Forsyth County has hundreds of acres of parks for you to enjoy. For example, Sawnee Mountain Preserve in Cumming is a perfect place to get outdoors and enjoy the natural setting Forsyth County has to offer. KITCHEN MAGNET

The Manor Golf & Country Club Chef Michael Parks harnesses his creativity with greens as well as on them

One of the outstanding benefits of joining Polo Golf & Country Club is its connection to The Manor Golf & Country Club just a few miles away. Not only is The Manor home to the only Tom Watson-designed golf course in the state, it’s also home to Executive Chef Michael Parks, whose culinary exploits have earned him rave reviews. Michael’s skill in the kitchen was likely encoded in his DNA. His grandmother and great-grandmother were among the first African-American businesses owners in Kentucky in the early ’30s and ’40s, running bars, restaurants and gambling houses. His mother, Shirley, followed suit with a high-end eatery in Clarksville, Tennessee, called The Rose Garden. It was Michael’s dad, Willie, a command sergeant major who at one time worked in Special Forces, who sparked his culinary senses. “After he retired from the military he was a commercial fisherman, and he’d bring home his catch and cook for us. I loved his fried crappie or bluegill and potatoes, eggs, grits, and biscuits—I fell in love with cooking with my dad.” After a brief stint at university, Michael joined the military, spending most of his service time in Europe until he returned to start his business career in the states. “I was on an extended business trip in Bologna, Italy, and my boss’ best friend there owned a restaurant,” explains Michael. “My boss told him I had some skills, and his friend Lucca took me in the kitchen and said, ‘Let me see what you got.’ I made him a carbonara, which he pronounced ‘fantastic.’” Michael, then director of sales and marketing for a Georgia-based tile company, kept returning to Trattoria di via Serra to toil and learn by the stove. “I fell back in love with cooking, came home to the states and quit my job.” Not a small thing for a guy who had spent a decade working his way up from the warehouse to a wellsalaried executive job. But the jackets and ties were forever retired. A stint at the Cordon Bleu cooking school in Atlanta, a restaurant gig and some training with a master chef at Loews all followed until four years ago, when The Manor beckoned. Since then the chef and avid golfer (he’s currently a 9 handicap) mixes it up for the members, changing the menu daily and offering lots of healthy options. “I surprise the members all the time with different cuisines and styles,” he says with no shortage of pride. “It’s got to the point where they stop requesting dishes and just say, ‘Have Mike make me something.’ I love my job.”

BUTTERNUT SQUASH SOUP 4 pounds whole butternut squash (about 2 medium), halved lengthwise and seeds removed

Heat the oven to 425°F and arrange a rack in the middle.

Line a baking sheet with aluminum foil. Place the squash pieces cut-side up on the baking sheet.

Melt 1 tablespoon of the butter and brush all of it over the tops and insides of the squash halves. Season generously with salt and pepper. Roast until knife tender, about 45 minutes to 1 hour.

Meanwhile, peel, core, and cut the apple into medium dice. Cut the onion into medium dice. Melt the remaining tablespoon of butter in a large saucepan or Dutch oven over medium heat. Add the apple, onion, and sage, season with salt and pepper, and cook, stirring occasionally, until softened, about 7 minutes. Remove the pan from the heat and set aside.

cool enough to handle. Using a large spoon, scoop the flesh into the saucepan with the sautéed apples and onions; discard the skins. 6.

Add the chicken stock, and salt and pepper. Stir to combine, and bring to a boil over medium-high heat. Reduce the heat to medium low and simmer, stirring occasionally and breaking up any large pieces of squash, until the flavors marry together, about 15 minutes. Remove the pan from the heat and stir in the cream.

Using a blender, purée the soup in batches until smooth, removing the small cap (the pour lid) from the blender lid and covering the space with a kitchen towel (this allows steam to escape and prevents the blender lid from popping off). Alternatively, use an immersion blender. Taste and season with salt and pepper as needed. Serve garnished with the pumpkin seeds, if using.

