Executive Chef Thiery Gourdin After completing high school and at the tender age of 18, Thiery started without much conviction a twomonth training in the kitchen of a 5* hotel in the North of Mauritius as a kitchen commis. The resort's Executive Chef seeing a great potential immediately, offered to sponsor him for a culinary course at Hotel School of Mauritius where he was selected by a jury to train in the kitchen section and graduated with a Professional Certificate of Education in Food Production. Portions: 4 Portions Preparation: 20 minutes Cooking: 1 hour and 30 minutes Ingredients Venison Leg : 600gms cut into even cubes, seasoned with salt and pepper Dry Spices 4 cloves 1 tbsp ground coriander 1 tbsp ground cumin 1 tsp turmeric, ground 1 tsp curry powder 2 tbsp oil 300g canned tomatoes, finely chopped Masala Paste 1 onion, peeled and finely chopped 2 garlic cloves, finely chopped 1 red chili finely chopped 1 green chilli finely chopped

Method Masala Paste: Place all the ingredients in a food processor and puree to a smooth paste, or ground them together in a mortar. To Cook: Place the oil in a large saucepan and place it over a medium heat. When the oil is hot add the dried spices and fry them for a minute until aromatic. Add the masala paste to the pan and stir it so it is combined with the dry spices, fry it for a couple of minutes. Stir the venison into pan so that it coated with the paste, cook it for a few minutes and turn them occasionally so that the venison is brown. Stir in the tomatoes and add around half a cup of water to the curry. Reduce the heat to the lowest temperature and leave it to cook for 1 1/2 hours, stirring regularly so that the ingredients cook evenly and the bottom doesn't burn, add more water if it becomes dry. The meat should be tender and the sauce thick. Add seasoning if needed.

Cut a slice of ripe papaya and remove the seeds and pulp (save the pulp for a snack later—it‘s great for digestion). Rub the inside of the papaya peel on your cleansed face, focusing on lines around the mouth and eyes, crow‘s feet, thinning temples, neck and hands. Let it dry for 15 to 20 minutes, then rinse with tepid water. This mask can be done twice a week. ―The enzymes in papaya exfoliate, repair sun damage, diminish age spots and smooth skin. Exfoliate: Combine 1 tsp honey and 1 tsp olive oil. Separately, prepare a packet of plain oatmeal, using less water than called for so it forms a thick paste. Next, add the honey and olive oil mixture to the cooked oatmeal. Apply as a scrub, gently rubbing it in small circles over your skin, avoiding the eye area. Rinse off with warm water and pat dry. This mask can be done twice weekly. ―The oatmeal in this scrub exfoliates, while the honey and olive oil moisturize.

GHOSTS and ghoulies and all manner of scary creatures of the night will be climbing out the woodwork and roaming the streets this weekend. For it is Halloween, and many Joburgers will don their scariest, most gruesome costumes and go trick or treating through their neighbourhoods. Halloween is one of the Western world's oldest holidays. Celebrated on 31 October by millions of people, it involves fancy and scary costumes, cut out pumpkins, witches, ghosts and trick or treating with loads of sweets. Walking Joburg's streets may not be everyone's cup of tea, and safe events have been planned where children can go trick or treating with their friends, under the watchful eye of their parents. Joburg Zoo One of the best Halloween evenings is the annual Howlo'ween at the Johannesburg Zoo. But this year it will be a very different event, says Letta Madlala, the zoo's brand and communication manager. There will be more activities, which have been coordinated and include a route map for guests; and there will be a costume competition. But the American tradition of trick-or-treating and scary costumes will still be the name of the game. Visitors will be handed maps and ushers - dressed for Halloween- will be on-hand to help. And then the fun begins, with visitors able to make their own way to various locations at the zoo especially staged for the evening. There will be a mock operation on the gorilla platform theatre, where gruesome procedures will be conducted by the in-house veterinary crew; watch out for the wheelchairbound skeleton. Tyrpanophobia, a fear of medical procedures, is a common terror. Across in the Ape House, there will be a dark and spooky vampire cave, complete with scary sound effects, smoke and unpredictable water spray. Beware the strange things reaching out to grab you - and the lurking vampire. Children under the age of nine will not be allowed to enter the cave.

