Welcome Welcome to True OriGINs – The Scottish Gin Festival. The celebration of all things True Scottish gin. You’ve made the first step of gathering your #ginpals and joining us to enjoy some real spirts! True OriGINs is the brainchild of Aberdeenshire brothers Mungo & Guy Finlayson. Who run an events company in the North-East of Scotland running three festival brands, which have seen over 25,000 attendees. Last year they launched True OriGINs - The Scottish Gin Festival, in conjunction with Aberdeen charity Friends of Anchor. The brothers become official marquee sponsors for the charity which enabled them to bring a brand-new festival brand to Aberdeen, specialising in serving gins where their True OriGIN is Scotland. They are now expanding to other parts of the UK and the first stop is here in London. #ginpals

Some great food. Tobacco Dock Food cater at a huge variety of events throughout the year ranging from healthy “brain food” conferences, to nutritional full vegan menus to fine dining awards. We were given the brief of the True OriGins event and couldn’t wait to get our creative caps on. I sat down with our Head Chef Dave Morgan, who has worked for the company for over 4 years. We looked at the regions of Scotland and dug deep in to our menus banks to create a Scottish inspired street food menu. Being a Scottish Gin Festival, it’s important that we remain authentic to the show and we couldn’t resist adapting our best-selling buttermilk chicken to be soaked in Irn Bru and served with a seasonal Scottish slaw. “We wanted to incorporate elements of the regions into our menus and we are looking forward to bringing this to life and complimenting the Scottish Gin. I can’t say we have had a huge calling for Deep Fried Mars Bars before, but having recently tried and tested them in Edinburgh and then in our own kitchen, we felt it was a necessary, albeit sickly, addition to the menu.”

NO FUSS We developed this gin to move away from the fussy niche gin approach so often used at the moment. Hills & Harbour Gin was developed to have a much wider appeal, and try to bring more people into craft spirits. Essentially we have built on top of a classic gin base and created a very well balanced and easy drinking product.

Hills & Harbour Gin Galloway is our home and a special corner of Scotland. Surrounded by forests and unspoilt coastlines, it’s the perfect larder for our ingredients. Our smooth and vibrant Hills & Harbour Gin offers a taste of Galloway and uniquely features our own wheat grain spirit. With local Noble Fir needles and Bladderwrack Seaweed, it leads with juniper and is balanced with hints of forest fir, tropical fruit, citrus spice, tangy sherbet and a subtle scent of the shore. A balanced and versatile gin, so you can serve anyway you like.

Gin-Making Using A

Pot Still.

Pot Distillation The still is filled with a neutral base spirit then loaded with botanicals before being heated up to around 75 to 83 degrees celsius.

Pot Botanicals and neutral spirit are placed in the pot before heating.

Lyne Arm As the liquid in the pot heats up, botanical laden vapours pass along the lyne arm into the condensing coil.

Condensing Coil The vapour passes through the condensing coil which is surounded by cold water. This allows the vapour to condense into a high strength Gin!!

Lussa Gin is an expression of our landscape on the Isle of Jura off Scotland’s wild west coast. For us that means growing, gathering and distilling local botanicals. They say location is everything, and luckily for us, our distillery is slap bang in the middle of all the botanicals that we need. We make Lussa Gin at Ardlussa, at the north end of Jura. AK’S Gin is distilled using honey and wheat farmed at Arbikie along with black pepper, mace and cardamom. As farmers, the Stirling’s are fully aware of the importance bees play in pollinating crops. With wild bees under threat Arbikie plan to install its own hives to produce the required honey as well as pollinating the surrounding land. The manufacturer of Scotland’s first tonic water has expanded its range with four new flavours. Walter Gregor’s tonic water was launched in 2015, and is hand crafted in Pitsligo in the North East of Scotland. The mixer is named after a 19th Century North East minister and renowned plantsman whose garden is now used to grow many of the botanical ingredients for the tonic water. As part of the range expansion the brand has been updated along with a new website to help fans find stockists for the artisan product and share serve suggestions. Walter Gregor’s tonic water has been achieving growth rates of 225% since its launch and the company has just invested £150,000 in an automatic bottling line to meet anticipated future demand. Its success has caught the eye of BBC

programme makers, and it was featured on a BBC Alba’s ‘Talamh Torrach (‘fertile land’) programme earlier this year. Walter Gregor’s owner, Claire Rennie, who founded the company after a crowd-funding campaign in 2014, said: “As seasons come and go and our garden provides us with different produce. This has inspired us to create new products for our range. We have now expanded into a small but beautiful selection of tonics; Original, light 52


and refreshing Cucumber and Mint, juicy Scottish Raspberry, autumnal Apple and Cinnamon and Spiced - a perfect pairing for darker spirits. “Our range of tonics are truly hand-crafted. We have a small team who grow the botanicals in Walter Gregor’s walled garden and bottle the drinks in a converted steading a few fields away from his old manse.
