COLD weather is slowly approaching and there is no better way to keep warm than eating a big bowl of your favorite soup. But instead of sticking to your usual dish—sorry Chicken Noodle soup—Urban Lux encourages you to step outside of the box and try something new, delicious and savory. Here are three soup recipes that are sure to leave you and your family satisfied. Story by LONDON ALEXAUNDRIA

BAKED POTATO SOUP ingredients:
cooking instructions:
4 baking potatoes
Bake potatoes until tender. Let potatoes cool, cut into
Bacon, cooked and crumbled – about 12 slices or ½ cup
halves and scoop out pulp. In a large pot, melt butter
4 green onions, chopped ⅔ cup butter
and stir in flour—let cook for approximately one minute, gradually adding in milk.

Cook over medium heat (don’t let it come to a boil) and stir

CHICKEN ENCHILADA SOUP ingredients: 3-4 skinless chicken breasts 1½ cups LA VICTORIA brand enchilada sauce
cooking instructions: Season and brown chicken breasts. Once fully cooked, cut into thin strips.
1½ cups chicken broth 1 can petite diced tomatoes
1 can diced tomatoes with green chilies
1 can black beans, drained
3 garlic cloves, crushed
1 tsp cumin
½ tsp dried oregano
Sour cream, cheese and green onions for garnish
Next, combine chicken, enchilada sauce, broth, tomatoes, black beans and spices in large pot and bring to a boil. Reduce heat and let simmer for 20 minutes. Serve warm and garnish with sour cream, cheese and green onions as you please!

CREAMY TORTELLINI SOUP ingredients: 1 ½ ounce envelope white sauce mix 4 cups water
cooking instructions: Place dry white sauce mix in a 3 ½ or 4 quart slow cooker and gradually add water, stirring until smooth.
14 ounce can vegetable broth 1 ½ cups sliced fresh mushrooms ½ cup chopped onion
Stir in broth, mushrooms, onion, garlic, basil, salt, oregano and cayenne pepper.
3 cloves garlic, minced ½ teaspoon dried basil, crushed ¼ teaspoon salt
Cover and simmer on low-heat for 5 to 6 hours or on high-heat for 2 ½ to 3 hours.
¼ teaspoon dried oregano, crushed 1/8 teaspoon cayenne pepper 7 ounce package dried cheese tortellini (about 2 cups)
Stir in tortellini pasta. Cover and simmer on low-heat for 1 hour. Stir in evaporated milk and fresh spinach.

If desired, sprinkle individual servings with black pepper and Parmesan cheese.

M
edia mogul and entrepreneur Oprah Winfrey blessed the city of Atlanta with an in-person, change-your-life weekend experience. This was an unprecedented tour that engaged, encouraged and empowered. Oprah and her team of experts left no stone unturned and no soul asleep. With the arena packed to capacity, attendees saw the possibilities of a new life—they left transformed and ready to take charge and make it happen. The eight city tour began September 5th in Atlanta, starting with a day of festivities in the popular Centennial Park. The Bounty Corporation hosted a power breakfast for media, tastemakers and key influencers—setting a remarkable precedent that would carry through to the final closing remarks of the weekend.
Guest panelists included celebrity chef Carla Hall of ABC’s “The CHEW,” Karmetria Burton, Supplier Diversity for Delta Airlines and Nicole Jones of Honesty Jewelry. Each expert spoke on their respective journeys to success and shared real-life tips for how to harness the inner drive, strength and courage needed to accomplishing goals. The tour also featured the renowned Dr. Deepak Chopra, author Elizabeth Gilbert, inspirational speaker Iyanla Vanzant and Pastor Rob Bell. The experience… It was very clear from the outset Oprah Winfrey’s The Life You Want Weekend was going to be unlike any weekend I’d ever experienced. One could feel the frenzy of absolute excitement and patient anticipation from the thousands of “truth seekers.” I surmise most were in attendance for one primary reason—to receive information that would heighten their level of self-awareness so that they, too, can live the life they want! I was very fortunate to experience the occasion from an exclusive suite high atop Phillips Arena in the heart of Atlanta. The suite overlooked the expansive sea of raw energy that exploded throughout the arena like molten lava spewing from Mauna Loa one of the most active volcanoes in the world. Feeling like I was on top of the world, I observed a fury of kinetic energy resembling the best party or dance club I had ever been to. The arena was complete with colorful pulsating lights, line dancing and sheer exuberant energy! Lights up? No. Lights down.

