es, the big day has come and gone, and it couldn’t have been more perfect. Our 1940s theme went over well, and our guests had a blast dressing up in their vintage attire. I felt fabulous in my dress (for a jump start on fitness, see page 14), and we both said our vows without tearing up (well, not too much anyway). At the reception, Christian from Astro Entertainment did a wonderful job of keeping things on schedule and keeping people on the dance floor, and the groom’s cake we selected was better than awesome (see page 30 for ideas). Now that it’s all said and done, there’s a small part of me that wishes I could do it all over again. Even though the last few weeks of little details were stressful, I still enjoyed the excitement of it all: picking out the dress with my mom (for ideas, see our fashion spreads on pages 22 and 32), sampling some of the best cupcakes I’ve ever had and spending one last crazy night with just the girls. Looking back, there’s not a detail I would change, and I know that even though the wedding is over, my brand new life with my husband—still so weird to say!—is just beginning.

If you’re planning a fall wedding, your menu should feature warm, alluring and romantic recipes that are nourishing and pleasing to the palate. Choose dishes that feature squash varieties as well as root vegetables. Keeping in season is the key to any well-structured menu so stay mindful of the bountiful autumn crops available for the freshest and most flavorful dishes. Remember that even though the season calls for more substantial comfort foods, the menu is still an important aspect for you to express your culinary style so don’t be afraid to let your caterer experiment with unique flavors by adding uncommon twists to simple classics.
Signature Drinks Your guests will appreciate a little something to take the chill off so give them a warm cup of mulled cider spiked with apple brandy and garnished with cinnamon sticks and orange twists. For a crisper cocktail, try spiceinfused sangria with hints of anise, peppercorns, cloves, cinnamon and ginger.

For a winter wedding menu, there’s nothing more pure or elegant than an all white spread. Imagine a crisp, white ballroom decorated with cream candles and arrangements of white peonies. Perhaps a peaceful snowfall can be seen through the windows looking out. Your guests enter the room to find a decadent layout of matching foods and are delighted to discover that not only do the courses relate in color, but they also complement one another in being amazingly gratifying to the palate. Signature Drinks Of course champagne and white wine is appropriate for your theme, but you should also provide a couple specialty drinks to dazzle your guests. White chocolate martinis with shaved dark chocolate sprinkled on top makes a sophisticated and scrumptious cocktail. You may choose to go with a classic White Russian, always

Appetizers Soup is also fitting for a winter first course, and what better option than white asparagus soup, a rich and creamy start to an exquisite meal. Other pale pleasers may include pureed white bean crostinis garnished with fresh tarragon or delicately caramelized scallops served on tiny puff pastries. Main Course For this polished affair, forgo the steak and look to the classic white meats. Chicken breast stuffed with crab meat and topped with shaved Asiago can be served alongside white truffle mac and cheese and roasted parsnips. A lighter entrée may call for pan roasted white sea bass with cauliflower-almond sauce. This divine main dish can be paired with white pearl basmati rice pilaf and champagnesimmered artichoke hearts. For a vegetarian dish, try wild mushroom ravioli covered in white wine sauce and sprinkled with grated nutmeg. Sweets Given the food trend, your guests will be expecting a typical vanilla cake with white icing. Wow them by unveiling a smorgasbord of assorted mini cakes on pedestals. Mix and match flavors such as eggnog cake with bourbon cream cheese frosting, almond cake filled with white chocolate ganache and minted white chocolate truffle tortes. Another fun option is to set up a fondue station for your guests to help themselves to an assortment of divine dips. Imagine tureens of white chocolate fondue surrounded by squares of angel food cake, homemade marshmallows, vanilla bean cheesecake, white chocolate macadamia cookie bites and Irish mascarpone HRB cream filled petit fours. n
Appetizers While spring and summer are great for crisp salads, fall menus should boast heartier flavors. Miniature soups make fun and soothing hors d’oeuvres so serve up some pumpkin bisque shooters with bleu cheese crumbles for a tasty teaser. Since root veggies are plentiful, have your caterer experiment with a variety of canapés using colorful veggies such as beets, carrots and turnips. The veggies can be grated and sprinkled atop a puff pastry and chèvre cheese or shaped into fritters paired with caper cashew aioli. Main Course Carry the pumpkin pattern into the second course with roasted butternut squash ravioli covered in sage brown

