Greetings to our River Heritage Club , and happy autumn! This time of year is one of my absolute favorites, and I had the great pleasure of kicking it off on the rivers of Europe when I joined some of you on our September Mystery Cruise. As always, it was a blast.

You’ll find wasserschlösser peppered throughout Germany. Literally translated as “water castles,” these utterly charming landmarks range from grand castles to relatively simple homes, but all feature moats. Recipes make some of the best souvenirs, don’t they? There is nothing like a delicious, homecooked recreation of a beloved dish for reminiscing in past travels. On our Holland & Belgium at Tulip Time itinerary, partake in a cooking class hosted by a Belgian chef to learn how to bring your favorite local flavors home with you.
While in Amsterdam on Tulips & Windmills, walk in the footsteps of one of the Netherlands' most famous artist, Rembrandt. As part of this experience, you’ll even have the chance to step inside his historic home, now a museum in his memory.
POT ROAST BRISKET & CHICKEN
As the holiday season approaches, many of us have plans to host gatherings or contribute to a potluck. For a dish that’s sure to impress, try this recipe from Uniword’s owner and guiding visionary, Bea Tollman.
INGREDIENTS
1 large piece of fresh brisket whole chicken (about 3-4 lbs) vegetable oil
3 shallots, halved
3 medium carrots, chopped
2 cloves garlic
1 stalk celery, chopped
3 bay leaves
4 ¼ cups beef or chicken stock salt and pepper to taste
PREPARATION
1. Season the brisket well, then heat a little vegetable oil over a high heat in a large heavy saucepan. Place the brisket in the pan and brown it very well, all over. Add and cook the shallots, carrots, garlic and celery until also browned (cook separately if necessary), then add the bay leaves.
2. Meanwhile, heat the oven to 265°F. Cover the brisket with stock, transfer to the oven, and cook for 3-4 hours until the meat is very tender. From time to time, scrape around the side of the pan to make sure all the dark parts become part of the gravy that is accumulating. If you think you need a few more carrots and onions or shallots, add them too. Keep adding stock to ensure the meat doesn’t dry out. The meat takes a long time: turn it over or leave as necessary so it browns on all sides. Turn the oven up to 350°F towards the end if the meat needs to get a little browner. If it gets too dark, cover with a lid or some foil.
3. Add a chicken for the last hour and a half. And potatoes if you wish, but remember that these will absorb a lot of the beautiful gravy you’ll need when you serve.

It is one of those comforting meals that serve many and that everyone enjoys. To create a rich gravy with plenty of flavor, a lot of scraping and deglazing is involved, and the success of it lies in the tenderness of the meat.”
