or over a decade, Kathryn’s Bistro and Martini Bar has been leaving Emerald Isle diners raving night after night. Voted #1 Fine Dining on the Crystal Coast five years in a row, Kathryn’s remains Emerald Isle’s premier restaurant, drawing praise from both traveling visitors and grateful locals alike. Kathryn’s success has been built upon its unrivaled menu, featuring fresh, local seafood and Certified Angus Beef. In addition to the menu, Kathryn’s offers nightly features, including innovative selections of beef, fish, and soft shell crabs. While every menu item is sure to please, Kathryn’s Maryland Crab Cakes have become the restaurant’s signature entrée. Made with fresh, local lump crabmeat, even folks from Maryland (the owners’ home state before relocating to Emerald Isle in 1995) admit that Kathryn’s crab cakes are the best! Kathryn’s also puts a twist on traditional southern cuisine with the Carolina Classic: Kathryn’s own version of shrimp and grits – a true southern favorite! Kathryn’s is excited to announce an addition to the menu this year. After repeated requests from diners, Kathryn’s has added lobster to the menu. Diners no longer have to wait for lobster to be a nightly feature – they can come in and enjoy lobster every night of the week. upscale menu selections are not the only reason people keep coming back – Kathryn’s has become Emerald Isle’s favorite place to enjoy a martini. Housing over 30 different variations of martinis, including both exotic concoctions and the traditional favorites, you are sure to find something to suit your fancy. Kathryn’s offers an extensive selection of wines by the glass and bottle at a great value. Owners Ken and Kathryn Ayre are thrilled to continue offering superior food alongside unparalleled employees. “The expertise and loyalty of our team has contributed greatly to our long term success,” says Ken, who is very grateful for his employees – many of whom have been part of the team since the doors opened in June 2004. More than ten years later, the family business is still firstclass all the way. The combination of the relaxed, yet elegant atmosphere, superb food, and dedication creates a dining experience you do not want to miss! For more information, please visit kathrynsbistro.com.

iscover a place where white sandy beaches, historic seaports and pristine nature seamlessly combine. Where boaters and golfers, sun-seekers and Civil War buffs all find happiness. Where everyday life becomes something truly spectacular. Discover the Crystal Coast. A collective name for North Carolina’s Southern Outer Banks, the Crystal Coast spreads
from Cedar Island in the east to Swansboro in the west and from the Bogue Banks in the
south up north to New Bern. It includes the beautiful beach areas of Atlantic Beach and Emerald Isle as well as the historic towns of Beaufort and Swansboro. This extraordinary coastal area boasts some of the best beaches on the East Coast but lacks the crowds and traffic which plague many coastal communities. And it is all set in one of the most historically important areas in North Carolina. From swashbuckling pirates to Civil War battles, this region has seen some interesting times. Tour important Civil War sites such as Fort Macon, which was bombarded by a Union land-sea operation, or the battlefield of the famous Battle of New Bern, in which Union forces took control of the important city.

