re you excited about Pearls & Pumps? Tickets are on sale now for the 9th annual event. It’s on Saturday, March 21 at the Omni Louisville Hotel. Pearls & Pumps is a day of shopping, a fashion show and fundraising, all to honor women’s cancer survivors and their health. Funds raised at Pearls & Pumps benefit women’s cancer programs at Baptist Health. Created in 2004, the foundation assists Baptist Health hospital in providing the most advanced equipment, technology and treatment options to transform patients’ lives. The foundation creates “opportunities for the community to be engaged in our fundraising efforts as we strive to improve the health of our community and provide exceptional care to each and every person who walks through our doors,” says Mary Michael Corbett, executive director of Baptist Health Foundation.
The first Pearls & Pumps in 2012 had 225 attendees at The Olmsted and now 600 or more people attend the gala at the Omni. Through this fun and fabulous event, Baptist Health Foundation has been able to give the Mimi & Charles Osborn Cancer Center more than $580,000. Mary Michael says “100% these funds have been used for patients—to provide reiki and massage therapy, the purchase of wigs and scarves, and Cool Caps to help prevent hair loss during chemotherapy, numerous support groups, transportation assistance for patients, and the purchase of new equipment like the Faxitron PathVision, which provides immediate, high-resolution imaging.” On March 21, doors open at 10 a.m. for boutique shopping, raffles and specialty bars. There will be food stations in the
ballroom, and then the fashion show at 1 p.m. This year there are two shopping areas and you can bid for items online from March 1-20 at pearlsandpumps.org. The 2020 theme is “Enlightened: Lighting a Path of Hope," so you can definitely expect some amazing lighting effects during the fashion show, thanks to producer Chris Fulkerson. “I would love for all guests to leave with an understanding of how important it is to share your light with others,” Chris says. “Sharing our light does not dim our own. Female cancer survivors shine the most light on others. They are the most giving—of advice, love and light.” Isaac J. Myers, II, M.D. is chief health integration officer for Baptist Health and president of Baptist Health Medical Group. In his
spare time, he happens to design couture gowns. The Dr. Myers Couture Collection will be modeled by Dr. Mollie Cartwright. Other models for the show range from 7 to 82 years old and include professional models, cancer survivors, volunteers, doctors and hospital administrators, all of whom will be modeling fashions appropriate for the Derby and Kentucky Derby Festival activities, including galas. “Pearls & Pumps is a heartwarming fashion show and shopping event,” says Christina Shannon, executive director of Oncology Services at Baptist Health. “This powerful event brings together women of all ages in support of all who have been impacted by cancer. It is a day of remembering, encouraging and supporting women throughout our community.”

Kentucky Derby Museum:

he outfit preparation, the fanfare, and the hoopla of the first Saturday in May is all over in just two minutes, but there is a place where that magic lasts all year long: the Kentucky Derby Museum, right next door to Churchill Downs. Rachel Collier, Director of Communications at the Kentucky Derby Museum, took me on the Behind the Scenes Tour, showing many different aspects of Churchill Downs along the way. It provides an insider’s view of the non-public areas including the Jockey's Quarters, Millionaires Row, private members-only Turf Club, and the other newly renovated spaces, even snapping a photo right next to the iconic Twin Spires. Rachel explains, “Many people don’t know, but we are the exclusive tour provider of Churchill Downs – if you want to tour Churchill Downs, the only way is through the Kentucky Derby Museum.” The Around the Track Golf Cart Tour covers much of the Churchill Downs grounds and concludes with lunch in the private Post Time Kitchen, with an unparalleled view of the track where you may even get to catch a race. Only individuals working on the backside or on this tour have the opportunity to eat here. Carry some peppermints in your pocket, you may have the chance to be up close and personal with the horses on the backside and peppermints are their favorite treat! If you’d rather stay inside, the Museum has everything to keep you entertained for

I
n October 2019, Matt Gibson was named President & CEO of the Kentucky Derby Festival, succeeding Mike Berry who retired after 33 years with the Festival. In fact, Matt Gibson was Berry’s first hire in the late nineties. Formerly a firefighter with the Jeffersontown Fire Department, Gibson started with KDF as an events manager. He was promoted to Director of Operations in 1999, Vice President of Events in 2003, and Senior Vice President of Events in 2015. Although the Kentucky Derby Festival Board conducted a nationwide search, they ultimately filled the position in-house. Gibson’s love, passion, and vision for the organization were undeniable. With his considerable experience, he demonstrated a clear understanding of the financial and operational challenges and had already established many relationships necessary to putting on a festival of such magnitude, entertaining and involving more than 1.5 million people annually. “We are an events production company at our core.” So, what does it mean to the Festival and the community to have a new KDF President & CEO after more than two decades of Mike Berry’s leadership? Because of their friendship and close working relationship, the transition with Matt Gibson has been relatively comfortable for the staff of 23. Gibson sees it as an opportunity to continue the growth of the springtime celebration and looks forward to working alongside the board, sponsors, staff, and volunteers to ensure the Festival is around for another 65 years. In fact, a large-scale qualitative and quantitative research study of the Kentucky Derby Festival is in the works. Matt Gibson feels a responsibility to ensuring all participants are heard. He intends to use the data from this project to improve upon the success of the more than 70 Festival events.
When asked about specific changes he plans to make in existing events, Gibson teases big ideas he is developing with Wayne Hettinger for his personal favorite event, Thunder Over Louisville. With continued development of, and improvements to, Louisville park systems, green spaces, and roadways, Festival goers may notice enhancements to other favorite events (but those are being kept under wraps for now). Gibson shared what he feels are the most underrated KDF events, the silly and the serious: Great Bed Races and Spelling Bee. He enjoys all the laughter and smiling brought on by the antics of the bed race teams, and is always impressed by the sheer intelligence of
the kids participating in the Spelling Bee. Honoring tradition and evolving with changing times is a delicate balance, one Matt Gibson is reminded of with a glance at a framed picture on the wall of his office. One of the first posters of the Kentucky Derby Festival Parade, it shows the parade held at nighttime and running in the opposite direction on Broadway. Gibson believes in collective brainstorming and dialogue and the importance of asking, “What are we too attached to? The real work comes in taking it from the white board and putting it into action.” But, he goes on to say, “Given enough time, we can accomplish anything.”