Shhhh, quiet please. The bright effervescent lights slowly became dim. And then, it happened. The calm mesmerizing voice of Ms. Winfrey serenely speaking thought provoking words were heard. They immediately made me think to myself, “Wow. That was deep!” In a short while, four unhurried spotlights gently became brighter and brighter like a simultaneous sunrise from various parts of the earth. And, there she stood. Ms. Winfrey herself poured into a scorching red floor length gown that fit like an exquisite piece of couture accompanied, of course, by the signature Oprah Winfrey big curly shoulder length mane. The next two and a half hours consisted of Oprah, a microphone, strategically timed music, pictures and effects.
Over the 2-day experience, information and concepts were given that encouraged individuals to take meditative inventory of their intrinsic God given gifts and to visualize their life as it is now against how they would like it to be. Individuals were asked to determine areas of his/her life that were most to least important to set the stage for creating a new life vision and more importantly, a new vision statement to reflect the life he or she wants. Each trailblazer brought uniquely different perspectives about areas such as: the importance of expressing gratitude, knowing what you’re good at, recognizing your gifts, identifying what comes easy for you and discerning your passions. By being spiritually connected and having a heightened sense of self-awareness, you can more quickly move towards creating the life you want!
She spoke true spiritual wisdom and delved into the wonderment of discovering your life’s purpose. This set the tone for the weekend. Slowly, I saw twinkles of light sprouting throughout this extremely expansive venue. The lights quickly multiplied as each second went by. Strangely, each flicker of light resembled one of the infinite numbers of stars shining in the darkness of a clear midnight sky. I soon realized the faux stars were actually the thousands of attendee’s wristbands lighting up to correlate with Ms. Winfrey’s message. Judging the reaction of the crowd, it was certainly an astounding moment that helped confirm, again, it was going to be an incredible weekend! URBANLUX

GRADUATING from the prominent HBCU, Howard University in 1991, young Reed would begin a career in law and politics that would become and stay momentous. His humble beginnings as a Georgia State Representative carried him to success as a sharpened State Senator—and the buck wouldn’t stop there. Inaugurated in 2010, the now 45 year old city leader joined the ranks of the country’s most forward-thinking and responsive political figures. He hit the ground running and immediately took the baton from Shirley Franklin, for whom he ran a successful mayoral campaign. Believing in a stewardship model of leadership, where you leave an institution in verifiable better shape than when you received it, he had a lot of “back work” to do before he could implement his own visions. Coming into an office that was in ruins wouldn’t be an easy job for anyone, but instead of complaining, Reed stepped up to the plate with an agenda to repair and rebuild. Fueled by the world-changing election of the nation’s first African-American president, he took managing the city during economic crisis by the horns. Reed has governed through controversial situations from flag changes to gay marriage to transportation taxes and has earned praises from many of his mentors, media and colleagues. Being in the spotlight has had its fair share of tribulations which he always handles with immediate responsiveness and strength. Even when faced with the epic snow storm that hit Atlanta in 2014, he did not break under scrutiny and never shied away from adverse reaction from residents, business owners and a savage national press conference. A proud sports fan, he is confident that the new Atlanta Falcon’s Dome will bring about city pride, citizen backing and economic relief to its new neighborhood. On becoming a new parent... Proclaiming a newfound understanding for parents and child-rearing, the birth of his first child, Maria Kristan has changed the new father’s perspective. Her birth has forced about positive internal change that has bled into his political views.
