Vegetable Dahl, with Flatbreads

Those of you who have been reading my column will know that we like to travel. One of our favourite destinations is India. This curry, although not from India, reminds me of the times we have been there. I think it’s the smell that envokes the memories. Making the flatbreads that go with it brings back two memories. One is when we went to Turkey and had our lunch in a cave that was used for the Star Wars film. Before lunch we watched a lady making flat bread and I assisted by grinding down the flour. Another time we were in Sri Lanka on a trip to a small, recreated village. This time I was allowed to knead the flatbread before we cooked it. We were then invited to eat them, Martin declined having seen the state of the kitchen! Both times, I imagined myself as a child of that country and this being my daily task to help the family.

Ingredients Sunflower oil 1½ tbs 1 Brown onion, finely chopped Garlic 2 clove(s), crushed Ginger 2 tsp, grated Green chilli 2 deseeded, finely chopped Garam masala 2 tsp 8 Fresh curry leaf Red lentils 100g 1x 400grm can diced tomatoes 375 ml Vegetable stock 800 g Butternut Squash Chopped 1x 400grm can Chick peas - drained 1 x 400grm can Red Kidney Beans 120 grm Frozen green peas

Method Heat oil in a large saucepan over medium-low heat. Cook onion, garlic, ginger and chilli, stirring for 5 minutes until onion has softened. Add garam masala and curry leaves cook, stirring, for 1 minute. Stir in lentils, tomatoes, stock and pumpkin and bring to a simmer. Put in a slow cooker. Cover and cook on high for 2 hours 30 minutes (or low for 5 hours). Stir in chickpeas, kidney beans and peas and cook, covered, on high for a further 10 minutes or until heated through. Season with salt and pepper.

Flatbread: 125g plain white flour ¼ tsp fine sea salt 2 tbsp sunflower or vegetable oil Warm Water

Method Stir together the flour and salt. Add 5–6 tablespoons of lukewarm water with the oil. Using your hands, bring the dough together into a ball. Knead for 5–10 minutes, wrap in cling film, rest for 20 minutes. Cut into four portions and roll into small balls. Roll out each ball until around 18cm diameter, around 2–3mm thick on a dusted work surface. Dry-fry over a medium heat for 20 seconds, pressing lightly with a spatula. Flip over and cook on the other side for 20 seconds, or until the tortilla is cooked, but remains soft and pliable.