aze upon the roaming wild horses, fish by the shore, walk the nature trails, search for shells, kayak or simply sunbathe by the ocean. Made up of three barrier islands—North Core, South Core and Shackleford Banks—The Cape Lookout National Seashore is home to a wealth of activities both on and off the water. However, what makes this destination especially special is its 163-feet high lighthouse that has undergone a significant amount of history. Preserved by the Friends of Cape Lookout National Seashore, the Cape Lookout Lighthouse serves as one of the most admired attractions in the Outer Banks. In order to help guide boats passing through the Atlantic Ocean, lighthouses were built every forty miles along the sandy coast of the Outer Banks. By 1812, one of the first lighthouses to be built, the Cape Lookout Lighthouse, was completed after 8 long years of construction. The wooden structure stood at 96 feet tall and was painted with a red and white striped design. However, because the tower was too low and its light was only visible from eleven miles away, the mariners soon realized it was not sufficient enough. It wasn’t long after that, that the government reconstructed the lighthouse to be 163 feet tall with 9 foot thick walls and installed a new, enhanced light. The new sturdy structure not only helped guide ships throughout the ocean successfully, but it served as an example for the other lighthouses along the Outer Banks shore such as Bodie Island, Currituck Beach and Cape Hatteras. In order to stand out from the others, Cape Lookout was given a black and white checkered diamond pattern and had a lifesaving station built in for fisherman to use as shelter during dangerous storms. Over the past thirty years, the lighthouse has attracted millions of people and continues to serve as a symbol of history and freedom for North Carolinians. Once you reach the Cape Lookout National Seashore by boat or ferry, you will arrive at the base of the lighthouse, where your adventure begins. Open to the public Thursday through Saturday, mid-May– September, visitors are welcome to climb on Cape Lookout! the 207 steps it takes to get to the gallery VISIT US AT: app.crystalcoast.guide located at the top of the lighthouse, visit the Light Station Visitor Center and browse through the historical exhibits at the Keepers Quarters Museum. Although the Cape Lookout National Seashore is known for its historical lighthouse, there is much more to discover on this strip of land running from Ocracoke Inlet to Beaufort Inlet. Go swimming, collect seashells and treasures along the shore or simply sunbathe on the beach. Let your child become a Junior Ranger for the day, go kayaking or search for wildlife including the infamous wild horses. With the Cape Lookout Lighthouse as your backdrop, the Cape Lookout National Seashore is a must while vacationing in the Outer Banks to experience memorable times at an unforgettable place. c

As one of the oldest towns on the Bogue Banks, Atlantic Beach sprouted up from a beach pavilion built in the late 1800s to provide oceanfront entertainment for tourists staying across the sound in Morehead City. By the 1920s, and after several business deals, a new Atlantic Beach opened in an area known as the “Circle” on Bogue Banks. This new area boasted two bathhouses—one for men and one for women—and quickly prospered with the addition of a bridge that connected Atlantic Beach to the mainland.

Morehead City
Fall in love with this historic and scenic seaport
trip to the Crystal Coast is not complete without experiencing the scenic seaport of Morehead City. The waterfront historic district is bustling with an exciting collection of marinas, fishing charters, tour boats and friendly faces. Promenades, rich history, restaurants, antiques, art galleries and unique shops are also to be found. Located just off Arendell Street, between 4th and 14th Streets, this area is a must-stop for any vacationer looking for a great meal, deal or adventure. Morehead City celebrated its 155th anniversary in 2012, paying homage to its long history as an important shipping and fishing port in North Carolina’s history. The town was established by a group of investors who sought to take advantage of the deep channel of Beaufort Inlet and build a rail to Goldsboro. The town was laid out in city blocks, much of which still exists today. In the mid-ninteenth century, John Morehead, the 29th Governor of North Carolina, purchased 600 acres of property from a powerful family in Carteret County, where the Shepard Point Land Company was formed and the first lots were sold. Due to the large port that was developed, Morehead City grew significantly and continued to experience a steady demographic and economic growth until the Civil War.

Speaking of fishermen, Morehead City is home to the popular Big Rock Marlin Tournament, this year with 4 participants: EZ Boy, Last Call, Mama Who and MJ’s. Returning to Morehead City for the 57th year, the Big Rock Tournament takes place June 5th to the 13th and will have several new prizes, sponsors and entertainment. Last year, the winning blue marlin was caught just 4 hours and 35 minutes into the tournament and weighed in at 754.3 pounds. Today, this is the third largest blue marlin in Big Rock history and the biggest of this century. Evidence of the fruitful fishing industry can definitely be appreciated at the dinner table, and Morehead’s waterfront has long been famous for its fine restaurants, featuring all kinds of fresh seafood. Enjoy the catch of the day at one of the waterfront eateries or a classic Southern meal in one of downtown’s historic buildings. The selection of excellent restaurants is diverse with everything from ethnic fare to hearty breakfasts. Morehead City dining offers much more than fresh seafood dishes. Here you will find a variety of restaurants to choose from, whether you are looking for a romantic sit down dinner or simply an appetizer and cold

