s strikingly original as a pair of Berluti shoes, the Paris gentleman’s footwear and clothier store in the Miami Design District is anything but cookie cutter. The boutique — quite a coup for Miami since it is only the second location in the United States outside of New York — maintains the sophisticated air of Berluti, while letting in a bit of tropical flair. Slim Aarons’s classic American “jet set” prints adorn the walls, and fitting rooms are inspired by beach huts. The can’t-miss centerpiece of the store is a pool table designed by Ora Ito. The white, cube-like gallery, which opened in July, still maintains the feel of a gentleman’s private retreat to showcase its displays of the brand’s signature shoes, leather goods, and the introduction of ready-to-wear stateside for the first time. It is an intriguing time for Berluti, and therefore, an exceptional time for Miami. In 1993, Bernard Arnault, the chairman and chief executive officer of LVMH Moet Hennessy Louis Vuitton SA, bought Paris shoemaker Berluti, which was founded in 1895, to add to his company’s portfolio. Then in 2011, Arnault’s son, Antoine, was put in charge as its chief executive officer. No stranger to luxury brands, Antoine was Louis Vuitton’s marketing director and then its director of communications until taking the post at Berluti. An association that Antoine had with Rolling Stones guitarist Keith Richards was the brainstorm for Louis Vuitton’s uber successful global advertising campaign photographed by Annie Leibovitz, and credited to Antoine’s creative eye. He used celebrity ambassadors like Catherine Deneuve, Bono — even Mikhail Gorbachev — Francis and Sofia Coppola, and tennis champions Andre Agassi and Steffi Graff. The game changer Antoine introduced to Berluti is equally visionary — growing the brand from footwear and leather goods, to announcing itself as the first new luxury menswear label in years. In 2011, Antoine lured Alessandro Sartori, a creative designer at Zegna for 14 years, to move to Berluti to be in charge of its sartorial style.

Today, Berluti’s bespoke and ready-to-wear collections of shoes and clothing offer a vocabulary for menswear that is innovative, yet faithful to its Paris tradition. This year, the brand introduced its third menswear collection, with the theme Galerie de l’Evolution. Sartori set out to explore where Berluti’s past could take it in the future. Central to the collection is the three-piece suit, which comes in four, five, and six-ply cashmere, angora, mohair, and cheviot wool. Accessories include hats made of water-repellent beaver, new backpacks and business bags in leather, and then, of course, the footwear. Berluti introduced a knee-high boot in waxed leather and a new derby shoe, the Vittorio, made in punched leather in three colors. That Miami is on the cusp of Berluti’s evolution is no sheer coincidence. It’s entirely fitting. TM