He also voices that fatherhood has increased his sensitivity and support for working parents across the state, especially employees of the city of Atlanta. He vows continued investment in projects, centers and programs that lend to creating family-friendly structured environments that give parents peace of mind when allowing their children to become involved. Reminiscing on how he was raised by two loving and supportive parents, Reed and his wife Sarah Elizabeth plan to raise their children with love and allow them independence. He is proud to have grown up in a household where rooting for the others was encouraged and the Reeds are striving for those same feel-good vibes. DEREK BLANKS
E
very decade there comes along an artistic genius whose talent commands the respect of the world. Building an empire on beautiful images of diverse muses, Derek Blanks is a force to be reckoned with—and he’s earned his place. The journey of a household name is usually a long one, full of twists and turns. Definitely, a true story for a boy from Mississippi graduating Magna Cum Laude from Maryland Institute College of Art ending up on international television screens and great room walls around the world. Derek, the middle child nestled between older brother Toby and younger brother Eric, his fraternal twin, was raised by a proud mother. Starting out as a children’s book illustrator, his career progressed admirably, even landing a job as a graphic designer for the Illinois Lottery and being commissioned to produce pictures of the legendary Ed McMahon. What may have been “it” or a satisfying stopping point for anyone else’s artistic career, the creative spirit of the now famed photographer and director wasn’t ready to sit still. He wanted more and one negative corporate experience served as the hasty catalyst for a headfirst dive into entrepreneurship.
On what drives him: “My subject inspires me! I like to make them comfortable and then shoot between planned shots to capture their genuine personalities.”
“Every time I do something I learn from the experience… even from the failures.” Encouraged by a close friend, like he dared to earlier in his career, Derek jumped into music video directing. Confident and self-taught, his directorial debut was Jaheim’s “Age Aint A Factor” featuring LisaRaye, Vivica Fox and other beauties over 40. Also directing for new artist Sevyn Streeter, he’s learning along the way how to make each project better than the last.
Fully supported and grounded by his wife Quiona (a realestate law firm manager), the Blanks family is rounded out with their awesome 5 year old son, Beau. ho knew that one day a little girl from Irvington, NJ, already so close to the Big Apple would make her way south to Morris Brown College to study Accounting? Who knew that in her future she would lay a foundation in fashion? Who knew that she’d build an empire in Atlanta? At the tender age of 16, a shy Natt Taylor would start college and plant her feet to do what people twice her age hadn’t fathomed. Upon graduating, a proud Taylor couldn’t get past the fact that her safe career stifled her inner creativity. Her desire to create kept growing until finally her friend, mentor and photographer, Leo Marshall, advised her to narrow her focus and set specific goals to impact the fashion world. So Natt began sewing and soon became a seamstress in New York City.
After ten years in business, Natt’s spring 2015 projects will include formal wear—a first for her brand. She is very eager to design dresses for bridal events including: bachelorette and engagement festivities, bridal showers, reception looks and more. W
ith a repertoire as long and beautiful as an antique Aztec tapestry, the highly educated and multi-faceted Mike Molina has a lot to say and has several platforms on which to stand. With still so much left to accomplish and many more people to impact, Molina allows us a sneak peek into his mind—a cerebral lab. Hailing from New Orleans, the actor, attorney, speaker and writer has been making his mark on the “people” for over 15 years. With words, his voice and a microphone, Molina has captivated audiences from across the USA to Brazil to Mexico to India.
