ue Bower lives in a rambling farmhouse near Tadcaster which she shares with her retired-GP husband, two Labradors and three black cats. Four grown-up children and four grandchildren are frequent visitors. The family line-up is important, as most, if not all, have appeared in Susanâ&#x20AC;&#x2122;s work which imbues everyday and domestic scenes with a quirkiness and appealing warmth. The light touch and apparent simplicity of the subject matter belie the fact that Susan, a professional artist for more than 30 years, is a member of three of the most prestigious national societies: the New English Art Club, the Royal Institute of Oil Painters and the Royal Society of British Artists. 6KH LV D SHUPDQHQW Âż[WXUH DW 7KH 0DOO *DOOHULHV LQ 6W -DPHVÂśV /RQGRQ KDV KDG VROR H[KLELWLRQV LQ LQGHSHQGHQW /RQGRQ JDOOHULHV DQG KDV EHHQ selected for the hugely prestigious Royal Academy Summer Show 18 times. But a chat with Susan about her life and work quickly reveals that her work is simply a extension of her own personality: witty, warm, ZLWK JUHDW REVHUYDWLRQDO VNLOOV DQG WKH Ă&#x20AC;DVK RI D UDWKHU ZLFNHG VHQVH of humour, I suspect. Born and bred in Yorkshire, her route to becoming a successful professional artist was not conventional. â&#x20AC;&#x153;I am self-taught, really,â&#x20AC;? she says. â&#x20AC;&#x153;Iâ&#x20AC;&#x2122;ve always drawn and painted and enjoyed art but when I was at school - I went to Tadcaster Grammar - you werenâ&#x20AC;&#x2122;t encouraged to do art and we were pushed towards science.â&#x20AC;? So it was that Sue ended up with a degree in animal physiology and a masters in psychology, before studying for a PGCE. â&#x20AC;&#x153;I never did teach because we started having the children then. I had four children under the age of six so that kept me busy,â&#x20AC;? says Sue. But when her youngest went to nursery, Sue found time to develop her hobby into a way to make a living. A chance encounter with contemporary Yorkshire artist and former miner William Selby helped her to discover her artistic voice. â&#x20AC;&#x153;My husband bought me a William Selby and we discovered he lived in a village nearby. I got in touch and he agreed to mentor me, so for three years I went along for an afternoon a week and basically worked alongside him,â&#x20AC;? Sue explains. â&#x20AC;&#x153;I had been sketching and doing watercolours but William gave the FRQÂżGHQFH WR H[SORUH RLOV DQG LQWURGXFHG PH WR WKH 5R\DO ,QVWLWXWH RI Oil Painters.â&#x20AC;? Iâ&#x20AC;&#x2122;ve been very lucky in that Iâ&#x20AC;&#x2122;ve never looked for galleries, theyâ&#x20AC;&#x2122;ve always found me.â&#x20AC;? She could say the same of her subject matter. Everything in the paintings is inspired by something in real life, something that I see or notice, a story I hear and which strikes me as interesting. â&#x20AC;&#x153;But Iâ&#x20AC;&#x2122;m not a portrait painter so you wouldnâ&#x20AC;&#x2122;t recognise the subjects necessarily.â&#x20AC;? Surely the cats in red jumpers canâ&#x20AC;&#x2122;t be from real life? â&#x20AC;&#x153;Oh yes,â&#x20AC;? she says. â&#x20AC;&#x153;I had two cats who wore red jumpers after theyâ&#x20AC;&#x2122;d had operations and the vet suggested these jackets to stop them scratching the stitches. A traffic detour led Paul and Natasha McCabe to a wonderful discovery, as they tell Francine Clee