tylemaker Sara Colombo, founder and owner of NEST in the Miami Design District and in Bal Harbour, spends each summer with her husband, Ugo, and their two children, Uberto, 7, and Stella, 5, exploring unchartered territories by boat. The styles are sleek and minimalist-modern with a number of palettes and compositions to choose from, making each Armani kitchen unique. The Bridge design is the one that appreciates what the kitchen is — the heart of the home. The components are broken up into a central block with two fronts. One front faces the living area, while the other connects to the functional pieces. Grey oak and Brazilian chestnut, woven bronze metallic laminate, and stainless steel give the kitchen a natural, woodsy look. However, if you prefer the kitchen not be seen, Armani has options. The Checkers design is curious looking with a checkerboard of light and dark wood cabinets. The cabinets are set back into the wall, making the kitchen a series of lines and patterns. The geometric structure is softened by natural wood, but overall it’s severe in metallic lacquer. The Calyx makes the kitchen disappear altogether with a full-height wall block that opens to reveal the nuts and bolts. Like the Checkers, the room’s purpose is not overly stated. It’s more sophisticated looking with precious metals of bronze and silver and black stone. The latest creation, just unveiled at the 2013 Milano Design Week, is Slide, whose inspiration comes from the exclusive idea of dinner with the chef. The notion is a show kitchen where guests feel as if they are part of the creation and execution. The center island has a sliding Lasa marble top, which reveals an elegant stainless steel worktop, and wall units that are set back with horizontal sliding doors to free the worktop from any obstructions. With its minimal metallic look, Porsche P’7340 kitchen is made with the bachelor pad in mind. Masculine in its sensibility, it is reminiscent of the exterior of the German engineered coupe, and not that far off from the luxe of Fendi and Armani. The Porsche-designed kitchen, made by German kitchen manufacturer Poggenpohl, features appliances and cabinets that respond to a light touch thanks to a built in high-precision sensor system. The P’7340 kitchen is linear and architectural, like a city skyline. It’s designed with a rectangle frame in mind and moveable pieces inside the box, so to speak. Each module is covered in carbon fiber with an aluminum frame. Carbon fiber is usually used for race cars, making the kitchen as close to an actual sports car as it’s going to get. It is a cool innovation that does add a three-dimensional quality, making each piece appear to pop out of the horizon. An integrated lighting system and handle-less fronts, with an automatic opening and closing system, reinforce the purist design. The Porsche kitchen is completely customizable in a variety of glossy colors and satinized glass or black granite worktops. Integrated living is where contemporary designers are putting their stamps with an emphasis on these centers of attention — kitchens that aren’t only essential, but tastefully alluring. It’s not your traditional art museum where visitors sit quietly contemplating masterpieces on the walls. Instead, the new Pérez Art Museum Miami (PAMM) is a place to enjoy contemporary art while sharing a café con leche, relaxing at lunch, or sipping an evening cocktail while chatting with friends.

Designed to create a sense of adventure — where every visit brings a new experience — the PAMM is a beautiful example of architectural thinking outside the box — literally. With its sweeping glass walls, outdoor deck, and waterfront location, downtown Miami’s new cultural gem blurs the lines between indoors and outdoors in a uniquely South Florida setting. On December 13, the PAMM will open its doors, welcoming visitors to its new home, a three-story building next to the still-under-construction Miami Science Museum in Museum Park on Biscayne Bay. “For the first time, Miami will have a major, world-class center for modern and contemporary visual art,” says Jorge M. Pérez, founder, chairman, and CEO of The Related Group, which has contributed more than $40 million to the museum’s capital campaign. “The museum’s commitment to assembling one of the world’s leading collections of contemporary art reflects my own desire for Miami to continue to grow as an international cultural destination,” Pritzker Prize-winning architects Herzog & de Meuron designed the building. The cutting-edge PAMM will provide space to showcase its growing art collection, a variety of galleries to present more world-class exhibitions to Miami-Dade County, and an educational complex to bring the world of art closer to children and adults.

“Our new building provides a catalyst for social activities in the presence of art,” says Thom Collins, museum director. “You can spend the day here strolling through the galleries, meeting your friends, or reading a newspaper on the deck. Through the windows, you might see a cruise ship in the turning basin at Port Miami, ready to head for the ocean.” Most PAMM visitors will arrive by Metromover or by car, turning off Biscayne Boulevard (U.S. 1) into an underground parking facility. At ground level, there’s a pedestrian promenade on the south side and landscaped deck, partially shaded by a louvered roof. “As you walk around the building, you can see how the design erases the distinction between nature and culture,” says Collins. Stepping into the museum brings an encounter with the ground-level exhibition spaces, as well as a cafe, bar, restaurant, store, and other museum services. PAMM’s inaugural exhibition lineup reflects the museum’s mission to emphasize artists who engage with traditions from the United States, the Caribbean, and Latin America. For instance, there will be focused exhibitions on the work of Cuban painter Amelia Peláez and Haitian-born, Miami-based artist Edouard Duval-Carrié, as well as major retrospectives on international artists Ai Weiwei and Beatriz Milhazes, and group exhibitions on the exchange of ideas between the Caribbean basin, Europe, and North Africa. (More info about the Ai Weiwei exhibit, Fanfare, page 90) PAMM’s second floor is dedicated to events with a changeable configuration for film screenings, live performances, and other activities. The galleries on both floors include large spaces for contemporary or touring art shows and mid-size exhibitions that will change every few months. Project galleries will allow artists to examine aspects of life in Miami. “With our ever-changing galleries, films, and performance programs, you can come to PAMM every month and see something new,” says Collins. PAMM’s offices and educational services are located on the third floor, which includes an art library that is open to the public, as well as a digital media lab for students and multiple classrooms. “Our new building is not an end in itself, but a means of vastly expanding our service to the community,” says Collins. “This is a great moment for Miami, as we take another step forward with the evolution of our city.” TM

