As another year draws to a close, another Vista reaches our loyal Captain’s Club Members. In this, our fifth issue, we have brand new 2017 itineraries to share including Signature Event Sailings, Christmas cruises for 2016, competitions, interviews, recipes and more. I’d like to begin by welcoming our newest Zenith Member, Philip Adamson. Reaching our top tier is a huge achievement and I hope you thoroughly enjoy the privileges that come with it. Stir fry black pepper beef Now you’ve a flavour for Singapore and its exquisite epicurean offering, we’d like to enhance it with a seriously tasty local recipe. Better still, it’s been created by Great British Chef, Tong Chee Hwee. Originally from Singapore, Tong was spotted by restaurateur Alan Yau, who persuaded him to become Head Chef at London’s Hakkasan. Within a year it won a Michelin star. 150g of beef fillet, cut into 2.5cm cubes

COOKING TIME: 30 MINUTES

10g of garlic

—Begin by making the black pepper sauce. In a small saucepan whisk together the butter, ketchup, Worcestershire sauce, sugar, Maggi and black pepper. Heat gently until incorporated and set aside until required

40g of onion, thickly sliced 40g of spring onions 100ml of red wine, preferably Merlot BLACK PEPPER SAUCE 6g of black pepper 20g of butter 80g of tomato ketchup 10g of Worcestershire sauce 12g of sugar

—In a separate pan heat a dash of oil and fry the beef quickly on a high heat until coloured on the outside - the beef should still be pink inside. Remove from the pan and leave to rest —In the same pan fry the onion, spring onion and garlic until browned. Return the beef to the pan and add the black pepper sauce and red wine. Bring to the boil then serve immediately.

I’ve been fascinated by the role of Captain ever since I was 12 – when my parents took me on a Caribbean cruise. I told my dad I wanted to be the Cruise Director – the person that plans all the fun events on board. Then my dad told me something that would change my life forever, “you can do anything you want in the world, including drive the thing”. I spent nearly two decades training to become a Captain after starting out as third mate. It was at the California Maritime Academy where Captain Jerry Aspland, who was the President of the Academy, gave me the best advice for my career, “don’t put yourself in a position to lose”. Who did you first tell when you were made Captain? I asked for special permission to tell my dad on Father’s Day. I handed him the letter I got from Celebrity Cruises' first female President and CEO, Lisa Lutoff-Perlo; he read it then looked up at me and back at the letter, and then at me again and said “Captain?” Tears were streaming down his face. What made you want to work with Celebrity Cruises? I wanted to work with Celebrity Cruises for a couple of different reasons: I want an office with ever-changing spectacular views, the chance to visit seven different continents and work with over sixty different nationalities – all within unmatched modern luxury! What do you love about being on board? I love interacting with our incredible guests and meeting all the people who’ve given me such overwhelming support. Of course, Celebrity Cruises is known for its amazing food and, as a foodie, I love the amazing pastries I'd heard so much about. You can see all my favourite things about my travels on Instagram @CaptainKateMcCue How did it feel to put the four stripes on? Incredible. Instantly recognised by the guests – some even did a double take.

What’s your opinion of being the first American female Captain? I am the first female Captain on a mega cruise ship, and feel both humbled and excited, but men and women have been doing amazing things before me. Now I intend to spread the word about the industry’s fantastic opportunities. We know you’re not a stereotypical Captain, but we’ve heard you do have a tattoo? Every sailor’s got to have a tattoo right? I have an anchor on my foot to keep me grounded, and then I’ve got my compass rose and my ship’s wheel to see where I’m going. Are you enjoying your new job? I think this is the greatest job in the world! Travelling, meeting all these people… it’s the best! And finally, what’s new on your ship, Celebrity Summit? At Celebrity Cruises we never stop making enhancements. Celebrity Summit’s revitalisation will be in 2016 and we’re making a few new bold changes like more luxurious suites, a new Tuscan Grille restaurant, a brand new outdoor venue with a huge screen for watching movies, delicious food, and beautiful decor! And of course, the whole of Suite Class is getting an upgrade. I can’t wait for guests to kick back and relax in this new space.

Here, Oz Clarke talks about what he enjoys most about sailing with Celebrity Cruises®, his top tips for choosing wine on board, and, how he helped to introduce our new range of boutique beers in Gastrobar.

some of which are hard to find in the UK: Constantia, which was first produced in South Africa in 1685, and has got going again in the past 30 years or Ata Rangi Sauvignon Blanc, from New Zealand; and wines from Wairau River, an estate next door to Cloudy Bay, although you don’t have to pay the same money. There was even an 1893 Sauternes, which would sell for upwards of £4,000 in the UK, in the cellar on one cruise I did, although it had gone last time I went on board. Apparently, a chap ordered it for himself and his wife, and left a third of the bottle, I hope the Maître D’ didn’t let that go to waste. A while ago, I said to Celebrity Cruises: “If you are going to take drink seriously, let’s not just do wine. If there are wine people on board, there will be beer people too. The drinks world has grown exponentially over the past few years, and if you love flavours, you can’t limit yourself to wine“. Now, they’ve got a Lindemans framboise fruit beer from Belgium, and wonderful craft beers with names like Dead Guy, Dogfish Head and Delirium Tremens. After two or three of those, you won’t know what deck you are on. I love the English seaside, but in an ideal world, I’d like to sail around Dalmatia and dabble in some of those little islands where the vineyards are cut into the chalk. Or around Genoa, to vineyards you can only access by small boat, clambering up between the vines and sitting with a picnic under the grapes while looking back at the ship.

I had never been on a cruise until I became involved with Celebrity Cruises, although I’d lived near the sea all my life. The beach was my playground and my dad used to take me to the White Cliffs to look down on the port at Dover. There’s an amazing sense when you step onto a ship that you’ve come into a magical world where you can completely remove yourself from the mundane. I always say to Celebrity Cruises, please don’t arrange a tasting as we’re leaving or coming into port. It’s a privilege to see the land from the sea, and you need to be on deck. Hosting masterclasses on board sounds serious, but it’s really about tasting wine and having a good old chat. I hosted some wine-themed cruises through Western Europe where I’d talk about France, Rioja, maybe Sherry, Port in Porto, and Champagne – people always want to know about that, and to drink it. On the whole, I try to mix entertainment with education. Celebrity Cruises has some really good sommeliers – people from old civilisations such as Slovenia and Croatia, where younger generations have rediscovered an enthusiasm for food and wine. These guys are delightful; they want to learn everything. I do some training sessions with them, telling them not to recommend stuff they don’t like themselves and to understand that a more interesting wine isn’t necessarily more expensive. I sketched out a cabinet containing 12 shelves, each representing a different country. We took it even further by selecting a different vessel for the presentation of each dish.”

VEGETABLES DU JATOUR “You usually have a Vegetable du Jour on a menu. I wanted to put a spin on that… I thought of my daughter, Jatour, who loves it when I make her puréed vegetables. I came up with new combinations of vegetable purées like Carrot-Cardamom and Sweet Potato-Raisin. And instead of calling them Vegetable du Jour, I call them Vegetables du Jatour.”

PAINTER’S MIGNON “I wanted to serve filet mignon, but add an interactive element. So we serve it on a painter’s palette, with six different sauces, including sautéed mushrooms, cabernet reduction, hollandaise and creamed spinach. Each sauce in its own paint jar, with a demitasse spoon as a paintbrush. Create your own compositions!”