he five Derby Princesses of the Royal Court is one of the most anticipated and exciting parts of the Kentucky Derby Festival. Who will be the Derby Festival Queen? One of the five Derby Princesses will be chosen by a spin of the wheel during the Fillies Derby Ball on April 4. Let’s meet them!
Hannah Robb, 20
Hannah is a junior at Bellarmine in her hometown of Louisville, where she is studying business administration and marketing.
Molly Jett, 21
Molly is a senior at Bellarmine University in her native Louisville, double majoring in communication and in design, arts and technology.
Leah Hazelwood, 19
Leah is from Lebanon, Kentucky. She’s a sophomore at UofL with dual majors in political science and in liberal studies with concentrations in race/gender studies, global public health, and in economics.
Hannah Maria Edelen, 21
Hannah Maria Edelen, 21, is from Springfield, Kentucky. A senior at Northern Kentucky University, she has dual majors in history and in communication studies with a minor in organizational leadership.

s members of the Royal Court, these five young women are Derby Princesses. As ambassadors for the 2020 Kentucky Derby Festival, they will attend almost 70 events over a two-week period. Grace Rahman of Lexington, a UofL post-baccalaureate student entering med school in the fall, was chosen as first alternate. Abigail Frazier of Whitesburg, a senior at UK, is the second alternate. They will become a Royal Court Princess if one of the other women is unable to serve. “We’re honored to have such accomplished young women represent the Kentucky Derby Festival, as well as Louisville and Kentucky,” says Jeff English, president of the Kentucky Derby Festival Foundation. “They are academic scholars, dedicated to making a difference in their communities.” Each Derby Princess will receive $2,000
in scholarships: $1,000 each from the Fillies and from the Kentucky Derby Festival Foundation. The Fillies, Inc. is a volunteer group that coordinates the Royal Court and puts on the Fillies Derby Ball, along with other events in association with the Kentucky Derby Festival. Eligible candidates for the Royal Court are single female residents of Kentucky or Southern Indiana, full-time college students in at least their second year of college who maintain a minimum 3.0 GPA; they also have a knowledge of the Derby Festival, and are involved with their campus and community. “Each year, the members of the Royal Court become inspirations for future generations,” Jeff says, “helping us continue a tradition that dates back more than 60 years.”

Meredith Lintner Metzmeier and Kathy Lintner, owners of Cartwheels Papers & Gifts, love this responsibility. “We have a consistent dedication to friendly, personal service and we pay attention to every detail,” says Kathy. “A visit to Cartwheels is made so enjoyable by our wide range of unique papers and gifts.”
Brides and mothers of brides feel equally comfortable at Cartwheels Papers & Gifts for several reasons, like the store’s good vibes and welcoming attitude of the staff, and because the owners of Cartwheels are a mother and daughter team themselves. Kathy and her daughter Meredith opened Cartwheels in May 2009 at Chenoweth Square. A full-service gift and stationery boutique, Cartwheels is known for its offerings of custom gifts and papers for all occasions. Weddings are certainly a momentous occasion. So are birthdays and holidays and everything in between. Cartwheels Papers & Gifts has giftware available on a daily basis, including accessories and jewelry, candles and champagne flutes, household décor and unique works by several local artists, along with plenty of other gifts for family and friends—even babies. Another specialized offering from Cartwheels is the customization of jewelry and acrylic barware. For example, acrylic champagne flutes and flasks for bridesmaids and groomsmen. Customized stationery includes personalized notes and invitations, plus full wedding suite papers, from “save the date” cards to invitations, programs, table numbers, place cards, guestbooks, thank-you notes and correspondence cards. Now let’s talk greeting cards. “Every season changes the scene at Cartwheels,” says Meredith. Customized cocktail napkins are quite popular for engagement and wedding parties. “We offer a wide range of gifts to celebrate the newly engaged couple, their parents and their wedding party,” says Meredith. I went on to receive my hair degree from Graham Webb International Academy of Hair, taking advanced courses in London, UK, and returning to the states to work for a major salon.
How did you become Fashion Director at Bridals by Lori in Atlanta? How did Bridals by Lori become involved with TLC and Say Yes to the Dress? Lori and I meet in NYC at couture bridal fashion week. We took an instant liking to one another and became fast friends. When TLC approached her about the show, she called and convinced me that I needed to do it with her or at least give it a go, that was 9 years ago.