Dancers singing, talks of an international tour, and a new vision — the Miami City Ballet gets ready for its close up.

No, no, no.” Olivier Pardina stops the pianist in a rehearsal room inside the Miami City Ballet building. Pardina is famous; a French dancer and renowned ballet teacher, he’s now a faculty member at the Miami City Ballet. He’s demanding and insistent. He’s taught some of the best. Pardina scolds his class — eager teen-aged boy dancers charged with steadying ballerinas as they complete a pirouette. “You must look out into the audience, like you are welcoming them,” he tells his ballerinas as they finish their poses. “It isn’t ‘watch me’; it’s ‘I am inviting you in.’ “ He shows them — chin jutting out, a full smile, outstretched arms. He nods. The piano begins.”Now again,” he claps. Stepping off the hot sidewalks of Miami Beach and into the spacious Miami City Ballet building is a lesson in itself — it is an effortless whisk into a place where grace is paramount and discipline is the order of the day. Young female dancers assemble in the halls, their hair gathered in familiar ballet buns. Their body suits with flowing small skirts, pink tights, and slippers give the appearance that they are frozen in time from a nineteenthcentury Degas painting. To be privy to this scene underscores the scope of the Miami City Ballet and its importance in the city of Miami, in South Florida, nationally, and internationally. There’s a new artistic director at the helm — Lourdes Lopez, a former principal dancer with the New York City Ballet. Lopez, a Miami native, is a legend in the ballet world — a prodigy who became an apprentice at NYCB at the age of 15 and a member of the corps at 16.

“I left Miami 40 years ago, when I was 14,” Lopez says, as she sits in a board room on the administrative floor of the MCB. Her body still has the tone of a dancer, despite her saying she hasn’t danced in 17 years. “There was nothing here then, which is why I left. I left because I had scholarships in New York. I wanted to dance, and there was just no place for me to go here. I saw ballet once a year at Dade County Auditorium. That was it.” THE PATH TAKEN It was the beginning of a journey that would lead her back to Miami in September of 2012 to take over founder Edward Villella’s role, who left the company after 27 years. She completed a season that Villella had already programmed, but this year’s season — the company’s 28th season — is all hers. This is her vision and the full circle journey of the dancer, now turned artistic director. “We’re all blades of grass; we all contribute to what you see on the stage. It’s not just my vision. Yes, these are ballets that I want to do, but everyone else has to be on board to create them — to make them their visions, too.” There isn’t much that’s pre-fabricated for a season at MCB — costumes, lighting, most of the sets; some are rented or bought rather than built. And of course, there are more than 40 dancers from one of the largest ballet companies in the U.S. — many of them trained at the prestigious MCB School — who all come together on stage at the Adrienne Arsht Center, where they are the resident company.

