We recommend a defrosting time of 1 hour at 7°C. The shelf life is 12 months. Keep cool after defrosting and consume within 2 days. *You yourself decide on the number of servings from one tray - and this also allows you to set your own profit margins. For instance: selecting a portion of Umami measuring 2 x 6.5 cm (recommended dimensions) will allow you to get 78 servings from one tray and 312 per box.

UMAMI APPETIZERS & STARTERS

VEGGIE CARDAMOM UMAMI ARTICHOKE, COURGETTE & CARDAMOM A vegetarian Umami with a truly eastern flavour; the rich spices and “al dente” vegetables bring to mind associations with Turkey, the Middle East and India.

SEAWEED SENSATION UMAMI SEAWEED (ULVA) & SESAME

Ulva is an edible green sea lettuce with a pleasant, slightly salty flavour, which retains its colour when baked. When sprinkled with golden flaxseed it gains a surprising bite. For use as an appetizer, this Umami forms an ideal combination with béchamel sauce, shellfish or fish.

MACKEREL WITH A BEET UMAMI BEETROOT, SMOKED MACKEREL & APPLE

The basic sweet, earthy flavours of beetroot are pleasantly counterbalanced by the crispness of the apple and the smoky mackerel. This classic combination is highly popular among fish enthusiasts, and best enjoyed with a glass of fine red wine.

A NEW DIMENSION IN THE FIELD OF SAVOURY TREATS The Japanese word Umami means ‘delicacy’ or ‘savoury’. And both these terms describe the savoury delights that Van de Leur has introduced to the market under the product name Umami. A delicacy with healthy ingredients, which thanks to its exciting flavour sensation is set to be popular among both up-market catering establishments and specialist bakeries. Taste tests have proven that the Umami whets one’s appetite for more. Anyone who tries one can’t but help to be curious about the other flavours…

The Umami is a high-margin product, a convenient means of serving something special. Frozen Umami’s have a long shelf life. You use only what you need and return the remaining portion(s) to the freezer for storage. The Umami is baked in a 40 x 26 cm tray*, which you can divide up into smaller portions as required. You can of course, if you wish, cut it into various shapes. A small Umami in the form of a heart or some other fantasy shape often serves as the ideal garnish on a dish. The Umami offers countless variations, inviting you to express your own creativity and craftsmanship.

All you have to do is thaw the Umami, cut it into portions of the required size, and serve it either hot or cold alongside an existing dish, hors d’oeuvre, appetizer, amuse or savoury snack. The savoury segment has a successful new addition!

The vegetarian combination of goat cheese and spring onion creates a flavour experience that is both fresh and strong. This Umami pairs ideally with whitefish and a light white wine.

KALE-LICIOUS UMAMI K ALE, POTATOES & MEAT

The culinary version of a hearty stew. The “al dente” kale is absolutely packed with nutrients, and tastes the way that vegetables should. The slices of beef sausage add the finishing touch to the flavour experience. Delicious together with a glass of dark ale or stout.

SPICY CHICKEN UMAMI

PIRI PIRI CHICKEN & SWEET PEPPER A popular chicken recipe that assumes an entirely new identity in this Umami; a delicious side serving to an aperitif. The sharp Piri Piri spices and mild sweet pepper lend the chicken a spicy bite.

SAVOURY TARTLETS CONVENIENCE & CREATIVITY GO HAND IN HAND

THE PERFECT BASE FOR YOUR OWN WORK OF ART Using a Savoury Tartlet as a base, you can quickly and easily, using fresh ingredients, create a distinctive savoury snack. This semi-finished product invites you to show off your own creativity, using the garnish of your choice. Simply thaw, garnish and - if necessary - heat it, in order to lend the snack your personal touch. And the Savoury Tartlet can also be served as a cold, savoury snack at literally any time of day.

Two versions of Savoury Tartlets are available. The one has a base of spelt and quinoa; while the other has a multigrain base, absolutely packed with grains and seeds. Both versions measure nine centimetres in diameter and are filled with a tasty Hollandaise sauce.

SAVOURY TARTLET HOT (3rd row)

A neutral base ready for decoration with tasty salads, including cucumber, tomato, bell pepper and carrot. Or add a sweet variety of apple to create a heavenly snack. A dressing, sauce or a drizzle of olive oil then adds the finishing touch.

Can be prepared using all the ingredients suitable as pizza toppings, such as mushrooms, cheese, tomato or sliced cold cuts. The creative chef or confectioner can get straight to work. Serving the Tartlets hot allows the subtle flavours to really come into their own.

SAVOURY TARTLET SERVED COLD WITH A VEGETABLE BAVAROIS (2nd row)

GARNISH SUGGESTION 1 Wild mushrooms with goat cheese and green herbs. A splendid autumn recipe; mild and creamy.

Prepare the bavarois in advance, and store it in a mould in the freezer. Serve together with cauliflower and smoked salmon, broccoli and goat cheese or profiteroles with blue cheese. Colourful, healthy combinations which taste absolutely delightful served cold. The mild vegetable flavours contrast pleasantly with that of the savoury Tartlet.

GARNISH SUGGESTION 2 Spicy chicken, sweet pepper and courgette, sprinkled with grated Gouda cheese. A classic variation of the pizza concept, but with a twist. GARNISH SUGGESTION 3 Smoked salmon with spinach and truffle. A flavour sensation which is just a little out of the ordinary.