Personally, I have tried to keep a very low profile and continue my community services work with Hospice, St Paul’s, Welsh terrier rescue, as well as the Horticultural Society at River Farm.This helps keep me grounded and lend my voice to awareness of my charities.

Describe your affinity for/history with attending Kentucky Derby Festival Events.
How do you manage your busy travel schedule and maintain work/ life balance?
What will your involvement with the Kentucky Derby be in 2020? How far out do you plan your own wardrobe for Derby week? What fashion advice do you have for this year’s Derby? Any specific colors or trends to keep in mind?
I’m on the road quit a bit these days, but I always find and make time for my family, I enjoy being outside and run almost every morning. With the ability of the internet, it has made keeping in touch easier than in years past. However, I always make sure I have cards in the mail for any and all occasions and especially the Thank You notes.
What projects do you have in the works? I am currently working on opening my first hair salon, MONTE, in Old Town Alexandria in May 2020, and I just launched the MONTE hair care line on Amazon. I will be adding a men’s line with the opening of the salon. Then, there’s the book that I have been sitting on for over a year! It looks like I will be moving forward with that in the New Year.

How very fortunate I have been to be a part of this historical event for the past few years. My love of history and the people of Louisville has grown and continues to hold me in awe of the magic of the Festival.
Well, there are somethings we need to keep as a surprise when it comes to the Derby(!), but I can tell you last year’s outfit of all white seemed to be a big hit. This year I’m thinking a bit darker maybe navy. This is the one time and place where you can go all out, whether it be vintage from the 70’s ( a new trend we’re seeing on the runway) or bold and bright, one thing to note just make sure you have the proper topper.
Have you had many opportunities to experience the city of Louisville outside of Derby Festival events? What do you love about Louisville? I have enjoyed Louisville and all it has to offer. On my daily runs I have discovered the beauty of the city running along the water. Looking back is quite a view! Also the joy of getting to know the city through fantastic restaurants, the visitors’ center, hotels and museums.

ublished in Redbook Magazine in January and February of 1926, as the fortunes of the Roaring Twenties bubbled along, Fitzgerald’s short story “The Rich Boy” mused about the influence of wealth on personal character. Written in Capri and revised in Paris in 1925, Fitzgerald was enjoying his own period of disposable income, mixing his literary work with leisure, pleasure, and the seemingly endless parties of the expats. Although born into an upper-middle class family and received of an Ivy League education at Princeton, Fitzgerald seemed always to feel himself apart from his often even wealthier classmates. He lived alternately in fear and denial of the transitory nature of money, continued to grapple with it in writing, and struck a chord with readers simultaneously striving

for their piece of the pie and wondering how they might handle it themselves. We strive and wonder still, nearly a century later.
With the dawning of a new year and the Twenties having come round again, financial advisors and publications of every sort are weighing in with their forecasts of the prevailing money and investing trends of 2020 and beyond. As one might imagine, technology and artificial intelligence will continue to influence the way we transact our personal and business finances. Liabilities such as lack of personal finance education and crushing student loan debt are forcing institutions to take a hard look at ways to mitigate the hardships that result. Our government is legislating changes, incentives, and programs that affect our financial future. Stock market expansion has added unprecedented
wealth, along with the argument that these corporate windfalls are distributed unfairly and undertaxed. On the other hand, many companies are adding financial benefits and perks beyond the paycheck to assist employees in guarding their earning potential and future finances. With the use of technologies and applications such as Apple Pay, Venmo, and Zelle becoming ever more ubiquitous, the phone is quickly replacing the wallet. Online banking has been around for a quarter of a century now, but it has long since moved from the desktop to the palm of the hand. Additionally, artificial intelligence is advancing to help contain the rise of fraud and identity theft and to keep consumers informed in real time about possible breaches to their accounts. And so, they are providing more services geared to personal finance education and financial wellness. Congress passed, and the President has signed into law, the SECURE Act, “Setting Up Every Community for Retirement Enhancement” by intending to strengthen the security of retirement strategies and accounts. The plan offers small business incentives to set up retirement accounts for employees and eliminates the age cap
on contributions. The Act also now allows for annuity options within individual retirement accounts and provides tax credits to businesses for auto-enrolling their employees in retirement plans. Taking retirement accounts from an opt-in to an opt-out proposition will result in greater participation in retirement savings. Fiscal responsibility, financial stewardship, and personal finance education will continue to influence money-making decisions as younger generations seek to pay down debt and still somehow save for the future. The rich are different. They have more money. Hard work and smart money moves in 2020 can get us all a little closer to living the dream.

Ashley House and Travis Mialback dated for six and a half years before becoming engaged in 2018. She was impatient, she says, but their big day–– December 7, 2019––was well worth the wait.

shley and Travis were both attendees of the University of Louisville, but she, the cheerleader, and he, the Cards fan, never met until 2012. It was an ordinary night when the two sparked up a conversation at a bar. Soon, they were dating. The couple moved in together three years in, along with Travis’ two-year-old Australian Shepherd, Natasha.

wedding Ashley, who works for an interior designer, and commercial contractor Travis enjoy flipping houses together. In 2018, the couple’s relationship flipped when they went on vacation to Hawaii. Ashley became suspicious of Travis’ intentions of the trip when she found a small box in the safe in their hotel room. “I knew what that was, but I didn’t want to ruin anything,” she says. It wasn’t until Travis got the attention of the island restaurant that she knew that it was that special day. “He told them ‘she waited a long time for this,’” Ashley remembers. The couple began planning their big day after the holidays in early 2019. Ashley knew exactly what she wanted aesthetically: nothing trendy; timeless and simplistic. They chose black and white with touches of gold and lots of greenery. Ashley remembered helpful advice when it came to the day of festivities: “It goes by very fast, soak it all in.” And so she did. “I tried my hardest not to be too stressed about it,” she says. Her fellow University of Louisville cheerleading alums and her family from Virginia, as well as his from Louisville, came in for the week for the big party at the Henry Clay. The couple’s dog Natasha walked the couple down the aisle. Their big day was well worth the wait, according to Ashley. “It was really great.”

