With autumn upon us – hard to believe I know – it’s easy to find yourself daydreaming about your next sun-soaked getaway. So look no further (quite literally); your latest issue of Vista is here, and as always, it’s crammed full of inspiration for your next cruise. I’d like to begin this issue by congratulating Samantha and Philip Williamson, our newest Zenith Members. We all know this is an achievement that takes a long time, lots of commitment and continued loyalty – here’s to many more happy years with us, and we hope you thoroughly enjoy your new, welldeserved privileges. So what will you uncover in Vista issue 7? For starters, Celebrity EquinoxSM is Caribbean bound – in fact she’ll homeport there for the whole of 2017, offering one-of-a-kind ‘endless summer’ sailings. Then there’s a look at our latest TV ad – but from the other side of the cameras (an insight for our Members’ eyes only). We’ve more info to share on our recent additions to the Galapagos fleet too – less is definitely more on board Celebrity XplorationSM and Celebrity XperienceSM. In the last issue we gave you a handy guide for deciphering wine labels, so we’re continuing the theme with our food and wine pairing article. Mesmerising Muscat is our destination focus, with an accompanying recipe for a real flavour of Oman. And we’d like to welcome our very own Director of Loyalty, Lee Moreau, on board. I wanted to take this chance to share with you some ‘X’citing updates and enhancements to the Captain’s Club programme. Our biggest project, that has been two years in the making, is currently underway, where we are automating your loyalty coupons directly onto your SeaPass cards. NOW, IN CELEBRATION OF OUR VAST, VARIED AND RARE WINE COLLECTION, WE’RE CONTINUING THE THEME – THIS TIME, IT’S AN INSPIRED INSIGHT INTO FOOD AND WINE PAIRINGS. Wine is of course, one of our many passions. That’s why we work closely with certified wine educators and Master Sommeliers who frequently visit our ships for several weeks at a time, to put up to 375 staff members through a rigorous training programme. One that incorporates detailed exams, blind tastings and visits to wineries around the world, to enrich and expand the knowledge of every single Sommelier. So who better to share their unrivalled expertise than our team of fully certified Celebrity Sommeliers? Here are some of their food and wine pairing top tips…

Think about weight, balance and intensity of the wine. Grilled fish picks up flavour from a dry Riesling. Merlot stands up to steaks and even venison, while Chenin Blanc won’t overpower delicate prawn or crab. Keep acidity in mind. Tomato-based pasta pairs better with Beaujolais or a Zinfandel, while cream-based pasta sauces work with Chardonnay, Riesling or Sauvignon Blanc. Look at the tannin content, which drives astringency. Red wine contains more tannin, as the grapes are fermented with the skin intact. Pair high tannin wine with sour or salty food, while sweet food will actually bring out more tannin in a bashful wine. Consider sweetness and spiciness. Sweeter wines, like Gewürztraminer, highlight the fiery seasonings in Asian dishes. A spicy wine like Zinfandel provides an interesting juxtaposition with sweet fruity sauces, or for that matter, chocolate. Practise on cheese first. The wide variety of tastes and textures available assures an ideal partner for any wine type. Red wines love to spar with more aggressive cheeses, such as Port matched with Roquefort. White wines usually prefer a quiet pairing with soft cheeses like Brie.

What’s your background and how did you become a Cruise Director? I have been a performer and recording artist all my life and always wanted to be able to pass on the experience I had gained to others. I had some connections inside the world of ships, so eventually the opportunity arose and I found myself as a Cruise Director some 14 years ago. I've always been a people person, and as a natural organiser it seemed like a good move – and one that I thoroughly enjoy – so thank you, Celebrity Cruises! You can cast any performer you want in your next production – who and why? George Clooney, for obvious reasons! Seriously though, I have a real admiration for Helen Mirren and would love to be in a show with her. For the not-so-famous, that would be my extremely talented husband, daughter, and son. They are all tremendous performers and I would feel honoured to share a stage with them all, at anytime. What’s the biggest show you’ve been involved with this year? I was the Cruise Director when the new shows (18 Shows in 18 Months) were installed on Celebrity Eclipse. However one of the most important and special events I have been involved with was the memorial ceremony I hosted in 2016 onboard Celebrity Eclipse for

