I LOVE THE OLYMPICS! The competition, the pageantry, the sportsmanship, the host country … all of it. The opening ceremony is my favorite “event” as every participating nation walks into the arena with their hopes, dreams, smiles, and their country’s flag. Their excitement and pride is clear and contagious. I feel a kinship with every country through a common experience. This year for the first time, athletes with no nation could compete under the Olympic flag as part of the Refugee Olympic Team. These displaced athletes were given funding by the IOC to continue to pursue their dreams of an Olympic medal in Rio. They could enter the arena with a team, the Olympic flag and anthem, and a host country home. These athletes bring attention to the plight of the many other refugees from war-torn nations, and serve as symbols of hope against adversity. Each competition reflects not only physical strength and agility, but also the health and hope of the human spirit. The display of pride and nationalism at the opening is perfectly bookended with the mix of all nations at the closing ceremony. All athletes enter the arena together as a mixed group. They have competed against and befriended athletes from all over the world. Through good sportsmanship, even world peace seems possible. Inspired by this display of national pride and the bond among nations, I am excited about our main feature in this issue – the 100th anniversary of our U.S. National Park Service. The parks preserve our national treasures, to be shared by every citizen and visitor for many more years to come. As with every issue, we highlight destinations beyond our borders. Each destination is a source of national pride for the “host” country. There is nothing more beautiful to me than a local sharing the history of their home country. What stories will you hear and what memories will you make as you travel? Wishing you all the joys of travel,

Looking to explore the beauty and wide-open spaces of the great Southwest? To experience the vast, scenic desert and mountain vistas, with brilliant sunsets that mimic a Maxfield Parish painting? Then plan a trip to the national parks and monuments that define the Southwestern U.S. Different from the Lewis and Clark Trail, these parks are about the history of the Anasazi and other native tribes, the evolution of geology, and the wonder that is nature.

fly/drive trip can be filled with amazing adventures, and planning it with your Ensemble-member travel agent will ensure a special and memorable trip based on your desires for the experience. When planning a visit to any of the national parks, consideration should be given to the time of year and weather conditions. If you wish to stay at one of the park lodges, consult your travel agent well in advance.

Late spring, summer and early fall will be crowded, so expect higher room rates and longer traffic delays. Early spring and late fall have their own charm in the way the light plays off the mountains and monoliths. Winter involves a completely different plan, as the North Rim of Grand Canyon National Park closes in October due to weather, and other parks may restrict access due to road conditions. PETRIFIED FOREST NATIONAL PARK

For this two-week adventure, your itinerary encompasses six national parks: Grand Canyon (South and North Rim), Petrified Forest, Arches, Bryce and Zion. The trip begins in Phoenix and ends in Las Vegas. From Phoenix drive north to Sedona. Although Sedona is not a national park, it is world-famous for the red rock formations found only in this area. Hiking requires an inexpensive permit, and you can hike down into Oak Creek Canyon for a refreshing dip in the stream, then drive to Flagstaff en route to Grand Canyon. Spend two nights at the South Rim of Grand Canyon National Park. Grand Canyon encompasses just over one million acres and three distinct forest environments, measuring 277 miles long. From Grand Canyon Village, the drop measures a vertical mile, or approximately 5,000 feet from Rim to River. (No, there is no elevator to the bottom!) The 10 Ensemble Lifestyles Fall 2016

width ranges 10 to 18 feet across. Putting that in practical terms, if you hike the canyon or go down by mule, it takes two days. If you hike from the South to North Rim, the trek is three days one way. For a real adventure, raft through the Canyon; the trip can take up to two weeks. That said, the park offers a variety of sight-seeing opportunities for people of all ages and fitness levels. Scenic rim tours by motor coach are an excellent way to maximize your time and see the key viewpoints. Your agent can help determine the best way to experience the Canyon based on your sense of adventure. For a quieter, less crowded visit, make the 4.5-hour drive around to the North Rim for two nights. North Rim is open May 15 to October 15 and there is only one lodge in the park, so reserve well in advance. North Rim offers numerous hiking trails and mule rides from 1 hour long to 2.5 days.

Departing Grand Canyon, head East to Holbrook, and Petrified Forest National Park. Make a detour in Winslow, and stop at the Historic La Posada Hotel. La Posada is part of the Historic Fred Harvey House hotel chain and was designed by renowned Southwest architect Mary Jane Colter in 1929. Visitors can take a self-guided tour of the property, learn about the history of the famed Harvey Girls, enjoy the rotating art exhibit and have lunch at the Turquoise Room restaurant before hitting the road again. Petrified Forest was designated a national park to preserve and protect multi-colored stones, trees, plant and animal fossils, Native American sites and petroglyphs, and portions of the Painted Desert, along with a section of Historic Route 66. The landscape is diverse in color, wide open and somewhat flat with plateaus spanning miles. Visit the Hoodoos, natural stone towers at Devil’s Playground,


or do some geocaching. The National Park Service set up a series of geocaching clues that can be accessed from your own GPS system through the park website. The visitor’s center displays some amazing samples of petrified trees and clearly explains the evolutionary process of fossils – great for the kids if you are traveling as a family. Plan to overnight at one of the local hotels in Holbrook, or have your agent book you in a traditional wigwam! Here visitors sleep in a 14-by-32-foot wigwam with an en-suite bath, and experience a real piece of Americana. Next stop on your itinerary is Canyon de Chelly for two nights. The drive is just 1.5 hours from Holbrook. Make a short detour to Ganado, and visit the Historic Hubble Trading Post. This is the oldest continually operated trading post in the Navajo Nation dating back to 1878, and is still operational. Arriving at Canyon de Chelly, guests are entranced by the history and landscape in the heart of the Navajo Nation. For 5,000 years, people have lived in these canyons longer than anyone has lived uninterrupted anywhere on the Colorado Plateau. Originally settled by the Anasazi, today it is home to the Navajo.