“I believe that I have a singular goal—to increase human understanding in order to catalyze human potential.” The child of two teachers, the importance of education was instilled from birth. Heeding his parent’s lead, he studied and earned his undergraduate degree from Xavier University then went on to earn a coveted law degree from Yale. Always being an artist at the core, he watched his older brother’s career as a professional actor and decided that before he could go into the arts, he needed to secure something that he could “fall back on” during the struggle. Doubly, he saw that becoming an attorney wouldn’t stifle his creativity, and would actually lend stability to his future endeavors. Using transmedia (multi-platform storytelling) as his delivery medium, poetry, dance and music are amongst the most influential ways to relay a message that the masses would understand. Being from New Orleans, and with both parents singers (with their children in the junior choir) the Molina family lived through performance.
“Everyone who attends one of my shows came for a reason, I’m not always sure of the reason, but I’m in a prime position to give them something as the main speaker for the evening. I treat each audience like a classroom—with the same amount of respect that I apply when I’m trying to educate.” Monila is expressly adamant that mainstream culture has put extreme pressures and restrictions on creativity amongst today’s youth—and it has become a great challenge. Noting that during his upbringing, there was a plethora of positive and boundless talents from which to learn, these days the conscious rappers or artists with “causes” are like foreign entities. There are current pressures for people to conform to today’s media-driven, hit-seeking, shock-value standards in order to achieve newsworthy success. Hoping to positively change the trends, he hopes to take on more of a leadership role (along with others of his generation) to help balance the scales and instill wisdom to the up and coming without fear that they’re losing their own youth along the way. On his mission, Molina plans to educate and inform Millennials on other, more integrity initiated ways to exhibit their talents—to broaden what they think they can do. Remembering from his personal experiences, that when young people are connected to their elders, those are the best ways to get uncut and raw advice—and he wants to do his part. ON SUCCESS: “Being able to increase my influence to the point where I can tell stories that the whole world listens to.” As expected of every Ivy League graduate, Mike Molina started a movement, walked through doors, climbed through windows for success and left the path wide open for others to follow. XAVIER FOLEY
W
hen some individuals hear about a nineteen year old metro Atlanta born, AfricanAmerican musician on the rise, their first thought is probably of a flashy, 18-bar delivering rapper. For those who truly appreciate the art of music in its entirety, they’d be delighted to learn of native son and classical musician Xavier Foley.
“I do not see myself as a role model, but rather as a person simply playing a role in creating new art.”
His very proud parents support him immensely. “I can tell they’re proud of me because they ask for pictures and stories from every performance,” says Foley. On what moves him: “I am inspired by performers and composers who strive to make the most out of a segment in time. There is something special about how a musician can unlock moments where a listener in the audience can experience a compilation of emotions in such a short period of time. It is inspirational to experience the person who is responsible for creating such a magical, emotional connection.”
A double bassist (the largest bowed string instrument), Foley is a soloist and recitalist. Introduced to his instrument at age 11, he has developed a skill and technique that is propelling him toward notoriety as an amazing talent. His artistry is smiled upon by industry leaders and his peers alike, making him very popular on the World Wide Web and social media outlets (especially his Bottesini, Concerto No. 2 in A Minor performance). Earlier this year, Foley earned 1st place in the Sphinx Competition and won the $50,000 grand prize. Headquartered in Detroit, The Sphinx Organization provides musical education and access otherwise unavailable to Black and Latino students. Founded by Dr. Aaron Dworkin, the organization is dedicated to “Transforming lives through the power of diversity in the arts.” Xavier insists that the organization has helped to spread his wings and fulfill his mission as a musician and future composer. His list of accomplishments also includes the 2014 Senior Division 1st Place Laureate, 2013 Senior Division SemiFinalist, 2011 Junior Division Second Place Laureate, 2010 Junior Division Semi-Finalist. Currently studying under Dr. Eric Sessler and Edgar Meyer (noted as one of our nation’s accomplished double bass players) at the Curtis Institute of Music, Xavier’s repertoire is vast beyond just performing. The nineteen year old is also a composer, with his first piece titled, Foley Solo No. 1. Noting that because of its fun vibe, this is one of his favorite pieces to play.