ho can resist the allure of a farmhouse in honeyed Yorkshire stone? Most of us would, like Paul and Natasha McCabe, have fallen for Yew Tree Cottage in Westow, North Yorkshire. However, not everyone would have had the vision to transform a farmhouse into the chic modern retreat that is now among Welcome to Yorkshireâ&#x20AC;&#x2122;s top accommodation picks: the organisation recommends Yew Tree Cottage on its websiteâ&#x20AC;&#x2122;s â&#x20AC;&#x2DC;Luxury with a Differenceâ&#x20AC;&#x2122; section. So how did this transformation come about? Turns out Paul is from Whitby, and the couple FDPH DFURVV <HZ 7UHH ZKHQ WUDIÂżF SURPSWHG them to take a diversion as they travelled up to see family. â&#x20AC;&#x153;We veered off onto the little back roads and it was just there, on the main street of Westow, with a â&#x20AC;&#x2DC;For Saleâ&#x20AC;&#x2122; sign,â&#x20AC;? said Natasha. â&#x20AC;&#x153;It was ORYH DW ÂżUVW VLJKW DQG WKH PLQXWH ZH ZDONHG in it had a lovely warm feeling. â&#x20AC;&#x153;Being from London, people thought we were crazy buying something so unfamiliar 24 | Living INTERIORS
We decided to make it a home away from home â&#x20AC;&#x201C; somewhere that other people could enjoy and get a taste of the country life with a twist of luxury and the modern necessities
to us, but how could we pass up this beautiful farmhouse? â&#x20AC;&#x153;It has such a rich history: the townâ&#x20AC;&#x2122;s water came from the back garden well, which still exists but is no longer used, and it was once a home to evacuees during World War II. â&#x20AC;&#x153;Yew Treeâ&#x20AC;&#x2122;s captivating countryside, the lovely town of Westow, the plentiful fresh air DQG DOO WKH RSHQ ÂżHOGV ZHUH DQ DGGHG ERQXV ´ The McCabes were hooked. Cue two years of hard work to restore grade-two listed Yew Tree Cottage, which dates from 1750. Intensive work was needed to eradicate damp while protecting from the diggers the well that had been in use as recently as 50 years ago. Then the couple decided to take the wall back WR EULFN DURXQG WKH ÂżUHSODFH Âł:H IRXQG WKHUH were no foundations around the hearth - just WKH JURXQG ´ UHPHPEHUV 1DWDVKD Âł$QG DQ ROG pipe had been thrown in. But it was worth the effort, as the original brickwork was lovely and so much nicer to see. â&#x20AC;&#x153;We reinstalled many of the original features,
including the wrought-iron railings which were melted down for the war effort, and added the \HZ WUHHV EDFN DW WKH IURQW RI WKH SURSHUW\ ´ $ORQJ ZLWK DOO WKH UHVWRUDWLRQ KDV FRPH D distinct air of London chic, originally with the couple themselves in mind, but later for guests, too, as they made Yew Tree available for holiday stays as well as for their own use. â&#x20AC;&#x153;We decided to make it a home away from home â&#x20AC;&#x201C; somewhere that other people could enjoy and get a taste of the country life with a twist of luxury and the modern necessities we were used to from London and business WUDYHO ´ VD\V 1DWDVKD â&#x20AC;&#x153;The saying goes that an Englishmanâ&#x20AC;&#x2122;s home is his castle, so decorating it is pretty important. When it comes to interior design, getting unique pieces that feel personal is the key, with an injection of London design as well to add contemporary twists on classic design pieces. â&#x20AC;&#x153;The new furnishings look elegant, fresh and attractive, but the feel of the place remains the
same. Itâ&#x20AC;&#x2122;s hard to describe, but basically we spent time and effort to create the cottage as a proper self-catering rather than it be like someoneâ&#x20AC;&#x2122;s home that they have vacated and put up for rent. Itâ&#x20AC;&#x2122;s quality, modern and no H[SHQVH VSDUHG ´ That includes all mod cons, and the imagination to anticipate their guestsâ&#x20AC;&#x2122; needs. â&#x20AC;&#x153;Londoners are busy people and expect everything to be on hand. We give them that, from iPhone docks to computers for easy fast internet access to a fully stocked kitchen and good-quality crockery. Plus, for families, we provide all the essentials, so thereâ&#x20AC;&#x2122;s less packing and parents can enjoy themselves a lot more. We have a baby pack we give young ones: kidsâ&#x20AC;&#x2122; toys, DVDs, games, a baby steriliser, baby change facilities, a baby EDWK DQG VR RQ ´ The buildingâ&#x20AC;&#x2122;s heritage was respected in the renovations, and the McCabes have not forgotten that amid the luxury and comfort RI WKH ÂżQLVK Living INTERIORS | 25

hrough three gothic-like stone window frames lies one of the best views in York. Not so much a room with a view as a mezzanine with one, Makiko Hall’s study sits on a man-made glass platform high up in her grand Victorian house on Duncombe Place, looking over to York Minster. ,W LV DFFHVVHG E\ D ÀLJKW RI JODVV VWDLUV DQG is not for the feeble-hearted. But once at the top, it is something rather special. The view changes according to the
season. Now, in mid summer, the Minster is obscured by a mass of green foliage from the trees in the neighbouring Memorial Gardens. But fast forward into autumn and winter and the vista is unspoilt - and one to be envied. Whatever the time of year, Makiko says it is always beautiful at the bookends of the day. “The sunset is glorious, it is very,very pretty. And in the morning, the Minster looks a rosé colour, it is very, very nice.” The Japanese-born photographer makes the most of her historic location. Most mornings,
she takes a cuppa (“I love Yorkshire Tea”) over to the Minster Gardens to soak up the majesty of the cathedral and the simple beauty of the park. Her favourite time is in the spring when the cherry blossom is in full bloom - it reminds her of home. “For Japanese people, any type of cherry blossom is a very special thing. I would go to the Minster Gardens with a Japanese friend and just sit there admiring it.” At the moment, she is drawn to photographing trees. She has recently returned from her latest venture - a trip to the island of Yakushima in the south of Japan, with husband Andrew and children Julian, 14, and Sebastian, 11. She went there to photograph the ancient cedar trees, more than 2,000 years old and enormous. “They don’t look like trees, they look like Living INTERIORS | 31