Both black and white rhinoceroses are actually gray. They are different not in color but in lip shape. The black rhino has a pointed upper lip, while its white relative has a squared lip. The difference in lip shape is related to the animals' diets. Black rhinos are browsers that get most of their sustenance from eating trees and bushes. They use their lips to pluck leaves and fruit from the branches. White rhinos graze on grasses, walking with their enormous heads and squared lips lowered to the ground. White rhinos live on Africa's grassy plains, where they sometimes gather in groups of as many as a dozen individuals. Females reproduce only every two and a half to five years. Their single calf does not live on its own until it is about three years old.

Under the hot African sun, white rhinos take cover by lying in the shade. Rhinos are also wallowers. They find a suitable water hole and roll in its mud, coating their skin with a natural bug repellent and sunblock. Rhinos have sharp hearing and a keen sense of smell. They may find one another by following the trail of scent each enormous animal leaves behind it on the landscape. White rhinos have two horns, the foremost more prominent than the other. Rhino horns grow as much as three inches (eight centimeters) a year, and have been known to grow up to five feet (1.5 meters) long. Females use their horns to protect their young, while males use them to battle attackers. The prominent horn for which rhinos are so well known has been their downfall. Many animals have been killed for this hard, hair-like growth, which is revered for medicinal use in China, Taiwan, Hong Kong, and Singapore. The horn is also valued in North Africa and the Middle East as an ornamental dagger handle. The white rhino once roamed much of sub-Saharan Africa, but today is on the verge of extinction due to poaching fueled by these commercial uses. Only about 11,000 white rhinos survive in the wild, and many organizations are working to protect this much loved animal


The key priority for the northern white rhino is to secure the survival of the four remaining animals in DRC, while also implementing an emergency conservation strategy for the subspecies. Although the southern white rhino is faring well, the animals still face the ever-present threat of poachers. WWF is working to protect the white rhino and increase its numbers by: Expanding existing protected areas and improving their management Establishing new protected areas Improving security monitoring to protect rhinos from poaching Improving local and international law enforcement to stop the flow of rhino horn and other illegal wildlife trade items from Africa to other regions of the world Promoting well-managed wildlife-based tourism experiences that will also provide additional funding for conservation efforts.

Current population & distribution Just 4 northern white rhinos now remain in the wild, in Garamba National Park in north-eastern DRC. However, there are unconfirmed reports of a few survivors in southern Sudan. After more than a century of protection, southern white rhinos currently number about 20,140. Classified as Near Threatened, they are the only nonendangered rhinos. The majority (98.8%) of white rhinos occur in just four countries: South Africa, Namibia, Zimbabwe, and Kenya.

Four Seasons continues to expand its presence in Africa, signing a long term management agreement with the owners of The Westcliff hotel in Johannesburg, South Africa. The iconic property, set on a cliffside garden estate in the northern suburbs of Johannesburg, was closed on June 30, 2013 to undergo significant enhancements including renovations and new construction and will reopen as Four Seasons Hotel Westcliff Johannesburg in the second quarter of 2014. Survey the Yard Make note of tree limbs that should be removed or cabled, especially those that overhang structures. Thin and trim summer-blooming shrubs such as butterfly bush, hydrangea, and most roses, except for old-fashioned once bloomers. Prune cold-damaged wood after plants resume spring growth. Prune spring-blooming shrubs and trees after flowering.

Clean Bird Feeders and Baths Disinfect the feeders by scrubbing with weak bleach solution (1/4 cup bleach: 2 gallons warm water). Rinse and dry the feeders thoroughly before refilling them.Scrub birdbaths with bleach solution, then rinse them thoroughly and refill, changing water weekly.