UNIQUE & HISTORIC PARK LO D G E S El Tovar is the architectural masterpiece of Charles Whittlesey, built in 1905 as part of the Fred Harvey chain of hotels for the Santa Fe Railroad. It was envisioned to be a cross between a Swiss chalet and a Norwegian villa. For years it was considered the most elegant hotel west of the Mississippi.

Bright Angel Lodge was designed in 1935 by famed female architect Mary Jane Colter. The lodge sits just a few feet from the edge of the canyon and is comprised of hotel rooms with shared and private baths, and rustic cabins. It is the main staging area for the mule rides down the canyon.

Both lodges are on the register of National Historic Landmarks, and both offer fine dining restaurants. Your agent can pre-book both your room and dining reservations. Note: You may have to book up to a year in advance for some of these lodges.

Touring is done either with a private guide in your own 4 x 4 vehicle, by joining a free hike, or through one of the sanctioned Navajo guide companies. Two paths transit the park – Canyon de Chelly and Canyon del Muerto. Hikers can enjoy a 2.5-mile hike from the White House Ruins overlook parking area to the ruins. With a one-day visit, it is possible to cover all 10 overlooks on the Rim Drives, plus hike

White House Trail, or take a half-day canyon tour. Seeing the park from the floor of the canyon, as well as driving the overlook road above, gives an entirely different perspective. My personal favorite time of the year is fall, when the leaves are changing and the light plays off the canyon walls and shines through shimmering gold and orange foliage creating interesting shadows.

Adventurous Ways to Visit the South Rim of Grand Canyon National Park There are numerous ways to experience the majesty of Grand Canyon that range from one day to two weeks. If you don’t have time for a full-blown road trip, you can add the Grand Canyon to your Arizona or Las Vegas vacation with one of the following adventures:

• Flight seeing by helicopter will traverse the canyon from the South to the North Rim. • Ride the mules either part way, or down to the bottom. If you go all the way down, an overnight stay is required.

• Ride the Historic Grand Canyon Railway from Williams. This historic converted steam train is ecologically friendly and offers one- to three-day packages with five different classes of service on the train. Your journey begins

Day eight crosses the border into Utah and Arches National Park. Here you will find the densest concentration of natural stone arches in the world, with over 2,000 documented arches! A special experience is the park’s night skies program. Here, the Milky Way is visible to the naked eye, except on nights of dense cloud cover. Arches offers visitors the opportunity to view dark skies from dusk till dawn, and there are ranger-planned night sky programs on set dates. I find it a unique moment in time when the earth and sky blend in the darkness, and you can wonder at the beauty and vastness of the universe. From Arches, it will take around five hours to drive to Bryce Canyon, where you will be awed and inspired by towering stone hoodoos and cliffs in dazzling shades of orange, pink and gold. The hoodoos, according to Paiute legend, were once human before a powerful god called Coyote became angry with them and turned them all to stone. Take in the formation called Thor’s Hammer on the Navajo Trail – a must-see for movie and comic book fans.

Zion was Utah’s first National Park. The name means “Place of peace and refuge”. The Narrows, truly the narrowest section of Zion Canyon, has white and pink walls as high as a thousand feet tall, and the river is sometimes just 20 to 30 feet wide. It is one of the most popular areas in the park and can be seen by hiking along the paved, wheelchair-accessible Riverside Walk for one mile from the Temple of Sinawava. If you wish to see more, you will be walking through the Virgin River, which can involve wading upstream for a few minutes or become an all-day hike. There is only one historic lodge inside the park and two restaurants, so dining is limited. If the lodge is sold out, your agent can find a variety of lodging options nearby. From April to October transportation through the park is by shuttle only, but private cars can take the Zion-Mt. Carmel Highway year round. Zion ends the trek that started in Phoenix and has traversed six national parks and multiple stops at national historic sites and monuments. From here you can make the three-hour drive to Las Vegas airport.

The park is open year round, but access may be restricted during winter months due to road conditions. I think there is nothing more beautiful than snow covering the glimmering red rocks at sunrise. The park even offers snowshoeing in winter months as part of their planned ranger program.

