FAIR TRADE RICE PUDDING

Recipe INGREDIENTS 300g cooked Kilombero rice (white or brown) 400ml Ma’s Happy Life coconut milk ¼ tsp salt ¼ tsp cinnamon ¼ tsp ginger ½ tsp vanilla extract 2 tbsp raisins/other dried fruit (optional) 2-3 tbsp maple syrup 1 tsp vegan butter

1. Heat a large pan on medium/high. 2. Add all ingredients to the pan. Stir continuously and bring to boil. 3. Turn heat to low and continue to simmer until most of the coconut milk has been absorbed. 4. Add more liquid if you like a softer rice. Top tip: Traidcraft’s Helen uses a slow cooker to make her rice pudding, and suggests that the coconut milk, along with the additional time taken to slowly cook, makes for a thicker and even more delicious rice pudding!
