Arnold & Carol Wienk In May of 1958, Arnold purchased his first Charolais bull from Litton Charolais in Missouri. A few weeks later he married, Carol Casper on June 1, 1958. She likes to tease, “He got two good things that year and he still has them both!” Today, Wienk Charolais is a multi-family operation. For more than fifty years, the Wienk’s have supported and promoted the Charolais breed in South Dakota, across the United States, and internationally. In recognition of years of service, they received awards too numerous to count. In 2009, they were inducted into the American International Charolais Association (AICA) Hall of Fame.
Jeff & Jody Eschenbaum & Family Jeff and Jody Eschenbaum became partners in Wienk Charolais in 1985. Jeff grew up in Miller, South Dakota where his family ran 500 commercial cows. Using an extensive AI program, Jeff bred-up that herd into a reputation purebred Gelbvieh herd, Double E Gelbvieh. He married Jody Wienk in 1983. Jody grew up
at Wienk Charolais and she has supported the Charolais breed her entire life. With Jeff's love of cattle and the ranching way of life he joined Jody and her family at Wienk Charolais. Jeff and Jody have four sons who are active in the operation: Sterling, Ty, Calder and Stetson. Jeff and Jody stay busy running the ranch and keeping up with their growing family; they just became grandparents in August of 2013. They are active members of the AICA and involved in the community. Jeff served on the school board for many years and the whole family is active in their church, Lake Preston Lutheran. The Eschenbaum’s were voted South Dakota Charolais Family of the Year in 2005.
Sterling & Courtney Eschenbaum In 2010, Jeff and Jody’s oldest son Sterling and his wife Courtney became partners at Wienk Charolais. Courtney is a 2007 SDSU graduate and currently works
in Brookings as a Child Protection Specialist. Sterling graduated from South Dakota State University in 2009 with a degree in Animal Science and minors in Ag Business and Ag Marketing. He became a member of SDSU’s Livestock Evaluation Team. During his senior year, he was awarded the prestigious Dallas L. Larsen Livestock Judging Award. Sterling serves as a board member for the South Dakota Charolais Breeders Association. Sterling and Courtney welcomed baby boy, Ryker John, into the family on August 15th, 2013. No doubt, Ryker will grow up working on the ranch with his parents, uncles, grandparents and great-grandparents.

PHENOTYPE WCR bulls are bred to travel ground and breed cows problem-free. Traits that cannot be quantified such as feet & legs, muscle shape & dimension, and disposition are of the up most importance in our program. GENOTYPE Balanced cattle that continue to push the Charolais breed forward is the goal of our program. Some numbers to consider: GENOMICS We continue to monitor the advances in technology that will be of benefit for our program and our customers. Genomics research and application is changing constantly. The American-International Charolais Association has recently developed Genomic Enhanced EPDs (GE-EPDs). We have been involved with this process and made sure that all of our bloodlines and herd sires were included into the training population.
Furthermore, we have been in involved with the USDA Meat Animal Research Center (USMARC) as the further research the use of genomics within the beef industry: “Wienk Charolais is one of the early pioneers in how beef cattle genomics maybe used on farms and ranches in the future. Wienk Charolais’s valuable contributions to building this knowledge started in 2009 with involvement of the Weight Trait Project (WTP). At the invitation of the National Beef Cattle Evaluation Consortium (NBCEC), twenty-four seedstock producers from the midwest representing seven breeds were selected to demonstrat the use of parentage testing, aid in the evaluation of technological advancements and procedures, validate heifer reproductive discoveries, and contribute to the growing knowledge of how to incorporate Molecular Breeding Values (MBVs) into National Cattle Evaluations. The latter result in genomically enhanced EPDs on traits of economic importance. Their continuing participation in the WTP has allowed the Wienks to progeny test sires in the the USDA National Program for Genetic Improvement of Feed Efficiency in Beef Cattle. Cows are calving the second group of calves sired by Wienk bulls at USMARC this spring and the first group of calves (fall born) are weaned and about to go on feed in the USMARC individual feed intake facility. The goal of the project is to identify the genetic markers associated with feed intake across multiple breeds. Furthermore, the Wienk’s have continually submitted cow inventory, breeding, and calving records on their 2009 born heifers so the project can look at relationships between feed efficiency and cow reproductive performance.”

