FIVE FESTIVE WALKS AROUND TRURO If you need some time in the great outdoors and are spending Christmas here in Truro, why not try one of these festive walks? These are our top five picks for a winter’s stroll, from off-the-beaten track trails to pinescented woods.
1) Chapel Porth to St Agnes: if you’re not brave enough for a Christmas swim, make the most of our stunning coast on this breathtaking 10km circular walk. Starting on the Coast Path at Chapel Porth, the walk passes Wheal Coates and goes on to St Agnes Head. The return walk goes through Trevaunance Cove, past fields, lanes and footpaths and the upper part of Wheal Coates. 2) Kennal Vale: the walk around Kennal Vale is fantastic for families with young children; the beautiful woodland surrounds a disused gunpowder factory. The disused waterwheels and remains of the buildings make a fantastic place to climb and explore. Now a nature reserve, it can be tricky to park in the nearby village, but it is a lovely place to enjoy. 3) Ladock Woods: often overlooked for one of its larger neighbours (Cardinham and Idless), Ladock Woods is a wonderfully festive place to explore. Set in acres of pine forest, later populated with some broadleaf species), the trails wind around approximately 5km through the woods, or there is a longer, circular walk of around 7.5km detailed here. The Duchy owns the woods, which offer plenty of opportunities for den building and some well-established walking trails. Some of the paths can get very muddy during heavy rain, so wellies are recommended. Dogs are welcome, and the woods are rarely busy. 4) The Chacewater and Twelveheads Circular Walk: perfect for the more adventurous walkers, or for those who have over-indulged and need a serious burst of exercise, the Chacewater and Twelveheads walk is about 16km of gorgeous views, idyllic churches and pretty villages. Explore fields, forests and experience some of Cornwall’s mining heritage. The best views are at the top of Carn Marth, before you head home for a well-earned slice of Christmas cake.
Five Festive Walks Continued... 5) The Truro Town Walk: starting at a small carpark on Gas Hill in Newham, this walk takes you along the old Newham Railway Line. Follow the path until it ends, and you will find yourself opposite Station Road. You can then follow the hill past the station and through Truro City; head through the underpass and back along the river to Newham. For full details of this lovely walk, click here. Goonearl Ceramics I work from my home studio in Goonearl, on the outskirts of St Agnes, using clay which is mined around St Agnes Beacon. I make unique utility pieces and like to experiment with ancient firing techniques such as Raku and Pit Firing for decorative pieces. GIFT WRAPPING MADE EASY
These quick-and-easy gift wrapping ideas will be sure to put a smile on everyone’s faces (and that’s before they’ve even opened the present!)
1) Natural tags: these easy to make garnishes look and smell great too. You will need: • Sprigs of holly, fir or pine • A length of string • Brown wrapping paper • Sticks of cinnamon, dried orange slices, candy canes or berry garlands Simply wrap your gifts in brown paper and tie with string. Pop a sprig of foliage and combine with layers of cinnamon sticks, candy canes or dried orange slices to create a festive flourish to your gift.
Get creative with natural tags that don’t cost the earth!
2) Pens and pompoms: bright and easy to make, you will need: • Crafting pompoms of various sizes and colours • Sprigs of holly, fir or pine • Brown wrapping paper and a black pen • Your imagination
Pompoms are a quick and easy way to personalise brown paper packages. Choose various bright pompoms stuck in a random pattern and connect them with black lines to look like a string of Christmas lights. Or, stick a red pompom in the centre of your package and adorn with antlers and eyes. The only limit is your creative imagination!
3) Snowman Gift Jars: perfect for smaller gifts, you can transform any jar into a sweet snowman in a few easy steps. You will need: • • • •
Three or four black buttons A length of (red) ribbon White shredded paper A glue gun
Use the glue gun to stick the buttons down the length of one side of your jar. Fasten the ribbon around the neck and then stuff with white paper. Pop your gift on top of the paper and place the lid securely on!