However, during the fight, federal troops occupied the town. Morehead City eventually became a popular vacation spot by those traveling up, down and to the East Coast and not only an important part of history, but of North Carolina’s economy. Since then, Morehead City has become known as the “Summer Capital by the Sea” (minus a few years during and following the Civil War when the town was occupied by Federal troops) and has been a popular vacation destination and fishing port. In fact, during the 1880s and 1890s, several fishermen moved their houses from Shackleford Banks to Morehead City between 10th and 15th Streets, becoming a crucial part of the fishing industry and economy of the town. Today, Morehead City’s rich seafaring heritage is evident around every corner. The waterfront area offers many half-day, full-day and overnight charters, and people come from around the country to experience the top notch fishing. With the Gulf Stream only 30 miles offshore, anglers of all ages hook a wide variety of fish and bring them to the docks after 4 p.m. Watch as the fishermen bring in catches of grouper, tuna, snapper, mackerel, mahi-mahi and red drum and ice them down on the dock overlooking beautiful Sugarloaf Island.

Here on the Crystal Coast, residents are in tune to the trials of the turtles and have taken it upon themselves to do their part to help protect these fragile creatures. Opportunities for recreation abound, too. Vacationers are invited to use the local wildlife boat access ramp. Explore the White Oak River by canoe or kayak, or rent a boat for an exciting fishing charter. Cyclists will love the 25-mile Swansboro Bicentennial Bicycle Trail, which travels along the Croatan National Forest and Cedar Point Recreational Area. Venture by ferry or private boat to Hammock’s Beach State Park on Bear Island to experience Onslow County’s coastal shores in a rustic setting. Bear Island served as an Indian hideout in the Tuscarora Wars of 1711 and 1713. Another gem among Swansboro’s notable sites is Huggins Island. Comprised of 225 acres and located at the mouth of the White Oak River, the island is important because its natural habitats and vegetation include a maritime swamp and lowland marsh that provide homes for coastal wildlife. So slow down a bit and experience the nostalgic atmosphere of Swansboro, a friendly and historic seaport with many stories to tell. For more information, visit www.tourswansboro.com c
Swansboro A historic waterfront with stories to tell
P
erched along the shores of the White Oak River, Swansboro hints of a simpler time in North Carolina’s past. At more than 200 years old, the historic waterfront haven rests on rolling hills, looking over the scenic river. Built on the remains of an Algonquian Indian village, Swansboro traces its beginnings to the 1730s, when Jonathan and Grace Green moved south from Falmouth, Massachusetts and settled here. Swansborough, as it was originally known, was incorporated in 1783, making it the oldest town in Onslow County. Named after Samuel Swann, prominent in North Carolina’s preRevolutionary history as Speaker of the North Carolina House of Representatives, the town became an established seaport in 1786. Today, Swansboro is known as a quiet and unique waterfront town, with a vibrant arts community and many special events throughout the year. In fact, the oldest festival in North Carolina, the Mullet Festival, takes place here the second Saturday in October. Business showcases, oyster roasts, open houses, arts festivals and firework displays bring people from around the area to this small town year round.

of the many farm stands and possibly even stopped to snag some of the precious bounty provided by area farmers. Here you’ll see an abundance of fresh goodies, including vibrant yellow squash, zucchini, sweet corn, okra, butter beans, grapes, luscious watermelon and cantaloupe, peaches, an assortment of berries, herbs and so much more. Some markets even offer handmade crafts as well as art, baked goods and jams. While the big season for farmers’ markets lies between the beginning of May and Labor Day, a few of the more well-known farmers’ markets are open all year-round and allow you to sample all sorts of local treats that burst onto the scene well after summertime. Some of the favorites here are sweet potatoes, acorn and butternut squash, pumpkin, broccoli, cabbage, carrots, collards, kale and wild mushrooms. Let’s not forget the main attraction that draws folks from all around to North Carolina’s shores: the fresh bounty of seafood. Fishing has been a part of Crystal Coast heritage for more than 400 years, from the whaling industry in the 18th century, to the mullet and oyster trade in the 19th century, to the thriving modern seafood industry of today.

