Restaurants Scramble for Stability in the “Now Normal” By Timothy G. Beeman II The world has changed. Our livelihoods have changed. Our perceptions, our habits, our wants and possibly our dreams… they have all changed. When the “Pandemic-Which-Must-Not-Be-Mentioned” first arrived in the US, restaurants started bracing for the worst. Well, at least most did. Within a week, starting with the biggest drinking holiday of the year, St. Patrick’s Day — once Governor Roy Cooper called for the ban of dine-in for bars and restaurants — life for bars, restaurants, bottle shops, grocery stores, patrons, has gone from “oh, we’ll all be alright…” to “holy $@#&!!!” in 2.6 seconds. Restaurants that are not usually set up for take-out, curbside service or even delivery, are finding themselves shifting and SUNDAY adjusting to what I am calling the “Now Normal.” I am not fond of the term “new normal” because I honestly $2 Domesticwill Drafts • $9 Texas believe we will see the other side of the situation. YAMAS: CHEERS TO GOOD HEALTH AND MAC & CHEESE! By Kristen Margo Daukas The last time the economy crashed the way it is crashing currently was in 2007. During that time, the Michael family relocated from Florida to Winston-Salem and opened the first restaurant under The Michael Family Restaurant Group - Mama Zoe’s which is located on Reynolda Road and one of the city’s most popular places. Since that time, they have opened Waldo’s Wings Burgers & Brews, Cin Cin Burger Bar, and most recently, Yamas Mediterranean Street Food. Yamas opened in March of 2019 and considers themselves to be a “fast-casual” Mediterannean restaurant where guests go down a line to build their meal - similar to a Moe’s or Chipotle concept. Guests are able to build their own bowls and get to choose from greens or grains, then top that with protein or spreads, and from there they pick up to 8 of their favorite toppings. Offering healthy options that are quick has proven to be a success for Yamas as they see a constant stream of regular customers daily. In addition to their bowls, they also have a regular menu with standard “favorites” as well as unique items that many may not have ever tried. If guests aren’t familiar with Mediterannean dishes, a good place to start is with Chicken Souvlaki or the ever-popular Gyro sandwich. In the bowl dishes, the chicken and rice is top of the list for many customers. Mediterannean Fries, White Chocolate Baba Ganoush, Falafel Fritter, and Spanakopita are other popular menu items. And of course, their award-winning Mac & Cheese but we’ll get to that in a bit. The staff at Yamas realizes that a lot of people can be overwhelmed and intimidated by all the different options and toppings spread before them. Usually, when they’re serving guests like that, they bring it back to basics and start asking questions like “what kind of flavors do you like”, “what are your favorite proteins”, etc. Guests will find the staff very well trained and willing to help. The great thing about the ingredients is they all go together in a delicious manner, so you really can’t go wrong with anything you create and with all the different options, it’s almost impossible to have the same thing twice unless that’s what you want to do! Yamas was the first place winner in this year’s Mac & Cheese Cookoff which was a big deal for them since they had never participated before. They were excited to meet a lot of new, 6 |

