Mushroom and ‘steak’ steamed pudding

These soft, steamed puddings are so comforting and delicious. The filling should have a strong flavour to balance with the subtle, soft pastry. Time to prepare 15 minutes Time to cook 1 hour Makes 4 individual puddings Filling l 1 tbsp olive oil l 1 onion, chopped l 2 garlic cloves, chopped l 200g/7oz mushrooms, sliced and chopped into a variety of shapes l 150g/5oz Quorn vegan pieces l 1 tbsp red wine (optional) 14

½ tsp smoked paprika 1 tsp balsamic vinegar ½ tsp tamari soya sauce ½ tsp mixed herbs 200ml/8fl oz vegan gravy You will also need four pudding moulds, approximately 5cm deep x 8cm across

Pastry l 200g/7oz plain flour l 100g/3½oz vegetable suet l ¼ tsp salt l 100ml warm water l Vegan margarine, for greasing