There is so much more to be seen in the Southwest, including Monument Valley, Saguaro National Park, Mesa Verde National Park, and numerous other historic sites. Skywalk sits 4,000 feet above the canyon floor at Eagle Point, and forms a horseshoeshaped glass bridge out over the canyon floor. If you want to meet some real Alaska natives and a few caribou to boot, it’s worth the trek. • Isle Royale National Park, the largest island in Lake Superior, is only 45 miles long and nine miles wide. Just over 14,000 visitors a year come here to enjoy 165 miles of hiking trails, as well as kayaking and canoeing along the coastal bays. • American Samoa. Yes, it’s a national park, and a very pretty one at that. Just under 14,000 people visit annually, so you can count on being welcomed with open arms. The South Pacific archipelago features five lovely Polynesian islands, two coral atolls, breathtaking beaches, and sea life galore. • Voyageurs National Park, way up in Minnesota’s North Woods, boasts boreal forests, tall bluffs, scenic lakes, and interconnecting waterways that were once plied by indigenous people and European fur traders.

Butch Cassidy and the Sundance Kid (1969) – Zion National Park This action-packed Western is loaded with saloon shootouts, horse chases, and outlaws on the run. But if you take time to look behind Redford and Newman, you’ll notice the desert vistas of Utah’s Zion National Park. Remember the bicycle flirtation scene between Butch and the schoolteacher? That was filmed in the ghost town of Grafton, just off the Zion Park Scenic Byway. Into the Wild (2007) – Denali National Park This stunning park served as a backdrop for the documentary film The Call of the Wild as well as the motion picture Into the Wild. Both films chronicle the trials of Christopher McCandless, a young hiker who attempted to survive alone in the Alaskan wilderness by taking up residence in a broken-down bus. Thelma and Louise (1991) – Canyonlands/Arches National Park This film took us all by surprise when Thelma and Louise ended their wild spree by driving over the rim of the Grand Canyon. While a visit to Grand Canyon National Park will surely quench your thirst for adventure, you might also want to stop by Utah’s Deadhorse Point State Park, where the scene was actually shot. Other portions of the film feature Canyonlands National Park and Arches National Park. The River Wild (1994) – Glacier National Park A wet and wild crime thriller starring Meryl Streep, David Strathairn, Kevin Bacon, and John C. Reilly, this movie centered around a whitewater rafting trip on Idaho’s Salmon River. But surprise, surprise, the filming actually took place in Glacier National Park, on the Kootenai and Flathead Rivers. Watch closely to see if you can detect Streep’s river guide stunt double navigating the dangerous rapids. Star Wars: Episode IV (1977) – Death Valley Sure, Star Wars took place in a galaxy far, far away. But any serious fan will tell you the movies were filmed right here on earth. The desert planet of Tatooine, for example, is actually Death Valley National Park. And, in “A New Hope,” C-3PO walks off and leaves R2-D2 in Death Valley’s Mesquite Flat Dunes where, when the film crews are gone, sand boarding is a popular activity.

In 1916, the National Park Service was created to protect America’s natural wonders. Since then generations of dedicated park rangers have endeavored to do just that. In the National Park Service’s centennial year, in the state where the idea first crystalized, I met with some of these special people.

n 1903, John Muir, environmentalist and “Father of the National Parks,” brought Teddy Roosevelt to California hoping that the inspirational wilderness of Yosemite would convince him of the need to protect such wondrous places. I reach Yosemite as winter sputters to a close: last week I would have needed tire chains to access the park; this week spring sunshine bathes the valley and meltwater fills the dramatic waterfalls that leap from the immense granite cliffs. I’m thinking that John Muir let the landscape itself do the persuading …

Beneath the thundering Lower Yosemite Falls I meet with Scott Gediman, a park ranger in Yosemite for over 20 years. Together we hike to what Scott calls a “sacred place” – a noble grove of trees besides a clear running brook. “This is where John Muir settled in a primitive cabin, nestled in what he described as ‘the incomparable valley’. This is the very spot where the national park idea germinated.” As we talk in reverential tones in this cathedral of nature, Scott lists the experiences that make the Park such a draw. “Tunnel View provides one of the finest views of Yosemite Valley.

From here you can see El Capitan rising from Yosemite Valley, with the great granite monolith of Half Dome towering nearly 5,000 feet above the Valley floor. What’s amazing is that 95% of visitors come here to Yosemite Valley, but it actually represents less than 5% of the Park. We also have Tuolumne Meadows with its incredible meadows, we have three groves of Giant Sequoias, there are so many peaks and waterfalls … You could literally spend a lifetime and not see all of Yosemite National Park.”

When you enter the park through the Giant Forest, the amazement begins. The groves of giant sequoia trees gently remind me of my place on this planet.

Next I head south down the Sierra Nevada to two adjoining national parks that are even higher in altitude than Yosemite: Kings Canyon and Sequoia. Kings Canyon hides a cleft in the earth that is deeper than the Grand Canyon. Arriving in March I peer down from a viewpoint on the Generals Highway – only opened this very day after the deep winter snows.

