In a Wild Tropical Paradise- Here’s a quick look at exciting ocean adventures that will introduce you to pristine marine preserves, nearby sea caves and lava tubes, and take you into the deep ocean where tuna, ‘ono and mahimahi swim. You can also commandeer your own boat, try your hand at Snuba® and swim amid magnificent manta rays. Along the way, resident Spinner dolphins, endangered Hawaiian green sea turtles, Hawaiian monk seals and humpback whales (in season from November to April) might even make an appearance. Enjoy the experience for the unique adventure that it is—we love the Big Island’s wild spaces!

Sportfishing- Kailua-Kona is the state’s sportfishing capital; it holds more records for Pacific blue marlin than anywhere else on the planet. Board a worldclass sportfishing boat in Kona and head out for an unforgettable day on the water. The ocean floor quickly drops to great depths and are home to a variety of game fish such as striped, black and Pacific blue marlin that occasionally weigh in over 1,000 pounds; these are known as “granders.” Marlin are caught, tagged and released daily, but you could catch spearfish, Pacific sailfish, ‘ono, mahimahi, ahi and more. Fishing charters are headquartered from Honokohau Marina where you can catch the weigh-ins at 11:30 a.m. and 3:30 p.m. daily. Half- and full-day charters are available, so call to find a crew that suits your needs. Visit fishkona.org for more on Kona sportfishing. Snorkel, Scuba & Snuba®- Daily charters take you to incredible underwater marine preserves and dive sites. In addition to transportation, charters most often include gear and refreshments, snorkeling, scuba diving, Snuba®, as well as dolphin watching. Snuba® is a term derived from the combination of snorkel THIS WEEK BIG ISLAND

and scuba. With Snuba®, air tanks remain on the ocean surface, allowing the diver to move around freely underwater minus the heavy equipment. Tanks are placed in pontoon rafts with an air tube running from the tanks to the breathing apparatus worn by the diver. Island is the only place in the state that offers organized tours for people who are keen on snorkeling with manta rays. “Manta rays feed on plankton, which are attracted to lights,” says James L. Wing, underwater photographer. “The mantas are conditioned to come to the lights where plankton are available.” Manta rays are harmless; they don’t have a stinger or barb like the sting rays, and don’t bite. Related to sharks, their large pectoral fins work like underwater wings. Night is the best time for viewing these mighty and graceful mantas.

Dolphin Discoveries

shown that a variety of them—most notably the Hawaiian spinner and bottle nose dolphins—make their home in island waters. During the day, they tend to rest near-shore where it’s easier to spot predators against the white of the sandy bottom. The dolphins enter a resting state in which only parts of their brains are asleep. Grouped together in tight formation, dolphins synchronize their breathing and turn off their sonars. With their primary alert system off, sight becomes very important as they rest. As night approaches, dolphins become lively, some of them jumping into the air and playing. It’s time to venture into deeper waters to feed. During the whale watch season up until April, ocean vendors often combine daily tours to see resident dolphins and humpback whales as they travel throughout the Hawaiian Islands. Ask about the amenities available such as snorkeling, lunch or snacks, etc.

One of the greatest joys of being on vacation is sampling local flavors and different ethnic cuisine. As mom often said, ‘‘You don’t know if you don’t try,’’ so go on and taste test a variety of dishes. It might be the making of a great ‘‘...remember when...?’’ story.

ingredients done right If you want to know, ask—that goes for seafood, produce and proteins. Find out if the fish comes from local waters, if the salad on your plate comes from isle farms or if it’s Hawai‘i Island grass-fed beef or free-range chickens. Many restaurants now work closely with local farmers in order to offer you the freshest, most conscientious choices on the menu, and Hawai‘i Island is the best place to start.

what is global cuisine? Take a seat and pull up a menu for your round-the-world adventure. How does Vegetable Nabemono Miso, Grilled Pork Tenderloin with Coconut Cream sound? Or does the Spicy Basil & Shrimp Fried Rice entice you? No matter where your palate takes you, sample a Blue Dragon Restaurant. . . . 95 variety of ethnic flavors.

favorites with an isle twist Think French toast made with Portuguese sweet bread, a toasted Hoagie bun filled with teriyakimarinated rib eye, or fresh sauteed mahi mahi served with sweet chili cream sauce rice. Or how about Guava Braised Baby Back Ribs? Does Wasabi Dusted Fritto Misto make your mouth water? That’s all we need to know.

asian flavors In Hawai‘i, there’s no escaping the influence of the Far East; at practically every eatery is some kind of Asian-inspired item.
