SPICY TOMATO AND BEAN SOUP RECIPE

INGREDIENTS

2 tins of chopped tomatoes 2 tins of red kidney beans, drained and rinsed 500ml chicken stock 2 garlic cloves, crushed Juice of one large lemon 2 tablespoons of Meru Herbs Hot Chilli Pesto

METHOD

1. Put the tomatoes, beans and stock in a food processor (in batches in necessary) and pulse briefly until coarsely chopped but not smooth. 2. Transfer into a saucepan and add the crushed garlic, lemon juice and hot chilli pesto and heat to just below boiling. 3. Thin with boiling water if necessary.

Season, then serve.

Please note, the Chilli Pesto is hot! Use less or more to suit your taste.