The season is an energetic one with “West Side Story Suite” by Jerome Robbins as one of four company premieres. It also includes George Balanchine’s rarely performed “Episodes,” MCB’s first work by Spanish contemporary dance choreographer Nacho Duato, “Jardi Tancat,” and Christopher Wheeldon’s modern work “Polyphonia.” Having worked with Robbins and Balanchine, Lopez drops their names like old friends. She talks about her days dancing with “Jerry and Mr. B.” “To do ‘West Side Story’ here, for me, was important for two reasons. I was supposed to perform Anita (in a production of ‘West Side Story’ directed by Jerome Robbins), but we found out pretty late that I couldn’t sing. So I was there for all these rehearsals, and it was a very joyous time. To learn musical theater for a ballet dancer is like nothing else. It brings something different to the dancers and is challenging for them and for the audience.” MCB dancers will not only be dancing, but will sing roles in the “West Side Story Suite.” “By a stroke of luck, it was like someone was looking down on us.” Lopez recounts how they arrived at choosing a vocal teacher for the dancers. Principal conductor of MCB’s Opus One Orchestra, Gary Sheldon, was Rita Moreno’s vocal coach and served as her musical director. Moreno played Anita in the 1961 film “West Side Story.” “(Gary) is completely familiar with the score,” says Lopez. “He knows it inside and out.” And the second reason why “West Side Story” is the perfect fit for her season? “You know, Miami is ‘West Side Story.’ It is the Sharks and the Jets.”

T

o get just the right look for the costumes, the Miami City Ballet’s costume designer and director, Haydée Morales, does her research. The idea is to get as close to the original design as possible. For one of the pieces in this season’s first program, “Ballo della Regina,” Morales looked to the original design done for the New York City Ballet by Ben Benson. “We try to duplicate the costumes to what the original designer intended; sometimes we need to make a change because something like a trim is no longer in existence. But that’s where my creativity comes in,” says the designer, who has been with the Miami City Ballet since 1986. Miami City Ballet (MCB) is one of the few companies in the U.S. that has its own costume department. She explains that most companies have wardrobe departments where “costumes are built outside of the studio then brought in and fitted to the dancers.” MCB has both a costume division for design and a wardrobe division for upkeep and maintenance.

MAKING MAGIC Lopez wants the ballet company to embrace the Magic City and vice versa. “There must be an understanding of what is happening in the community today. I often think of what Mr. B’s philosophy was, and it was the idea that you have to break some parameters, and you can only break them down if you know your past and if you know where you came from.” Under a three-year contract, and one she hopes continues after that, Lopez has plans to get exposure for the company internationally, touring Latin and South America. “I think because many of us speak the language, we can bring the art form to these areas in a very different way.” She also wants audiences to become fans of the ballet. A new campaign features the Miami Heat’s Dwayne Wade and LeBron James hamming it up with MCB principal dancers, Patricia Delgado and Jeanette Delgado, amid headlines such as “World-Class Athleticism.” “Every fan understands what they have with the Miami Heat. Everybody gets it. We’re on par with a top sports team like the Heat. I’m not saying that you have to like us or come to a performance, but I don’t think the community really truly understands what it has with these dancers, this company.” The interview is over. I’m compelled to step into Pardina’s class again for just one more respite before heading out into the real world and leaving this creative cocoon. “Yes, perfect. That’s the way. You look like dancers. You are dancers,” Pardina applauds. I silently applaud, too. TM

It is very important for us to have the vision carry through in the costumes. “Mr. Villella (founder of MCB) was used to having both costume and wardrobe in one department — modeled after the New York City Ballet’s. “It is very special that we have this. It gives us more control of the product that we put out,” says Morales. MCB’s costume and wardrobe department has four seamstresses, one draper, a cutter, a wardrobe master, and a costume artist, Maria Morales — Haydée’s sister — who handles all the accessory work, including masks and details. For the “West Side Story” Suite this season, the costumes will be acquired from the National Ballet of Canada. “In this instance, we will be able to do the fittings and adapt the costumes to each individual dancer.” The designer has been working closely with artistic director Lourdes Lopez for the 2013-2014 season. “She’s performed a lot of these pieces; she has a good memory, and has a good eye for the aesthetics. It is very important for us to have the vision carry through in the costumes. Many people have no idea what’s created and recreated right here in our own costume shop.”