An active student at the Curtis Institute of Music in Philadelphia, the admittedly sometimes shy musician says that when he’s not studying or performing he likes to play multi-player video games with friends. Xavier’s five year goals expand to include composing and performing idiomatically for the double bass and performing for international audiences with a concert program containing not only standard classical music, but contemporary works; including his own music. XERNONA CLAYTON “WHAT ABOUT YOU?” When questioned on who the next great activist in the fight for justice in America is, the query of civil rights pioneer Xernona Clayton is direct and absent of nuance. “If Dr. King had waited for someone else, we wouldn’t have had the progress we’ve already made. He was a man who ended up laying down his life for a mission and a cause. My message always is that there’s something for all of us to do. We don’t have to wait for anybody else. Find out what else there is to be done and then you help make it happen.” Grainy footage of moving pulpit sermons, dogs and hoses, and obstinate southern sheriffs have in a way distilled an important revolution in American history, the Civil Rights Movement, into a period from which America feels long removed. At a young 84, the lessons that have been lost between Clayton’s generation and its successors troubles her somewhat. “When I examine it carefully it’s sort of like there’s no urgency,” she laments. “Those of us who fought early on, who faced the real pain and suffering of separation, isolation and segregation–[this generation] doesn’t have those pains of denial that we had.” While she believes that the overt racism of her past has dissipated, recent stings may have served as a wake-up call to today’s youth. “I think the Trayvon Martin case opened a lot of eyes,” she continues. “For the first time in a long time, you saw a lot of combined interest by young people to lead a movement, and that to me was heartening in showing that they can rise to an occasion.” For the current generation perhaps looking to the black and white footage of their predecessors for inspiration in response to the Trayvon Martin shooting and other recent incidents, activism is looked at solely through the narrow lens of marches and boycotts. Vestiges of an era whose troubles and issues are obsolete in a seemingly post-racial society. For Clayton her activism in the fight for justice started on the front lines of the Civil Rights Movement, but took a novel path in its aim and continues over 50 years later. Born in Oklahoma, Clayton’s involvement in the Civil Rights Movement has spanned across platforms. From undercover discrimination investigator with the National Urban League to Southern Christian Leadership Conference organizer and health care advocate.
With her visibility in the movement on the rise at the close of the sixties, she found herself involved in policy as head of the Atlanta Model Cities program, a federally funded community development program, and also in journalism with a column in the Atlanta Voice. A year later, she was at the helm of a daily prime time talk show, The Xernona Clayton Show, the first hosted by an African-American in the south. In 1968, Calvin Craig, who had worked with Clayton on Atlanta Model Cities and was also the Grand Dragon of the Georgia Ku Klux Klan, denounced the group on-air, crediting Xernona for her influence in his decision. In 1979, after joining fledgling Turner Broadcasting as a documentary specials producer, she ascended through the ranks to reach corporate vice president for urban affairs, and was one of the highest-ranking female employees within Turner before retiring in 1997. “Ted believed I could make a difference,” she says of her career with the media giant’s founder Ted Turner. “When people trust you, you can use that trust to make someone else’s life broader. So I was able to get rid of some of the vestiges of segregation and discrimination within the company, which was not unique. Although Ted was a good guy, we encountered a lot of people who were not as good. And a lot of African-Americans within the company suffered because they didn’t have the same opportunities as me. I was able to make those changes.” Today, with media as her means of activism, she serves as the founder and producer of the Trumpet Awards, a yearly event highlighting African-American achievement. Founded in 1993 during her time at Turner, Clayton now feels the awards are necessary to provide balance to a myopic view of what AfricanAmerican success in the 21st century looks like. “We’re broadcasting to 184 countries around the world telling the positive stories of achievement. We’ve had people in some countries tell us they only knew of Blacks as athletes or entertainers. They didn’t know that we were doing anything else, so we’re spreading a good message.” Beginning to beam, Clayton shares what may be the essence of her next frontier in the cause of civil rights, “Someone said to me once that the Trumpet Awards are giving a new meaning to black pride and that really thrills me.”