The bride forgot the veil and it poured rain, but that may have been good luck for one Louisville couple.
R
egina and Michael Nielsen were married in September 2018 after they met at work when he transferred from the Cincinnati office to Louisville. The couple started dating around six months later, and after a few years became engaged at Red River Gorge. Both are Kentucky natives: she is from a small town in Western Kentucky, and he grew up in Lexington. Now settled in Louisville, they love being close to family.

wedding Regina is a graduate of the University of Louisville and loved visiting the Speed Art Museum. When the couple toured the renovated space, they knew it was “perfect” for their special day. “It is so light, airy and beautiful,” Regina says. “Plus, the Speed event staff is fantastic; they were so helpful, accommodating and caring. The bonus was that the caterer for the venue is Wiltshire, which came highly recommended and did an amazing job.” The Nielsens chose a late September date, which in Kentucky, can be a toss up when it comes to weather. It poured all of the wedding weekend, and the bride left the veil at her house. Thankfully, Debbie Saag of Weekend Wedding Warriors was a godsend; she went to pick up the veil from Regina’s home so it was only missing it for a few pictures. “We didn’t sweat the small stuff,” Regina says. “The best thing we did was to find professionals we could trust (through recommendations and online reviews) and with what took only a few conversations and pictures for inspiration on our end, they turned our vision into a reality. It was perfect in every way.”

She was the self-described “Mother Hen” to her four younger siblings. It often fell to her to make sure that they were fed and nurtured. She recalls walking the streets at an early age, looking for recyclable bottles and cans so that she could raise money to buy them food. Although she maintained high enough grades to skip a grade, she always worked in many ways to help support her tight-knit family. She took her first official job at the early age of fourteen. She hasn’t stopped working since. MyLee lost her father four years ago. The pressure of the tribulations that he had faced left him haunted. He had succumbed to substance addiction and neglected his duties and role within the family. As life often tends to be, her feelings about him are complicated. “I never take lightly the sacrifices that he made,” she says. “I made the mindful and deliberate decision to take gratefulness and leave behind bitterness.” Around the same time, she started to pursue a career in real estate. She has cultivated a reputation based on trust that only continues to build as she dramatically improves the lives of those for whom she works. As many have stated, “MyLee is my trusted friend in real estate.” Today, MyLee is the mother of four children and enjoys her life with her devoted husband. She lives by a simple edict that she instills in her kids. “If you’re not contributing to society, you’re taking away from it,” she says. “Legacy is the most important thing to me. In the past, La-Z-Boy was known as a company for comfortable couches and chairs that one couldn’t help but get cozy. Now, though, the company founded in 1927 is known for a more modern––but still relaxing––design for all types of families. Designer Lesli Luckett sat down with Tops to talk about the latest trends in furniture, fabrics and accessories for living, dining and bedrooms, as well as how she listens to buyers’ needs to find out exactly what will look great inside their home. 90 TOPS LOUISVILLE | February 2020
How Lesli Does It La-Z-Boy’s design program helps the customer find furniture that fits their needs, according to Lesli. She then “steps in to help with space planning, solidifying fabrics and finishes, rugs, tables, lamps and accessories,” she says.
Lesli says “listening to the client is key. “I design rooms based on how they need their space to function and will incorporate their personal style to make the room(s) I’m working on flow with the rest of their home.” Lesli collaborates with clients to find out which pieces they are wanting to keep or change; she then makes selections and suggestions with those in mind.
New Year, New Trends
La-Z-Boy has a selection of reclining versus stationary sofas that also come into play with decision-making, which is based on the customer’s lifestyle. Fabrics are based on this idea, too, according to Lesli. “If they have young children and pets, I will select the most durable and stain-resistant fabrics that will look good in their home,” she says.
The Pantone color of the year is Classic Blue, and Lesli says this carries over to design as well. La-Z-Boy carries lots of dark and muted blues. Abstract artwork is popular and more unique, inspired pieces are, too, says Lesli. La-Z-Boy carries many designs, including transitional, traditional, contemporary, classic and urban styles. Lesli blends customers’ pieces with her store’s items to create a “cohesive” space that’s “livable and modern.”
Lesli does home visits to get an idea of the space, and then will present the client with her suggestions in-store on a television screen that projects the buyer’s actual room with La-Z-Boy products inside. Lesli says chunky textures like wools and knits are in style but working with the client’s personal style is also important.

