300 gms Jumbo Prawns (cleaned and deveined) 15 gms Ginger garlic paste 10 gms 15 gms Tamarind paste 10 gms Coconut cream 8/10 curry leaves 10 gms coconut oil Salt to taste 2 gms Turmeric powder 10 gms coastal masala (Grind jeera, dhania powder, javitri, red chilly powder, curry leaves 2 gms each in a dry mixer. You can make extra and store in the fridge in an airtight container for future use.)

Mix all the ingredients except for the prawns in a big bowl. Adjust the seasoning as per taste. Adjust the consistency by adding a little water so that the paste is of coating consistency. Then add the jumbo prawns and mix well. Keep them aside for at least 45 minutes so the marinade gets into the prawn meat. Skewer these marinated prawns and keep them aside till your friends arrive! Grill them on a charcoal grill for about 2 to 3 minutes each side or longer, depending upon the size of the prawns. Serve hot along with chili sauce or coconut chutney.

Tips to keep in mind while cooking prawns:

Prawns have very delicate meat and cook quickly. So be careful when you place them on the barbecue not to overgrill them, or they get rubbery to eat.