SEBASTIÃO SALGADO, GENESIS A tribute to an epic eight-year expedition of Mother Earth by photographer Sebastião Salgado — which he describes as “my love letter to the planet” — is displayed with a custom book stand in cherry wood designed by Japanese architect Tadao Ando and handmade in Spain. To add to the panache of this collectible, “Genesis” is printed on paper stock, which is no longer available on the market, from the German paper mill Scheufelen. Plus, printing and binding were crafted in a traditional Italian workshop using Italian Cialinen fabric for the cover. There’s more—it arrives delivered in a cargo box. Strip away the aforementioned bells and whistles, however, and the two-volume “Genesis” is awe-inspiring in its own right. Salgado and his camera made over 30 trips — traveling on foot, by light aircraft, on seagoing vessels, canoes, and even balloons, through extreme heat and cold and in sometimes dangerous conditions — to capture the majestic images. Anything to do with the Royals is always a hot commodity, and especially now with the birth of the third-in-line to the throne, Prince George. “Her Majesty the Queen, Royal Edition” is swathed in a special cover and clamshell case by British fashion designer Vivienne Westwood and is released in a 500-copy limited edition. The book celebrates the extraordinary private and public life of Queen Elizabeth II, now 87 years old, who has served for over six decades. The photographic retrospective contains hundreds of images, many previously unseen. A definitive celebrity collectible is “Monroe by Mailer and Stern,” where, for the first time, Norman Mailer’s original text (his 1973 biography “Marilyn”) is paired with Bert Stern’s extraordinary photographs. The famous intimate sitting was done for Vogue in 1962 at the Bel-Air Hotel, just six weeks before the sex symbol’s death. The art edition, at $2,000, arrives with a special collector’s photograph of the star, signed by Stern. The book also marks the first time Mailer’s text has been available translated in Spanish and French.

<< ZERVOS PICASSO CATALOGUE Legendary French publishing house Cahiers d’Art was recently acquired by Swedish contemporary art collector Staffan Ahrenberg who is reviving the most famous Cahiers d’Art publication to date. For those who don’t own a Picasso — or even for those who do — this definitive work of art contains more than 16,000 paintings and drawings. The 33 volumes are famously called the Zervos in art circles (named for the founder of Cahiers d’Art, Christian Zervos, who annotated the catalogue, which was published between 1932 and 1978). Cahiers d’Art is making the Zervos available for the first time in English. Available exclusively through Sotheby’s, a pre-ordered set before the November release will sell for $15,000. After publication date, the price is $20,000. Not bad, considering Picasso’s Le Rêve (“The Dream”) sold at auction in March for $155 million.

Consulting firm helps foreign nationals obtain green cards through an investment program that creates jobs in the U.S.

rina Rostova is Russian-American having grown up in the former Soviet Union, so she knows how many people from the country have a desire to move to the United States. The attorney has made it her life’s work to help Russians and other foreign nationals get their green cards through a program that allows them to invest in America. Dubbed the “green card for money” program, the EB-5 (Employment Based VisaCategory 5) sets a minimum investment of $500,000. Investors must be able to prove that their money has created at least 10 jobs for U.S. workers. In return, the investor receives a green card. “The program allows the affluent to earn their way into the United States by making these investments,” says Rostova, a Miami attorney who focuses her practice exclusively on the EB-5 investor program. Her prior work experience was in management at Chase, the country’s largest banking institution. She received her undergraduate degree in economics from the University of Michigan and graduated with honors from the University of Miami School of Law. Rostova Consulting provides a full range of EB-5 related services. Her consulting firm also offers consultation on matters related to immigrating and establishing a business in the United States. She says the goal of the company is to provide personal and professional service to clients so that they have the knowledge and necessary legal guidance to succeed in America. “There are many Russians and other people who have the means to afford this program. However, very few of them know that it exists,” she says. This knowledgeable attorney speaks fluent Russian and regularly travels to Russia to

is putting her efforts into helping people from those countries, as well. The EB-5 program allows investors to create their own businesses, or they can invest in a regional center — a company that receives a special designation from the U.S. Citizenship and Immigration Service (USCIS) to work with the program. Regional centers pool funds together from multiple investors to develop job-generating projects such as hotels, medical facilities, and schools. Five years ago, there were only 25 regional centers in the United States; today there are 379 — with some recognizable names, including Hilton and SLS — involved in projects.