4) Snowflakes: bright and easy to make, you will need: • White card (it holds its shape better) • String • Wrapping paper Get your scissors out and get snipping! Crafting snowflakes out of card or paper is a great way to create some unique gifts. If you have forgotten how to make snowflakes, the National Trust has a great link here. Use the string to attach your snowflakes to the centre of your gifts, or apply them as gift tags. 5) Chalkboard labels: you will need: • • •

From homemade truffles to mouthwatering chutneys... Give them a gift they will really love with our FTS Gifting Guide
Easiest Ever Chocolate Truffles A DIY gift that is so easy to make but never fails to please. You will need: • 500g good quality dark chocolate (approx. 70% cocoa solids depending on how bitter you like your truffles) • 500ml double cream • 80g (unsalted) butter • Flavourings of your choice; orange rind, Grand Marnier etc. • Crushed nuts, desiccated coconut, icing sugar and cocoa powder to dust Chop up the chocolate into a large bowl. Gently heat the cream and butter until the butter is melted and then pour directly onto the chocolate. Mix until you have a smooth mix. You can add in any flavourings at this point by dividing the mixture into batches and adding a dash of liqueur to taste, orange zest, and a dash of orange flavouring etc.) or leave your batch plain. Be careful of adding too much liquid, as this will make your truffles runny. Then use your hands, a teaspoon or melon baller to shape your chocolate mixture into round balls (approximately the same size). Coat the truffles in various toppings by rolling them in a bowl of chopped nuts, coconut, cocoa or icing sugar. Leave the truffles to cool on a parchment sheet in the fridge. Place your truffles in a box, tie with ribbon and gift to those you love. You can make these truffles and freeze them up to a month in advance and simply defrost them for a day before wrapping. The Gift List Continued... Ten-minute Personalised Spa Gift Use essential oils to create a personalised bath experience for friends and loved ones. You will need: • Epsom salts • Himalayan salts (or other coarse sea salt) • Essential oils of your choice • Sweet almond or coconut oil (optional) • Dried flowers or herbs (rosemary, lavender or rose petals work best) • Mason jars for storage Create these wonderfully personal, indulgent bath gifts in a matter of minutes. Decide what your friends or loved ones would enjoy, and then blend some bespoke bath salts using essential oils. For energy, try oils like basil, lime, eucalyptus and mint. For relaxation, try rosemary, rose, and lavender, and for concentration, frankincense and clove. To make your bath salts blend, add in 3 cups of Epsom Salts to 1 ½ cups of coarse sea salt (pink Himalayan salts look beautiful) and ½ a cup of baking soda. You can then add in 2-3 tablespoons of dried flowers or herbs should you wish. Once mixed, scoop the blend into containers of your choice (mason jars work well) and then add in 1 tablespoon of sweet almond or coconut oil (this is optional but is wonderful for the skin) and then a blend of essential oils (around 15-20 drops per jar should be enough). Four Festive Recipes Add a touch of Christmas sparkle to your menu this year with these easy festive recipes. 1) Christmas Mule
Infused with pear, ginger and cinnamon flavours, this warming take on the traditional Moscow Mule will go down a treat. You will need: • Pear flavoured vodka • Ginger beer warmed gently on the stove • Cinnamon sticks Mix one part pear vodka with four parts warmed ginger beer in a glass. Add a cinnamon stick and allow it to infuse the drink with a gently spiced flavour.
2) Fruited Christmas Bread with Melted Camembert by Truro School Cookery Serves 4 300g strong bread flour ½ tsp salt 1 packet yeast 25g butter 150-200ml warm water 100g walnuts, chopped 70g dried apricots, chopped 50g dried cranberries 1 camembert (young if possible) Egg to glaze • Preheat oven to 190° • Grease and flour a baking sheet • Put the flour and salt in a bowl and mix • Rub in the butter to resemble fine breadcrumbs • Stir in the yeast and then gradually add the water and mix it in with a knife until a soft dough forms • Turn the dough out onto a floured surface and knead for 10-15 mins until the dough is soft, smooth and elastic • Add in the walnuts, apricots and cranberries, the dough will become a bit sticky now • Place the camembert in the middle of the prepared tray in just the paper wrapping (peel away the plastic layer and discard) • Then roll the bread dough out into a sausage long enough to wrap around the camembert and seal the two ends together by pinching • Lightly cove the wreath with cling film and leave in a warm area of the kitchen to prove • Once the dough has doubled in size, glaze it with the egg wash then slash it or cut through to form the ‘leaves’ • Bake it in the oven for about 30mins until it has cooked through and has a nice golden brown colour and the camembert is very soft and liquid. • Carefully transfer to a serving board and serve immediately.