the late and very great godmother of the ship, Emma Pontin. How far ahead do you plan? I am annoyingly organised and always plan well in advance. From the time I arrive on a ship I have to get well ahead of the grids and programmes, while always trying to see the big picture and what I think the guests will need for their holiday. Even when I'm on holiday I still plan ahead and keep a rough guide on file, updating as I go. What is your favourite aspect of life at sea? I love the family atmosphere and don't mind at all that the crew in general call me 'Momma Sue'! I really care about what I do and seeing it come together for both guests and crew is what I enjoy the most. How do you ensure guests have the best holiday ever? I try to see the cruise from the guests' point of view at all times. This is the guests' holiday and you have to maintain the highest standards, drive and determination at all times. We want to make sure they have the best experience possible so they come back time and again. What’s the most challenging part of your job? The day to day running of all my areas: a phone

call can alter what is happening, the missing of a port, the weather; one very important thing throughout all these challenges is that there is always – without fail – a solution. Nothing is impossible! It's important to have plan B, C or even D! What music are you listening to at the moment? I love all good music – after all my whole family are musicians. I'm open to all genres and have no barriers to what I like to listen to. Currently I'm really keen on rock music and country rock, however my favourite female vocalist at this time is the very talented Ellie King. What’s your all-time favourite Celebrity Cruises destination? Bringing a ship into New York City never fails to get to me, especially playing the Frank Sinatra classic as we sail in – it gives me goosebumps every time. A close second is the voyage into Venice, sailing past St. Mark's playing Schubert's Ave Maria on the open decks. There's seldom a dry eye on the ship. What do you do to unwind after a busy day? I love a cup of tea and an episode of Nashville! A good sleep is essential, but before that I always prepare tomorrow's outfit, including my famous shoes! I like to make sure I'm ready for action.

TASTESCAPE: MUSCAT… Referred to as 'the jewel of Arabia', Oman is certainly not a holiday spot to be overlooked. From the high mountain peaks of the Hajar mountain range to the low-lying Wadi Valleys bursting with life, it is a country rich in natural beauty and heritage. Often overshadowed by its big, brash cousin Dubai, Oman's capital Muscat is humbler, preferring low, traditional-styled buildings instead of skyscrapers. Though it is more modest than its neighbours, it certainly oozes charm and style at every turn. Throughout the city you are constantly dazzled by modern twists on traditional Arabian architecture. Opulently decorated mosques dotted throughout the city give you a real feel of how proud this Islamic country is of its faith. Life in Oman can be very slow-paced and easy-going, with the emphasis on quality family time. The local people are warm and welcoming and make it obvious why this country is worldfamous for its hospitality. Before you know it, you will be ushered into someone's home and served with coffee and dates. As you explain how you wound up in Oman there’s a chorus of ‘oohs’ and ‘aahs’ as the whole family hangs onto your every word. This is part of the fun and experience of this vibrant city – just relax and go with the flow.

BROWSE THE STALLS IN THE MUTTRAH SOUQ

Muttrah acts as the commercial centre of Muscat and is home to winding alleys, awe-inspiring buildings and vast bazaars. Be sure to make the most of this fascinating area of the city.

Located at the shipping port is the famous Muttrah Souq, a traditional Arabian marketplace. Dating back hundreds of years, it was a bustling place to trade spices and exotic items between countries. To the present day it still retains the chaotic hustle and bustle, bringing in hundreds of visitors, both local and foreign, every day. Through the labyrinth of small passageways stores are piled high with trinkets and novelties. Each shop owner will vie for your attention with stores of brightly coloured items. Although the emporium are open throughout the day, the most fun happens as the sun goes down and the locals come to haggle.

SOAK UP THE VIEW AT MUTTRAH FORT

Strolling along the Muttrah Corniche (seafront), you may be lucky enough to see the Sultan's yacht, named Bin Said, in the port, or the giant statue of a frankincense burner located high on the Muttrah hillside above Riyam Park. But it’s the little shops such as Rozna that make the area truly unique. Muttrah Fort stands proudly on a high hillside overlooking the ancient trading port. Built by the Portuguese in the 1580s, it is currently undergoing renovation work to restore it to its original glory, so even though you cannot enter it, it’s an amazing piece of history to see. Located close to the mouth of the port is the Fort's watchtower. With an amazing vantage point at the top, the climb up the steep stairs may leave you out of breath, but you won't be disappointed. Situated inside the watchtower is a cannon dating back hundreds of years – a nice authentic touch after the climb.