What Makiko has brought to the property, however, is a modern touch influenced by Scandinavian interiors and Japanese minimalism. It is a fusion made in design heaven.While the walls are a warm off white, the woodwork is a dark, battleship grey-blue. Makiko loves to cook and the kitchen is at the heart of this home. Its all-white design is blinding - with the cabinets, paintwork, furniture DQG OLJKW ÂżWWLQJV EULJKWHU WKDQ D &ROJDWH VPLOH (YHQ WKH Ă&#x20AC;RRULQJ LV D SDOH FUHDP ZKLWH RDN Shelves of cookbooks reveal her international tastes. Her favourite food magazine is Saveurs, from France. 7KLV LQWHUQDWLRQDO Ă&#x20AC;DYRXU H[WHQGV WR KHU own life. Raised in Japan, Makiko has lived and worked in London, Paris, New York and Switzerland. She met her husband when they both worked in banking. Besides English and Japanese, she speaks French and Italian. +HU ÂżUVW ORYH ZDV SLDQR DQG JURZLQJ XS she wanted to be a concert pianist. But she was encouraged to find a â&#x20AC;&#x153;proper jobâ&#x20AC;? so went into business. Photography was a hobby until a picture she entered in a competition won a prize. â&#x20AC;&#x153;It made me think that maybe
this should be something I should think about more seriously.â&#x20AC;? And so a new career was born. Makiko is trying hard to take photographs of York. One month, she set herself the target of taking 500 photographs of the city, going out at 5am or later in the evening to try to see <RUN DZD\ IURP WKH FURZGV Âł, GLGQÂśW ÂżQG anything interesting,â&#x20AC;? she said. Maybe she should wait until the spring, when the cherry blossom appears again.

This abandoned place has been registered as an UNESCO world heritage site since 2015 and the photographs capture the eeriness of a landscape in ruin. Some of Makikoâ&#x20AC;&#x2122;s work is on display at home. Four large black and white canvases cover the walls in her front reception room, which would be a palette of black, white and grey if it were not for the 1970s-inspired bright orange sofa which dominates the back wall. Makiko would love to exhibit in York or Yorkshire, which has been her home for the past three years. The hall floor is covered in mosaic tiles, carefully restored to how it would have looked in the 19th century. And there is no getting away from the grand scale of the place with the solid wooden staircase that cuts through the middle of the two-storey home (until it reaches that glass â&#x20AC;&#x153;extensionâ&#x20AC;?) and the enormous windows WKDW Ă&#x20AC;RRG WKH URRPV ZLWK OLJKW

A secret garden Erica Townâ&#x20AC;&#x2122;s pride and joy is the garden that surrounds her wonderful York home. She invited Helen Mead to take a wander.

Erica Town gestures towards the chimney of her mellow brick home, pointing out a robin singing its heart out. â&#x20AC;&#x153;I have got two robins raising families in the garden,â&#x20AC;? she says, scanning the verdant sweep of lawn bordered by mature trees, shrubs, climbers DQG D ULFK SDOHWWH RI FRWWDJH JDUGHQ Ă&#x20AC;RZHUV Blackbirds, starlings, blue tits, - an owl hoots nocturnally from a lofty Scots pine - this EHDXWLIXO VFHQH LV ÂżOOHG ZLWK WKH VRXQGV RI birds. Gurgling water from a garden pond is the only other intrusion in this tranquil place, nestling behind a lofty brick wall in The Old Village, Huntington. A country garden in every sense of the word, it is hard to believe that this haven - which extends through a delightful wild section of garden to the safely fenced-off River Foss beyond - is just ten minutes drive from the centre of York. â&#x20AC;&#x153;Itâ&#x20AC;&#x2122;s a real oasis,â&#x20AC;? says Erica. â&#x20AC;&#x153;I created the wild area and orchard from former horse paddocks. There are apple, pear and cherry trees, and every year I cut winding paths through it.â&#x20AC;? The garden at The Lodge has been Ericaâ&#x20AC;&#x2122;s pride and joy for the past 26 years, after moving to the sought-after location from central London. Âł:KHQ ZH ÂżUVW VDZ LW LW ZDV WKH IHHOLQJ RI space. I am a keen gardener and the house was ideal for raising a family,â&#x20AC;? says Erica, â&#x20AC;&#x153;I love blousy, exuberant gardens so I try to create that here.â&#x20AC;? She walks beneath an ancient yew, its thick boughs creating a sheltered den where her now grown-up daughters loved to play with friends. Believed to have been the lodge to nearby West +XQWLQJWRQ +DOO WKH GHWDFKHG ÂżYH EHGURRP house dates from around 1750, with a grand H[WHQVLRQ WKDW ÂżWV VHDPOHVVO\ ZLWK WKH RULJLQDO added in 1894. Stepping from a sun-soaked terrace through elegant French doors - designed to match the Victorian rear door - the country feel continues, with spacious yet cosy rooms each offering views of the garden. Rooms are light, airy and beautifully proportioned. Large picture windows in the KDQGVRPH GUDZLQJ URRP ZLWK RSHQ ÂżUH DQG bright garden room capture very different vistas, each purposely cultivated by Erica.
â&#x20AC;&#x153;We once used the garden room as a music room and it has always been a room into which the children bring friends,â&#x20AC;? she says. There is method in her decision to now work from an upstairs room. â&#x20AC;&#x153;If I work down here I am always looking at something that needs doing in the garden and am tempted to pop out all the time.â&#x20AC;? :DUPHG E\ D VPDUW JDV ÂżUHG $JD WKDW UDGLDWHV heat, the farmhouse-style kitchen is the hub of the home. A Belfast sink, ample worktops and SUDFWLFDO VW\OLVK $PWLFR Ă&#x20AC;RRULQJ IHDWXUH LQ WKLV spacious room, with more than enough space for a central table for family meals. A door leads to a fabulous larder, with oodles of shelving and room for a large fridge-freezer. 7KHUHÂśV D GRZQVWDLUV RIÂżFH ZKLFK KDV DOVR served as a childrenâ&#x20AC;&#x2122;s playroom. Situated in the oldest part of the house, the dining room has a Dickensian feel, with a quirky cupboard - possibly a former bread RYHQ EHVLGH WKH FDVW LURQ WLOHG ÂżUHSODFH $ window seat adds to the charm. Stained glass features in a number of downstairs windows. A striking feature of the hall is the impressive Arts and Crafts staircase, one of two staircases leading to the generously-sized bedrooms each Ă&#x20AC;RRGHG ZLWK OLJKW With a spacious dressing room and ensuite, the master bedroom is serene and beautiful, with sash windows offering different vistas across the JDUGHQ 7KUHH RI WKH ÂżYH EHGURRPV KDYH PRUH than one window, all with pleasing aspects.
Erica has delved into the history of her home, sourcing documents and photographs, which she spreads out on the kitchen table. Rarely changing hands, its occupants have all lived there for decades. â&#x20AC;&#x153;One of the nice things about this house is that it has not been altered to any extent. It works as it is - for me, it has evolved as my children have grown older.â&#x20AC;? A wrought iron gate into the garden bears the initials of a former deputy managing director of Rowntreeâ&#x20AC;&#x2122;s who lived there in the 1960s, and nearby stands a water pump installed in 1842. An overriding feature of the house is the atmosphere. â&#x20AC;&#x153;It is a happy house - one to which you are always glad to return if you have been away,â&#x20AC;? says Erica. Huntingtonâ&#x20AC;&#x2122;s sought after primary and secondary schools are just minutes away and Yorkâ&#x20AC;&#x2122;s popular Vangarde and Monks Cross VKRSSLQJ FHQWUHV DUH OHVV WKDQ D ÂżYH PLQXWH drive from the house. It will be a wrench for Erica to leave. â&#x20AC;&#x153;As the sun sets I often take a glass of wine or cup of tea and a book and sit on a bench near the bottom of the garden - itâ&#x20AC;&#x2122;s blissful and feels like youâ&#x20AC;&#x2122;re out in the country,â&#x20AC;? she says.

