bones. All you need here is a feel for where the bones are. Put the chicken on a cutting board -- breast side up -- and pull out your sharp chef’s knife or poultry shears.

Cut off the wings, and cut off the legs.

Now cut off the thighs. Using your fingers, start pulling all the meat from the bones (it will pull off easily, as the meat will be tender and juicy). Lay all the white meat on one side of a platter (if you haven’t already eaten all of it while you did that pulling thing) and the dark meat on the other. Put the bones, carcass and skin on another plate.

For the larger pieces of breast meat, either cut into chunks or shred, depending on how you will be using them. Place all the bones, skin and carcass pieces into a container or zip-type bag, and freeze. These will be the base for great chicken stock or soup later.

HOW TO REHEAT

Reheating a rotisserie chicken in the oven is a no-brainer, especially if you are unable to consume the whole thing in one meal. However, doing that is quite another subject, especially if you want it as fresh, moist and delicious as it was when you picked it up.

-- Preheat the oven to 400 F.

-- Place the rotisserie chicken in a deep baking dish with high sides.

-- Add a bit of chicken stock to the baking dish -- about 1/4-inch in the baking dish. If you don’t have chicken stock, substitute water.

-- Place the baking dish in the preheated oven.

-- Reheat until the liquid is bubbling and the chicken is warmed all the way through.

This method will keep the chicken moist while reheating -- as opposed to a microwave or reheating without the added liquid, both of which would dry out the rotisserie chicken.

SAFETY INFORMATION

When purchasing fully cooked rotisserie or fast food chicken, be sure it is hot at the time of purchase. Use it within two hours, or cut it into several pieces and refrigerate in shallow, covered containers. Eat within three to four days, either cold or reheated to 165 F (73.9 C).

Rotisserie Chicken to the Rescue

If you’re fresh out of ideas (let alone desire) to make one more home-cooked meal, but ® even the thought of another take-out or curbside pickup leaves you cold during these days of unby Mary Hunt certainty and angst, I invite you to embrace these two words: rotisserie chicken.

Not exactly take-out, not completely home-cooked, think of a well-seasoned, perfectly cooked rotisserie chicken as your ace in the hole -- a kitchen assistant with an extra pair of hands to help you get delicious, home-cooked meals on the table in a flash.

These days, nearly every grocery store or supermarket -- even warehouse clubs -- offer fully roasted, hot and ready-to-go rotisserie chickens for around $5. In fact, rotisserie chickens are so readily available, the U.S. Department of Agriculture has issued safety guidelines for selecting and storing them. See below for safe handling information.

Today, I want to give you basic guidelines for what to do with a rotisserie chicken as soon as you get home.

CHICKEN FLAVORS

While some stores are now offering a variety of flavors (barbecue, lemon herb and so on), try to stick with a plain bird. You will be adding flavorings and seasonings yourself, depending on how you end up using the bird.

BUYING AND STORING

You want a chicken that is hot when you buy it. Bacteria become active between 40 F and 140 F, so it should be above that range when you pick it up. It should feel hot to the touch. Eat, refrigerate or freeze the chicken within two hours.

Over the years, I’ve asked the question “What price love?” many times and usually in a context in which the “price” paid is physical safety and emotional and psychological well-being. The threat of injury to loved ones, the stress of living in fear, the potential for lawsuits, loss of homeowners insurance and loss of the home itself are all “prices” some people pay because they cannot admit that their dog needs more help than they are equipped to give.

Not this time.

This time I’m talking actual dollars and cents. How much does it cost to bring a dog into your life?

A few weeks back, I shared the story of a couple whose puppy suffered a serious medical trauma. Unbeknownst to them, the pup was napping behind the wheel of the husband’s van, which was parked in the driveway. When the man backed up, he ran over the pup. Multiple surgeries and two years’ worth of intensive time and therapy later, the dog was a happy, leaping, bounding furry miracle of modern medicine. But the costs were enormous.

This is an extreme example, but the reality is: Stuff happens. Be prepared.

The annual cost of caring for a dog varies according to size, breed and the individual dog.

Smaller dogs eat less, so your food costs will be lower. Purebred dogs are known to have more health problems because of their narrower gene pool, which means you could end up spending more on medication and veterinary visits than you would with a Heinz 57. And you’re going to pay more to board a Newfoundland than you would to board a Yorkie.

Most canine professionals estimate the average annual costs of raising a dog to be:

The Bad Old Days

My wife and I have been doing a little downsizing lately. One thing we decided we can live without is the rather large collection of books we’ve accumulated over the past 46 years. We are donating most of them to our local library. But as I looked through the old books, I reread one of them, and it struck a chord with me. It’s an autobiography by former New York Times columnist Russell Baker called “Growing Up.”

In it, Baker tells the story of what it was like to grow up in the 1920s and 1930s. For most of us, the Great Depression is the stuff of history books and hard luck stories revealed in an occasional documentary about the era. But Baker lived one of those stories and writes eloquently about his life and those times.

His book brings the era into focus for people whose vision of history has been blurred by the good life. For me, it also illustrates the reason why we have and need a Social Security system in this country.

Many people have attempted to explain to me that America would be better off without Social Security. They point out that this nation was founded on the principles of personal freedom and that our pioneer spirit encourages people to make it on their own without government interference. As one recent letter writer told me, “If people could make it on their own in the good old days before we had Social Security, they ought to be able to make it on their own now without the government’s help!”

The problem with that argument, of course, is that many people were not “making it” before Social Security came into existence. And those “good old days” were very bad for very many people.

In his book, Baker describes the period just after his father’s death. His father left a widow and

The American Legion Needs Your Help

I came across an unusual confab outside the coffee shop today. What was different this time was the presence of younger veterans.

“We’ll help you,” a young vet said to the group. “All you have to do is contact us and we’ll be here. Or there. Or wherever you are.”

I pieced together what was going on. The senior veterans were concerned about being able to form a funeral detail. One of their group was in the hospital and it wasn’t looking good, either for the veteran or the local American Legion Post itself.

The younger veterans, probably Sandbox era, had come down to offer assistance (and home phone numbers) should they be needed for a funeral.

I stepped up next to the one who seemed to be in charge and went into my spiel.

“Join the American Legion here in town,” I suggested.

I explained that senior veterans make up the biggest percentage of membership in the American Legion nationwide. And they’re not getting younger. Day by day we lose more of them.

Maybe a Post will have 20 members ... on paper ... but only three are active. They’re physically unable to pull off most of the fundraising events like they used to, and many Posts are likely to lose their meeting facility.

Therefore, I finished, if young blood doesn’t come in and beef up declining membership, the groups would disband, gone forever.