CNBC recently reported that Miami was becoming the “Russian Riviera” because of the influx of Russians, and Rostova says she has seen a rise in the last five years of affluent Russians who want to make South Florida their home. “This is a place for them to have the lifestyle they want, where they can raise their children in a safe environment, and where there are lots of opportunities,” says Rostova. Each year, more and more foreign nationals are choosing the EB-5 program. Last year, 8,700 EB-5 visas were issued — up from 158 in 2005. With current wait times, an investor can expect to receive an approval for an initial green card in approximately 12 to 14 months. Each investor receives a green card for himself or herself, a spouse, and all minor, unmarried children (under 21 years old). Two years after receiving a conditional green card, they can file a petition for a permanent one. “This is a very satisfying program,” says Rostova. “It is very important, however, to use competent legal counsel to be guided through the process.”

The largest superyacht in the world made its debut. Not only is it the size of two football fields, but it is now also the fastest yacht longer than 300 feet. Azzam, the largest yacht in the world at 590 feet, recently went through its first set of sea trials in the North Sea — clocking in at 31.5 knots, or about 37 miles per hour. Azzam was officially launched in April, but has not yet been delivered to its owner since it still needs to undergo further tests. The yacht, which cost more than $600 million to build, is believed to be owned by the royal family of the United Arab Emirates. It took four years to build the behemoth, whose technical engineering was developed by German shipbuilding company Lürssen, its exterior design by Nauta Yachts, and its interior design by French designer Christophe Leoni, who is said to be giving the interior of the boat a turn-of-the-century Empire style.

For those who already have their dream boats, how about stocking up on some hot new toys to trick them out? At this year’s Fort Lauderdale International Boat Show (Oct. 31 – Nov. 4), check out motorized surfboards and underwater scooters, flying jet packs, and personal submarines — Triton’s 2 and 3 passenger submarines are built in Vero Beach, Florida. There are also the Quadski, an amphibious ATV, and Sealegs, an amphibious motor craft. One of the highlights of this year’s “did you see that?” super toys display is the Parajet SkyCar, a flying car for yachtsters who want to go from sea to land in one swoop.

QUITE A CONCEPT

Sailing across beautiful blue waters — on two concept yachts created with the environment in mind — becomes an exercise in bonding with Mother Nature. While yachts are associated with excess, these two concepts prove that luxury needn’t take a back seat to eco friendliness. Italian design students Simone Madella and Lorenzo Berselli created the wind and solar powered Cronos yacht that is made almost entirely out of bamboo panels. The sleek yacht glides through the water without leaving behind a trail of gas fumes, and very little waste is involved in the construction process. Another concept yacht, Allochroous, is the creation of Turkish designer Ezgi Aksan and Italian designer Ambra Ceronetti. The name means “changing color” and the sustainable yacht does just that. It features a transformable body and color through an innovative technology — so the yacht has a different form in the morning than it might have at night. “Allochroous has been designed to host events such as concerts, exhibits, premieres, and special events,” according to Ceronetti. However, since the boat will hold no more than 36 passengers, each event would be limited to an elite group.