During various parts of the year, seafood markets will supply locally caught offerings of shrimp, clams, oysters, scallops, soft shell crabs and a rich assortment of fish including rockfish, sea bass, rainbow trout, tuna, mahimahi, snapper, bass, flounder, swordfish, tilapia and sturgeon, just to name a few. During your visit to the Crystal Coast you can stock up on local veggies, fresh fruits and seafood to enjoy at home, or you can prepare an extraordinary meal using these ingredients inside your beach home. Another fantastic option is to visit a restaurant that features these local gems on their menu and see what the culinary masters can whip up. Some of the most popular seafood dishes you’ll find on restaurant menus are shrimp burgers (fried shrimp on a bun with coleslaw and sauce), clam chowder and anything made out of crab. Perhaps the most famous way to serve crabmeat is in the form of crab cakes. Every chef has their own recipe, and of course every chef claims that their recipe is “the best there is,” although few are willing to share the secret ingredient. Hard shell crabs are commonly found on restaurant menus served steamed and plated with small mallets to crack open the shells and pick out the sweet meat. From the first full moon in May until late summer, soft shell crabs are found in eateries prepared fried, broiled or sautéed. The fresh catch of the day is also served in an endless amount of ways—steamed,

fried, blackened or “Calabash-style,” which means lightly breaded in seasoned cornmeal. Area chefs use their creative license to create delicious dishes you could never dream up on your own, combining seafood and fresh ingredients from local farms. However, the most famous dish in the Tar Heel state has to be Carolina barbecue. First, understand that the word “barbecue” and the word “grilling” are not synonymous, and in this neck of the woods, barbecue means pork; not chicken or beef. Carolina barbecue is a combination of pork, heat and smoke that makes for tender, rich, succulent meat that is chopped and usually paired with a thin vinegar sauce. There are some varieties in the way barbecue is cooked, but nobody is more proud of their barbecue than North Carolinians. Whether you choose barbecue, seafood or juicy steak, you’ll be delighted by the dining options on the Crystal Coast, from casual family restaurants to upscale eateries—or dining in the comfort of your beach home. But no matter where you eat, rest assured you’ll get a scrumptious helping of local treats with a side of that good old-fashioned Southern charm with every meal. c
BEER D RINKING The New Era of Crystal Coast Crafty
C
raft beer has arrived on our Shores! It is no longer the PBR your parents cut their teeth on, Budweiser or Coors you are so used to drinking. Beer has matured to a respectable accompaniment to even the most gourmet of meals. It can be paired, and is now being offered with, many dishes that are prepared in the finest restaurants around this beautiful coastal region. There are many styles of beer that can appeal to almost everyone, even those folks that say “I don’t like beer.” From lighter pilsners and amber ales, darker porters and stouts, to even fruit flavored beers with raspberry and cherry lambic or peach ales, there are plenty to choose from. The most interesting are those aged in oak, brewed with bourbon or fermented with grapes such as Pinot Noir or Muscat to make an interesting and tasty brew. The most exciting trend is the new love for sour beers. Normally, not love at first sip, so take a few sips! We need to understand our nation’s history to understand our drinking habits and the growth of adjunct beer profiles. In the United States, breweries reached their peak in 1873 when over 4,000 breweries were licensed by the Internal Revenue Department. This was largely due to inefficient delivery systems requiring more local breweries to keep their products fresh. Then in 1919 with the passage of Prohibition with the Volstead Act, America’s breweries and distilleries virtually ceased to exist! As the country progressed after prohibition we in North Carolina were stuck in a time warp of sorts. The progression
of craft beer was neither fast nor steady. The industry suffered with some disinterest in the 1970s when the traditions and styles brought over by immigrants were disappearing. Only light pilsner beers appeared on the shelves and in bars. By the end of the decade only 44 brewing companies existed in the U.S. But, something took place which inspired a change in American beer culture. In 1976, American craft brewing emerged with the founding of The New Albion Brewery in Sonoma, CA by a homebrew enthusiast. The vision and passion
of craft breweries began to inspire different areas of the country to acquire their own taste for different brewing styles. This momentum was driving volume growth across the country except for a few states which outlawed beers containing an alcohol content of over 5.9% ABV. Hence, North Carolina was stuck in a near beer attitude and was unable to participate in the craft beer revolution until 2005 when House Bill 392 lifted the 6% ABV Cap to a more reasonable 15% ABV. The grassroots campaign organizers stated, “We called, we wrote, we conquered. We popped the cap!” By popping the cap, the growth of craft beers has been overwhelming in North Carolina. So, next time you are offered a beer, try not to say, “I don’t drink beer,” because there are too many styles of beer that I bet you haven’t tried yet. We encourage you to go on a craft beer adventure while vacationing here. Crystal Coast has so many restaurants, music venues and stores offering lots of craft beer choices, so we say, “Go explore our 85 miles of coastline and find your crafty beer experience along the way.” c