Yorkshire Living chats to a craftsman inspired by a landmark of our countryside
D
ry stone walls are woven into the Yorkshire landscape, as much a county emblem as the Swaledales that graze within them. But they can look as at home in a more domestic setting through the work of dry stone wallers like Neil Beasley, an adopted Yorkshireman who for the last 15 years has lived in Harrogate with his wife, Jane. Neilâ&#x20AC;&#x2122;s talents in creating dry stone walls for homes and gardens are much in demand, and a recent collaboration with Stephen Welch Landscape Design and Alison Doxey English Master Florist, resulted in a gold at this yearâ&#x20AC;&#x2122;s Chelsea Flower Show. Not bad for a chap from Bedfordshire whose working life started out in London with Sport England, researching how to get people to lead a more active life. He clearly found the answer for himself, because a complete career change brought him north and took him outdoors.

NB: 9DULRXV UHDVRQV UHDOO\ ,W PLJKW EH IRU YHU\ IXQFWLRQDO UHDVRQV WR SURYLGH ERXQGDULHV VWUXFWXUH UHWDLQ ODQG GH¿QH VSDFHV SDWKZD\V SODQWLQJ EHGV 2U LW PD\ EH IRU GHFRUDWLYH reasons - a feature within their garden using different styles of stone work, or different stone, or incorporating other elements to HQKDQFH WKH GHVLJQ :KHUH D IXQFWLRQDO XVH LV UHTXLUHG FOLHQWV DUH LQFUHDVLQJO\ DVNLQJ IRU GHFRUDWLYH HOHPHQWV WR EH LQFOXGHG WRR They want a conversation piece in their garden, something that uses traditional techniques and local stone, but that has something VSHFLDO RU GLIIHUHQW DERXW LW RU VRPHWKLQJ WKDW LQFUHDVHV LWV XVH $Q entrance wall could incorporate a post box, house number/names, a boundary wall could incorporate seats, step stiles, alcoves in the wall (traditionally called bee boles and used to house a bee skep, or traditional beehive) for decorations, plants, sculptures, even a resting place for a glass of wine! I always take a lot of LGHDV WR WKH FOLHQW WR GLVFXVV ZKDW FRXOG EH SRVVLEOH
NB: I was contacted by one of the designers of The Garden Bed who, although based in Nottingham, had come across my work XS LQ <RUNVKLUH 7KH\ FDPH XS WR WDNH D ORRN DW D SURMHFW , ZDV working on, liked what I did, and it all fell into place from there, UHDOO\ 7KH\ ZHUH ORRNLQJ IRU VRPHRQH ZKR FRXOG VKDUH WKHLU passion for the design and understood the level of perfection UHTXLUHG IRU D &KHOVHD JDUGHQ , JXHVV KDYLQJ ZRUNHG RQ D VKRZ garden at Chelsea before helped, but they were also open to input on how the dry stone walling element could be enhanced further still and I used my experience, and my love of working ZLWK VWRQH WR KHOS DFKLHYH WKLV </ :KLFK KDV EHHQ \RXU IDYRXULWH SURMHFW DQG ZK\"