future guests at the Cookoff - many who had never heard of the restaurant. When asked what makes their Mac & Cheese unique from other recipes, you may be surprised to hear that it’s adding Greek yogurt into the ingredients! If you’ve never eaten Greek yogurt, one of the things that makes it unique to traditional yogurts is that it has a certain “tang” to it and when you use it to cook with, it definitely creates a different but delicious flavor profile. Unfortunately, just shy of their one-year anniversary, the company decided that the smartest and safest thing they could do for their staff and the community was to close all four restaurants down for an indefinite period of time due to the COVID-19 outbreak. It was a decision that wasn’t easy to make since not only are all of their restaurants busy and popular places, but their staff members and guests are more like family than customers. While many restaurants in our area are offering pickup and delivery options, the executive team did not feel that it was worth sacrificing anyone’s health to do the same. But fear not - this is a temporary closure - a “pause” if you will. They absolutely will reopen their restaurants and are just as anxious as everyone else to get the doors back open, the grills fired up, and to fill the dining rooms with the laughter and good times that seem to go hand in hand with all of their locations. COVID-19 and Its Impact on Your Favorite Restaurants & Bars By Kristen Margo Daukas If you had asked any single person two weeks ago that our world would look like it does today, no one would have believed it. As I write this, it is still unfathomable to me that we are facing one of the biggest threats of our time. Not only as it relates to our health but the financial impact is going to prove to be nothing short of a disaster. And the ones who immediately saw this impact are our bars and restaurants. When the Governor ordered every food and beverage business to shut their doors to their customers on March 17th, you could almost hear the audible cry of anguish. However, the funny thing about humans is that we’re a pretty resilient lot and when forced to change in order to survive, we always find a way. Almost immediately once that issue was mandated, every establishment that had the capacity to do so changed their business model and instead of serving their foods to their customers in-house, switched to delivery and togo services. Unsure how residents would react to the change in business model or if they would even continue to patronize them. While it’s definitely not business as normal, most of our establishments have been pleased with the support that the community has shown them. I reached out to several establishments to get their take of everything that is happening and how they personally are faring with all the changes. Here are a couple of the responses that I received: “I would love to let everyone know how this is a complete business model transformation. Necessity creates opportunity. We love the to-go business. It’s not doom and gloom. It’s the new way to present your product to the public. We have a strong group of people that are really enjoying the opportunity to work. Often in today’s industry it is difficult to find staff. However, this new way of doing business has excluded the need for lazy or indifferent employees and staff. It literally is a joy to go to work every night. We laugh, share and bond as we take pride in serving the community...to go home after a hard day’s work feeling nothing but sheer pride is a blessing I haven’t experienced in a long time in this industry. It may be just what the doctor ordered!!” Aaron - Smohk’d This really is a tough time, but tough times bring out the best and worst in people. At Bib’s Downtown, we have been very fortunate to see the good in both our customers and employees. Our customers are picking up take-out orders regularly, and our employees are taking drastically reduced shifts in stride. Those that have been permanently laid off fortunately have a streamlined unemployment process to go through. We have been part of the Downtown, West-End community for 12 years, and after this is over, we look forward to many more years in this community. At the end of the day, we cannot afford to take the smallest thing for granted. Robert Moreau - Bib’s Downtown As the fallout from COVID-19 shows no signs of going away anytime soon, restaurants will continue to pivot and adjust their business approach. Some are offering to sell their overage of meat and produce as the grocery store’s shelves seem to be empty of those items. How can you support them? Continue to order takeout or delivery. Make sure you are tipping your delivery or takeout person what you would normally tip them if you were eating in because they’re suffering the loss of their income in a major way as well. Buy gift cards. Remember them when life goes back to normal and we can all sit down together again. 12 |

I had someone write in and ask me “what does it look like out there?” I can only say “hopeful.” If we do what we should to combat this horrible pandemic, we should get through it in a relatively short time. The reality is we are only going to get through it if we do what we’re instructed through the CDC and other experts. Stay home unless you must go out or if you are grabbing food from one of the establishments in your area that is still serving. Tip extra when you can. Wash your hands. Move food from its to go box and onto your own plate, nuke it a few seconds to reheat and decontaminate. Enjoy. Live. Love. Make the “Now Normal” a passing phase.

Mack is a stunning boy with unique caramel/brindle markings! He’s just over a year old and weighs in around 70 lbs. Mack is likely a pit or pit mix, and he’s everything this breed should be. He’s energetic and fun, loves to play, but also loves to cuddle. Mack loves everyone he meets, including kids! He would do well in an active home with a fenced yard to run in.
Sphinx loves to strut her stuff! She’s a great dog to take out and about on the town, especially if you’re hanging out at a brewery or a park. This girl is laid back and loves everyone she meets! Sphinx is approximately 2.5 years old and weighs in at around 55 lbs. She gets along great with her big brother and sisters in foster care, and loves to tease them by stealing their toys! Stuffy toys are her favorite, especially if she can get that squeaker out of there! Sphinx is an all around great little girl.
Sequoia loves life and is always up for an adventure! She has gone on long car rides, camping trips, and was even brave enough to try kayaking. She is just happy to be along for the ride. She would do great with an active owner or family who can continue to teach her about the good things in life! She’s also happy to just lay next to you and be a couch potato at times. Sequoia is a mixed breed, approximately 4 years old and weighs in at around 40 lbs. She gets along well with the other dogs in her foster home but would also do well as an only dog so she could be the center of your world! This girl has so much love to give, she just needs someone to love her back as hard.
Onyx is so loving and smart! She loves toys, running zoomies in the yard, lying on the sofa, belly rubs, and trying to climb in her person’s lap. She knows “sit” and takes treats gently. She is crate and house trained but needs a little practice on leash. She also does well in the car. Onyx previously lived in a home that had children, and she was very gentle and patient when she was around them. She is curious about cats but doesn’t try to harm them. Onyx is a three year old female spaniel/hound/lab mix and weighs just under fifty pounds.