Couple Turns Traditional Windy Hills House Into Tech-Savvy Home BY TAYLOR RILEY COURTESY PHOTOS

rom the immaculate front yard decorated with various stones and a rain chain, to the cozy porch overlooking a rock waterfall to mimic a Kentucky stream bed, one doesn’t know where to stop and look when arriving at Steve and Trish Sauter’s Windy Hills home. It’s a sight to see from the road, but taking a tour through the fleur-delis iron doors will make a jaw drop. Steve’s family settled in St. Matthews over 100 years ago, starting out as dairy farmers on Rudy Lane. Steve and Trish lived in their ranch home for decades before wanting to expand into their extremely renovated 2,719-square foot one-story. In fall 2018, the couple paired with architect Jim Peterson, builder Vince Kimbel, and designers Julie Redmon and Jeffrey Thacker of Cherry House Furniture, to create their “elegant farmhouse,” as Trish calls their dream home.

he 1970s-era home was quite a bit smaller before its renovation. Construction included lifting the ceilings to create wooden vaults in the living room, creating more space, as well as adding a master suite and indoor patio. New wiring, plumbing, geothermal hvac and modern kitchen was a must, which includes a floating soffit above the island with light features that can be directed via iPhone. Hundreds of participants of the Tour of Remodeled Homes recently toured the Sauter’s home, where they stopped and stared at many of the architectural and techy features, according to Trish.

T
he Sauters knew they wanted all the latest technology and to use all local Louisville designers to build something with Southern charm, modern but with elements of age. The interior included transom windows from 1800s mansions, a fireplace in the living room with slate tile to mimic the rock beds of southern Kentucky, and random-width wood flooring also from southern Kentucky similar to an old farmhouse. The family spends most weekends and holidays at their home at Lake Cumberland, so this city abode was meant almost as a vacation spot. The home was designed to have cross breezes from the dining room to the indoor porch. “It provides outdoor living indoors,� the couple says.

he Sauters say they want to live in the home for the rest of their lives, so keeping everything on one floor was key. The new heated, mosaic tile shower includes a shower window to create an outdoor experience. Steve, who owns his own landscaping business, made sure that the backyard had a nightscape with illumination on the hydrangea trees. The lighting scheme has a “completely different look after dark,� he says. The detached garage lights up like a giant lantern with glass doors luminating amber light.

ulie, who has spent 15 years as a designer at Cherry House, went with a rustic but sophisticated look for the family’s new home. “It needed to be comfortable for ‘them’ (and) be who they are,” Julie says. She chose pictures of trees as you walk in, and fabrics and furniture that weren’t too traditional or too modern. A solid wood dining table blends nicely with the farmhouse floors, granite countertops and bright cabinetry. Julie glammed up Trish’s office, decorated the Sauter’s daughter’s room with an antique dresser and upholstered bed and created a mud room incorporating the family’s love of horses. “(Cherry House) did a fantastic job of marrying modern and antique styles,” Trish says. Perhaps one of the most eye-catching portions of the home is the wall display of niches of varying sizes in the living room. Jeffrey at Cherry House accessorized the niches with silk trees, hydrangeas and various pottery. The niches have a specialty lighting system, which creates a silhouette effect of the objects contained in each. “The key to everything is listening,” Julie says. “It’s their project. You need to be there to help them. That’s what I like about design … you’re starting with a blank slate … to see the end results, for me, it’s gratifying, satisfying. It’s like Christmas.”

We used to have to go to the Asian grocery store to buy the wonton skins, but today you should be able to find them at most grocery stores and/or Amazon. Let me know how you like them! Gyoza (Pan Fried Wontons) Gyoza: • ½ lb. Ground Pork • 3 Cabbage Leaves • 2 Green Onions, Chopped • 1 Clove Garlic, Minced • ½" Square Piece Ginger, Grated • 2 tbsp. Shoyu (Soy Sauce) • 1 tbsp. Sesame Oil • 20 Wonton Skins • 2 tbsp. Vegetable Oil Dipping Sauce: • 2 tbsp. Dry Mustard • 2 tbsp. Vinegar • 2 tbsp. Soy Sauce

1. Boil cabbage slightly, then chop finely.
2. Combine seasonings into the ground pork, mix together.
3. Put meat mixture into individual Wonton skin, then fold in half and pinch the edges together.

pan. Line the filled Wonton in the pan with the pleated seam on top. Cover and cook with medium heat for five minutes.

ou bring dinner, I’ll bring dessert.” Matt Milosevich has a huge sweet tooth; so he chose to share the recipe for a southern staple, Chess Pie. Chess pie comes in many flavor variations; but the classic is characteristically very simple and sweet, and sometimes described as a “cheeseless cheesecake.” It is believed that chess pie originated in England, was brought into New England and Virginia, and then spread throughout the South. There are several possibilities as to the derivation of the name: after a town in England, from “pie chest” a piece of furniture once used to store pies after baking, or from a plantation cook who answered “Jes’ pie.” when asked what she was baking that smelled so delicious. “This is a recipe from my wife’s grandmother in Texas and a must-have at family gatherings,” says Matt. “There won’t be any leftovers!”
Chess Pie • 1 stick of Melted Butter • 2 tbsp. Flour • 1 ½ cup Sugar • ½ cup Evaporated Milk • 3 Eggs, Well Beaten • 1 tsp. Vanilla
1. Combine the melted butter and
flour until smooth. Stir in sugar, stir evaporated milk, stir in eggs and vanilla until smooth. Add mixture to a standard pie crust. Bake at 400° for 15 minutes, then reduce heat to 325° and continue baking for 30-45 minutes. Pie usually cracks on top when done.