NUTRITION & FEED EFFICIENCY We see our bulls as athletes and feed them accordingly. Working closely with our herd nutritionist, we have developed a total mixed ration consisting of corn silage, alfalfa/ grass hay, grain, and supplements that the bulls have been feed since weaning during the middle of September. This low grain – high roughage intake promotes lean muscle growth without leading the bulls to fall apart down the road. Please note that the “gains” is this catalog are calculated on the entire 177 days that the bulls were on test. This set of bull gained 3.4 lbs/day, on average, on the TMR listed above. We believe that 5lb+ gains and yearling bulls weighing 1600 -1800 lbs just doesn’t make sense. Our performance test is designed to demonstrate their genetic differences while preparing them for the task that lies ahead: getting your cows bred. Keep in mind also that these bulls all earned their numbers from the very same feed bunk: no feed pans and no extra help. CARCASS TRAITS In the Spring 2014 AICA Sire Summary, there are 10 bulls listed as Trait Leaders for each of the 4 identified carcass traits. The chart below shows how many of those Trait Leaders are strictly either WCR Bulls or sons of WCR Bulls. These bloodlines that continue to dominate these carcass charts are deeply rooted in our herd: Duke 261, Impressive D040, Prime Cut, Prime Time, and Tradition 066. We have ultra-sounded our sale bulls and provided that information to our customers since 1988. using ePDs for selection -Published by the american-international Charolais association Cattle Evaluations use the term Expected Progeny Differences (EPD) to express genetic transmitting ability of a sire for the various traits listed. An EPD is a prediction of how future progeny of a sire are expected to perform in a particular trait relative to other sires in the analysis. The key word is “difference”. The EPD itself does not imply “good” or “bad” performance. But rather, the EPD gives a prediction of the average difference to expect in the performance of a sire’s progeny relative to other sires in the same analysis. The EPD for a given trait on each animal in the analysis is compared to every other animal in the analysis. The EPD is reported as a plus or minus value in the unit which the trait is measured. Each EPD reported is accompanied with an Accuracy (ACC) value. ACC is a measure of reliability regarding the EPD evaluation for a performance trait. Accuracy is reported as a decimal number between zero and one: large values indicate greater accuracy and more certainty the EPD will show little change as additional progeny information is obtained. Birth Weight ePD (BW The expected difference in average birth weight (pounds) of progeny. Birth weight reflects prenatal growth. Weaning Weight ePD (WW) The expected difference in average weaning weight of calves. The evaluation reflects the genetic influence on pre-weaning growth rate. Yearling Weight ePD (YW) The expected difference in average yearling weight of progeny. The evaluation reflects genetic influence on both pre-weaning and post-weaning growth rate. Maternal Milk ePD (Milk) The genetic ability of a sire’s or dam’s daughters to express in pounds of weaning weight in her calves due to her maternal ability through mothering instinct and milk. Total Maternal ePD (TM) A value to predict the weaning weight performance of calves from a animal’s daughters due to genetics for growth and maternal ability. Total Maternal is calculated by adding ½ the WWT EPD to the Maternal Milk EPD. scrotal Circumference ePD (sC) The expected difference in scrotal circumference (expressed in centimeters) of a bull’s or dam’s male offspring at yearling compared to progeny of all other animals evaluated. Research has also indicated a relationship between increased SC EPD and decreased age at puberty for daughters.

Carcass ePDs Carcass records are adjusted to an age constant endpoint. Therefore selection based on any or all of the carcass merit EPD are comparable among cattle at the same age endpoint. For example selection based on increased EPD for carcass weight will result in heavier carcass weights than those animals with lower EPD for carcass weights when the cattle are harvested at the same age. Carcass Weight ePD (CW) Expected progeny differences for Carcass Weight is a predictor of pounds of retail product at a constant age endpoint. Selection for increased values should result in heavier carcasses, while selection for decreased values should result in lighter carcass weights at the same age endpoint. Carcass Weight EPD are expressed in pounds and is a predictor of the differences in hot carcass weight between parents progeny at an age constant endpoint. ribeye area ePD (rea) Ribeye area is measured from a cross-sectional area of the longissimus dorsi muscle at the 12th rib. Ribeye area is a major component of the USDA yield grade equation and selection for increased ribeye area should result in larger ribeyes and lower yield grades between animals with the same carcass weight. Ribeye area has a positive relationship with weight, the larger the animal the larger the ribeye area. Ribeye Area EPD are expressed in square inches and is a predictor of differences in ribeye area between parents progeny at a constant age endpoint. fat Thickness ePD (faT) Fat thickness is measured at the 12th rib and is the primary component to the USDA Yield Grade equation. Fat thickness has a negative relationship to cutability; therefore, selection base on decreased fat thickness should result in lower yield grades and leaner cattle given the same age endpoint. Fat Thickness EPD are expressed in inches and are a predictor of differences in fat thickness between parent’s progeny at an age constant endpoint. Marbling score (MarB) Marbling is a subjective measure of the amount of intramuscular fat in the ribeye muscle. Marbling score is the primary component of USDA Quality grade and selection for increased Marbling Score EPD should result in cattle with higher quality grades at the same age endpoints. Marbling score has a small genetic correlation with fat, therefore producers may select for increased marbling score EPD while not changing external fat thickness when cattle are harvested at the same age-constant endpoint. Marbling EPD is a prediction of the differences in the USDA subjective marbling score between parent’s progeny at an age constant endpoint. Marbling is expressed in the same units as the USDA Marbling Score (see table below), see the accompanying table for USDA Marbling Score in the Carcass Section.