3) Festive Fizz A pink and fizzy glass of cheer; swap gin for Sipsmiths and sparkling wine with a no-alcohol version for a delightfully fresh mocktail. You will need: • Rhubarb and ginger gin • Prosecco, cava or a bubbly of your choice • Cranberry juice • Pomegranate seeds and a rosemary sprig to garnish Mix one part rhubarb and ginger gin with four parts sparkling fizz in a glass. Add a dash of cranberry juice to taste and sprinkle in a few pomegranate seeds. Garnish with a rosemary sprig to finish off with a flourish. 4) Bouche De Noel Serves 6 For the roulade; 4 large egg whites 150 g caster sugar 1 teaspoon cornflour 1 teaspoon white wine vinegar 1 teaspoon vanilla For the chestnut layer; 200g chestnut puree 2 tablespoons icing sugar Rind of 1 orange 1 teaspoon vanilla extract 1 tablespoon spiced rum For the candied cream centre; 200 mls double cream 2 tablespoons spiced rum 1 tablespoon icing sugar 40 g candied peel
• Preheat the oven to 160 c / Gas mark 4. • Lightly grease and line a 20 x 30 cm Swiss roll tin with baking parchment. • In a small cup blend together the cornflour, white wine vinegar and the vanilla extract. • Place the egg whites into a large clean metal or glass bowl and whisk with an electric hand whisk until they resemble stiff peaks. • Gradually whisk in the caster sugar 1 tablespoon at a time, whisking well after each addition. In between each few tablespoons of sugar drizzle in a little of the cornflour mixture and whisk this is well too. • Carefully spoon the meringue into the prepared tin and spread out gently. Bake for approximately 25 minutes until risen and golden.
Four Festive Recipes Continued... • Remove from the oven and leave to cool slightly before inverting onto a large sheet of fresh baking paper. Peel back the baking paper and leave the meringue to cool completely. • To make the chestnut filling place the chestnut puree, orange zest, icing sugar and spiced rum into a mixing bowl and whisk with an electric hand whisk until a smooth paste is formed. • To make the candied cream filling, place the double cream into a large mixing bowl with the spiced rum and icing sugar and whisk with an electric hand whisk until the cream has thickened but is still smooth. Carefully fold in the candied peel. • Spread the chestnut filling over the meringue, leaving a 1 cm margin around all edges. • Carefully spread the candied cream filling on top of the chestnut layer then gently but tightly roll up the meringue lengthways to form a long roll. • Gently lift the Buche de Noel onto a serving platter and finish with dusted icing sugar and edible gold sparkle. This dessert freezes very well. Leave to defrost in the fridge either overnight or for 6 – 8 hours in the fridge and add the final dusting of icing sugar or edible sparkle before serving.

HOW TO MAKE... An Eco-Conscious Festive Wreath We have asked Kerry at Rarecreation to share with us her tips for making a festive wreath. 1. Gently bend at least 3 x 5 ft lengths of fresh willow into a circular shape weaving them together and tie off with string or raffia. 2. Collect various bunches of evergreen and conifer foliage. Make into parcels/layered bunches of mixed textures, tie the ends together. 3. Arrange these bunches in a circular shape around the willow, all facing the same direction, over lapping to create a continuous flow. Tie them individually onto the willow base, secure each bunch of stems, plus tie again as foliage overlaps the next bunch. 4. You can add various dried flowers, berries, dried fruit by poking stems in after the foliage is all attached firmly. Hang from ribbon or raffia.