I am staying at over 7,000 feet at Wuksachi Lodge in Sequoia. When I meet the general manager Colin Baldock and colleague Matthew Morrison, it’s clear that they are still as much in awe of the place as I am. “When you enter the park through the Giant Forest, the amazement begins,” Colin says. “The groves of giant sequoia trees gently remind me of my place on this planet. They are huge and have been here for so many centuries. You can literally get lost

in wonder when wandering around these trees. General Sherman Tree is the largest living organism on the planet. As you stand beneath its immensity – 275 feet high, 103 feet circumference and 1,385 tons in weight – reflect that this great tree began its life 2,500 years before yours, and will certainly outlive you.” Matthew adds, “This is my favorite time to get out amongst the sequoias – in the snow, on snowshoes. This is when they are prettiest, when they really pop with color against their white backdrop.” I hike frozen trails, snowshoe in the forest, gaze on the contiguous USA’s highest peak, Mount Whitney, and watch a spectacular sunset from atop Beetle Rock. But the highlight unquestionably remains the timeless peace of the Giant Forests of Kings Canyon and Sequoia.


My final national park on this trip is the ominously named Death Valley National Park. My journey begins at first light at the Wuksachi Lodge, scraping the ice off my windshield, and ends later in the day at the aptly named Furnace Creek in Death Valley, where the temperature hovers around 100F. From snows to desert sands and from 7,000 feet up to 300 feet below sea level – it demonstrates the sheer diversity of national park landscapes.

We get an average of two inches precipitation a year, but an average twelve feet of evaporation! This is an incredibly diverse place and doesn’t look like any other place you’ll ever see.

This is a park of extremes. Death Valley is the driest, hottest and lowest spot in America. At Furnace Creek Visitor Center I spend time with Dianne Milliard, park ranger, who winters down here from her native Alaska home. “The air here will suck the moisture right out of your bones. We get an average of two inches precipitation a year, but an average twelve feet of evaporation! This is an incredibly diverse place and doesn’t look like any other place you’ll ever see.” Dianne points me to the sights that make Death Valley so unique. “Start with the Badwater Basin, the lowest point on the continent, full of dry saline flats and mirages of lakes that evaporate as you approach. Artist’s Drive is a narrow twisting road that showcases rocks of every color of the rainbow: green, pink, purple, all the bright colors of an artist’s palette etched on the sides of the canyon walls. The view of the badlands at Zabriskie Point is the bottom of an ancient lake bed that has been eroded into the most incredible sculptures. And you have to witness the sunset from the summit of Dante’s View at 5,000 feet, which overlooks the whole valley. There’s also a multitude of beautiful wildflowers along the way.” By sheer good fortune I am lucky enough to be here for a “super bloom,” when the normally desolate Death Valley desert is covered with wild flowers coaxed out of decades-long hibernation by the right combination of weather conditions. Yellows punctuated by whites and purple, like another mirage … Yet this one is quite real and very beautiful.

The national parks have been described as “America’s Best Idea.” After experiencing these magnificent places, and the passion of the people who guard and guide them, I am in full agreement. I

t would have been so easy to stay there on Las Olas Beach. “We’ve got two lounges reserved for you ladies,” said the gal at reception. “Just see Gino under the blue umbrella.” If Gino was anything like the bedazzled characters checking in beside us, it would have been a wild time. But “we ladies” had a different kind of wild in mind. Old friends from our young and daring days in New York, Deb and I hadn’t seen each other in years. When I suggested we meet in Florida, I was surprised how quickly she said yes. Just like the old days, she was up for any adventure. In this case, it was an eco-safari through the Florida Everglades. Everglades National Park protects 1.5 million acres of land, a fraction of the original Everglades wetlands that were fed by Lake Okeechobee over a century ago. Today, the “river of grass” travels a leisurely 1/4 mile per hour southwest across the state and spills out into Florida Bay. Along the way, cypress swamps, mangrove forests, and tropical hardwood hammocks play host to a mindboggling array of wildlife, including 22 Ensemble Lifestyles Fall 2016

dozens of protected species such as the West Indian manatee, Florida panther, and American crocodile. So, instead of slipping into our bikinis and meeting Gino on the beach, Deb and I slipped on long-sleeved shirts and met Luis, an airboat pilot who took us on a wild ride, tore his shirt sleeve to demonstrate the dangers of sawgrass, then stripped the stalk and sucked its onion-like meat to show us how to survive, should we ever find ourselves without food in wetlands such as these. Luis wouldn’t let us sit in the pilot’s chair but he did introduce us to Hershel, an eight-foot alligator with large, inquisitive eyes and skin that made me feel badly about a clutch I’d once owned. Next, we caught a van ride with a guide named Emily who said the air was “as thick as dog’s breath.” She was right, of course. It was July. The best time to visit is winter. But where’s the adventure in that? Emily cranked the air conditioning and drove west along Tamiami Trail, pointing out osprey, egrets,

