Recipe by Chef George Spriggs, North Beach Grill Tybee Island, Georgia INGREDIENTS 1 tablespoon olive oil 1 pound medium shrimp (shell on) 1 tablespoon minced garlic 2 1/2 tablespoons Cajun seasoning 1/3 cup shrimp or fish stock 2 tablespoons butter PROCESS 1. Place a sauté pan over high heat and allow to heat for about 1 minute. Add the oil to pan, followed by the shrimp. 2. Toss or stir the shrimp until the first signs of pink coloring appear, then add the garlic. 3. Continue to toss the shrimp for 30 seconds, then add the Cajun seasoning and stock.