M
any great leaders have evolved throughout American history, including some who were at the forefront of the 1960’s Civil Rights Movement. Civil Rights leader and Ambassador Andrew Young spoke with Urban Lux Magazine to give insight and his perspectives on the Civil Rights Movement in the 21st century, being black in America and how his organization, the Andrew Young Foundation, is nationally and internationally impacting young lives. Ambassador Young is an established voice in communities locally and nationally and he does not shy away from voicing his opinion about the state and position of black Americans today. He is passionate about continuing to communicate the message of how we as human beings can all live together peacefully, regardless of race, color, gender, or creed, in a global community. Former U.S. Congressman, Former United Nations Ambassador, and former Atlanta Mayor, Ambassador Young has taken great strides throughout his career and life’s journey to demonstrate that Dr. Martin Luther King Jr.’s dream is still alive and evident today for the future generations of tomorrow to follow. Ambassador Young is doing what he considers to be God’s work, helping the less fortunate speak against injustice and helping to build economically secure communities for the next generation. When asked who the current Civil Rights leaders are, Ambassador Young did not identify a specific name, but instead suggested today’s leaders are those individuals who respond to problems. According to him, racism, war, and poverty were the three evils in America during the Civil Rights movement, the first two of which he feels the movement has successfully addressed and dealt with. “Most of the problems today are essentially economics,” he said. There is an old saying according to Ambassador Young that says, “If the poor get more, then the rich have to give up something.” “That is not my understanding of freedom,” said Ambassador Young. “I was pushed over into politics in the 1970’s to help determine how to get the energy of the Civil Rights movement into politics, because at that time, we should not have had to protest for these rights according to Dr. Martin Luther King, Jr.” Although he did not intend to ever work in politics, Ambassador Young used his leadership opportunities
and influence to help change the face of a community and a nation, especially in the city of Atlanta, Georgia. “I approached Atlanta like a business man,” said Ambassador Young. “For me, the Atlanta airport (Hartsfield-Jackson International Airport) is the best business project in America because it didn’t cost the city any money and it was built with no tax revenues.” Through the Andrew Young Foundation, Ambassador Young provides information, education, and entertainment for the community, especially to help the youth and the less fortunate. His foundation identifies and creates ways to create jobs for unemployed citizens, assist high school dropouts who desire to obtain their G.E.D and monitors their progress through completion. Additionally, the foundation offers additional guidance and assistance to those who complete the G.E.D. program and are headed to college. Students who’ve benefited from Ambassador Young’s foundation include college graduates from Georgetown and Rust College. The Andrew Young Foundation has also designed a curriculum for Georgia State University and other institutions to follow, which includes a book and a series of documentaries that provide an informative landscape on the making of a modern Atlanta and how other cities can follow its model. His position on the state of black America and the Michael Brown shooting in Ferguson, Missouri also shed light on his experience as a community leader who has a sound grasp on politics, sociology, and economics. “It’s a lose, lose situation,” said Ambassador Young, speaking of Michael Brown. “It’s a result of generations of neglect of relations between whites and blacks and the rich and the poor community.” “When a community is not functioning as a community, any little conflict can bring about an explosion,” Ambassador Young explained. “They both have lost.” Identified as a poor student with learning disabilities, Ambassador Young did not let his early life struggles determine or hinder his future. “All of these things that made me a bad student (ADHD and dyslexia) made me a Mayor, has kept me alive for the past 82 years, and made me a multi-tasker, which is necessary for any business or life success.”