herons, and anhinga along the way. In Everglades City, she introduced us to a sunpink fellow named Corey who welcomed us aboard a white skiff boat. “I was born and raised here,” Corey said with a twang as we motored out into Chokoloskee Bay. “I was swimming with a momma manatee and her little-bitty baby around here yesterday.” After a minute or two, he narrowed his gaze and pointed left, “There!” Sure enough, a ghostly shadow appeared beneath the surface, a soft grey snout came up for air, a smaller one followed suit. Deb suggested a swim. Corey demurred. As the sun dipped low in the sky, we cruised the “Ten Thousand” mangrove islands and reveled in manatee, dolphin, and spoonbill sightings while Corey spun tales of drug busts, tarpon fishing, and python escapes. The Guadeloupe Islands are lush with green that you can see, touch, taste and smell. More casual, less expensive and less crowded than St. Bart’s and more easily accessible than Martinique by plane and ship, Guadeloupe has been relatively unknown to Americans. Until now, these dazzling islands have been quietly and primarily enjoyed by locals and French tourists. The Guadeloupe Islands are lush with green that you can see, touch, taste and smell. Roughly 70% of Guadeloupe is preserved land so natural beauty is at every turn, not marred by the spectacle of high-rise hotels or the sounds of traffic. The understated charm is safe and accessible. With a well-educated middle class, there is no need to hide in the safety of a resort compound. Enjoy the freedom and local color. Just brush up on a few key French phrases, and you’re on your way to discovery! The pristine beaches and coves are the obvious draws. But the islands have that glorious green “inner beauty.” Staying beach-side is tempting, but be sure to rent a car and see the full archipelago. We started our trip with a morning visit to the Botanical Garden on Basse-Terre Island, one of the two main islands. For lunch, we drove to Pointe Noire for traditional Creole fare and a taste of local rum (try Le Naturel) with a nearby stop for local chocolate at Le Maison du Cacao. We then made our way to a small, luxurious spa and eco-lodge, with colorful treehouses in the rainforest, before descending down to the breathtaking Grand Anse (“great cove”) Beach.

Hiking, biking, and diving are a few of the local past times. Be sure to visit the National Park on Basse-Terre (a UNESCO Biosphere) with an easy-moderate hike up the La Soufrière Volcano on a paved path with a guide. After checking out the sulphur steam toward the top, come back down and enjoy a dip in the Yellow Baths hot spring. Drive on to either the Jacques Cousteau Reserve, one of the best diving spots in the world, or Cascade aux Ecrevisses to take and quick dip and watch the locals dive off of the waterfalls. There is a not-to-be-missed museum on the other main island, Grand-Terre, in Pointeà-Pitre. Opened in July 2015, the Memorial ACTe is part of UNESCO’s Slave Route Project, dedicated to the memory and history of slavery trade. The impressive modern building houses state-of-the-art exhibits, connecting the world in the shared memory of those who suffered in the slave trade. After the museum, stop in Pointe-à-Pitre for the local market to pick up a straw hat or bag, browse the shops for a colorful wrap, and enjoy a lunch of the local specialty, bokit, a delicious sandwich made with fried bread. Guadeloupe is known to have the best food in the Caribbean. Most of the food is grown or caught locally and combines French and Caribbean flavors. Be sure to fill up on fresh fish and fruit, with French pastries for dessert.

Each of the five islands has something unique to offer. As you island-hop, be sure to take a high-speed ferry from Trois-Rivières to spend the day in Les Saintes, a tiny island founded by the fishermen of Brittany, France. Walk up to Fort Napoleon for an amazing view of the picture-perfect bay. Try the local seafood for lunch (we loved La Case aux Epices) and be sure to wander the charming fishing village. The best part about my newly discovered destination? There are direct, inexpensive flights from New York, Boston, Baltimore/DC, Fort Lauderdale and Miami to Pointe-à-Pitre. SPA 1 01 Before you book a spa trip, it’s important that you understand what each delivers so that you get what you want and need. Here are some things to consider.

➊ Where do you want to go, and why?

Is it to relax or to reenergize? Are you an outdoorsy type who loves to hike and bike? Or do you prefer to stay inside the spa, relaxing in the amenities and trying new treatments? Outdoor enthusiasts have lots of options in locations like the American West and Southwest, home to some of the finest resort spas in the States.

➋ Will you go alone, or with a loved one

or family? Spas cater to a variety of guests – know before you go! If you want a solo getaway, a destination spa may be best. You don’t want to end up at a romantic resort that caters to couples at the spa. Family travel is on the rise, and there are lots of options to choose from. Find out what the spa’s policy is on children. Many do not allow kids under 17, while a growing number do allow kids 13 and up.

Luxury hotel spas have upped their spa game over the years, offering gorgeous interiors and design details, as well as spectacular amenities and award-winning service. A fine example of one such spa that raises the bar is the five-star Shangri-La Toronto. In the center of Canada’s biggest metropolis, this property hits all the right notes with its Asian-inspired décor and 153 stylish rooms and 49 suites with over-sized tubs. There’s a reason why the spa counts 80 percent of locals in its clientele: it’s a serene escape from the everyday with great facilities, relaxing spaces, and cutting-edge treatments. The Miraj Hammam Spa has an East-meets-West vibe, two private hammams, and exclusive face and body treatments by Caudalie, a French luxury skin-care brand.

Apothecaries Creating a super-customized spa experience is becoming more and more popular, so it’s not a surprise to see the number of DIY apothecaries that are popping up in spas. The Awili Spa at the Andaz Maui has one of the best apothecaries I’ve seen. A beautiful Asian-inspired curio cabinet built from floor to ceiling in the spa lobby offers a blending bar, where you choose from a well-stocked array of ingredients like Hawaiian clay, herbs, roots, teas, essential oils, and more. The result is a custom-tailored spa recipe (scrubs, lotions, and oils) that’s used in your treatment and then taken home.