It is slightly uncomfortable, but in a good way. Afterwards, I sit with my eyes closed, feeling genuinely relaxed, tension in my neck relieved. Former Ashville College students celebrated the 125th anniversary of the founding of its old pupils association with a drinks reception at the House of Commons. More than 60 Old Ashvillians travelled the length and breadth of the country to mark the milestone anniversary of the Ashvillian Society, which was hosted by Old Ashvillian Julian Sturdy, the Conservative Member of Parliament for York Outer. ookery lessons are an ideal way to broaden your culinary horizons. Most of the time, however, you have to travel to a destination and follow the tutorâ&#x20AC;&#x2122;s chosen recipes that day. Classically-trained chef Yves, who is originally from Paris but now settled with his family in North Yorkshire, works as a private chef providing bespoke menus for all RFFDVLRQV IURP ÂżQJHU EXIIHWV WR EDQTXHWV He also offers one-on-one lessons, or for a small group up to four people. We booked a lesson for two of us - me and my friend Helen. 7KH ÂżUVW FKDOOHQJH ZDV WR FKRRVH ZKDW ZH wanted to cook. Yves sent us some ideas, including salmon and herbs tartare with pesto; WDUWH ÂżQH ZLWK ZLOG PXVKURRP SRDFKHG duck egg and bacon crisp or asparagus and gamba in puff pastry with chive cream, as well as a selection of desserts such as SablĂŠ Breton (shortbread) with meringue lemon cream; the divine-sounding mascarpone FUHDP ÂżOOHG FKRFRODWH VSKHUHV ZLWK ZDUP caramel or Bergamot tea pannacotta with rhubarb coulis and orange crisp.

We plumped for the prawn and asparagus in puff pastry and the pannacotta. Our lesson took about three hours and Yves arrived at 10am, laden with boxes of quality LQJUHGLHQWV 7KH DLP ZDV WR EH ÂżQLVKHG E\ 1pm, when Yves would take his leave and Helen and I would sit down to a delicious lunch. There was a lot to do - including making puff pastry from scratch - but under Yves careful guidance and watchful eye we pulled it off. We began with the pannacotta as it takes two hours to set in the fridge. Neither of us had made pannacotta before, but it was surprisingly simple. In essence, we boiled cream and sugar, added some Bergamot teabags (Earl Grey would do) and let them infuse, then removed the teabags, stirred in the gelatine, poured the custard-like mix into pretty glasses and popped them into the fridge. Instead of the tea, you could infuse the pannacotta with vanilla or lemon. One ZH ZLOO GHÂżQLWHO\ PDNH DJDLQ
In contrast, making the puff pastry from scratch was a more cheffy affair and a perfect skill to learn with Yves on hand. The art here lies in making sure the butter is fully encased in the pastry as you roll it out. We had to roll it out into a long rectangle and fold it in on itself, then turn and repeat in the other direction six times in all - each time resting the pastry LQ WKH IULGJH ÂżUVW As the pastry put its feet up, we cracked on, peeling asparagus, making the chive sauce and a rhubarb coulis as well as some orange and almond biscuits to serve with the pannacotta. When the pastry was ready, Yves showed us to how cut it into squares and make large vol-au-vents. As the clock ticked round to one, we took the SDVWU\ IURP WKH RYHQ DQG ÂżOOHG LW ZLWK WKH SDQ fried prawns and asparagus, and topped it with lashings of the warm chive and cream sauce. It was delicious - a perfect-sized lunch with just the right dose of French indulgence. We followed this with the pannacotta - served in the glass (so no fear of having to turn it out). It was light and creamy and not too â&#x20AC;&#x153;setâ&#x20AC;?, with WKH VXEWOH Ă&#x20AC;DYRXU RI KHDG\ %HUJDPRW D ÂżQH match for the sweet yet sharp rhubarb. Yves left us with the recipes, which have JRQH VWUDLJKW WR RXU ÂłPXVW PDNH DJDLQ´ ÂżOH

