Ingredients 1 medium zucchini, sliced into coins 2 Tbsp. water 1 Tbsp. butter, cut into chunks 1-2 Tbsp. grated Parmesan cheese Kosher salt and freshly ground black pepper

Directions 1. Place zucchini in the Microwave Breakfast Maker, add the water, cover, and microwave for 4-5 minutes, stirring halfway through.

Allow to stand for 1 minute, then drain. 2. Add the butter, tossing to melt. Season with the kosher salt and freshly ground black pepper and sprinkle with Parmesan.
