FROM: Lucy TO: Alexander
Hello Alex! Do you know how your final exam went? Have you requested the mark already? As you know, I am on holiday and I have decided to come for almost a fortnight (12 days) to a rural tourism house in Spain where every single corner has a history of over five centuries. Mum and I tried to book two rooms at that villa you recommended in Portugal, but there were no vacancies. It is situated in a gorgeous village called Soutullo famous for its sunset and the blue hue of its grounds full of lilies. As it is an ancient residence, it is said that the current (1) w_ _ _ • _ _ _ _ _r was once a prison (2) _ _l_ where bandits were locked in. In fact, the wine they produced has the creepy name of (3) d _ _ _ _ _n. Next to it, there is a (4) b_ se _ _ _ _ • g _ m where I go to pedal on an exercise bike. Apparently, my room was once the (5) m _ _ _’s room. It’s amazing! It has got a (6) f_ y _ _ where I get changed and a hot tub in the (7) _ _ _ _room and what’s best, it is a standard b_ _r_ _ _, not a suite. My mum is in what used to be the first owner’s (9) ch _ m _ _ r, and she has got a hydro massage shower instead. Religious weddings are celebrated here every Saturday in the summer, as there is a (10) ch _ _ _l for the service and a (11) _ _ _ _room, which was once the (12) f _ _ _t room and the (13) p _ r _ _ _ _ put together, for guests to dance. When there is too much noise, I take a book from the old (14) _ _ _ _ _ _y next to the (15) _ _ _ _ _g room, and read a little in a small (16) st _ _ _ the owners have in the (17) l _ _t. It is like my personal (18) _ ff _ _ _! They even told me to go to the (19) _ _ _tr_ by their (20) _ _ _ing room and serve myself to food, as it is not full board and there is no (21) _ _ _ _ _ en service. As you can see I am having a wonderful time here. I wish you could come and visit it. Take care and write to me soon with some good news, Lucy

1. Read the following description of a traditional British dish called Shepherd's Pie.
Take a medium-sized onion, peel and dice it fairly small then sauté it on a medium-low heat in a little lard or butter together with a bay leaf. When golden add a finely diced carrot and half a kilo of minced lamb and brown all over. Add a couple of finely chopped tomatoes and sauté, add a good splash of white wine and fry off the alcohol. Pour in 3/4l meat stock, season with salt, pepper and a sprig of rosemary and turn down to the lowest setting. Heat the oven to the maximum setting. While the meat sauce is cooking (roughly one hour) peel, cut into pieces and boil 5 large potatoes in salted water. Once cooked, drain, add butter and mash. Add more butter, a splash of milk and black pepper. Oil an oven-proof dish, pour the meat sauce in and cover it with the mashed potato. You can optionally add sliced tomatoes to the top and/or grated cheese. Brown in the oven for about 20 minutes or until the top has browned and looks appetizing. Serve with steamed vegetables. 2. Vaya tortazo!

1. Complete the text with some of the words from the “indoors” column. The Wine Making Process
There are five basic steps to making wine (1)…………………, crushing and pressing, (2)……………………, (3)……………………, and aging and bottling. Undoubtedly, one can find endless variations along the way. (4)…………………… or picking is certainly the first step in the actual (5)……………………… process. Only grapes can produce annually a reliable amount of sugar to yield sufficient alcohol to preserve the resulting beverage, or have the requisite acids, esters and tannins to make natural, stable wine on a consistent basis. (6)…………………… the whole (7)…………………… of fresh ripe grapes is traditionally the next stage in the wine making process. Up and until crushing and (8)………………… the steps for making white and red wine are essentially the same. However, if a winemaker wants to produce white wine, s/he will quickly press the must after crushing in order to separate the juice from the (9)………………………, (10)………………….., and solids. Fermentation is indeed the magic at play in the making of wine. If left to its own devices (11)………………… or juice will begin (12)…………………… naturally within 6-12 hours with the aid of wild (13)………………… in the air. However, for a variety of reasons, many winemakers prefer to intervene at this stage by inoculating the natural (14)………………… and,

this way, killing the natural yeasts and introducing a strain of yeast of personal choosing to be able to predict the result. Once fermentation is completed, the (15)………………… process begins. Winemakers have the option of (16)…………………… or siphoning their wines from one tank or (17)…………………… to the next in the hope of leaving the precipitates and solids called (18)………………… in the bottom of the fermenting (19)………………………. The final stage of the wine making process involves the (20)…………… and (21)………………… of the wine. After clarification, the winemaker has the choice of bottling a wine immediately or s/he can give a wine additional aging. Further aging can be done in bottle, (22)……………… or ceramic tanks, large wooden ovals, or small barrels, commonly called barriques. The choices and techniques employed in this final stage of the process are nearly endless, as are the end results. However, the common result in all cases is wine. Enjoy
