One of the most hardest foods to give up when you choose to adopt a Dairy-Free or Gluten-Free diet is definitely the beloved pizza pie. This Italian flat disc holds all the comfort of cheese, carbs and favourite toppings in a tangy tomato sauce that no other food can provide. But who says you have to make a life-long sacrifice? Here are some allergy and special diet-friendly pizzas that you can now find in Dubai, totally safe and totally guilt-free:

1. 800-PIZZA

This classic Italian joint aims to be as authentically Italian as possible, outside of UAE. 800-PIZZA have said that their primary ingredients for the gluten-free dough are gluten-free flour and water but as they have a single kitchen, there could be a risk of cross-contamination. 2. N_K_D PIZZA

N_K_D, originally from New Orleans, prides itself on making healthier and nutritious choices when it comes to its ingredients, how it is assembled and the way it is baked. N_K_D has teamed up with Greenheart Organic Farms to create the NKD Greenheart Garden, and now offers menu items made from fresh, organic produce. Their Gluten-Free dough, made in a dedicated environment is free from contamination, crusty and delicious, however unsuitable for vegans as eggs and milk go into its making. 3. ZPIZZA

Brought to Dubai all the way from Laguna Beach, California, zpizza, offers various Gluten-free options for pizza lovers. The cheese and dough are both Vegan and this is a cause for a double celebration. The pizzas are however, not prepared in a gluten-free environment and could run the risk of being cross-contaminated. 4. Sweet Connection - The Gluten Free Kitchen

A bakery exclusively for gluten intolerants and allergy sufferers, Sweet Connection is the first gluten-free kitchen in the UAE and has perfected the art of baking gluten-free without compromising on taste! They bake Gluten Free cakes, cookies, breads, pizzas - and pretty much anything that you would like customized. Some of their items (but not their pizzas!) are dairy and egg free too! Their raw pizza base is made of flax seeds crackers and topped with tomato basil salsa and pine nut pesto. You can even choose additional toppings of your choice. Dubai Vegan Guide is a reference website to all things vegan in Dubai, including vegan friendly restaurants, groceries and more! This website initially started off as an open page on FaceBook (which still exists!) but the admins saw the need for a proper referenced website and that’s how Dubai Vegan Guide came about. 3. Loving It Raw

Loving it Raw is not only a personal journey of how turning Raw and Vegan helped Alison Andrews to heal her health troubles but also an amazing guide on how to turn raw and vegan for achieving optimal health. The website provides tips, tricks and lots of great recipes and products that can help you in your own journey. 5. MeVeg

THE HUNGER GAMES

What happens when three young foodies and a camera get together? It leads to the creation of “The Hunger Reels”, a Dubai-based restaurant review show currently on YouTube. The show’s hosts, Aditya Kakodkar and Gaganjeet Singh Sethi along with cameraperson Kevin Sebastian, lead us through a delectable journey of Dubai’s food scene. Only three episodes young, the show displays much promise. The three restaurants reviewed so far have been “Yalla Momos”, “Wingsters Dubai” and “Innlay Asia”. Be prepared for some impromptu food challenges thrown at each other and lots of bantering among the hosts. This show is unscripted and the reviews completely unbiased. A focus and support group run for and by Vegetarians and Vegans, MeVeg aims at raising awareness and educating people about the benefits of being vegetarian and vegan. ZOMATO LAUNCHES “COLLECTIONS” Zomato, an online restaurant discovery guide, recently raised its bar when it launched “Collections” on its website and mobile applications. “Collections” will make it even more easier for users to search for their favourite restaurants based on theme, location and price range among other options. For instance, vegetarians can click on “Veggie Delights” and immediately get options for vegetarian restaurants in their city. Similarly, there are search options such as “Pocket -friendly”, “Healthy Food”, “Upper Crust” and even unconventional ones like “Kick-ass Burgers”, “Mandi” and even “Bubble Tea”. What is a Raw Food Diet?

In a world that is obsessed with diets such as Atkins and Dukan, a raw food diet is not unheard of. It is the way our ancestors lived before fire was discovered. They consumed uncooked vegetables, leaves, fruits, berries and nuts. Raw foods are generally uncooked but can also include foods that have not been heated above 40 °C (104°F).

