could not be more receptive,” he said.

The new dog park is more than a rumor. According to Lindsay Labas, the Marketing Manager for Carmel Clay Parks & Recreation, The new Central Bark Park, as it will be called, should be open by late spring to early summer of next year. It will be located off 116th Street,

just west of Rangeline Road, and will encompass about two acres. She said it will include areas for small and large dogs, a shelter, and a controlled entrance area regulated by electronic pass cards. Fees have not yet been determined. Lindsay said all Carmel parks and greenways allow dogs, and that the major parks provide environmentally-conscious dog stations and bags. “While being dog-friendly is not a primary focus of Carmel Clay Parks & Recreation we do welcome people and their dogs into our parks and greenways. Dogs enrich our lives with their companionship and personalities, encourage individuals to know their neighbors and socialize, and increase physical activity. As a department, we understand the benefits dogs provide their owners and feel it’s important to provide an outlet that allows for these benefits,” she said. Lindsay offered statistics that show the growing need for

a dog park here. “Over the past decade, public support for a dog park within the Carmel Clay park system has grown tremendously. In a community survey conducted in 2001, only 9% of households expressed a need for an off-leash dog park. Based on our most recent survey conducted this May, 32% of households now express this need,” said Lindsay, who added that is five percentage points greater than the national average. And, the need for a dog park in Carmel was greater than other recreation amenities such as outdoor basketball courts (27%), indoor basketball/volleyball courts (24%) and soccer/ multipurpose fields (13%). Except for some slightly annoyed Monon bikers (when Reggie ran into their lane), our experience was certainly positive during our Carmel doggie outing. We’ll let Reggie give you his perspective.

“It was the best of times, it was the worst of times.” With apologies to Charles Dickens, one of the fastest trending categories in food news is the gluten-free diet. Gluten-free products have gone from being relegated to a small section of the organic aisle to mainstream commercial products in the baking aisle, frozen foods, even fastfood pizzas. The challenge with removing gluten from food is that gluten is what makes any grain-based product taste good. We like soft breads with crunchy crusts, light fluffy cakes with a tender crumb, and melt-in-your-mouth cookies. The science behind pastry goods requires a fat-liquid-dry ratio using yeast and gluten to create an alchemy of flavor and texture, which is why so many G-F foods taste “off” to the uninitiated. The quality and quantity of new products is improving. At Fresh Market, 2940 E. 146th St., I found a pleasing amount of G-F products mixed in with regular food items, but they were easily identified by their blue shelf tags. A very helpful stock boy, who happened to be G-F, showed me his favorite new products: a Schar

lemon wafer cookie, and Tate’s snicker doodle cookies which he said, “you’ll only know it’s G-F by the cost!” At Whole Foods, 14598 Clay Terrace Blvd., they have a pleasing amount of pastas and bulk items that are used in G-F baking. They probably have the largest selection of G-F all-purpose baking mixes and gluten replacers (xanthan gum, arrowroot powder.) If you stop by the front desk, Whole Foods has a 22-page list of items separated by categories that are G-F. They also carry many G-F items in the frozen cases. Carmel’s newest entry into healthy grocery stores is Earth Fare, 1392 Range Line Rd. Earth Fare’s corporate philosophy of no preservatives, nothing artificial and no bleached or bromated flours will make it easier for those needing to shop with special diets in mind. I found an imported Italian pasta from Italy made from corn and rice flours. What drew me to it was its beautiful shell shape and color. From talking with clients and friends who have kids on a G-F diet, they struggle with finding tasty alternatives to every kid’s staple: Mac ’n Cheese. This pasta was awesome! While shopping at Earth Fare, I was introduced to Bee Free products, which are created here in Hamilton County. Jennifer Wiese began her search for G-F products when she started serving a G-F diet to her son following his Autism Spectrum diagnosis. They have a “cup for cup” all-purpose flour, and a Paleo Diet-approved cereal that uses seeds and nuts to replace the usual grains. These products can also be found online at beefreegf.com. G-F

 In a stand mixer with a whisk attachment, mix together sugar, cocoa, cinnamon, cardamom and salt on low.  Add egg whites and vanilla. Mixture will look like a thin cake batter.  Stir in chocolate chips, cherries and toffee by hand.  Drop onto parchment paper.  Bake at 350 for 15 minutes.  After removing from oven, sprinkle salt on top, allow to set for 2-3 minutes before placing on rack to cool.  Store in a covered container.

