Vegetable biryani
This dish can be made in a number of ways. Essentially it is rice cooked with spices, dried fruit, nuts, and vegetables with a curry sauce. Time to prepare 15 minutes Time to cook 45 minutes Serves 6
Curry sauce l 1 tbsp olive oil l 1 onion, finely chopped l 2 garlic cloves, chopped l 1 tbsp mild curry powder l 1 tbsp sultanas l 2 apples, peeled, cored and chopped l 200ml/7fl oz vegetable stock l Salt and pepper to taste 8
Biryani l 1 tbsp olive oil l 1 onion, chopped l 2 garlic cloves, chopped l 1 tbsp curry powder l 50g/2oz sultanas l 75g/2½oz chopped almonds l 2 carrots, peeled and chopped l 1 cauliflower, cut into small florets l 300g/10½oz vegan Quorn chunks l 300g/10½oz easy cook rice l 500ml hot vegetable stock
Garnish l 50ml/3 tbsp vegan natural yoghurt l 30g/1oz toasted flaked almonds l 3g (a sprinkle) fresh coriander
