CHICKPEA SALAD For Salad Dressing: 

Combine all the ingredients (1/2 cup fresh mint leaves, 1/2 cup chopped coriander, 1/2 teaspoon sugar, 2 tablespoon low-fat curd, 1 tablespoon lemon juice, Black Pepper, Salt to taste), and about 1/2 cup of water in the blender and make a smooth paste.

Store it in a refrigerator.

How to Proceed: 

Soak the 1 cup chickpeas overnight in the water and then boil them in the pressure cooker till the 4 whistles. Drain the chickpeas and transfer them into a mixing bowl.

Now add 1 teaspoon of cumin powder, red chili powder, dried mint leaves, salt & Black Pepper.

Add in all the diced vegetables (3 cups of chopped Onion, Green & Red Bell Pepper, Cucumber, Tomato, Spring Onion)& cheese and toss to combine.

Pour in salad dressing and toss some more to combine all the ingredients properly.

Your chickpea salad is now ready. This super fresh summer recipe tastes really delicious.


MANGO SHRIKHAND  Before starting the preparation, hung about 3-4 cups curd in the muslin cloth for 3-4 hours.  Now puree 2 big mangos with the hand blender.  Take out the think curd from the cloth and add mango puree, 3-4 crushed cardamom, 1 pinch saffron strands, 1 pinch turmeric powder, and sugar to it.  Blend the mixture till it is smooth.  Your delicious mango shrikhand is now ready- serve it with some puri or chug it plain.


LEMONADE  Take a pan and add 2 cups of water & sugar and cook on medium heat until sugar is dissolved and the liquid looks clear again. Make sure to stir it continuously.  Combine the 2 cups of lemon juice with sugar solution and add Rock Salt.  The concentrated lemonade is ready, just add water to taste when you are ready to serve.
