I saw Iguacu Falls from the Brazilian side, the Argentinian side and from the water - talk about a trio of wow moments!
s La Boca is a real feast for the eyes. Everywhere you look is a kaleidoscope of colour, and every now and then you see huge models of famous Argentinians peering at you from a balcony!

Finding out all about the winemaking process at the Indomita vineyard was fascinating. Of course, the tasting at the end of it was my favourite part!

Inextricably linked to the civil rights movement, Atlanta’s story started in 1837, when it was founded as the end of the Western & Atlantic Railroad line. Located in the ‘Peach State’ of Georgia, it is the largest city in the Deep South, and it boasts many landmarks which chronicle its rich history. As the birthplace of Martin Luther King Jr, there are many opportunities to learn about the man who would play a key role in the American civil rights movement as he sought equality for all through peaceful protest. Inside the King Center you’ll find the world’s largest collection of memorabilia connected with both Dr King and the movement. Outside you’ll see his final resting place and the Eternal Flame, which is a symbol of the continuing efforts to realise his dream. You can also visit Dr King’s former home, now a museum, and the Ebenezer Baptist Church – his spiritual home.
If music be the food of love… You won’t go hungry in Nashville, a city with music in its soul. Not only is this the country music capital of the world but in its more than 120 live music venues you can tap your toes to the sound of jazz and blues, rock and pop. At the heart of ‘Music City’ is Broadway, where you can sway to the rhythms at a honky tonk, or perhaps treat yourself to a night out at the iconic Grand Ole Opry, the ultimate country music venue. Explore the Country Music Hall of Fame, where past and present country music legends are showcased in one of the world’s largest collections of musical memorabilia, or step inside RCA Studio B. Hold your breath as you walk in the footsteps of Elvis Presley, Jim Reeves, the Everly Brothers and more, where thousands of songs were recorded, and legends created.
Known as one of the most eccentric and lively cities in the world, there are many reasons to visit New Orleans. For starters you’ll be greeted by friendly locals who need no excuse to throw a party or parade through the streets, with Mardi Gras one of the world’s most famous festivals. Jazz music has its roots here, and if you head to the historic French Quarter, you’ll hear it from every window, door and alleyway. The architecture here is pretty special too, with Creole townhouses, historic mansions and decorative iron balconies reflecting its multicultural heritage. Stop for a bite to eat and you’ll find yourself spoilt for choice when it comes to fresh seafood, especially crab, crayfish and shrimp, and Creole favourites gumbo and jambalaya are a must. Got a sweet tooth? Order beignets with your coffee, these pillows of fried dough are liberally sprinkled with icing sugar and served three at a time, so make sure you’re hungry.

We believe that we should take care of the communities we visit, which is why we decided to set up the Travelsphere Cares initiative. Through this scheme, we donate some of the profits from selected tours to help those in need – it’s a great way to give something back, and by booking you’re helping too. In Vietnam, we are backing a social enterprise called STREETS International, which helps atrisk youngsters. Recognising the important role that tourism can play in developing economies, they use donations to provide education, safe housing, medical insurance and educational resources to these young people.

Their Oodles of Noodles project teaches the youths all there is to know about working in and running a restaurant. It also helps them to hone their English and presentation skills, and eventually they graduate with an International Culinary Arts Certificate. That should set you up for an afternoon exploring the exquisite Schönbrunn Palace, the summer residence of Franz Joseph I and Empress Elisabeth. When talking about Australia’s natural wonders, where do you start? Uluru must be one of the most famous sights in the world. Archaeologists believe that Australia’s Aboriginal people first arrived at least 50,000 years ago. However, they say they can trace their creation back to ‘Dreamtime’, when the earth was first formed. Today only about 2% of the Australian population is Aboriginal, but evidence of their heritage and culture can be seen all over. Up in the Northern Territory, Kakadu National Park is famed for its caves decorated by 20,000-yearold rock art. Examples at Ubirr Rock and Nourlangie Rock are outstanding and have earned the park UNESCO World Heritage status. In the caves around the huge monolith Uluru, you’ll also see incredible rock art depicting Dreamtime legends.

