Call M aureen 086 313 2340 Preheat oven to 180C/160C(fan) /Gas 4. Place a baking tray into oven to heat up. Grease a 12-hole muffin tin with low cal spray oil. Put all the mince ingredients into a saucepan over a medium heat. Allow to cook gently, stirring occasionally, for about 10 minutes. Remove from the heat and leave the mixture to infuse while you make the pies. Unwrap the filo pastry and loosely cover with some damp kitchen paper to prevent it from drying out. Cut 3 sheets into quarters. Line each hole of the 12-muffin tin with one square of filo. Make sure to push the pastry down so it is into the muffin holes. Keep the other 6 squares in damp kitchen paper. Spray each stack in the tin with a little oil and bake in the oven for five minutes until crisp and pale golden. Then, divide the filling evenly among the cases. Next take the remaining squares of filo, scrunch each one up lightly and place one on top of each pie so that it looks like a scrunched-up tissue. Brush them lightly with beaten egg or melted butter. Pop in the oven on the heated baking sheet for 8-10 minutes.

By Niamh Wilson. The person I have chosen for this essay is my granny, Ann Carolan. My granny was born on the 18th of January 1935. My grandmother grew up in a village called Tallaghan Bawn, Geesala. She lived with her mother, father, one sister and three brothers. My grandmother?s parents were both hardworking and devoted to their family; they had a small dairy farm and a small holding of land. The farm was self-sufficient for their dietary needs. All the vegetables grown would have been organic, the land was fertilised by seaweed from the local beach. My grandmother would have accompanied her father fishing for salmon and sea trout. As a young child, she and her sister would have foraged for shellfish, they also had pigs, chickens, cows, a horse and a donkey. I can still hear my grandmother talking of older times when the neighbours got together to kill the pig for Christmas. Their diet would have consisted of whole foods such as bacon, chicken, fish, homemade bread, baked on an open fire, homemade butter, churned from the cow?s milk, boxty and potato cakes, made from home grown potatoes. My grandmother attended Doohoma National School. She learned all her subjects through Irish and had a great love for the language and spoke it fluently throughout her life. She had the most beautiful handwriting; the penmanship looked like calligraphy and had great comprehension when writing. She was very artistic and could turn her hand to anything. At the age of thirteen my grandmother finished school and took the arduous journey on the cattle boat by sea to Scotland. While she was there she worked on the potato farms picking potatoes with her sister. This was extremely hard work in very poor conditions. This made her a strong and independent young woman. The money she earned was sent back to the family home to help rare her younger siblings as times were very hard back then. Three years later my grandmother and her sister Sheila moved to Lincolnshire and there they found work in a cotton factory were the working conditions were much better. My grandmother worked her way up to be supervisor. At a very young age her manager could see the potential in her work ethic. She earned a good wage and she loved to spend her money on clothing that was on trend at the time. She was very pretty and outgoing and broke many hearts. It was here in Lichonshore she meet my Grandfather, Hughie Carolan. They both fell madly in love and got married. After they got married they moved to Yorkshire and lived there happily for five years. Eventually they moved back to Ireland and settled down and reared a family of nine. Following in her own mother?s footsteps she was a devoted wife and mother to all of her children, grandchildren and great grandchild. She instilled great values, great warmth and love in her children?s upbringing. She brought the best out in people and had a kind caring heart. Her faith came across very strongly and she instilled this also when rearing her children and grandchildren. My grandmother went through hard times; she lost two children shortly after birth and also my grandfather died suddenly at the age of sixty seven. At the time she often said that part of her died also. She was devastated at these great losses but her faith carried her through. My grandmother always took things in her stride even when she was diagnosed with cancer at the age of eighty. She told the doctors that she would leave everything in God?s hands and looked forward to going to her heavenly home. She never complained throughout her illness. She endured long journeys to and from Castlebar for chemotherapy, blood transfusions and various medical procedures. Sadly she passed away on January the 2nd of this year. She had such strength, hope and faith throughout and never gave up. This is why I admire my grandmother and I know without a doubt she is looking over us all and helping us through whatever may come in our path. My grandmother was always there for me at different milestones in my life and will forever continue from up above.

Empty any of your pots that are not frost-proof and move them under cover to protect them from the winter weather. Have all your garden machinery serviced during the winter season and drain all excess fuel. Avoid walking on frost covered grass. Plant any bare-root or pot-grown ornamental deciduous trees. Check all tree ties and stakes are secure before winter winds hit. Sow seeds of early cabbage varieties indoors, learn more about planting cabbage. Sow broad beans outdoors for an early crop. Plant onions and garlic in your vegetable garden in December, this will be ready to harvest in early spring. Lift and divide any perennial flowers when we get a good day. Tidy up your strawberry beds by removing unwanted runners, old leaves and developing weeds.
Congratulations to Alan Donnelly, Enda Brogan, Annette Howard and Christine Donnelly of Gateway Leisure with Damien Langan (centre) of Erris Chamber on their nomination to the Mayo Business Awards recently.

It was Magical... The old church in Belmullet was an enchanting setting for the children?s magic show on Halloween night. Magic Dan performed his amazing tricks and the children joined in with great enthusiasm ? a few adults were seen to enjoy themselves too! The cheeky monkey puppet was a huge hit with the crowd. This fantastic free Halloween event was sponsored by Erris Chamber of Commerce, Belmullet Tidy Towns & Coiste Oidhreachta Iorrais. We would like to thank Malachy Gaughan for providing lighting, Linda Talbot for the tealights, Order of Malta for their support and all who helped to get the church ready for the event ? lights, seating, scary props, turf for the stove, goodies for the children. Most of all, thanks to the children for the amazing costumes which added so much to the atmosphere. A special mention to Rita Scott who did such a great job organising and promoting the Monster March and the Halloween celebrations earlier in the evening. This will certainly become an annual event in Belmullet calendar with the dates for Belmullet Halloween town already in the calender for 2017.
Bangor Area Reunion
took place in Bangor from 29th July till 5th August last. We were blessed with fine weather and great crowds attended all the outdoor events. The indoor events were a great success too with Nathan Carter and Michael English taking to the stage in the Kiltane G.A,A. complex. A fine venue for these two acts. We gratefully acknowledge the help we received from all our sponsors and volunteers who helped us throughout our week long reunion. It was great to see a community united to make a project work. The committee themselves did trojan work; it was almost impossible to attend every event but we did our best! The reunion book is still on sale in Bangor post office and also in The Kiltane Tavern @ ?20. A great read and the ideal Christmas gift! Thank you one and all for your support and encouragement. The reunion of 2016 will be remembered for a long time.

Are you interested in Vegetable Planting?
Busy night in Westport as Belmullet Tidy Towns collected our awards at the Supervalue Tidy Towns event. We collected the Gold award, County award and also the Gaeltacht award. Another great year for Belmullet looking forward to doing it all again in 2017.
Due to the success of our pilot vegetable plot, Baile Slachtmhar BhĂŠal an Mhuirthead (Belmullet Tidy Towns) hope to extend the scheme in 2017. Over the winter we will construct new raised beds and prepare them for planting in early spring. If anyone is interested and would like to adopt a bed to plant your own vegetables, please contact us at 097 20977 to give us an idea of your interest!
