We are satisfied with how these last months have passed, that we experienced as a rebirth and a victory over the difficulties that we all know well. But that’s enough thinking about the past! Refreshed by the still vivid and pulsating sensations of the summer season, we look forward with confidence in our hearts. THE PAST AND FUTURE OF ALPENRESORT BELVEDERE SINCE 1935, THE MAIN INGREDIENT IS LOVE. Destiny, a passion for the mountains and for the vocation as hotelier, the entrepreneurial instinct ... the ingredients for a great story are all here. Grandma Ivana tells us about it, she made a dream grow on the shores of Lake Molveno.
How did your story begin and how have you evolved over time? I lived in Modena and came on vacation to Molveno with my family; this is where I met my husband Sergio. In 1961, after my marriage, I started working with him in the family business: the Belvedere Hotel had already existed since 1935, built by my father-in-law Donato. There was a lot to do: I spent my days supervising the kitchen and dining room, checking that the rooms were cleaned to perfection, I took care of orders and purchases in general. I really liked working with Sergio, we were a good team. We complemented each other: I’m chatty and lively, typically Emilian, he is more reserved and quiet. Sergio was a man of open-mindedness, like our children, and every year he renewed or added something to the hotel. In 1974, we were the first structure on the Paganella Plateau to build an indoor swimming pool; then we added the 4th floor and in 1990, we rebuilt the whole hotel. Other hoteliers told us that we were crazy to invest all that money; that we would never be able to have a double season... and yet, here we are.
What was the path of your children and how did they approach this family tradition? It’s all because he fell on his head. After my husband’s accident during some work in the hotel and his consequent loss of mobility, it was very difficult to move forward. My children, Donato and Alberto, wanted to continue their studies but stopped to come and work in the hotel. At first, they weren’t very happy; when they returned from school, they went to the kitchen or dining room to help me out. It was difficult for them and for me to see that they were not chasing their dreams. However, today I know for sure that they love what they do and they show it every day, carrying on with passion and dedication what their father and grandfather built. They are two visionaries, just like Sergio was. They have transformed the hotel from 3 to 4-star superior, the only one in Molveno; one of the few on the Paganella Plateau, and every year they do some work to improve the service. I am so proud of my boys!

What are the main differences between your management style and that of Donato and Alberto? I see many differences between my management style and that of my children. It is also true that they grew up with my husband’s management style and then, slowly but significantly, everything changed to keep up with the times and new customer needs. Even getting 4 stars has changed things quite a bit. Before, for example, we had only one menu, not as wide a choice as now, and we worked in one season only. In the old days, we were much stricter with the staff, and they were carefully supervised by me (the uniform always had to be impeccable, just as the hairstyle). They even had their suitcases checked upon departure because they were years in which so many things disappeared, especially the silverware. The maître was always a man and the servers were always women. In general, the climate was more military and there was a clear division between owners and employees. This is no longer the case. I often do not understand all these constant changes to keep up with the times.
What did you give up for the sake of this job? You give up a bit of your life... there is no rest day, there are no holidays. It is a vocation of sacrifice, especially if you have a family, but it also gives great satisfaction. When Sergio was sick and the children were small, it was not easy for me, I admit, but seeing that the guests were satisfied and decided to return gave me the strength to go on and rewarded me for everything.
The most beautiful and the most difficult moment... The most beautiful: the birth of my children, but also the end of the season so I could spend more time with them. Now, in everyday life I like to watch my children collaborate to run the company, to help and complement each other. These are greatest satisfactions. My husband would have been so proud to see the road they have travelled and, above all, to see what the Belvedere is like today. The most difficult: when my husband passed away in 1991 after a long period of illness, leaving an unimaginable void. I threw myself into work so as not to fall into depression. Fortunately, my children helped me to move forward.

Centred on the great value of kindness and the gastronomic and wine tradition of Trentino, it is as rich as it is satisfying.
A day as a maître d’ at Hotel Belvedere... It begins with the organization of arrivals and departures, then moves on to the distribution of tasks to the entire dining room brigade. To be successful, you must always be demanding, motivating each member of the team so that everyone understands that we work for one goal: the satisfaction of our guests. It starts early in the morning, with the opening of the breakfast room, which is then prepared for lunch and afterward for dinner. My job as maître d’ is to welcome guests and check that they are served properly, as well as to recommend wine pairings with meals.
What are the essential ingredients for impeccable service? The basic rules are strict: always serve from the right and always ladies first. But the most important thing is kindness. The relationship with the customer matures day after day, a joke is not always taken well, but a chat is appreciated by everyone. Unfortunately, we are working more and more with customers who stay for just a few days (3/4) and it is difficult to create a type of relationship that goes beyond a purely professional one.
What is the most important aspect you work on to make the food and wine experience memorable? The territory. The kitchen must be able to create a menu with typical local and regional farm-to-table products, in order to offer the guest a unique culinary experience that they can only find here.
The territory is also recounted through wine. What philosophy is behind the wine list and how is it structured? As I mentioned, the territory is the basis for the choice of our menu and our wines. Of course, Italy is great, every region has excellent wines, but in Trentino-Alto Adige we have the best. With this philosophy, a wine list was created that has Trentino and Alto Adige for the most part, but does not neglect the rest of Italy and the world. Drink Trentino, drink well.

Numerous variations have branched off from the original version; the most long-lived is the Dirty Mojito. The difference from the original? We replace the classic white with a particularly spicy rum.
