Healthy Snacks Looking for some super healthy snacks your kids will love? Try these quick and easy vegan treats that will leave the kids (and grown-ups) begging for more.

Serves two

Chocolate “Pudding”

Ingredients 1 large ripe avocado (it’s got to be soft, kids) 2-3 tbsp. agave (preferably amber) 1 1/2 - 2 tbsp. raw cacao powder 1/4 cup of water (added a few tablespoons at a time until the consistency is right). Method Avocados vary in size so start with the low end of the agave and cacao and add more if necessary. Put all the ingredients into a small food processor fitted with an “s” blade or a high-speed blender. Scrape down occasionally until well incorporated. Optional: Substitute the water with almond milk for a richer flavor 1 heaping teaspoon of cashew, almond or hazelnut butter will make this super rich and delish. Add cinnamon Or vanilla…. Or if you are really brave….cayenne for the adults.

Banana “Ice Cream” Got ripe bananas you don’t want to see go to waste? Slice them into a plastic container and stick them in the freezer. It will allow you a quick, delicious and nutritious snack at the drop of a hat, fiber included. Ingredients Frozen ripe sliced bananas – it is important that the bananas are ripe to get good natural sugar content and maximum flavor Chilled water Method Drop the bananas into the food processor and pulse until they are a mealy consistency. Scrape down the sides if necessary. Slowly drizzle iced water into the bananas until they start to pull together and get creamy. Do not put too much in at the start. See what it needs as it goes along. As it starts to combine well and get smooth, let it run for about 30 seconds longer. Serve in a bowl and eat immediately. Do not re-freeze. Garnish with fresh fruit, nuts, chocolate sauce….the possibilities are endless. Optional: Substitute almond milk for the water Add a teaspoon of cacao powder Add a teaspoon of maca powder Add vanilla Add frozen mangoes for the ultimate tropical treat.