Vegetables and fruits are made up primarily of fiber and water and are alkaline in nature which means they balance out any acidic reactions in the body that causes inflammation and disease. A healthy diet consists of 70% alkaline foods and only 30% acidic foods. Since water makes up 60%-70% of our body, vegetables, fruits and nuts should be consumed in larger quantities in our daily diets while acidic foods such as beans, legumes and grains should only be eaten in smaller proportions to maintain a healthy gut. This ultimately means a fitter, leaner and disease-free body, slower aging process, glowing skin, a healthy head of hair and better mental health.

To cook or not to cook? All raw or high raw? It has been proven that cooking water-soluble foods at very high temperatures kills its nutritive value and the natural enzymes that are needed to digest the food. Since beans, legumes and grains cannot be consumed raw and are essential to our body, it is best to slow cook and consume these in smaller proportions while it generally advised not to over-cook any vegetables to maintain their nutrients. Frying foods at extremely high temperatures not only kills all of their good components but makes them highly acidic and harder to digest, ultimately harmful to the body. Alison Andrews, Dubai-based founder of the website www.lovingitraw.com who went from an all raw diet to a high raw one explains how consuming too much of a good thing might not be the best decision when it comes to your body’s needs, “I think there can be a tendency for raw food enthusiasts to want to get ‘too’ pure, to the point where it’s almost crossing over into orthorexia. If you try to live on only fruit, or go for long term green juice fasts, you can certainly run into problems, such as from too little protein, too little fat, inadequate sodium, inadequate minerals. A balanced approach to raw is essential and what I advocate in my books and website.” She goes on to say that although she does support all extremely raw foodists, she personally achieved better

results when she went from an all raw diet to a high raw one.

Raw Food and Healing A raw food diet gives your body a chance to detoxify itself and this means throwing out several years worth of waste by-products that the gut had been holding on to while strengthening its ability to assimilate nutrients from food. The body then does what it has been designed to do, which is to heal itself and this is done only when the gut is allowed to rest by not consuming heavy, fatty or acidic foods. Chef Hayley Mac, co-founder of the only raw, organic, vegan and gluten-free cafe in Dubai, BeStro Cafe, says she went raw in 2006 after she lost her grandmother to bowel cancer, “Within two weeks of going raw, my digestive troubles including IBS completely went away. While I am not all raw or completely vegan anymore, I do consume a very high raw diet.”, she says. Alison also shares similar views, “I first went ‘high raw’ in 2005. Within 3 days I was able to throw away my allergy medications that I had been on for a couple of years. I also experienced a fabulous increase in energy levels. I went from a fairly low energy person to someone who could run a half marathon (and enjoy it) and also had such clarity and focus that I started to achieve all those things I had only been dreaming about before. It was a remarkable change, and I was hooked!”

How to go raw? While many may argue that just the thought of eating only raw vegetables and fruits the whole day and every day is enough to put them off, starting off on a raw food diet need not be a Herculean task. As any exercise regime or diet, it is best to ease into it gradually than to shock your system by making a complete change overnight. You don’t need to go all raw, even a high raw diet will work wonders for you. Alison advises to go slow and just enjoy the journey to good health, “Take it easy! Have FUN with it! Take it as a ‘wow’ moment, there is so much to learn and discover and experience. Open yourself up to the adventure of it. It’s not about what you ‘can’t’ have, it’s about all the amazing new foods you’ve never tried before. I only became a foodie after going raw and vegan - the food is truly sensational!” Start off small and slowly increase your intake of raw foods in interesting ways. Look up recipes online, there are a myriad of raw foods that are so colourful and amazing that you will be drooling with joy. Go crazy, plagiarize or even invent some new recipes. Let your imagination and creativity lead you to infinite possibilities. Your body will thank you for it later.

Tips to go Raw 1) Breakfast smoothies are not only a wonderful way of eating a variety of fruits, leafy greens, nuts and seeds in liquid form first thing in the morning but when served up with wonderful toppings, they are great to look at too! 2) Mid-morning and feeling a little peckish? Have a banana popsicle with a cacao shell and nut toppings. You’ll never want to pick up a tub of icecream again. 3) It’s lunch time and you’re craving some pasta? Invest in a spiralizer and make your own spaghetti with zucchini, carrots and even beetroot! Once topped with a raw vegan dressing of your choice, you’ll be amazed at how good it tastes despite being completely devoid of carbs. 4) Don’t pick up that can of Redbull or softdrinks and sugary fruit juices, instead quench your thirst with fresh coconut water! Not only is it delicious and energizing but an excellent detoxifier especially during the summers. 5) Cook up a delicious vegetable and bean stew for dinner, you wont even miss the meats and get your proteins as well. Celebrating Love