Asparagus and gamba in puff pastry with chives cream Puff pastry 250g salted butter 340g flour 170g cold water • Sift the flour and salt into a large bowl. Roughly chop the butter into small chunks, add them to the bowl and rub them together roughly to leave chunks. • Make a well in the bowl and pour in about two thirds of the cold water, mixing until you have a firm rough dough. Add extra water if needed. Cover with cling film and leave to rest for 20 mins in the refrigerator. • Turn out onto a lightly floured board, knead gently and roll into a smooth rectangle. Roll the dough in one direction only, until six times the width, approximately 20cm x 50cm. .HHS HGJHV VWUDLJKW DQG HYHQ 'RQ·W RYHUZRUN WKH EXWWHU streaks; you should have a marbled effect. • Fold the top third down to the centre, then the bottom third up and over that. Give the dough a quarter turn (to the left or right) and roll out again to six times the length. Fold as before, cover with cling film and chill for at least 20 minutes. • Roll out the puff pastry to a thickness of approx. 6-7mm. Cut out squares of 10cm x 10cm using a square cutter. Brush the top of the pastry with egg. Cook for 30 mins at 180°C. Filling 12 large peeled gambas
Bergamot amot tea pannacotta with rhubarb coulis and orange crisp Serves 4 Bergamot pannacotta 600ml double cream 100g caster sugar 2 ½ gelatine leaves 2 bags of bergamot tea
12 large green asparagus 600ml double cream Juice from one lemon 50g thinly chopped chives 50g butter 2 tbs olive oil • Peel the asparagus and boil them in salted water for three mins. Cool them down with iced water and drain them with paper towels. • In a saucepan, put the cream and the chives and leave the mixture to simmer of 30 minutes. • Blend the mixture and put back into the saucepan. Add the butter, the lemon juice, salt and pepper. • In a frying pan, brown the gambas with the olive oil, one minute on each side of the gambas. • Warm up the asparagus using a microwave. • Spoon out the inside of the puff pastry square and put the gambas and asparagus inside it. • Coat the puff pastry with the chive cream. Sprinkle chopped chive on top and serve.
• In a saucepan, bring to the boil the sugar, the cream and the tea bags. Stir the mixture until it boils, then leave to infuse for approximately ten minutes. • Put the gelatine in fresh water to soften it while the cream is infusing. • After ten minutes (infusion of the cream), sieve the cream and add the gelatine leaves. Mix the cream and gelatine and divide the mix into four bowls or glasses of your choice. • Leave to cool down for two hours in a refrigerator. Orange crisps 50g orange juice 100g caster sugar 100g crushed almonds 30g flour 50g butter • In a saucepan, heat up the orange juice and the butter. • In a large bowl, put the sugar, crushed almonds and flour. Pour the orange juice and melted butter on to the dry mix. Blend well and leave it half an hour in the refrigerator. • In four non-stick moulds, add one teaspoon of the mix and smooth out the surface. • Bake the orange crisps at 180c until golden. • Unmould the crisps and shape them on a pastry rolling pin. Rhubarb coulis 350g fresh rhubarb 80g sugar • Peel the rhubarb and cut it into chunks of 5cm. In a saucepan, slowly cook it with the sugar for ten minutes and put a lid on the saucepan. Mix the whole using a blender.

Food & Drink YOUR GREATEST TRIUMPH OF A DISH? It has to be our broccoli dish –chargrilled broccoli, tenderstem broccoli, pickled broccoli stalk, broccoli puree, Jerusalem artichoke puree, artichoke skin, toasted hazelnuts, Iberico belotta and aged parmesan. It’s been on the menu since day one, and over the past 18 months we’ve enhanced it. I would say it’s our signature dish. There are trying times too. Take the horseradish ice cream during development – it was way too hot. We scaled it back and kept working on the dish until we created something magical. I believed in the dish from the start and I’m so glad we saw it through.
Gareth Rayner, is head chef at The Coach House at Middleton Lodge, an award-winning restaurant and hotel based just outside of Richmond. He still lives in his hometown of Hartlepool, and when he’s not in the kitchen, spends his time with his children, grandchildren and partner Sophie, who is the restaurant manager at The Coach House. “It might seem strange that we work together, especially in such a pressured environment, but it’s what we love to do,” he says. WHEN DID YOU FIRST REALISE YOU HAD A PASSION FOR FOOD? I studied at Dyke House School, in Hartlepool, and chose Home Economics as one of my options. It soon became obvious that it was what I loved to do. It was so exciting to express my creativity through different dishes. I also loved art, which I think is reflected in the way we serve our dishes at The Coach House. HOW DID YOU COME TO WORK AT THE COACH HOUSE? I joined The Coach House in August 2014, ahead of its launch in October. When I came for my interview and cook-off, meeting owner James Allison and kitchen executive Caroline Whalley, I just knew this was the place for me. James had such a clear and defined vision, one that excited me, but also allowed me to have the creative freedom to deliver something really special. Plus, what is there not to love about working on a Georgian country estate every day? The place is steeped in heritage, but has a relaxed, contemporary atmosphere. You feel welcome and part of the family as soon as you arrive. HOW WOULD YOU DESCRIBE YOUR STYLE OF COOKING? I take a modern and relaxed approach to create a seasonal menu that uses the very best local produce. I believe our menu to be a celebration of Yorkshire suppliers. We experiment with different cooking techniques and our focus always remains on the flavours, textures and making each dish served to our guests unique and memorable.

Our fresh fish is from Hodgson’s of Hartlepool. Our meat is from Cockburn’s of Bedale and Farmison’s in Ripon. Most of our herbs are from the herb garden on the estate, along with wild garlic and wood sorrel. We are in the middle of restoring the estate’s kitchen garden – I can’t wait for it to be finished. HOW EXPERIMENTAL ARE YOU? I always think about the season, what can I do that will challenge the kitchen and excite the guest. WHAT INGREDIENT COULDN’T YOU LIVE WITHOUT? Acidity is quite a big part of our cooking, so as well as making our own vinegars, we use the amazing Minus 8 vinegar. Minus 8 is a family-owned vineyard in Niagara, Canada. Their flagship vinegar was named after the temperature at which the grapes are harvested. Acidity is important as it can be used to balance a dish, as well as taking it to the next level in terms of a finished product. WHAT DISHES ARE YOU COOKING UP HEADING INTO SUMMER? We’ve just added a beautiful lamb dish, made up of saddle and breast, peas, lardo, samphire and sea aster. A dish that just flew out last year was our heritage tomato salad with truffle mayonnaise, balsamic pearls, mozzarella and basil. It’s back this year with basil oil instead of truffle mayonnaise. Sri Lanka: Sea, sand and serenity By Mandy Appleyard