You have to make sure to let the Italian bread get hard a day or two before you make it because it keeps the bread pudding from being an absolutely soggy mess. Yes, soggy mess is a cooking term. You cook it for about 50-60 minutes or until it is nicely brown with no serious jiggling.”
Bread Pudding Bread pudding: • 2 cups granulated sugar • 5 large beaten eggs • 2 cups milk • 2 tsp. pure vanilla extract • 3 cups cubed Italian bread, allow to stale overnight in a bowl • ½ cup light brown sugar • 1/4 cup butter, softened • 1 cup chopped pecans

Season beef brisket with salt and pepper. In a large Dutch oven over high heat, warm oil. Add brisket, fat side down, and cook until well browned, 4 to 5 minutes per side. Remove from heat.
2. In a small bowl, combine
coffee, ketchup, chili sauce, honey, Worcestershire sauce, garlic, and soy sauce. Pour over brisket.
3. Cover; bake, flipping halfway through, until meat shreds easily with a fork, 2½ to 3 hours. Remove from oven; slice on the bias against the grain. Transfer remaining sauce from to a gravy boat, and serve with brisket.

H
uong “CoCo” Tran’s journey to opening the upscale vegetarian restaurant Roots began in 1975 when she and some family members left Vietnam, in a boat with no food or water, during the Communist takeover. They were adrift for two days and two nights before being rescued. After bouncing around several Asian countries trying to find safe harbor, CoCo landed in Louisville, where her brother was studying at the University of Louisville’s JB Speed School of Engineering. Although she had come to the US with nothing, with the help of some family and other local Vietnamese, and after six years of low-paying factory work, CoCo’s entrepreneurial spirit would eventually triumph. A trip to a fast food restaurant inspired her to open the Egg Roll Machine in 1980, the city’s first Chinese fast food. In 1986, she brought Louisville its first Vietnamese restaurant, Café Mimosa. Then, after she had converted to Zen Buddhism and become a vegetarian herself for philosophical, environmental, and health reasons in 1998, she sold those restaurants to two nephews and ventured into vegetarian cuisine opening Zen Garden and Zen Tea House in 2000. The change not only gave her a new direction in the restaurant business, but cleared up her allergies and asthma and improved her immunity and overall health.

cuisine In 2011, Roots and its fast-casual sister restaurant Heart & Soy were born. Whereas Heart & Soy offers mostly carryout Asian street food, Roots serves up a more traditional, sit-down restaurant experience. With Heart & Soy right next door, Roots can take full advantage of “Kentucky’s only tofu manufacturing machine” (imported from Taiwan) for its recipes as well. But the tofu machine is not all Roots and Heart and Soy share. They have a common philosophy dedicated to vegetarianism, health, and community awareness. The menus and atmospheres of the neighboring restaurants are decidedly different, with Roots offering tapas-style servings in a beautifully appointed dining room grounded in neutral colors with bright oversized photos of root vegetables lining the walls, an unusual sunken dining area, and traditional wood tables and chairs. Most of the menu at Roots consists of shareable but elegant small plate dishes, accented in Asian and internationally inspired. In addition to more familiar Asian soups such as wonton and ramen, Roots has an outstanding traditional Vietnamese Pho and an increasingly popular Thai Green Curry Soup. There are also plenty of salads to choose from, including a Green Papaya Salad, Glass Noodles, and a vegan gluten-free Thai Salad. The “Savories” (shared plates) include simpler dishes such as Steamed Edamame and various Crispy Rolls and are rounded out with the likes of Pan-Fried Potstickers, Vietnamese Crepes, Lettuce Wraps, and Orange Tofu reminiscent of Orange or Sweet and Sour Chicken. Some of the more intriguing Savories are the Crispy Potato Nest, Tofu Clay Pot, and Forbidden Rice Risotto with Baby Spinach, Black Cherries, Candied Walnuts, and Goat Cheese. Guests will not miss the meat, nor the alcohol. The flavors of the food are so lively, some subtle, some intense. With Roots’ location on Bardstown Road, a bundled-up stroll to another establishment for a nightcap might be a lovely way to end the evening. But before you go, be advised that the desserts receive rave reviews of their own. And the extensive loose leaf tea offerings are fun to explore. There are Darjeelings from India, Oolongs from China and Taiwan, Japanese Green Teas, Chinese White Teas, fermented Pu-Erhs, African Rooibos, blended and herbal teas, and many more to warm you body and soul. As with all CoCo’s ventures, Roots gives back with its own donations to various charities and special events for customers, such as free vegetarian meals on Thanksgiving Eve with any customer donations going

Her customers become good friends to her. She mentors aspiring restaurateurs, including some of her own
nieces and nephews, and continues to support the local Vietnamese community and the entire community at large. She says she “can never say thank you enough” for all the welcoming and help she received here so many years ago.

