Spicy N Sweet Potato Mash
Ingredients 2 lbs. sweet potatoes, peeled and quartered 2 cups water 2 cups vegetable stock ¼ cup plain yogurt ½ cup heavy cream 3 Tbsp. unsalted butter 1 tsp. salt ½ tsp. cayenne pepper
Directions 1. In the Microwave Pressure Cooker place sweet potatoes, water and vegetable stock. Cover and lock in position. 2. Microwave on full power for 15 minutes. At the end of cooking time, carefully remove from microwave and Let pressure release naturally, until pressure indicator is fully lowered, before opening, about 10 minutes. 3. Strain sweet potatoes and return to the Microwave Pressure Cooker. Gently mash and add remaining ingredients one at a time. Top with additional cayenne pepper if desired.
