1 (2-foot) loaf Cuban bread mustard 7 ounces Swiss cheese, thinly sliced 12 ounces sweet ham, thinly sliced 7 ounces lean pork, thinly sliced thin dill pickle slices butter, at room temperature

1. Preheat a large frying pan or castiron skillet over medium-low heat or a sandwich press to 300°F. 2. Cut the loaf of bread in half, horizontally. Spread a thin layer of mustard evenly on one side of the bread and a thin layer of butter on the other. 3. Layer half the cheese on the bottom half of the bread, followed by the ham and pork. Layer pickles on top of the pork, then the other half the cheese. Top with the top half of the bread, and press the sandwich down a little. 4. Cut the sandwich into the desired portions and brush the outside crusts with butter. Place the sandwiches on the preheated pan or sandwich press and press down on the sandwich with the top of the sandwich press or a heavy cast-iron pan. Cook for about 5 minutes, until the sandwich is heated through and the cheese is melted.

2 cups ripe, overripe, or frozen mangos Juice of 1 lime 32 ounces plain yogurt 2 tablespoons chili powder 2 tablespoons coriander 1 tablespoon cumin 1 tablespoon salt or to taste 1 tablespoon black pepper or to taste 2 3-pound chickens, cut into parts, washed and dried • 1 box panko bread crumbs • 1 quart canola oil for frying

1. In a food processor, purée the mangos. Add the lime juice, yogurt, chili powder, coriander, cumin, salt, and pepper. Process until smooth. 2. Arrange the chicken in a roasting pan and pour the mango-yogurt mixture over, turning to allow thorough coating. There should be plenty of marinade, enough to cover the chicken. Put into the refrigerator and marinate for 4–24 hours. 3. In a deep frying pan, heat oil. Remove the chicken from mango-yogurt mixture, shaking off the excess but allowing some to remain as coating, and roll in bread crumbs. 4. Fry chicken parts 5 minutes on each side. Be sure not to crowd the pan. Remove chicken with tongs and drain on paper towels.

1/2 stick unsalted butter 1 small sweet onion, diced 2 cups light-colored beer 1 tablespoon chopped flatleaf parsley 1/4 teaspoon coarsely cracked black pepper 3 dozen clams, well scrubbed Crusty bread, for serving

Melt butter in a large pot over medium heat. Add onion and sautĂŠ until tender but not browned, about 3 minutes. Pour in beer and stir in parsley and pepper. Add clams, cover pot, and bring to a boil. Cook until clams open, 4 to 5 minutes. Serve clams in broth with crusty bread for dipping.