n observance of February as American Heart Month, Dr. Bianca Ummat of Baptist Health and Dr. Arpit Agrawal of Norton Healthcare shared with us their tips for the prevention of heart disease and some exciting advancements in the field of cardiology. Late-breaking news stories in heart health include results from recent studies suggesting that mortality rates from heart attack or stroke are actually rising in middle age, even in states such as Colorado that have a reputation for a relatively active and healthy lifestyle. The Centers for Disease Control and Prevention are reporting an earlier, steeper rise in hypertension among women than men, despite the fact that on average women tend to develop heart disease as much as a decade later in life. Studies also indicate that cardiovascular screenings and risk assessments are more important than ever. Dr. Bianca Ummat specializes in Cardiology with a clinical focus on Interventional
Cardiology, including Cardiac Catheterization and Intervention via Radial/Femoral Approach, Coronary Artery Disease, Percutaneous Coronary Intervention, Peripheral Arterial Disease, Prevention and Management of Cardiovascular Disease, and Pulmonary Embolism Intervention. Dr. Ummat received her medical degree from the University of Louisville School of Medicine and completed her residency and fellowships at George Washington University in Washington DC. She served with the Honduras Medical Mission in 2015 and 2016. With regard to preventive heart health care, Dr. Ummat recommends an examination a patient’s cardiovascular risk factors. Research has shown that even in the face of some unchangeable risk factors like family history, we know that lifestyle changes including quitting smoking, regular exercise, reduced stress, improved sleep and a heart healthy diet can play a major role in

reducing the risk of high blood pressure, diabetes, sleep apnea, and other major contributors to heart disease. Dr. Ummat finds this to be the biggest challenge in her work: conveying to patients the importance of lifestyle changes and teaching them the tools to achieve these goals. She tries to provide more accessible alternatives and encourages a day-by-day, step-by-step approach that succeeds through personal, family, and community commitment. Through all the challenges, Dr. Ummat is inspired in her work by the opportunity to save lives: the personal satisfaction she feels when a patient says she has stopped smoking or lost weight is just as gratifying as stopping a heart attack in real time. She believes we are at a tipping point and are in need of major cultural change in terms of focusing on healthy living, and sees February as the perfect month to focus on heart health. The holidays have come and gone; and we all tend to fall off the wagon with New Year’s resolutions around this time of year. To recommit to those goals, she reminds us of two things, “Being healthy and taking care of yourself is something within your control, but takes commitment. Don’t ignore symptoms and be proactive about your health.” In his practice with Norton Heart & Vascular Institute, Dr. Arpit Agrawal specializes in cardiac imaging, echocardiogram/ CT/MRI, and structural and valvular heart disease. He is a native Louisvillian who attended Washington University in St.
Louis for his undergraduate studies and returned to the University of Louisville for medical school. He then went back to Washington University for his residency, followed by a fellowship at Vanderbilt University. As an ardent Louisville Cardinals fan, “Cardiac Cards” means serious business for Dr. Agrawal. Dr. Agrawal emphasizes knowing your family history and risk factors and what to do to prevent heart disease, such as weight loss, a healthy diet focused on moderation, lowering bad cholesterol, and at least 150 minutes per week of moderate exercise. He even shared a tip for understanding how to gauge the effectiveness of your workout. During and after exercise, you should be able to speak at least three or four words at a time without needing to take a breath. He finds the advancements in percutaneous aortic valve replacement and MitraClip procedures most exciting in reducing the need for open heart surgery. Sharing Dr. Ummat’s opinions on the challenges of helping people fully realize the importance of making necessary lifestyle changes and the inspiration of saving lives, Dr. Agrawal adds, “Helping a person feel better, live longer, live a more fulfilled life, and seeing that person change is so rewarding.” The advancements in cardiology of the last twenty to thirty years make this an exciting time to be in this field of medicine. He stresses that living a healthier lifestyle and being proactive versus reactive are the keys to good heart health.

I
n the summer of 2017, Katie Adams was enjoying a well-earned, full life with a successful career in Human Resources, her architect husband Jeremy, and four children: twins Max and Elliott, daughter Emma, and two-week-old newborn Abigail. They were all in the car with her husband driving, when Katie suddenly began to feel very uncomfortable. As a cascade of symptoms intensified, Katie at first attributed them to possible complications from her very recent C-section. Alarmed, she told her husband to call 911; and they headed for the ER. Her husband also alerted the 911 dispatcher that nearly a decade before, Katie had experienced a carotid dissection and two “ministrokes” or Transient Ischemic Attacks. Katie’s father had passed away at only thirty years of age from an aneurism. So Katie was, by this point, well aware of the fragility of life. This awareness, along with that of the symptoms of various circulatory issues, certainly contributed to her sense of urgency and to saving her life on that summer day just two and a half years ago. Katie’s symptoms were sudden warmth, intense chest pressure, an aching jaw, and tingling in and around the mouth. Following emergency medication, an EKG, and angioplasty with two stents, Katie discovered she had suffered Spontaneous Coronary Artery Dissection (SCAD), a rare type of heart attack that disproportionately