he sun rises over a deserted 20-mile beach in a slow blaze of pink around 7.30am. Strolling back to my room, I watch a family of capuchin monkeys swinging from tree to tree, one of them wearing her baby like a tiny backpack. Feeling limber after a two-hour yoga session beside the turbulent Indian Ocean, I relish a leisurely breakfast of sweet potato curry, looking forward to a lazy morning of reading then a full body massage. As mornings go, this one is close to perfect. Last night we walked to the beach three minutes away in the light of a full moon to watch giant turtles clamber slowly up the sands to lay their eggs. Sitting cross-legged on the beach at 6am today between the turtlesâ&#x20AC;&#x2122; tracks, my seven fellow yoga students and I go through our paces as the sea crashes onto the beach and a wild wind whistles through the palms.

Signing up to a 10-day yoga retreat at the Breath of Life Sanctuary in Sri Lanka was a big step for an ingĂŠnue like me. I was nervous about the 5.30am wake-up calls and the four hours of yoga every day, but excited about daily massages and the local food. On the four-hour transfer from Colombo airport to the southern coast of this spectacular island, we saw many tantalising vignettes of local life: we stopped to eat coconuts from a roadside stall; watched people Ă&#x20AC;RFNLQJ WR WKH ORFDO %XGGKLVW WHPSOH IRU ZRUVKLS VDZ WKH IDPRXV ÂżVKHUPDQ VLWWLQJ DWRS ZRRGHQ VWLOWV LQ WKH RFHDQ VKDOORZV DQG WKH ancient Dutch and Portuguese forts, relics of Sri Lankaâ&#x20AC;&#x2122;s colonial past. Smiling staff at Breath of Life â&#x20AC;&#x201C; named by The Times as one of the ZRUOGÂśV EHVW \RJD UHWUHDWV SODFH JDUODQGV RI JDUGHQLD Ă&#x20AC;RZHUV URXQG our necks as we arrive at the brand new beachside building where we will eat, sleep and leave the troubles of daily life behind.
We are here, all of us from the UK, for different reasons. Some are yoga diehards, regulars to â&#x20AC;&#x2DC;kundaliniâ&#x20AC;&#x2122; which is the style of yoga followed here â&#x20AC;&#x201C; a modern life-friendly practice designed to stimulate energy, part physical, part spiritual. Others, like me, are curious and in search of R&R. Our days start with a wake-up call about 5.30am: a member of staff delivers a detoxifying herbal tea to the room (beautiful thatched cabanas beside a lagoon), as we climb out of bed, throw on some clothes and assemble on the beach for two hours of yoga. Relishing the fresh air and the gentle break of day as we go through RXU SDFHV , UHDOLVH , DP ÂżWWHU WKDQ , WKRXJKW After yoga we swim in the sea to cool off then head back to drink coconut water from the shell before breakfast. The diet here is vegetarian, delicious and included in the retreat price. (YHU\ PHDO LV D KHDOWK\ EXIIHW RI ÂżVK YHJHWDEOH FXUULHV DQG ORFDO GLVKHV with rice and rotis, then fruit for dessert. We eat pumpkins, beans and ORFDOO\ FDXJKW ÂżVK VZHHW SRWDWRHV DQG SUDZQV MDFNIUXLW DQG FKLOL potatoes, and vegetables I donâ&#x20AC;&#x2122;t even recognise. We take seconds and sometimes thirds, after being reassured that the food is so healthy we can eat it without fear of putting on weight (which proves to be the case.) Guests sit together at a shared table for meals, giving us chance to get to know each other. Between times we sit in huge open communal spaces, reading and chatting between the ayurvedic treatments which constitute part of every day. Ayurveda is the ancient Hindu system of medicine focused on achieving balance in the body. A diet rich in fresh, colourful foods is recommended, combining six tastes in each meal â&#x20AC;&#x201C; sweet, salty, sour, pungent, butter and astringent. $Q RQ VLWH D\XUYHGLF GRFWRU SUHVFULEHV VSHFLÂżF WUHDWPHQWV LQFOXGLQJ massage and hot oil preparations depending on the individual, after an initial health assessment. History in the making An epic pageant-style show depicting 2,000 years of British history could bring hundreds of thousands of new visitors to County Durham
I
t’s costing £31 million, involves more than 1,000 volunteers and is expected to attract 130,000 extra visitors to Auckland Castle this year. An epic, live action show, Kynren: an Epic Tale of England, depicts 2,000 years of British history and takes the audience on a journey from Roman times to Viking invasions, the industrial revolution and the Second World War. It has been named by travel publisher Rough Guides as one of the world’s best new tourist attractions, delighting Anne-Isabelle Daulon, chief executive of production company Eleven Arches. “Our ambition is that our show will be recognised as world-class and this is a big step to it being highlighted on an international stage,” she says. “It really is a spectacle that County Durham, the wider region and the whole of the UK can be really proud of.” Kynren will run over 14 nights, with each 90-minute performance attracting audiences of up to 8,000 to watch the pageant-style spectacle unfurl on the 7.5 acre stage. And it’s not just Auckland Castle and Bishop Auckland that will benefit. The wider region is hoping to cash in on the number of visitors it is hoped will come flocking. “We are not a standalone visitor attraction, we have multiple ways to engage with visitors,” says Daulon. “The magic of the project is that wherever people stay, they will be spending money here and contributing to the growth of the region. Once you’ve made people travel 500 miles, the chances are they’re not going to turn around and leave the minute the show is over.” To cope with the huge influx of visitors, Eleven Arches is trying to leave little to chance. Ticket-buyers are being advised to
turn up for shows at least an hour early. And Daulon is confident that despite the weight of number, things won’t descend into gridlock. As the show took shape, local people were asked to scour their attics, backyards and barns for historic props to help bring the epic show to life. Organisers put out a plea for objects from the 19th and early 20th centuries to feature in the show, specifically old footballs from around 1930, 100 working miners’ lamps, picks and helmets from 1900 to 1920, 19th century peasant tools, farming and agricultural items. They also hoped to find brass band instruments, bagpipes, old cars from 1910 to 1920, bicycles from the first half of the 20th century, a Rolls-Royce or Bentley from around 1920 and bundles of old planks, stones, wooden beams and driftwood. Raphael Daguet, stage designer for Eleven Arches’ artistic partner Puy du Fou, and assistant show producer for Kynren, led the hunt for authentic props. “As a design team we try, wherever possible, to be historically accurate and authentic as we can in replicating these eras and moments in history and