ou’ll strive for beautiful hair and makeup, a drop-dead gorgeous wedding gown and a pearly white smile on your wedding day. But don’t forget to match these features with a bangin’ bod that not only shows off your fierce figure but also is evidence of a healthy beginning as you embark on your new life with your groom. So what’s the best way to get that bridal body you’ve always envisioned? Teri Twine, trainer at Wareing’s Gym in Virginia Beach and coordinator of the gym’s Buff Brides Boot Camp, says that boot camps are the way to go. “Boot camps are structured, high intensity,

high energy workouts that give you more bang for your buck and show maximum results in minimal time. Brides usually have a set deadline and goal in mind when they join the program.” Her boot camp is open to brides as well as bridal party members and includes a specialized routine that focuses on all those pesky problem areas that you wouldn’t think of inviting to the wedding. “The workout is a large part of fitting into the dress, stress relief and building confidence,” Twine adds. The program consists of high intensity, fat burning workouts using strength training, metabolic bodyweight circuits and cardio. Twine caters the routine to any fitness level and uses a variety of tools, including free weights, kettlebells and TRX suspension training for two days a week throughout a five week period. But it’s not only about exercise. “Diet is a huge part of the equation, probably 80 percent. You cannot out-train a bad diet,” Twine explains. So, sorry brides, there’s no quick fix for a sexy wedding day figure, but the good news is that the results don’t lie. “I have received excellent feedback from my brides, even attending several of their weddings myself,” says Twine. Who: David King, a logistics manager for Yorktown Materials, originally from Auburn, Ala., and Rachel Hendrickson, an interior designer and professional organizer from Newport News. When: Jan. 30, 2010. Where: First Presbyterian Church in Hampton and the Crowne Plaza Hampton Marina Hotel. Guest List: Approximately 200 guests, including friends and family from Alabama, Mississippi, Connecticut, Kentucky and Texas. Where They Met: The couple met at Auburn University in Alabama through mutual friends. They dated a year before getting engaged. The Engagement: A childhood friend came to town to celebrate her birthday with David and Rachel. David had planned a special birthday scavenger hunt for the friend and was waiting at the last stop with
a ring for Rachel. After she said yes, the happy couple went back to his parents’ house to find friends and family who had flown in from all over for a surprise engagement party. Wedding Wishes: “I wanted the wedding to really feel like us,” Rachel says. “David’s a man’s man. He’s a realist, and he’s very raw. I’m a creative dreamer.” The couple created a juxtaposition of vintage glam and rustic elements such as mercury glass, silhouettes and platinum with birch bark, burlap and moss. “The two looks balanced each other out,” Rachel says. “Opposites really do attract.” What’s Next: Rachel and David traveled to St. Lucia for a week after their wedding and are now enjoying married life. “Being married is the most challenging and the most rewarding thing I’ve ever known,” Rachel says.

Impressional Sweets modeled David’s groom’s cake after the guitar, and Rachel’s dad built a mini replica of the guitar case for the cake to sit in. RIGHT Cake: Johnna Hamlin of Impressional Sweets in Hamp-
ton created a naturally scrumptious white almond sour cream cake with white butter cream icing. The bride and groom’s initials were assembled from moss and provided a stylish and organic backdrop. Crayons: The kids’ table was stocked with crayons and blank crowns to decorate, since the couple’s last name is King. Marshmallows: Guests were invited to fill a cup with hot chocolate that served
as their favors so that they could have something warm to drink on the snowy ride home. Snowfall: When Rachel heard reports of snow for her wedding day, she remained calm and later admitted that she had secretly hoped for snow because she knew it would be beautiful. “I’ve always considered winter weddings to be unexpectedly romantic and intimate,” she says.

A “CHIC FARMER’S MARKET” COMES TO LIFE IN A PICTURESQUE BACKYARD

Who: Lauren Shira Brand, speech language pathologist, and Leo Zabezhinky, who works in economic real estate development. When: Aug. 8, 2010. Where: A private residence in Virginia Beach. Guest List: Approximately 250 friends and family members. Where They Met: Lauren and Leo met during college at a conference in Washington D.C., thanks to the matchmaking skills of Lauren’s college friends and Leo’s high school friends. They spent two days together and kept in touch afterward. Soon, they knew they had found something special. The Engagement: Leo surprised Lauren one evening at their apartment in Miami by showing up dressed in a suit and carrying a bouquet of roses. After reading her a moving
letter, Leo pulled out the exquisite ring he had designed himself and asked the question. After Lauren said yes, Leo led her outside where she found friends and family waiting in a limo so they could all go celebrate together. Wedding Wishes: The couple’s idea for their wedding was farmer’s market chic. They wanted to be outside, surrounded by water and soft candlelight, with a live band to keep the party’s energy going all night. What’s Next: Lauren and Leo are loving Miami. Their great jobs, wonderful friends and the new life that they have built for themselves has created a paradise for the newly married couple.