Docktails:
THE OFFICIAL BEVERAGE OF SUMMER Summer is a magical time that is with us throughout our lives. From days doing nothing between school years as a child to days doing nothing while on vacation from work as an adult, summer is a season of rest and relaxation. We love sitting outside drinking in the sun—and later the millions of stars illuminating a dusky twilight sky—while drinking some adult libations.
Gone are the days of whirring up cocktails with mixes filled with artificial flavors and colors. Mixed drinks don’t need to be work, but they do need to be fresh—and unique. Here we offer four of our favorite imbibes—quick and easy, fun and flavorful—to enjoy throughout the summer—perhaps sitting out on your balcony or deck, under the sun and under the stars.
Rad Red Watermelon Cocktail Ingredients 2 cups cubed and seeded watermelon 2 ounces vodka 1 ounce melon liqueur, such as Midori
2 tablespoons lime juice (juice of 1/2 lime, approximately) 1 cup ice Watermelon wedge
METHOD
Add watermelon, vodka, melon liqueur, lime juice and ice in a blender and blend until smooth. Pour into glass and garnish with a small wedge of watermelon. YIELDS 1 SERVING
Strawberry Mimosa Strawberry Coulis Ingredients 1 cup fresh strawberries, caps removed 1/2 cup sugar 1 tablespoon lemon juice
Mimosa Ingredients 8 tablespoons fresh orange juice (juice of 2 oranges, approximately) 1 bottle (750 mL) sparkling wine Whole fresh strawberries
for garnish METHOD Make the strawberry coulis: combine the
strawberries, sugar and lemon juice in a medium saucepan and bring to a boil over medium-high heat. Reduce heat and simmer, stirring continually, for about 5 minutes. Puree the strawberries in a blender until smooth, and then strain or press contents through a fine sieve. Chill at least 2 hours before use; will keep in refrigerator up to one week. Make the mimosa: spoon 2 tablespoons of strawberry coulis and 1 tablespoon of orange juice into each champagne flute. Top off with the sparkling wine. Garnish with the fresh strawberries, either sliced and dropped into the glass, cut and placed on the glass rim or whole on cocktail skewers. Gone Golfing Crystal Coast’s golf courses provide a fun challenge for the beginner up to the professional
S
ummon your inner Jack Nicklaus, and tee off at one of the many first-rate courses around the Crystal Coast. With more than 500 golf courses across the state, North Carolina is a popular destination for die-hard golfers. And the Crystal Coast, with its temperate climate, seaside terrain, and scenic nature, is definitely a large part of the appeal. From coastal marshes and sand dunes to farmland and forests, the Crystal Coast’s varying terrain creates a wonderful canvas for any golf architect. Famous course designers have all lent their talents molding this seaside landscape into stunning fairways and greens, creating championship courses and many memorable holes. Courses here on the Crystal Coast blend seamlessly with nature, many with water views of the ocean, inlets or sounds, some looking right over the Intracoastal Waterway. Inland courses are set amid towering pines, pristine forests and coastal marshes. Don’t be surprised if you are joined by herons, deer and other wildlife even just a few miles away from the bustling beaches. The natural beauty of this area shines through at all area courses, providing a serene environment for total relaxation. But don’t get too relaxed. There are definitely some challenging holes throughout the Crystal Coast—challenging enough that golfers keep coming back again and again to lower their handicap. Of course, most courses were designed with both the professional and beginner in mind, so even a first-time golfer can enjoy a day out on the links at nearly all of the nearby courses. Most golf courses also offer lessons for every level of golfer. Whether you need to tweak your swing or get a full introduction to the game, onsite pros are there to help. Club rentals are also available. Top quality service and club houses are standard at area courses, so if you can’t get your game up to par—or under par, we should say—stop in at the clubhouse for a tasty beer and meal. Then explore the pro shop and find top-of-the-line clubs, clothing, shoes and everything you need to live the golfing lifestyle.
With sub-tropical weather, golfers are lured here year round. But perhaps the best time to hit the links is the spring and fall, when the temperatures cool and the beach crowds return home. So try one, try all—Crystal Coast golf is an experience all visitors should enjoy. Keep in mind that most courses require scheduled tee-times, so it is best to call ahead. c