TEST THE WATERS AT THE BIMMAH SINKHOLE The natural wonder of Bimmah Sinkhole, located in the Hawiyat Najm Park, is around an hour drive from Muscat. Geologists say this fortymetre-wide, twenty-metre-deep waterhole was created when a limestone cavern collapsed, but many of the locals would disagree and tell you that a piece of the moon fell from the sky and made the giant hole. Shuwa with fragrant rice Just one of the many fabulous dishes Oman is known for, shuwa with fragrant rice, is a taste sensation. Here’s the recipe courtesy of Great British Chefs and multi-award-winning chef Greg Malouf. Enjoy. SERVES:6 COOKING TIME: 2 HOURS 30 MINUTES, PLUS OVERNIGHT MARINATING

INGREDIENTS

METHOD

ROAST LAMB SHUWA

FRAGRANT RICE

1 leg of lamb, on the bone

20 saffron threads

1/2 garlic bulb, peeled and roughly chopped

1/2 onion, finely diced

1/2 tsp sea salt 1/2 of a nutmeg, grated 1/2 tbsp each of ground cumin, ground coriander, sweet smoked paprika and freshly ground black pepper

50g of fine wheat vermicelli pasta (available in most supermarkets) 400g of basmati rice, rinsed and drained

1/4 tbsp of turmeric

1/2 tsp each of ground cinnamon, allspice and ground ginger

1 pinch of hot smoked paprika

600ml of chicken stock

Juice of half a lemon

Juice of half a lemon

50ml of olive oil

30ml of olive oil

2 banana leaves, or more as needed to wrap the lamb (available online and at most Asian supermarkets)

—In a large pestle and mortar, crush the garlic cloves with the sea salt to create a smooth paste. Add in all the dry spices, followed by the lemon juice and olive oil. Blend into the garlic paste until evenly combined. —Rub the spice paste all over the lamb, working it in thoroughly to evenly coat the meat. Cover the lamb and leave to marinate overnight in the fridge. —Before cooking, preheat the oven to 140°C/gas mark 1 and remove the lamb from the fridge to bring it back up to room temperature. Wrap the leg in the banana leaves, making sure it is fully enclosed. Place in a deep baking tray with any seams from the wrapping facing down to help the leaves stay in place during cooking.

—Cover the tray with tinfoil, then bake in the oven for 1–2 hours – check the meat after an hour, as the exact cooking time will depend on the weight and thickness of the joint. The lamb should be tender and still slightly pink in the centre when done. Allow the lamb to rest, still covered, for about 30 minutes while cooking the rice. —Place the saffron threads in a small bowl or cup and cover with 60ml of warm water. Leave to soak until adding to the rice. —Pour the olive oil into a large heavy-bottomed pan and place over a low heat. Gently sauté the onion for a few minutes until softened and translucent. —Roughly break up the vermicelli and stir into the oil, allowing the pieces to colour and brown. Add the rice and stir to coat in the oil, then mix in the soaked saffron threads and dry spices. Cover everything with the stock and bring up to the boil. —Cover the pan with a lid. Keeping the heat low, allow to cook for 20 minutes or until all the liquid has evaporated. Fluff up the rice with a fork, adding a squeeze of lemon juice just before serving. To serve, unwrap the rested lamb and carve into generous slices. Serve immediately with the rice on the side. DAY 1

PLACES VISITED: Castries Market, Castries Fisheries, Cap Maison, Pigeon Island recce HIGHLIGHTS: Market banter and discovering exotic fruit WEATHER: Sunny with some early morning rain ON LOCATION: 7am–7pm Today we’d capture the essence of the Chef’s Market Discovery tour – the bustling Castries Market was the perfect location. As we approached the stands, the owners were in full flow, selling to locals and cracking jokes. It’s quite easy to lose yourself in the hubbub with all the laughing, music and camaraderie. The various fruits were a spectrum of colours and an abundance of everything, from pineapples to giant avocados. From the Castries Market we journeyed further north along the coast to Cap Maison. Here we found a little gem of a spot to shoot our ‘couple on the beach’ scene (it’s not too far from where our ships dock and would take around 40-mins to drive to). We reached the beach after negotiating a steep downhill path – 76 precarious steps later we set up the cameras on pristine white sand, with turquoise water as our backdrop. It was a perfect spot for drone filming too. Next stop – a recce of Pigeon Island for the beach BBQ scene…