cigars and a bar that served cosmopolitans and scotch. BELOW Carpe Donut: To add to the farmer’s market feel, Lauren and Leo had an extra special treat for their guests—a donut shop. Guests could snack on the sugary treats for an extra energy boost so they could continue to dance the night away. Rings: Leo designed Lauren’s cushion cut, pave diamond engagement ring and matching
micro pave eternity band with the help of a private jeweler in downtown Miami’s diamond district. The couple then chose a classic platinum wedding band for Leo from the same jeweler. First Dance: The couple danced to Kenny Chesney's "You and Me." RIGHT Ceremony: The couple’s vision for the ceremony was to have everyone they love surrounding them under their chuppah, while the entire
group was surrounded by nature. Feet Treats: Guests were treated to complimentary footzy rolls for a relaxed reception. Dress: Monique Lhuillier designed Lauren’s dress, and her veil came from her mother. Her bouquet was filled with orchids, peonies, hydrangea and garden roses. Also included in the bouquet was a scroll that included a blessing written by each of Lauren's bridesmaids.

GROOM’S CAKES ARE MAKING A DELICIOUS COMEBACK— AND THEY’RE MORE EXTRAVAGANT THAN EVER.

A
s a bride, you’ll be making many important decisions such as how many bridesmaids to have, which dress is “the one” and which style of invitations to choose. Allow him to take part in the planning and share the spotlight by letting him choose his very own groom’s cake—any flavor, any style. Groom’s cakes began during the Victorian era in England, but the sweet treats soon made their way to the United States and became a predominately Southern tradition. The cake may be served at the rehearsal dinner or reception, and some even box up individual slices to send home with unmarried women— think of it as an extremely delicious consolation prize. Legend has it that if the woman sleeps with the slice of groom’s cake under her pillow, she will dream of her future husband. Early groom’s cakes were fruitcakes, but today, flavors range from classic chocolate or vanilla to cookie dough-filled double fudge caramel cheesecake with coconut-pecan frosting topped with peanut butter Oreos, Kit Kat bars and miniature marshmallows. Aside from flavor, the cakes can be as simply or elaborately decorated as the groom chooses. Some opt for a standard layer cake with a decadent topping while others want the sweet treat to represent their favorite hobby or sports team. Two local bakers have created these elaborately decorated and purely delicious (oh yeah—we tried them all) cakes to give you an idea of how ornate and original a groom’s cake can be.

A BANG FOR THE BUCK DRESSED UP POPCORN BALLS ADD FUN, FLAIR TO YOUR WEDDING MEMENTOS Words and food styling by Patrick Evans-Hylton
Recipe In a large metal bowl or wok, spray cooking spray lightly to coat. Place 4 quarts popped corn in the bowl. In a medium saucepan, melt 6 tablespoons butter over low heat then add 5 cups miniature marshmallows, stirring constantly until melted. Pour mixture over popped corn and mix with a spoon to evenly coat. Spray hands lightly with cooking spray and gather popcorn in hands, mixing and rolling into a ball shape. Place on a parchment paper-lined cookie sheet. Evenly sprinkle edible gold glitter on balls and allow to sit to firm before wrapping.

opcorn is a food item that is generally loved by all, and one of our favorite favors for most any occasion are fancy popcorn balls. You can use corn that you’ve popped yourself, but we love the Funfetti offerings from Jody’s Gourmet Popcorn in Virginia Beach. Jody’s offers a great assortment of flavors, but what makes the Funfetti special is the colorful mix of hued flakes with a sweet candy coating. The colors change seasonally, but you can contact Jody’s in advance to custom color the popcorn (great for matching wedding and party themes). We make our popcorn balls quickly and easily using a recipe similar to one used to make crispy rice cereal bars and then embellish those by giving them a roll in some edible gold (or silver) glitter. The balls are wrapped in light, airy tulle and tied with a ribbon. It’s a fun, sophisticated treat.