undertake significant research to ensure this happens,” he says. “Prop donations will really help us achieve our aims.” While the action needs to look completely realistic, the 1,000 volunteers are being professionally trained to minimise the risks to them of taking part in everything from medieval jousts to Britain’s many wartime moments, and Daulon trusts no blood will be spilt on English soil during the enactments. “There will be a lot of actors wielding weapons, and while we can never have a zerorisk, we are taking every step we can, she says. The pageant will take the same format at the hugely successful Puy du Fol shows in France, where 3,650 volunteers welcome 13,000 visitors 28 nights a year. Dress rehearsals for the Auckland Castle event started in May, so if you hear the thunder of horses’ hooves, the clash of sword on sword, and the boom of cannon fire coming from that direction, don’t be too alarmed. Galloping into horse ownership Beswick horses at auction

eswick Pottery was established in 1892, starting out as a modest family business. Originally producing simply designed tablewares, it expanded throughout the 1930s with the design and creation of intricate animal sculptures. There has been a vast range of Beswick Collectables produced, LQFOXGLQJ 7RE\ -XJV %HDWUL[ 3RWWHU ÂżJXULQHV and domestic and wild animals, but today we

will take a closer look at Beswick Horses at auction. Beswick produced over 150 different horses, (the largest section of all the Beswick range), including famous racehorses such as Arkle, Red Rum and Nijinsky. Initially horses were produced in dark chestnut, light brown, rocking horse grey and blue gloss. Later, more traditional colours were used and the
This Beswick Huntsman model in rocking horse grey sold for ÂŁ2,600 back in 2012.* The model is rare due to production only lasting for four years between c1958 and 1962, whilst its brown gloss counterpart was produced for over 40 years. Two other contributing factors to this high price are that the model was in good condition without restoration, and secondly, the intricate nature of sculpting both horse and rider as one. This Beswick model of a chestnut ut horse sold for ÂŁ360 in 2015. The g up, model, with its head tucked in and leg is a slightly more complicated design than just a horse standing still. It was also made in two versions; this example is the first version and the tail is angled, rather than straight. Remember, the chestnut gloss was discontinued and it is these subtle variances that can make all the difference to hammer price when selling your Beswick at auction. The model is part of the Connoisseur series and has a matt finish; matt models were produced from the 1970s onwards and you could expect to pay ÂŁ40-ÂŁ60 for the same model of Red Rum without the jockey. My Yorkshire Martin Witts, founder and artistic director of the Great Yorkshire Fringe The Great Yorkshire Fringe is returning to York for its second year with 300 shows in a packed programme of comedy, theatre, music and cabaret over 18 days until August 1. Martin, 53, moved to York when he was 18 and famously worked at the Theatre Royal at the same time as Mark Addy, both off stage in the carpentry department. 7RGD\ KH LV WKH DUWLVWLF GLUHFWRU RI /RQGRQ·V /HLFHVWHU 6TXDUH 7KHDWUH DQG FXUDWRU DQG RZQHU RI /RQGRQ·V Museum of Comedy. In his career, he has production managed and promoted Lily Savage, Russ Abbot, Les Dawson, Ray Charles, BB King, Nina Simone and even Hurricane Higgins. His production companies and venues produce, invest in and host more than 600 shows a year with more than 30 West End transfers in ten years. Martin lives in York near the river with his wife Lesley Ackland, a Pilates and health guru and Max, his Jack Russell cross terrier. His son Adam has worked in the family business since he was 17.
