Who is

Sidney Schutte? Chef Schutte’s Dutch heritage, passion for traveling and four years in Asia shaped his palate and continues to inspire him to present different taste sensations in a single meal. Ingredients themselves are a source of creative inspiration. Schutte gained extensive experience in prestigious kitchens throughout Europe and Asia, including De Librije in Zwolle, headed by Jonnie Boer, who with the help of Schutte obtained a third Michelin star for the restaurant. Just seven months after the second branch of De Librije was opened in Amsterdam under his command, Schutte was awarded two Michelin stars. He has also been recognized as "SVH Meesterkok", the highest recognition a chef can achieve in the Netherlands.

My cuisine is distinctive for its outspoken flavors that pop. I create culinary experiences with multiple dishes with the finest ingredients from the best local and international purveyors, and that’s what we’ll do at Cocina de Autor. Chef Sidney Schutte

Schutte is the lead chef of restaurant Cocina de Autor of Grand Velas Los Cabos, which within one month of its inauguration was included on CNN’s list of “Best New Restaurants for 2017”. Highlighted dishes for the season include: langostino cooked in sour milk and covered in endives, leeks and dill oil; red snapper served on a bed of puréed tonka beans with oysters, Iberian ham and lychee foam, and goat cheese ice cream with roasted pineapple, lime and hibiscus dressing. At Cocina de Autor, a meal is more than food; it is a work of art exhibited on a plate; it is freshness in each ingredient and warmth in each mouthful; a show for all the senses.

THE MOST EXPENSIVE TACO

IN THE WORLD How much could one taco possibly cost?

Grand Velas Los Cabos presents “the most expensive taco in the world”, valued at no less than $25,000 dollars and served in gourmet Mexican restaurant Frida. This culinary work of art is served on a corn tortilla with flakes of 24k gold, and filled with langostino, Kobe beef, Almas beluga caviar and black truffle brie cheese. It is accompanied by an exotic morita chile salsa with civet coffee and Ley .925 tequila. Likewise, the perfect beverage to complement the taco is Ley .925 Pasión Azteca Ultra Premium Añejo tequila, which comes in a handmade platinum and white gold bottle and has a price tag of $150,000 dollars.

The creator of the taco is the resort’s Executive Chef, Juan Licerio Alcalá, from the city of Durango.

ART Blown Glass Every Sunday, Velas Vallarta celebrates Mexico with a grand fiesta held in the Convention Center, complete with traditional dishes, music and folkloric dance. It is known as the best Mexican Fiesta in the area, and as part of the cultural offerings, you’ll find products made by local artisans, including live glass blowing by Luis Rosas Rivas, with painting by his cousin Juan Carlos Balseca Rivas. During the fiesta, this team of local artists custom-creates figures according to guests’ specifications. Luis Rosas’ family business is located in the Puerto Vallarta Centro, next to Café de Olla restaurant. His passion for art and blown glass began as a child, and at age 18, he was able to make it his career and livelihood. The offering is another example of Velas Resorts’ commitment to showcasing the local art and fashion of Mexico, and is a great opportunity to create the perfect souvenir.

ACTIVITIES Artistic Workshops Casa Velas now offers the chance to express yourself and let your imagination soar during your vacation, with a number of different art workshops. You’ll learn to master painting and calligraphy techniques, drawing inspiration from various settings such as the Private Ocean Club with bay views and picturesque terraces surrounded by lush greenery. Every Monday, local artist Leon de la Vega leads relaxed one-hour classes, including: Footsteps of Miró, Calligraphy, Plein-air Painting, Drawing the Human Figure, Traces with Wine, Ocean Waves and Manuel Lepe and his Naif Art.

León de la Vega Originally from Mexico City, Leon de la Vega is the founder of Estudio-Café, a cultural center that promotes the work of local artists and authors, as well as environmental initiatives. His work has been exhibited in Mexico City, New York, Santa Fe and Albuquerque, New Mexico. He is a proponent of human health and development through art and recently participated in a TEDx talk about writing.

Beef shoulder – 2 pounds Chicharron (pork rinds) – 2 oz. Chopped carrots – 2/3 c. Chopped celery – 2/3 c. Chopped onion – 2/3 c. Minced garlic – 4 cloves Chopped leeks – 1/3 c. Chopped pineapple – 2/3 c. Chopped cilantro – 1/3 c. Salt – 2 tsp. Pepper – 2 tsp. 10 red tortillas Guajillo chile dressing – 1/3 c.

PREPARATION

Cook the beef shoulder with the carrots, celery, onion, leeks, pineapple, salt and pepper over low heat for two hours. Remove the beef from the stock and shred. Sauté the shredded beef in oil, garlic, onion and cilantro. Serve in red tortillas topped with crumbled chicharron and guajillo chile salsa.