Indigenous Australians, who have occupied this land for thousands of years, developed a unique diet known as bush tucker using native plants, and animals such as kangaroo, emu, crocodile and witchetty grubs. Nobody should come home from Japan without trying tender, marbled hida beef. I love it served with hoba miso, a delicacy of vegetables mixed with miso paste cooked on a hoba – a Japanese magnolia leaf. GALAPAGOS GIANT TORTOISE
Perhaps the most famous resident of the islands, the Galapagos giant tortoise can grow to nearly two metres in length and can often be seen roaming free in the Santa Cruz highlands. In 2012, the most well-known of the archipelago’s tortoises ‘Lonesome George’ sadly passed away. He was around 100 years old and his species, the Pinta Island tortoise, became extinct. BLUE-FOOTED BOOBY
Three types of booby are found on Galapagos, but with their large, brightly coloured feet, the blue-footed species is one of the easiest to spot. Look out for them diving for fish and nesting along rocky coasts.

Galapagos green turtle. This is the only species of turtle known to breed and nest in the islands and during the mating season, females will crawl onto the beaches at night to lay their eggs.

Found in abundant numbers along the coastline of the islands, you might be lucky enough to see Galapagos sea lions swimming close to the shore or basking on beaches and rocks.
This loveable little creature is one of the smallest species of penguin in the world. Endemic to the Galapagos Islands, they are found mainly on Isabela Island and live in coastal crevices and caves. With their huge wingspan, the magnificent frigatebird can spend days at a time on the wing. The males have distinctive large red throats, whilst females are larger with a blue eye-ring. It is thought there could be several thousand pairs on Galapagos, and they are frequently spotted by visitors. GALAPAGOS GREEN TURTLE

A 100-YEAR ANNIVERSARY February 26th 2019, marks the 100year anniversary of the Grand Canyon’s designation as a national park. Each year, around six million people visit this iconic natural wonder, which is a mile deep, measures 277 miles long and at its widest, is 18 miles across. MILLIONS OF YEARS IN THE MAKING Carved by the Colorado River, experts think this spectacular gorge was formed around five to six million years ago, which in geological terms is not very
long. However, there are some rocks here that are believed to be around two billion years old. AN INCREDIBLE SIGHT Most visitors head to the South Rim to admire sweeping views of the Grand Canyon from one of the many viewpoints. Watching the sun rise or set over the canyon is truly a sight to behold, as the rock appears to change colour in the different light. If you have more time, you could even follow one of the trails and take a short hike below the rim.
A BIRD’S-EYE VIEW Many people choose to get a bird’s-eye view of the canyon by taking a thrilling helicopter ride above it. As you soar through the sky like an eagle the sights you see will be breathtaking. DESERT VIEW WATCHTOWER Near the eastern edge of the Grand Canyon, Desert View provides an incredible panorama of the Colorado River and the surrounding geology. The unusual stone watchtower here was designed by architect Mary Colter and built in 1932.

Not only did she realise her lifelong dream of visiting Pompeii and walking in the shadow of Mount Vesuvius, she also got stuck into some great cuisine. “After a walk amongst the vines at a family-run winery in the Amalfi hills, we tasted some incredible local wine and learnt some secrets of its production. I even helped to make limoncello on this holiday, peeling lemons for the famous liqueur.” Penny’s love of Italian cuisine and all things seafood has inspired us to share a recipe with you for spaghetti alle vongole. This deliciously light dish, although impressive when served, is simplicity itself to make, consisting of very few ingredients. Why not try it out.

SPAGHETTI ALLE
vongole
SERVES 2 INGREDIENTS 140g spaghetti 500g fresh clams in shells 2 ripe tomatoes Olive oil 1 fat clove of garlic 1 small fresh red chilli, finely chopped A splash of white wine Chopped fresh parsley
METHOD
Put a large pan of water for the pasta on to boil.

Meanwhile rinse the clams in several changes of cold water, discarding any that are open or damaged. Cover the tomatoes with boiling water and leave for 1 minute. Drain them then slip off the skins, remove the seeds and chop the flesh.
This BBC Good Food recipe for spaghetti alle vongole couldn’t be easier to follow. Why not cook up this classic Italian pasta dish yourself and send us a picture – we’d love to see your efforts on Facebook or Twitter.
Now you can cook the spaghetti according to the instructions. While this is cooking, heat the olive oil in a large pan, add the garlic and chilli, frying gently for a few seconds. Stir in the chopped tomatoes, then add the clams, the white wine, salt and pepper. Bring this to the boil, then cover and cook for 3-4 minutes, until the clams are open.

HIGHLANDS HIGHLIGHTS This break in the Scottish Highlands is packed with treats. MANX-MADE BEAUTY So, you’ve decided to cross the Irish Sea to the delightful Isle of Man, famous for its tailless Manx cat and the prestigious motorcycle TT Races. The best way to get around the island is by its steam and electric railways, and a great base is its capital Douglas, where the seafront is lined by grand Victorianstyle hotels.