Aromatherapy An ancient practice, defined and made popular in the 1920s by a Frenchman who studied the use of essential oils for their healing properties, aromatherapy uses essential oils from bark, flowers, leaves, plants, and seeds to enhance both physical and psychological wellbeing. In the spa, aromatherapy can be used in a variety of ways, including in baths, compresses, facials, as inhalation, and in massage. The spa at Grand Velas Riviera Nayarit just introduced a new

aromatherapy massage using a customized blend of herbs picked from the resort’s on-site organic garden.

Cryotherapy How’d you like to step into a chamber where the temperature is minus 141 degrees Celsius? I did just that at Sparkling Hill Resort in Canada, clad in a bathing suit, socks, gloves, and mouth and ear covers to keep me safe from frostbite. I definitely felt more energized when I emerged. Whole body cryotherapy, in which you’re exposed to freezing nitrogen gas for two to three intense minutes, is a new trend that’s taking the spa world by (ice) storm. Reputedly good for boosting the immune system and improving health, cryotherapy has long been used as pain relief by athletes to help with post-game recovery.

Salt Rooms With nearly 200 salt rooms or beds in the U.S., halotherapy – also known as salt therapy – is here to stay. What’s behind the healing benefits? Salt rooms provide a negative-ion environment, similar to the seashore. Halotherapy is believed to have calming and detoxifying benefits, help with respiratory issues, and lessen stress and increase energy. In a spa with a salt room, you relax in a comfortable, climatecontrolled room with walls that are covered with mineral salt. T Spa at the Grand Hotel Tremezzo was wise enough to include a relaxing salt room in its lovely new design.

Hammam The hammam, or Turkish bath, has made a huge comeback. Hammams are beautiful, ethereal steam baths with ornate mosaics, octagonal pools, domes, and fountains. The classic hammam features three interconnected rooms of varying heat – the hottest room home to a large marble slab situated in the center. This is where one is traditionally scrubbed with a special black soap. The Hammam and Gommage treatment at the Miraj Hammam Spa at the Shangri-La Toronto is the most popular treatment on the menu. Hydrotherapy Hydrotherapy, or water therapy, is essentially the use of water for enhancing health and wellness. Water therapy comes in many forms, including mineral baths (my favorite), jetted tubs, and Swiss and Vichy showers. I’m happy to report that water therapy is making waves at spas across the globe. A good place to test the waters? Qua Baths & Spa at Caesars Palace in Las Vegas, where three Roman baths are a relaxing addition to the 50,000 square-foot-spa.

Farm to Spa I’ve watched this spa trend really grow over the past few years, and it’s one of my all-time favorites. The farmto-table movement has most definitely hit the spa. While many spas have had organic treatments on their menus for some time, you’ll find that now many are growing their own herbs and ingredients on-site for use in handmade masks, scrubs, and more. Some properties are also partnering with local farmers. The Remede Spa at The St. Regis Aspen Resort recently introduced a Honey Aloe Body Wrap, using local honey from Wild Bear Bee Farm. b

His solo trip 10 years ago was his first introduction to a serious wellness resort. “The most meaningful parts to me were taking advantage of the terrific medical and wellness team and being able to explore more highperformance types of exercise and outdoor activity. It was extremely rewarding to test and push my limits and be able to do new things.” While Christian prefers going solo to the spa, there are others who get the most out of

socializing at a spa with friends both old and new. Laura, the owner of a branding design agency in New York City, recently had her first destination spa experience at Canyon Ranch Lenox in Massachusetts. Invited to join a group of women who’ve been going to the spa the same week in February for 20 years, Laura was one of an incredibly diverse group of 18 women – one was undergoing cancer treatment, a few were widows. Each woman did her own thing during the day, and dined together in the evenings. Laura tried a variety of new things, including spin classes, yoga (which had always intimidated her) and aqua classes. Of course, she also sampled a few spa treatments. “I’m absolutely going back!” she enthuses. “What I got out of it was the social connections. It was a lot of fun. Nobody judged anyone, there were people from all walks of life. I made new friends – you need to keep doing that as an adult.” b

What’s your ideal getaway? In winter, I head to the Caribbean, specifically the island of Bequia where the beaches are exquisite and the pace of life is so relaxed. In summer, I escape to the west coast of Scotland, just beneath Oban. The air quality is amazing, its rugged landscape stunning, there’s barely a soul there, and it stays light until midnight. I often take a boat out – the quality of the water is exceptional, and I’ll usually spot seals and even dolphins. Plus, each morning the fishing boats bring in a fresh catch of prawns, langoustine and scallops – straight to the table. Divine! b