Lafayette Gourmet The second edition of the annual Lafayette Gourmet Food Festival was held from 29th May to 31st May 2014 at Galaries Lafayette in Dubai Mall. The festival hosted a wide range of gastronomical events including food tastings, workshops, cooking classes and competitions, all of which were free for everyone to attend. Exhibitors and suppliers included Balqees Honey, BeStro Cafe, Choco’a Boutique, Al Fumo, Greenheart Organic Farm, Lootah Premium Foods, La Cave A Fromage artisan cheeses, Heritage beef range from Simply Gourmet and Slow Food. Slow Food, a global grassroots movement that was also featured at the festival, was first started in Italy in 1989 by Carlo Petrini and fellow activists and now

has support in over 160 countries. The movement which has recently brought itself to the UAE, focuses on educating people about sustainable and ethical farming and the benefits of consuming organic and clean foods. Balqees Honey, a supplier of pure, raw Yemeni and Italian honey, sells one of the most expensive honey products - the Hadrami Sidr - that is obtained from the bees that are fed on the nectar of the Sidr tree. This ancient and rare tree that grows uncultivated in the mountains is about 1000 kms inland from the coast of the Arabian Sea. Among other properties, the Balqees Honey products also have healing powers, ranging from treating asthama to bronchitis and various other ailments. The products have all been ethically sourced without the use of any antibiotics or pesticides and are completely chemical free.

BeStro Cafe also launched Naughty but Nutritious raw, dairy-free and sugar-free chocolates handmade by Renae Marie Parsons. People were amazed to find out that the melt-in-your-mouth chocolate had no sugar or dairy products and was yet so delectable. Boon Coffee, suppliers of green and roasted organic Ethiopian coffee also featured at the festival alongwith their traditional brewing techniques and intruments

which enhanced the flavor of the Arabic beans. Chef Levi Angelo of Choco’a Boutique explained the procedure of how cocoa obtained from the cocoa plant ultimately becomes the favorite treat for many as he demonstrated how to make chocolate from scratch in a special master class. The event was filled with soulful live entertainment and fun cooking classes for the little ones as Chef Russell Impiazzi explained fussy kids on how to eat their greens. The festival had something for everyone, adults and children alike, ranging from tastings of crispy onion and beetroot pakoras to cheese and honey in the three days of food, fun and frolic that concluded on a delicious note.

3 cups pineapple juice 3 cups coconut cream Maraschino cherry Pineapple wedge Ice, crushed

METHOD

BLEND PINEAPPLE JUICE AND COCONUT CREAM TOGETHER WITH CRUSHED ICE.

Pour in a specialty glass and garnish with pineapple wedge and maraschino cherry.

Banana Pops 3 bananas 6 Popsicle sticks, 1/4 cup peanut butter 1/4 cup chopped nuts.

Cut bananas in half and stick a Popsicle stick through the bottom. Roll bananas in peanut butter and nuts, then freeze for 3 hours.

Zucchini Pasta in Creamy Avocado and Cucumber Sauce Ingredients 1 large zucchini (1 per person) 6 Cherry Tomatoes halved 1 Jalapeno, sliced thinly and seeds removed (optional) Argula leaves Pea shoots (optional) Zest of one lime or lemon

Avocada-Cucumber Sauce

1 medium avocado 1 cucumber, peeled and sliced thick a few large leaves of basil (optional) Juice of one lemon METHOD 2 garlic cloves Prepare your zucchini 1 /4 tsp black pepper to taste noodles, julienned or Salt to taste spiralized. Or cook your pasta of choice.

Toss zucchini pasta with the avocado-cucumber sauce and a handful of argula. Serve with cherry tomatoes, pea shoots, lemon zest, lemon wedges and freshly ground pepper.

