TOFU CORN SOUP Preparation Time: 15 mins Cooking Time: 20 mins Serves 6

Ingredients  200g tofu  2 ears of corn (dehusked)  2 tomatoes  1 whole onion  1 litre water  ½ cup low sodium chicken broth  Pepper

Method 1. Chop onions into cubes and slice tomatoes. 2. Break each ear of corn into 3 parts. 3. Add all to water and chicken broth 4. Bring to a boil. 5. Add pepper for taste. 6. Serve immediately.