the winter our area offers good fishing opportunities for redfish and trout inshore and wahoo and bottomfish in the ocean. No matter what time of year it is, the Crystal Coast is an absolute paradise for recreational fishing and offers anglers of any age or experience a chance to catch big fish! With so many different species to catch and a year-round fishery inside and out, you can believe that the Crystal Coast is ready…it’s just waiting for you to get out and go fishing! c

plenty of activities for you and your family to enjoy! On those balmy summer days when you just can’t seem to cool off, there’s nothing like running full speed across the beach and jumping in the ocean, letting the cool waves splash around you. Or perhaps you’d rather take a dip in more tranquil waters of one of the nearby inlets. Swimming, surfing and wave riding make for an afternoon of fun that the whole family can enjoy together. Want to see what’s happening under the surface? The Crystal Coast is one of two spots in North America where the warm waters of the Gulf Stream head toward the coastline, making for perfect diving conditions. Clear water, exciting shipwrecks, colorful fish and frequent large animal encounters are just a few of the reasons that Morehead City is number one among North American diving destinations and among the top five dive spots in the world, according to the readers of Rodale’s Scuba Diving Magazine. Diving is a great way to see the Crystal Coast from a whole new perspective. For those who want to see the sights without getting wet, consider renting a single or tandem kayak and spending the day on the inland waters paddling to your heart’s content. Explore the quiet marshes and estuaries while gazing across a natural habitat filled with coastal birds and marine life. You may even encounter a bottlenose dolphin on your journey. Pack a picnic lunch, and once you get hungry, stop at a peaceful island to revitalize your energy and bask in your surroundings. While you’re there, be on the lookout for shark teeth, some of which are millions of years old. Once you find one, you can treasure it forever.
Ecology Tours Hands On - Educational - FUN! Spend an adventurous day on the water
One of the newest sports to hit the coast is stand up paddleboarding (otherwise known as SUP). Paddlers stand on a long board, similar to a surfboard, and use a paddle to swiftly glide across the water. It’s an intense workout and takes a bit of upper body endurance, but once you get the hang of it, it’s well worth the effort and completely manageable for beginners. The best way to enjoy SUP is in a group, so bring your friends along and follow your trusty guide to encounter waters unknown. Looking to pick up the speed a little? Try your hand at zipping across the waves on a personal watercraft, available at many rental spots along Crystal Coast. You may choose between a stand-up or sit-down model, and you can either ride with a small group of two to three people or by yourself. These personal watercrafts can be rented for a few hours or even for the full day. Don’t feel like working to get from A to B? No problem! Hop on one of the many tour boats or ferries heading to the Cape Lookout National Seashore or other beautiful locales. These tours often provide an up-close look at the many species of marine life found off the coast, including dolphins and the famous wild
ponies of Shackleford Banks. Don’t forget to bring your camera along to get some excellent shots. Perhaps rather than being on a boat, you’d enjoy riding above one. The enticing sport of parasailing makes this idea possible! Imagine combining the sports of boating and parachuting and you’ll end up soaring through the air below a pillowy sail while being pulled by a boat. The sights you’ll see combined by the rush of excitement is simply incomparable. Of course there are many fishing enthusiasts who visit the coast in hopes of reeling in the big one, and there are special charter boats, boat rentals or “head” boats made just for them. Fish from the deep water on a boat, from the shore, on the piers, or you may even try your hand at surf-casting. From the surf to the inland waters to the Gulf Stream, “variety” is once again the appropriate word. Whether you catch dinner or just want to enjoy the peace and quiet, the waters of the Crystal Coast make for the perfect setting. With so many activities and miles of coast, the Crystal Coast offers an endless list of possibilities. c
