leeks soup you’ll need -2 big leeks -2 or 3 big potatoes -salt -olive oil -butter -pepper you have to Rinse and cut the leeks then put them in a big pan with one spoon oil and one spoon of butter. Sautè for 10-15 minutes. Rinse, peel and cut the potatoes in small dices. Add them to the leeks and add water. The water has to cover the mix of potatoes and leeks, but they don’t have to soak in deep water. Add salt. Let it boil for approximately 20 minutes or until the potatoes are cooked. Mash the potatoes or if you want a smooth, creamy texture blend it with the blender. At the very end add pepper.
mushrooms soup you’ll need -fresh shiitake, portabella, white mushrooms -some dried porcini mushrooms -garlic -2 or 3 big potatoes -salt -olive oil -parsley -pepper you have to Rinse and cut the mushrooms then put them in a big pan with one spoon oil and garlic. Sautè for 10-15 minutes. Rinse, peel and cut the potatoes in small dices. Add them to the mushrooms and add water. The water has to cover the mix of potatoes and mushrooms, but they don’t have to soak in deep water. Soak the dry porcini mushrooms in water, then add them. Add salt. Let it boil for approximately 20 minutes or until the potatoes are cooked. Mash the potatoes or if you want a smooth, creamy texture blend it with the blender. At the very
asparagus risotto you’ll need -a bunch of fresh asparagus -1 small onion -salt -olive oil -butter -pepper -parmigiano you have to Mince the onion then sautè it with one spoon oil and one spoon butter. Sautè for 10 minutes. Rinse and cut the asparagus and sautè it together with the onions for another 10 minutes. Add Arborio or any kind of risotto rice and toast it for five minutes. Add salt and then add one cup water at a time until the rice is cooked. Once the rice is cooked, add grated parmigiano and one spoon butter and mix for two minutes. Add the very end add pepper.
Actually... ...With these recipes you can do a lot of more risottos and soups. All you need to do is to change the main vegetable. For instance, you can do spinach or broccoli risotto just substituting them with the mushrooms. Or you can do sweet potatoe or carrot, pumpkin or zucchini soup exactly the same way as if you made leeks soup. Or you can also be more experimental and try mixing different vegetables together. As an artist I know that you have a lot of creativity so I guess you will have delicious ideas! Don’t Forget to pet Fellinie!