Skiing en France by ALICE WHITNEY STROH

M

y family’s idea of vacation is laying on a beach and not lifting a finger, so, despite growing up in the northeast, I had never learned to ski. To be honest, I’d never had any interest – not to mention I have a fear of heights. However, when Club Med asked me if I wanted to learn to ski in the French Alps at their Club Med Val Thorens Sensations resort, I knew it was a once-in-alifetime opportunity I couldn’t pass up. Before I knew it, my husband, Chris, and I were boarding our redeye flight to Geneva. I’ve never been able to sleep on an airplane, so I really wasn’t looking forward to this part of the journey – but little did I know it would be one of the highlights of our trip. We flew business class on Turkish Airlines, and now I can never fly coach again! I never thought I’d say that airplane food was amazing, but it truly was. I lost count of how many courses we had – there was so much food, and it was 40 Ensemble Lifestyles Fall 2016

all delicious. We even had a “candlelight” dinner in the sky, thanks to the little flameless candles on every dinner tray. The whole flight was very relaxing, and having a seat that transformed into a bed was the best part of all: I was able to sleep soundly on an airplane for the first time in my life. From Geneva we were driven to Val Thorens, the highest ski area in Europe, and the very top of what’s known as “Les Trois Vallées,” the largest skiing domain in the world. Winding our way up a narrow road on what seemed like an endlessly high mountain was a bit nerve-wracking, but the incredible views were enough to put me at ease. Once we arrived, we joined a group of fellow Americans for a walking tour of Val Thorens with a local guide. It was really magical to wander through this picturesque ski village at night, as fresh snow gently fell and sparkled against the twinkling night lights, and friendly

locals skied by and local shops tempted us with hot chocolate and pastries. I could have stayed out all night, but we all needed a good night’s sleep before our big day of skiing, so we returned to our modern yet cozy rooms at Club Med Val Thorens Sensations. The next morning I had a hearty breakfast (and more than one shot of espresso) at the resort’s main restaurant, where couples, groups of friends, and families alike were enjoying an array of yummy breakfast options before hitting the slopes. (The more avid skiers opted for the grab & go coffees and pastries available in the equipment room). Before the trip, I was informed that Club Med would have everything I needed to ski, which was perfect for me because I had no idea what I would need anyway! So after breakfast I went to the ski equipment room, where I was fitted for boots, skis, poles, and a helmet. What’s great about Club Med Val Thorens is

that it’s a “ski in, ski out” resort, so once you step out of the equipment room, you’re right on the slopes! I awkwardly hobbled outside with my heavy boots on, and Chris (an experienced skier) went off to hit the slopes while I met my private ski instructor. I have to admit that I was nervous, but my instructor was really great at explaining everything I needed to learn and making me feel comfortable. There was a small hill on the side of the resort perfect for learning the basics. I took it very slowly at first, but my instructor was very patient. After some practice time, he took me to the bunny slope – I still didn’t feel confident on my skis, and I may have been going comically slow, but I did it – I skied on the French Alps. Once I got more comfortable, I was able to relax a bit, and marvel at the out-of-this-world views surrounding me.

After a few runs my legs had had enough, so I bid my wonderful instructor au revoir and joined the rest of the skiers for the best part of skiing: après ski! Club Med had set out inflatable chairs, fondue, hot chocolate and boozy beverages to greet skiers at the end of the slopes. (My skiing skills may have been lacking, but I definitely mastered après ski.) Later, Chris and I met up with our fellow American travelers to ride the Peclet funitel (gondola) up to the highest peak (3,000 meters), where there was not only breathtaking panoramic views of France, Italy and Switzerland, but also a cute little café tucked into the mountain. We had all had a great day: The more advanced skiers loved the quality of all the various ski runs, and how easy it was to go from slope to slope. The less advanced skiers like me appreciated the great instruction we received, whether from a private instructor or group lessons.

Our group returned to Club Med Val Thorens for dinner at the resort’s specialty restaurant, The Epicurious. Between that and the main restaurant which seemed to offer every kind of food you could possibly want, we were very well fed the entire trip, and since Club Med is all-inclusive we never hesitated to try a new dish, or get another round of drinks. When we had all finished our meals, Chris and I were surprised with a special dessert: Our fellow travelers had informed the staff that we would soon be celebrating our 2-year wedding anniversary and my 30th birthday, so despite everyone feeling full we all enjoyed a fabulous chocolate cake and gelato. Cathedrals & Cuisine: Exploring Spain’s World Heritage Cities

In 1993, Spain’s 15 cities with designated UNESCO World Heritage sites formed an association – Ciudades Patrimonio de la Humanidad – in order to work together to preserve their collective history and cultural heritage. My husband and I recently visited four of these cities in central Spain: Toledo, Ávila, Segovia, and Alcalá de Henares, on a trip rich in history, breathtaking architecture, and incredible food and wine. >>>