magine this. It’s late and you’ve just returned home exhausted from work. Those hunger pangs that started over an hour ago are now full-fledged wrecking balls in your stomach. You need something, and now! What do you do? You open the fridge, and inspiration strikes. Aah, an omelette! You whip up some eggs and even throw in some mushrooms, onions, tomatoes and maybe some some cilantro for an exotic touch. Fifteen minutes later, the only sounds that can be heard are the clinking of cutlery and chewing followed by some satisfied noises. Does all this sound familiar? Have you had those days when having breakfast for dinner is your only option and eggs are your comforting saviors? So did Deepa Bellani, owner of Yello! The Egg Cafe which opened late March of this year, strategically located opposite Lamcy Plaza in Karama, Dubai. “I am an egg-lover and cannot do without them. I am sure there are many people who think the same,” she smiles. With a Masters in Information Technology, a completely unrelated background, this is Deepa’s first venture into the food industry. “I worked for many well-known organizations in the I.T field but I took a break to start a family. To own a restaurant was always a dream of mine,” she says with excitement shining in her eyes. The vibrant color scheme of the cafe to match the colors of an egg - yellow walls and complementing white furniture - exudes a very happy and positive vibe. Moreover, while they are waiting for their order to arrive, customers can sit and relax with a cup of coffee and pick up a book or the daily newspaper from the shelves. Opening up the restaurant wasn’t all that easy for a new entrepreneur but Deepa wholeheartedly took up the challenge of setting up a cafe from scratch. “I’ve had those days where I have felt really frustrated because there is not enough clarity in regulations and permissions, especially for people like me who are entering the industry for the first time. I have had to fumble and ask my way around. I did look at buying out something that was already set up but that was not challenging enough and my heart was not into it. The location where the cafe is now was a clothing shop, and is conveniently located in central Dubai, accessible from anywhere and there are no parking issues as well.” With an aim to set up different branches in Dubai and get Yello! franchized, Deepa admits that there was certainly a risk involved in opening such a niche cafe which caters to egglovers but she truly believes in the concept of an egg-only cafe. “There are lots of breakfast places but at Yello! you can get breakfast at any time of the day. Eggs and omelettes are something that you can feel like having at any time. When we were designing the menu with a professional chef, it ran into 5-6 pages but we had to make it shorter and more suitable to cater to every palette, from somebody who belongs to the UAE to an expat likely to have a continental taste to someone who likes spicy food.” “There are many new recipes that we keep promoting monthly or quarterly and the way our food is cooked, plated and served definitely sets us apart.” Deepa says. This is evident and according to feedback received, customers have so far

been very happy with the food, in fact going to the extent of saying that the portions are quite larger than normal. The menu which ranges from omelettes, scrambled eggs, bhurjis, pakoras, kathi rolls, French toasts to different kinds of bread, has something for everyone. “The simple hot chocolate with a dollop of marshmallows is not something you see often on many menus. The day we opened, a lot of families came by and said that they were so glad that we have hot chocolate on our menu because they didn’t want to have juices which have lots of sugar or aerated drinks.” There are also some options on the dessert menu that will instantly remind you of your mum’s home made food including Fruit Custard. “Our moms used to make it but you don’t get it anywhere, especially freshly made custard without any preservatives that has been made fresh in the morning and chilled.” Deepa says. Affordability plays a huge factor in their menu. “The highest item on the menu is AED28. The segment that I wanted to target is the young crowd as well as the corporates who come in early at work at 7am or 7:30am and want to have an early breakfast plus biker groups, joggers, breakfast associations in schools and mums who meet up for breakfast. I wouldn’t want to spend AED45 on an omelette so the aim was to explore that segment of people who want to have an affordable breakfast.” Deepa says. Opting for affordable food doesn’t always mean compromising with health. For Deepa it is imperative that healthy eating habits and the conscious knowledge of what we are ultimately putting in our bodies are inculcated in the customers. “Yello! is the only cafe in town that uses pasteurized eggs which are imported from USA. Even though they do come at a certain cost to us, the customers are not asked to pay extra because we want to promote health and make sure people are eating right. Nothing is greasy and makes you feel guilty. Even the oil that we use is olive oil.”, she states. Customers can observe their food being prepared from the glass egg-shaped window that separates the dining area from the kitchen and can even tell the chef how they want their eggs made. Furthermore, the dips and chutneys used throughout the day are freshly made every morning without adding any artificial colors or preservatives. The menu also provides a great Protein Breakfast option for those who would rather skip the fried ones. Yello! prides itself in setting up precise standards in its kitchen. The chef and staff members have been brought in from different places where they were already experienced in the industry and have been trained by the consulting chef. “At Yello! we have calibrated the core taste so if five friends order omelettes, all of them will get the same sized omelette - the portions, quantities and taste do not vary even if the chef changes.” Deepa says. So if you are in the mood for a quick fix and simply too exhausted to cook, eggs can be your benefactors. Head down to Yello! The Egg Cafe for developing a new relationship with the elliptical wonder that is always taken for granted.