KNEE PAIN, lower back pain and ankle tightness. Most of us have suffered from one of these ailments at some point in our lives. How many of you suffer from this type of pain without any traumatic injury? You can’t stand too long because your back gets tight, or you can’t squat down to pick something up off the floor because your knees give you pain. This type of pain can develop over time just by your muscles not functioning optimally. In order to relieve the pain, most physical therapists, trainers and coaches will have you use a foam roller. A progression from a standard foam roller is the Rumble Roller. Rumble Roller is a geared up version of a foam roller with the addition of spike-like protrusions that really penetrate the muscle tissue.
So what can you expect using a Rumble Roller? Well you can expect a little discomfort when you first begin to roll. By rolling you are essentially pressing the knots out of your muscles which causes shortness and tightness of the muscle. Think about the Rumble Roller to your muscle as a rolling pin to a ball of dough. You are trying to smooth out the muscle by rolling. As you do, the discomfort will subside. But at that point your muscles will operate more efficiently and cause a more appropriate connective chain of movement. Now that we got that out the w ay. HAMSTRINGS - The hamstrings consists
of three muscles, but the most lateral of those muscles is usually the culprit when it comes to tightness. Holding your body up to hit the hamstrings will prove to be a workout in itself. But once again, press your leg down into the rumble roller until you feel a release.
LATISSIMUS DORSI - Lying on your side, you will roll the side of your upper body, the lats. Place the arm closest to the floor in an extended position. Once again finding that tender area, holding for a release or up to 30 seconds to 2 minutes.
CALVES - Find the tenderest point of your calf by rolling. Once you found it, press down on that area. Hold this position for about 30 seconds to 2 minutes. This is typically how long it takes to feel a release.
QUADRICEPS - The quadriceps consists of four muscles. There are a couple different areas you
will need to roll. For the side of your thigh, roll your leg from just above your knee to just under your hip. Bend your top leg and keep your foot flat on the ground. For the front of your thigh, get into a plank position, keeping your hips from sinking towards the ground. Roll once you find your most tender area, hold for 30 seconds to 2 minutes.
FOAM ROLLING is an excellent way to address muscles that are tight and overactive. If done daily, you can reduce injury and pain of the body. But at the end of the day, pain is our body’s way of letting us know that there is something going on. Foam rolling your muscles is not necessarily a cure for your pain but it is a therapeutic way of dealing with it. If your pain is severe, please see a doctor. The organization established a scholarship program that provides funds for tuition, laptop computers, and gift cards for dormitory necessities, school supplies and personal items. In addition, SWM offers assistance in finding additional scholarship funds to help support the cost of higher education for their students and provides volunteers who assist the students through the process of applying to various colleges.

ary Torrence is the Founder/Executive Director of Students Without Mothers and her non-profit organization is a promise unfolding. Mary lost her mother at the age of 14 and understands first-hand the challenges of a young person who has lost their mother due to death or unfortunate circumstances. Mary knew she had to work hard to accomplish the things she wanted, as a high school senior she cleaned her high school principal’s home to earn money to purchase her class ring. While going through this process she made an internal promise to work hard to help other young people who faced similar situations as she. Mary’s daughter ignited this promise by making her aware of a student who lost her mother. This student was cooking and selling meals to pay for her college application fees. This catalyst inspired the Students Without Mothers foundation, which was founded in 2004.
At SWM, each scholarship recipient benefits from the Life Coaching For Tomorrow’s Leaders Program. The programs objective is to assist students in becoming conscious of their choices when planning for the future; set and accomplish goals; connect with their strengths; and maintain a clear perspective. With these objectives in mind, SWM has provided 54 students with scholarships of $4,000 each. The students who benefit from the program are simply asked to “pay it forward” when they are in the position to do so by assisting someone in a similar situation.
Tia: Mary will you share with me your thoughts on the importance of education? Mary: Education is a key component for the youth. My goal in starting the organization was to empower students to live better lives through education. I am reminded of the saying “give a man a fish and he eats for the day; teach him to fish and he’ll eat for a life time. A lot of the students that we support are the first in their family to go to college. So college for these students is life changing. Also, many of them do not have the support that they need financially or emotionally. Tia: Life coaching is essential to one’s overall well-being. How does the Life Coaching for Tomorrow’s Leaders Program impact the lives of the scholarship recipients? Mary: The coaching program shows the students the impact of making good choices and guides them in choosing a major, selecting a career and helping them discover their strengths. Rather than giving them the answers the coaches talk them through on how to make better choices. The students learn how to set and reach goals.