ROASTED TURKEY BREAST WITH ENDIVE, APPLE, AND WALNUTS by Daniel Boulud For those who are looking to enjoy a thoroughly autumnal meal that is also suitable for a busy and sophisticated lifestyle, this is a perfect recipe. Let’s be honest — unless you are hosting a large holiday gathering — who really needs or wants to roast an entire turkey? That’s why a turkey breast is a fine fit. Here, I add a touch of extra flavor and moisture to the breast by wrapping it with bay leaves and bacon. And to me, Belgian endive is one of the most delicious leafy vegetables on the planet. It has a mildly bitter taste that is perfectly balanced by the sweet apples and toasty walnuts in the accompanying salad. Whether dining with family, friends, solo, or for lunch or dinner, discover how delectable turkey can be without spending an entire day in the kitchen! Makes 6 servings One 5 to 6 pound whole turkey breast, bone in 4 large bay leaves, broken lengthwise in half 8 strips bacon Salt and crushed whole black peppercorns 3 tablespoons extra-virgin olive oil 1 tablespoon sherry vinegar ¼ cup walnut oil 10 medium Belgian endive, halved lengthwise, trimmed and cut crosswise into 1/2-inch-thick pieces 2 medium Fuji apples, peeled, cored, and julienned 1 bunch flat-leaf parsley, leaves only ½ cup toasted walnuts Freshly ground black pepper

1. Center a rack in the oven and preheat to 425°F. 2. Debone the turkey breast; set the bones aside. Cut the turkey breast in half and lay out horizontally, skin side up. Place 4 bay leaf halves crosswise along the center. Secure each bay leaf by wrapping a slice of bacon around it; tie with kitchen string. (The bay leaves must be completely covered to prevent them from burning.) Repeat with the second breast and season both breasts with salt and crushed black pepper. 3. Warm the olive oil in a small roasting pan over high heat. When the oil is hot, add the turkey to the pan, skin side down, and brown for about 5 minutes. Turn the breasts over and cook until evenly browned, about 15 minutes more. Remove the breasts from the pan, pour off the fat, and add the breast bones. Arrange the breasts, skin side down, on top of the bones. Roast for 20 minutes. Turn the breasts over and roast for about 20 minutes more, or until an instant-read thermometer inserted into

the center of a breast reaches 150°F. Transfer the breasts to a warm platter and keep warm. 4. Discard the bones and skim off the fat from the pan juices. Put the roasting pan on the stove, add 1/2 cup water, and bring to a boil. Reduce the liquid, stirring and scraping, until 2 tablespoons remain. Strain through a fine-mesh sieve into a medium bowl and whisk in the sherry vinegar and walnut oil. 5. Toss together the endive, apple, parsley, and walnuts in a large bowl; season to taste with salt and ground pepper, and add enough vinaigrette to lightly coat the salad. To Serve: Carefully remove the kitchen string and bay leaves from the turkey. Arrange the salad on a large platter, and top with the breasts for carving tableside. Drizzle the remaining vinaigrette over all.

Wine “classics” are similar to classic cars, movies, watches, or jewelry. They are appreciated through the eye of the beholder. Then there are the exceptions — those special classics that are undisputed, recognized, and admired by the masses. by Virginia Philip

W

hat defines a classic wine? Vineyard, vintage, heritage, inception, taste profile, exceptional and consistent quality are a must. What about price or scores? As a sommelier, small business owner, and the wine director of one of the most prestigious properties in the country, I pondered this question. Not for long though. The answers came to me quickly and vividly as I recalled the vineyards, the people, the wines, and of course, the taste — that distinct and amazing taste profile of the wine that becomes its unique identity and which cannot be improved upon. I have taken the personal journey to each of these places — these holy grails of wine classics. I checked my wine notes — yes, I’ve saved most of them — and thought again and again about the last times I tasted these same wines. On each occasion that I have had the opportunity to retaste them, speak with the winery owners and winemakers, and “to be” with that wine, their unique taste profiles are there in the glass, the nose, and on the palate. In no particular order, following are my selections of wines that cannot be surpassed.