Toledo Toledo is a short distance from Madrid, but upon arriving we were completely transported back in time. We checked into Hacienda del Cardenal – a former palace that made us feel like we were living in our very own castle – and met our local tour guide, Vidal, who showed us Toledo’s many city gates on our way to dinner. At the Bisagra Gate, he took a key from his back pocket and opened a secret door within the ancient city wall, and we climbed up a tower to the top, where we had an amazing view of the entire city below. Afterwards, we enjoyed wine, grilled octopus and seared tuna on the rooftop of Restaurante Terraza-Azotea, as the sun set and the city lights illuminated the magnificent Toledo Cathedral. The next day we learned why Toledo is known for the phrase “holy Toledo!” For centuries, Jewish, Muslim, and Christian cultures have coexisted in what’s known as the “city of three cultures.” We were in awe of the cathedral, the Mosque of Cristo de la Luz, and the Museo Sefardí – plus the numerous El Greco paintings in the Museo de Santa Cruz and El Greco museum. We roamed Toledo’s many cobble-stoned streets, and on Calle de Alfileritos, Vidal pointed out a small portrait of the Sorrowful Mother. Legend has it that a woman wished for her boyfriend to return from overseas by leaving pins at this painting – and her wish eventually came true. Today, single women still drop pins in hopes of finding their true love, so Vidal pulled out a case of pins so that I could also take part in the tradition. (My husband was a good sport.) When we got to the Jewish Quarter of Toledo, where we were led through a completely nondescript door in an alleyway for an exclusive tour of an underground wine cellar containing over 32,000 bottles! We tasted some of the wines as Véronique, the owner, explained how her father, renowned chef Adolfo Muñoz, had discovered this abandoned cellar many years ago. We then enjoyed even more wine and the chef’s menu at their award-winning restaurant, Adolfo. Every bite of his creative cuisine was incredible, such as the pumpkin crisp topped with anchovies and edible flowers. It was a delectable way to end our visit to Toledo.

Ávila

The city of Ávila was founded in the 11th century, and its famous wall – which is over 1.5 miles long, with 87 towers and nine gates – was erected to protect the Spanish from the Moors. Today, the Wall of Ávila is the most well-preserved example of its kind in the world, and a monumental sight to behold. Our private driver brought us through the city’s imposing gates, and we settled into the grand Hotel Palacio de los Velada before meeting Blanca, our local guide, who walked us through the city and showed us the Ávila Cathedral, considered the first Gothic cathedral in Spain. Ávila is also known for being the birth place of Saint Teresa, so Blanca took us to the Convent of Santa Teresa, where there’s a small museum showcasing relics from her past (including a finger from her right hand). The next morning we tried to burn off the jamón we had indulged in the night before at Restaurante El Lienzo Norte by walking the entire mile of Ávila’s Wall that is open to visitors. The wall has four entrance points, one of which is handicap accessible, so everyone can discover this impressive piece of history. Made up of granite masonry and filled with mortar and stone, the wall is about 10 feet thick, and almost 40 feet high. We climbed up many of the turrets for unrivaled views of the city, and once our legs were worn out, we met our driver and continued on our journey.

Segovia Segovia is famous for its impressive Roman aqueduct, which was built circa A.D. 50 to bring in water from the Sierra. Javier, our knowledgeable local guide, explained that the two tiers of 166 stone arches are one of the Roman Empire’s most impressive feats of engineering, and it remains a well-preserved marvel today. As we made our way through the city, we stopped at Mesón de Cándido, a cozy family-owned restaurant renowned for their cochinillo (suckling pig), and Chef Candido Lopez gave me a

small clay pot as a souvenir. We concluded our tour at the Alcázar de Segovia – an enormous castle that is rumored to be the inspiration for the castle in Disney’s Cinderella. Built out on a steep cliff, its deep moat, drawbridge, and shiny turrets make it the quintessential palace for any princess. Later that night we had a special Sephardi-influenced dinner at El Fogón Sefardí, and then walked to the Plaza Mayor to enjoy gin & tonics at one of the many tapas bars. It was the night of Midsummer’s Eve, and

the square was soon packed with locals celebrating with live music and a giant bonfire, so we joined the party and stayed out past midnight. As a classic film buff, I was very excited to be staying at the legendary Hotel Real Sirenas in Segovia – the same hotel where Cary Grant and Sophia Loren lived while filming The Pride and the Passion (1957). Despite a complete renovation, the hotel still maintains a glamorous, old Hollywood feel. After a short but restful night’s sleep, we enjoyed an espresso and jamón on bread for breakfast before our final tour in Segovia at the Royal

Mint, which is now a museum perfect for families.

Alcalá de Henares is known as the world’s first planned university city, established in the early 16th century. Our local guide, Luis, was a graduate of Universidad de Alcalá, and a pillar of knowledge. He brought us to the top of the Santa Maria Tower, where we had 360-degree views of the entire city, and took us inside the Corral de Comedias for a behind-the-scenes tour of the theatre that’s been around since 1602. We stayed at the Parador del Alcalá de Henares, which, despite its history as a 17th-century monastery school and student lodgings, was incredibly modern and upscale. Our spacious room had high-tech lighting, and a large walk-in closet. With a pool, spa, and restaurants, we could have easily spent the day there relaxing, but there was way too much we wanted to see. Besides its University, Alcalá de Henares is recognized for being the birthplace of Miguel de Cervantes, the

famous author of Don Quixote. We visited his childhood home, which is now a museum, and saw a special exhibition by cartoonist Antonio Fragaus. (Despite the language barrier, we were able to pick up on most of the jokes). Afterwards, Luis showed us the magnificent Universidad de Alcalá. We marveled at the architecture, and Luis shared fun anecdotes about the University: For example, in the past, when a student passed their thesis defense, a bell was rung and the townspeople would come and bring the student to the main square for celebrating – while the poor students who failed were forced to ride a donkey. Later that evening, Luis shared more stories with us over tapas and wine, and after many laughs we parted ways – full of great food and wonderful memories. b