Protect Your Family From The Flu Flu season is right around the corner. At Children’s Healthcare of Atlanta, we see many sick children and teens with the flu virus each year. Your biggest defense against the flu is the flu vaccine, so it’s important that everyone in your family gets vaccinated every year. Here are the top five tips to help you prevent the flu.

• Stay home if you get the flu. This reduces the spread of the flu. However, it is important for parents to recognize the symptoms and know when to see a healthcare provider. If your child has difficulty breathing, experiences a change in behavior or has difficulty keeping fluids down, contact your pediatrician.

• Get vaccinated every season. The best way to make sure that you and your family are protected is for everyone older than 6 months to get a flu vaccine. Since it can take up to two weeks to be protected by the flu vaccine, it is best to get vaccinated as soon as the vaccine is available.

• Antibiotics will not work. The flu is a virus, not a bacterial infection, so antibiotics will not help.

• Some children may need two doses of a flu vaccine given four weeks apart to be fully protected.

• Wash your hands, use hand sanitizer and cough into your sleeve. These tips help prevent the spread of flu viruses.

• Talk to your child’s healthcare provider about which vaccine is right for your child and your family. There are two ways to get a seasonal flu vaccine: • A shot through the skin—This flu vaccine contains dead flu viruses. You cannot get the flu from the shot form of the vaccine. Side effects from the shot include mild redness and irritation at the injection site. • A spray mist into the nose—This type of flu vaccine contains a weakened, live flu virus. Possible side effects of the nasal spray form of the vaccine include runny nose and headache similar to mild flu symptoms, although not as severe. A healthy person cannot get the flu from the nasal spray flu vaccine. The nasal spray vaccine is the preferred vaccine for healthy children 2 to 8 years old.

Educator Spotlight When the 2014-2015 school year began in Forsyth County on August 7, around 42,000 students entered 35 schools around the county. Within those schools, there were 328 new educators waiting to greet them and kick off learning for this year. Below we have highlighted a few of those educators: DENISE HARTLEY Background: Ms. Hartley was an accountant for 20 years in England before she moved to the United States nine years ago. That is when her career in education began as a classroom helper for her youngest son. Ms. Hartley then became a substitute teacher before becoming a qualified teacher through North Georgia College and State University in 2009. Combining her accounting background and degree in history, Ms. Hartley taught math and social studies in a Fulton County middle school. For the 2014-2015 school year, Mrs. Hartley has joined the faculty of West Forsyth High School as a world history and economics teacher in the special education department. What She Looks Forward to in 2014: “In 2014 I am looking forward to becoming a valuable member of the West family. My sons are successful AP students in 11th and 12th grade at West, and my daughter is a junior at UGA thanks to our wonderful staff. I owe a great debt to West for being part of my children’s happiness and love of learning.” BRITTNEY HEAD Background: Ms. Head is a Forsyth County native and attended Forsyth County Schools. She attended Daves Creek Elementary (kindergarten), Coal Mountain Elementary (1st-5th), North Forsyth Middle, and graduated from Forsyth Central High School. She received a degree in Early Childhood Education from Piedmont College in Demorest, Georgia. The 2014-2015 school year is her first year teaching, and she is a first grade teacher at Kelly Mill Elementary. What She Looks Forward to in 2014: “I look forward to have a wonderful year growing as an educator and helping students be successful. I feel very honored to be teaching in Forsyth County.”

PHILIP KINNEER Background: Mr. Kinneer is a retired military veteran who served in the US Navy for twenty years. The Navy gave him unique opportunities and perspectives that have translated well to the civilian sector, including one of his favorite jobs that he was assigned while in the Navy: teaching. He attended several colleges and universities while in the Navy and finished his degree at the University of North Georgia. After retiring from the military, he worked at the Center for Diseases Control and Prevention for three years as a contractor. In 2009, he started substitute teaching in Forsyth County before teaching math and science full time at Hull Middle School in Gwinnett County. He is back in Forsyth County as an eighth grade math and science teacher at Otwell Middle School.