Diamond Creek, Napa Valley, California // This could have been one of the more difficult choices due to its four different and very distinct vineyards: Gravelly Meadow, Red Rock Terrace, Volcanic Hill, and the obscure Lake Vineyard. How to choose just one? After speaking with Phil Ross, who is the second generation of this historic property, we both agreed that choosing just one vineyard was not possible. They go hand in hand, and despite their differences, a similar breeding runs through them all. Founded in 1968 by Al Brounstein and his wife, Boots, the vision of a Cabernet exclusive estate was unheard of at that time. Most wineries were producing both red and white varietals. Brounstein obtained European cuttings with the traditional Bordeaux blend and began crafting some of the best Cabernet Sauvignon on the planet 82 TRILLIONAIRE

with his first vintage in 1972. Today, the legacy continues. In more than 40 years, their labels have never changed except for the 2002 vintage, which was an anniversary label that Brounstein hand painted himself. With only 12 employees, the total case production is under 2,000. Ridge Vineyards “Monte Bello,” Santa Cruz, California It would be crazy to have not included Monte Bello. Paul Draper is one of the most well-known and respected winemakers of his time. The wine became a reality when just a quarter barrel was produced in the early 1960s. Draper came on board with the 1962 vintage, and became a full partner in 1968. Using 100 percent American oak, the wine developed a unique style of its own, and is widely appreciated throughout the globe. “The consistent style of Monte Bello has often been called America’s First Growth,” says Draper. Since 1962, it has consistently been the finest example of a classic Bordeaux blend. Each vintage reflects its particular conditions, but year after year, Monte Bello — structured, balanced, and complex — demonstrates the distinctive character of its site. Amen! Domaine de la Romanée-Conti (DRC), Burgundy, France // Simply uttering three simple letters — DRC — can throw many collectors into a tailspin. Very few wines command the attention and prices such as those of this estate. In 1869, Jacques and Marie Duvault-Blochet acquired the estate. The property has been passed down from generation to generation, and today, the Domaine is run by two family members, Aubert de Villaine and Henri Frederic Roch. These handcrafted Pinot Noir and Chardonnay wines represent the craft of true artisans, both in the vineyard as well as in the winery. The wines are produced from grapes grown in a remarkable eight Grand Cru vineyards: Le Montrachet, La Tache, Echezeaux, Grands Echezeaux, Richebourg, Romanee St Vivant, the miniscule Romanée Conti, and as of 2009,

Le Corton. Purchasing the wines requires a great deal of patience and a large wallet. There simply isn’t enough of it. Getting into the winery is nearly impossible, but well worth the wait for those lucky enough to do so. Château Pontet-Canet, Cinquième Cru, Pauillac, Bordeaux, France // What impresses me the most about this château is the current owner’s passion for his wine. When I met Alfred Tesseron in 2005, he was intense and extremely knowledgeable about his vineyards, winery, and the winemaking. I was mesmerized. He not only knew every plot of vines, but in some cases, a single vine in a vineyard. The progress he has made in 30plus years with Pontet-Canet is nothing short of miraculous. In the late 2000s, the vineyards transitioned into a complete biodynamic farm. These wines are intense and powerful. Easily considered on par with most Second Growths, Pontet-Canet is the new “it” wine from Bordeaux, with an annual production of approximately 20,000 cases. Vega Sicilia “Unico,” Ribera del Duero, Spain // This is the only winery that I know of that has guards with machine guns stationed outside. It would be difficult to name the best wines in the world — let alone in Spain — without mentioning Vega Sicilia. Founded in 1864 by Don Eloy Lecanda y Chaves, the blend was based on the local Tinto del Fino or Tempranillo grape with plantings of Bordeaux varietals, such as Cabernet Sauvignon and Merlot, brought in from Bordeaux. There are a few different bottlings of Vega Sicilia, but the Unico has been sought by wine collectors from around the world. The wine is made from approximately 80% Tinto Fino and 20% Cabernet Sauvignon and is aged for up to 10 years. The wine is quite powerful and long-lived. Only 100,000 bottles per year are produced with the average aging process extending up to 10 years. There are 2,500 clients in Spain who have access to buy this historic wine. The rest is shipped across the globe.
