BLACK HISTORY MONTH - FEBRUARY 2022
If there is no struggle, there is no progress. Those who profess to favor freedom, and yet depreciate agitation, are men who want crops without plowing up the ground. They want rain without thunder and lightning. They want the ocean without the awful roar of its many waters. This struggle may be a moral one; or it may be a physical one; or it may be both moral and physical; but it must be a struggle. Power concedes nothing without a demand. It never did and it never will.

Known as the “Moses of her people,” Harriet Tubman was enslaved, escaped, and helped others gain their freedom as a “conductor" of the Underground Railroad. Tubman also served as a scout, spy, guerrilla soldier, and nurse for the Union Army during the Civil War.

FOOD WILL BE PROVIDED Who am I?
My name is Gregory Dillard, I am currently the campus executive chef here at the University of Southern Indiana. Going on 11 years now, I have thoroughly enjoyed working with USI because of the diversity of the campus and the people with whom I interact daily. In my spare time, I embrace, and teach fitness and well-being, research cultural foods and dietary restrictions, sing and teach voice parts to gospel choruses. I also love to travel. One of the best rewards I find in life is seeing others grow and succeed, I end many of my motivational talks and speeches with three simple words “Don’t Give Up”

THE HISTORY OF SOUL FOOD Soul food has a rich and important history that ties Black culture to its African roots, and that history is deeply reflected in the staple recipes and techniques. In soul food cooking, there are four key ingredients that establish a historical link to America’s dark slavery past and the African cultures that the enslaved carried with them.

Barack Obama was the 44th president of the United States and the first African American commander-in-chief. He served two terms, in 2008 and 2012. The son of parents from Kenya and Kansas, Obama was born and raised in Hawaii. He graduated from Columbia University and Harvard Law School, where he was president of the Harvard Law Review.