affects young women. Over 90% of SCAD patients are female and 5-10% occur around childbirth. In Katie’s case it was an often fatal “widowmaker” with 100% blockage. She later learned that the cause was a previously undiagnosed condition, fibromuscular dysplasia (FMD), which affects arterial wall structure. Although SCAD does not result from more common risk factors such as arterial plaque or hypertension, Katie realized that she needed to take control of her health and make some lifestyle changes. After three months of intense cardiac rehabilitation, Katie continued to fight for her life with a healthier diet and daily workouts, losing 115 pounds in the process. She also scaled back at work for balance and to reduce her stress levels. Katie is still Executive Director of the Kentucky Society for Human Resource Management (KYSHRM) and works on special projects for the Kentucky Chamber of Commerce. For the sake of her own future health and wellness, and that of her four children and ten nieces and nephews, Katie takes time to be actively involved with the American Heart Association and the SCAD Alliance. She also started Healthy Hens, a wellness Facebook
page for women to provide personalized, nocost information and support.
In addition to her volunteer work, Katie has set her own February American Heart Month goals to reach out to others in the community, including TOPS Louisville readers: • Spread awareness of the signs of a heart attack: chest pain or pressure, arm/back/ neck/jaw/stomach pain or discomfort, shortness of breath, breaking out in a cold sweat, nausea, lightheadedness. • In recognition of her 40th birthday, Katie aims to have at least 40 people trained in CPR. • Help people find time to take better care of themselves, get up and move more, and be more active, even if that means just incorporating more movement into the workday.
Katie Adams continues to experience occasional chest pain and headaches, sees a specialist at Vanderbilt, and will be on several medications for the rest of her life. She must remain vigilant about her stress level,
drinking water, eating healthy, and doing moderate but consistent exercise. But she is also grateful to be continuing to make a difference in her profession, providing for her family, and having more fun with her husband and her kids. Kids have “a wonderful ability to be in the moment and find the fun in things,” Katie says. And she is thrilled to be active with them - dancing, playing with hula hoops, running up and down slides, among other activities. Her healthy lifestyle has also resulted in clearer thinking, a calmer demeanor, and better sleep. “Changing my career up…and incorporating wellness into my life has made me a happier, healthier mom. My kids are truly my WHY and what motivates me to stay on my path. They hold my heart and I’m doing everything possible to be here and healthy for them.”

elebrating the League’s 99th year, President Jessica Dunleavy explains that you can join forces with JLL and wear a little black dress from February 23 through 28. “LBDI is an awareness campaign to draw attention to the challenges some of our youth are facing including the impact of poverty on education in Louisville, and the important work JLL is doing to reduce that impact. By wearing the same black dress or outfit for five days, advocates will experience a small simulation of what it feels like to live with limited resources.” In addition to participants’ attire, Vice President of Communications Jade Jensen shares, “We use our social media platforms not only to raise funds but also to generate awareness of disheartening statistics facing some of our local youth.” The fundraising efforts support many of the current JLL projects. “JLL was instrumental in the establishment of the Imagination Library Louisville, focused on early childhood reading, mentorship programs with young
adults at Maryhurst and Boys and Girls Haven,” says Kate Ritter, Vice President of Community Impact. “We are grateful to have engaged with youth at Engelhard Elementary serving at Blessings in a Backpack, teaching children entrepreneurship with Lemonade Day Louisville, and spreading the love of reading with Metro United Way's Little Libraries.” “We are grateful many of the members of the media have joined our hands in raising awareness for this campaign. here are countless galas in the city to raise funds for various organizations; many have runways and red carpets. The Pet Gala, hosted by the Animal Care Society (ACS) has a few furry differences, though–– dogs and cats. Board member and co-chair of the event Randy Blevins is “no stranger” to events in the city, but this one, he says, is special.
The organization’s largest fundraising event, in its fifth year, will be held this time around on March 7 at the Olmstead. Randy recently joined the board after being involved with the society for more than five years. He and his family have gone through the adoption process at the shelter, so he knows first-hand how the organization has saved animals in the area. “When an animal is accepted, they’re accepted and loved for life,” Randy says.”It means so much to me that these animals are cared for and not euthanized unnecessarily.” ACS is Louisville’s first no-kill shelter. The organization keeps dogs and cats at the facility until they pass away naturally or finally find their forever home. ACS is privately funded, so Randy and his team hope to raise at least $64,000 to pay vet and operating costs, food for the animals and cleaning supplies. This year’s event was moved from Mellwood Arts Center to the Olmstead because, Randy says, the group wanted it to be more gala-esque––the name comes from the Met Gala. There will be “celebrity” pets in costume with elements of fashion throughout
the night, and the society encourages guests to dress up in their favorite creative fashions, too. “It’s a great new energy (this year),” Randy says. Not only is ACS looking for attendees for the event, the group is also looking for generous sponsors and auction items. “We would never turn someone down that wants to give,” Randy says. “If we don’t use it this year, we will use it next year.” Attendees can vote for their favorite celebrity pet before the event at ACSPetGala.com, and the winning family will win a prize pack. Animal lovers and anyone who wants to give back to the community are welcome to the event, and they will be given many opportunities throughout the night to open their “hearts and wallets,” says Randy. “It means that we are helping animals who don’t have a voice.” ACS is always looking for great volunteers; it has a training program and a variety of jobs for those interested. If you don’t have money to give, Randy says, you can give time. “Pets make people happy,” Randy says. “In some cases, they save lives. There are so many animals that need homes.”

ary Eleanor “Ellie” Tarrant was born April 15, 1872 in Macon, Mississippi, the eldest of five daughters. Her father, Samuel Augustus Tarrant was a Civil War veteran and merchant. Her mother, Eliza Watkins Selleck, descended from Revolutionary War Captain James Selleck of Connecticut and came from a wealthy family who owned cotton plantations in Macon, Mississippi, and Huntsville, Alabama. The Tarrant family moved to Louisville some time in the 1880s, where Eliza kept a boarding house. Eliza opened another boarding house in Chicago after the family’s move there around 1900 in support of the daughters’ education.