DAY 2 PLACES VISITED: Gros Islet beach, beach BBQ set up Reduit Beach HIGHLIGHTS: Meeting Gregory, the ‘sell-from-hisboat’ fruit seller WEATHER: Sunny in the morning, sudden downpour in the afternoon ON LOCATION: 9am–7pm In our original TV ad one of the key components linking the destinations to the on board experience was the lemon scene. This time, being in the Caribbean, we wanted to segue with a more exotic fruit. Cue Gregory, our boat-fruit-seller. He arrived in a quirky fashion with a boat overflowing with fruit. We used the drone to get context of the beach, beautiful water and the fruits he was balancing on his head. After shooting this scene and in need of refreshments we all tucked into some delicious pineapple. After a battery charge for the humans and cameras, the next location was Marie’s Bar and Grill on Reduit Beach. There was a stunning sunset here the night before – so we were hoping for the same again. We set up a BBQ in the middle of the beach and cast some willing models, then, just as we were about to roll, the rain came down. In buckets. Scene postponed…

DAY 5 PLACES VISITED: Tet Paul trail, Soufriere beach HIGHLIGHTS: Filming with a drone on the Tet Paul trail WEATHER: Some rain in the morning, then very hot and sunny ON LOCATION: 10am–5pm

DAY 3

PLACES VISITED: Soufriere, Anse Chastanet reef (South St. Lucia) HIGHLIGHTS: Our backdrop was the mighty Pitons – two mountainous volcanic spires that rise almost 800 metres from the ocean WEATHER: Spot of rain first thing, quickly followed by bright, warm sunshine ON LOCATION: Noon–4pm Joined by Amund, we now had a full crew. Amund was the underwater diver and cameraman; he normally shoots for broadcasters in colder locations (he was leaving our shoot to film salmon off the coast of Norway). We practised some dives from Soufriere beach in the morning using the drone, which always attracted a crowd to the shoot. We wanted to get some interesting shots of snorkelling over the Anse Chastanet reef – there was an abundance of colourful fish, vibrant corals, and apparently some baby barracuda too! ‘Yours truly’ was the main snorkeller. Currents were quite tricky and there was a pretty dramatic ledge to contend with, but we managed to get some amazing footage. After shooting the underwater sequence, we took some drone footage from the boat flying over the snorkeller and zooming out to get context as to the location – with the big reveal including the stunning Pitons. Then it was back to camp for another battery recharge.

Many visit St. Lucia to climb the Pitons, but my theory is when you’re on them you can’t really appreciate the scale of them, that’s why I’m personally such a big fan of the Tet Paul trail. Not only do you get perspective of the Pitons, you also overlook the breathtaking Sugar Beach. Heading up the trail we were on a mission to shoot some other transitions for the film. Our drone captured the entire panoramic backdrop of the Pitons and Sugar Beach – another big destination reveal. Although we had a little wind on the Tet Paul trail, we got what we needed after a couple of attempts, before packing up and heading back to Soufriere to re-create the beach BBQ scene that got rained off a few days prior. This time, the scene was even more impressive thanks to the large Piton as a backdrop. Certainly a BBQ with a view… a Different View!

DAY 4

PLACES VISITED: Vieux Fort horse riding, Diamond Falls Botanical Gardens HIGHLIGHTS: Hummingbird spotting at the Diamond Falls Botanical Gardens WEATHER: Sun, sun and more sun ON LOCATION: 7.30am–6.30pm It was an early start for the horse-riding scene. We wanted to shoot the experience of horses cantering through the sea, but we had a few small setbacks. Firstly – horses don’t like cantering through water. Secondly – horses have just one speed when they hit the beach, and that’s GALLOP! So it wasn’t quite the relaxed scene we had visions of – but we got some interesting footage. This scene, shot on the rugged Atlantic coast, was a great visual contrast to the filming on the Caribbean side of the island. We then headed to the peaceful, picturesque Diamond Falls Botanical Gardens. We got some transition shots with the waterfall and some of the walkthroughs with dappled sunlight through the tropical leaves. Our mission this afternoon was to get some footage of a bright green hummingbird; we spotted a few but as ever, getting the right shot was a big waiting game. Our shot with the bird on a coral flower made the final edit – it was amazing!

And that, as they say, is a wrap. Five days of filming on beautiful St. Lucia is definitely up there with my favourite-ever destinations – and what better way to remember them than with an unforgettable TV ad.