Unsweetened Cocoa - 1 t. cinnamon - 1 t. cardamom - ¼ t. kosher salt - 2 t. vanilla - 3 large egg whites - 16 oz. chocolate (any good quality chocolate, coarsely chopped) - ¼ c. dried cherries - ¼ c. toffee pieces - Fine pink Himalayan salt or fleur de sel (for finishing)

- 4 egg whites - ¼ c. honey - 1/2 t. @ of vanilla, almond and rum extracts - Zest of one lime - 3 c. coconut flakes - 1 t. arrowroot powder - ¼ t. salt

 In a stand mixer with the whisk attachment, beat egg whites until they are fluffy, but not yet stiff.  Gently fold in the remaining ingredients with a spatula.  Drop by large spoonfuls and bake at 350 for 13-15 minutes.  To “gild the lily”, you can dip the bottoms in melted white chocolate.

Best in the World Carmel High School student wins Gold at International Olympiad | Ann Craig-Cinnamon

D

avid Liang is a gold medal winner. But the 17-year-old Carmel High School senior didn’t win his medal by diving into a pool. He won it by diving into math problems, wrestling with equations and hurdling over complicated chemistry compounds. David’s win came recently at the

International Chemistry Olympiad held in Moscow, Russia. And, much like the better-known Olympics that features sports, participants practice and work hard for years to make this Olympic team. First there’s a local exam hosted by the American Chemistry Society, then a national exam. From the national exam results, 20 students from around the country are chosen to attend a two-week camp at the Air

Force Academy in Colorado. The team to represent the US is then chosen at camp. David started this run as a high school freshman, made it to camp by his sophomore summer and then this year was chosen for the team. In Moscow, some 300 students from around the world competed, with only the top ten percent winning gold. So, you can rightfully say that David is in the top ten percent of chemistry students in the entire world. David realized in middle school that he had a love for science. “It probably started with math. That’s usually a good starting point for getting into the sciences. And, from there I took one class in chemistry and it was really interesting – like the way everything made sense, and how it could explain a lot of things that happen in everyday life,” he said. He called his ten-day visit in Moscow a cool experience, and enjoyed meeting the other competitors.

Sometimes it takes more than a coat of paint to change up a room. For the Nelson family of Carmel, it was the kitchen countertops that they wanted to tackle first. Their thirteenyear-old kitchen needed a new look, so the Nelsons decided to invest in their nest and get the countertops and backsplash of their dreams. “This all started with watching HGTV!” laughed Diane. “The kitchens on TV were all so beautiful, and I was tired of the plain, dull, white countertops in my kitchen,” she added. “I wanted new countertops and a nice tile backsplash.” Diane and fiancé, Kenny, began looking through all kinds of advertisements for granite, and decided to check out the showroom of Granite Transformations on Pendleton Way. “I was very impressed by their selection,” said Diane, who wound up finding something totally unique: recycled glass countertops. “The look is beautiful, and I love being green!” A representative from Granite Transformations took samples to the Nelson home so they could see how the recycled glass countertop would look in their kitchen, and helped them find a coordinating backsplash tile. The Nelsons chose Chiaro Ambra countertops with a sparkling bronze and gold 26

Greg DeWitt, owner of Granite Transformations, said the recycled glass is a popular choice these days. “The product is made from transparent tempered glass and post-consumer recycled glass such as broken beer bottles,” explained Greg. “The glass look is clean and modern and the countertops are extremely durable and low maintenance because it won’t stain.” In a matter of days, the Nelsons had their kitchen transformed with new countertops and backsplash. Diane then added new brushed nickel pulls, all black appliances, a brown granite sink, and an oil-rubbed bronze faucet to complete the look. “We still haven’t painted the walls yet,” laughed Diane. “It was first things first, and the old countertops just had to go!” Diane plans to paint and add new flooring next — maybe after watching a few more episodes on HGTV! | John Cinnamon We recently had the pleasure of experiencing two iconic summer celebrations within the space of little more than a week. On July 4th, we were on the Gazebo Stage introducing the Carmel Symphony and the Wright Brothers at the 20th Anniversary of CarmelFest. By July 12th, we were in Pamplona, Spain experiencing the San Fermin Festival, a.k.a. the “Runnning of the Bulls”, an event that dates back to the 16th century. We thought it would be fun to compare and contrast the wholesome slice of Americana that is CarmelFest, with the 500-year-old tradition of the Running of the Bulls, an event filled with danger and debauchery.