CHILDHOOD OBESITY is a serious medical condition that affects children and adolescents. It occurs when a child is well above the normal weight for his or her age and height. Obesity is quite different from being overweight. Obesity means having too much body fat and overweight means simply weighting too much. According to the American Academy of Pediatrics, childhood obesity is now a national emergency. Obesity leads to lower quality of life, shorter life spans, and many chronic medical conditions. It is believed that today’s generation of children may live shorter lives than their parents because of the long term effects of obesity. Childhood obesity has more than doubled in children and quadrupled in adolescents in the past 30 years. The latest data shows that the percentage of children aged 6-11 years in the United States who were obese increased from 7% in 1980 to nearly 18% in 2012. In 2012, more than one third of children and adolescents were overweight or obese. The health effects of childhood obesity are both immediate and long term. Risk factors for high cholesterol, high blood pressure, prediabetes, sleep apnea, and social and psychological problems such as poor self-esteem are all immediate health effects. To the contrary, the long term effects are heart disease, type 2 diabetes, stroke, osteoarthritis and several types of cancer.
The American Heart Association recommends this eating pattern for families: • Energy (calories) should be adequate to support growth and development and to reach or maintain desirable body weight. • Eat foods low in saturated fat, trans fat, cholesterol, salt (sodium), and added sugars. • Keep total fat intake between 30 to 35 percent of calories for children 2 to 3 years of age and between 25 to 35 percent of calories for children and adolescents 4 to 18 years of age, with most fats coming from sources of polyunsaturated and monounsaturated fatty acids, such as fish, nuts and vegetable oils. • Choose a variety of foods to get enough carbohydrates, protein and other nutrients. • Eat only enough calories to maintain a healthy weight for your height and build. Be physically active for at least 60 minutes a day. • Serve whole-grain/high-fiber breads and cereals rather than refined grain products. Look for “whole grain” as the first ingredient on the food label and make at least half your grain servings whole grain. Recommended grain intake ranges from 2 oz./day for a 1 year-old to 7 oz./day for a 14 – 18 year-old boy. • Serve a variety of fruits and vegetables daily, while limiting juice intake. Each meal should contain at least 1 fruit or vegetable. Children’s recommended fruit intake ranges from 1 cup/day, between ages 1 and 3, to 2 cups for a 14 – 18 year-old boy. Recommended vegetable intake ranges from ¾ cup a day at age one to 3 cups for a 14 –18 year-old boy. • Introduce and regularly serve fish as an entrée. Avoid commercially fried fish. • Serve fat-free and low-fat dairy foods. From ages 1 – 8, children need 2 cups of milk or its equivalent each day. Children ages 9 –18 need 3 cups. • Don’t overfeed. Estimated calories needed by children range from 900/day for a one year-old to 1,800 for a 14 – 18 year-old girl and 2,200 for a 14 – 18 year-old boy.
The American Academy of Pediatrics (AAP) believes that making small changes early on can prevent a lifetime of complications regarding childhood obesity. Both parents and pediatricians can take steps to help children maintain and achieve a healthy weight. According to letsmove.gov, a comprehensive initiative launched by First Lady Michelle Obama, combining comprehensive strategies with common sense is key. The Childhood Obesity task force has made recommendations that focus on five pillars: creating a healthy start for children, empowering parents and caregivers, providing healthy food in schools, improving access to healthy, affordable Eating well, exercising regularly and incorporating healthy habits into food, and increasing physical activity. your family’s daily life will create a model for a healthy lifestyle for kids that will last.
